견육식품의 관능적 특성과 소비자 기호도 조사 (A Study on Sensory Characteristics and Consumer Preference of Korean Dog Meat Foods)

  • This study was designed to evaluate the sensory characteristics and consumer preference of dog meat foods as compared with beef ones. The sensory evaluation was conducted by a 10-member trained panel and 109 persons ranging in age from 23 to 59 participated in the consumer research. The results were summarized as follows: 1. The sensory characteristics. 1) In case of the meats boiled in water, it did not show any significant differences between dog and cow's meat in color as well as off-flavor. On the contrary, the other characteristics such as odor, tenderness, juiciness and oiliness of dog meat were evaluated stronger than those of beef. 2) when the meats were cooked as Tang (a kind of soup), the dog meat did not show any significant differences from beef not only in color and off-flavor but also in odor. 2. The consumer preference. 1) It appeared that consumers somewhat preferred beef Tang to dog meat Tang. However, they rated dog meat Tang as the 'neither liked nor disliked' food on an average. 2) Male consumers showed higher preference than female did for the dog meat tang. On the overall, dog meat foods are regarded to have some desirable sensory characteristics and can be acceptable to most people.

우리나라 일부 청소년의 건강기능식품 섭취 실태 (Use of Functional Foods for Health by 14-18 Year Old Students Attending General Junior or Senior High Schools in Korea)

  • Various types of functional foods for health (FFH) are popularly used among adolescents. We surveyed 858 students, $15.0 \pm$ 1.6 (14-18) years of age, attending general junior or senior high schools in Korea for FFH use and significant variables for their FFH use including demographic characteristics, food consumption frequency and nutritional beliefs. The use prevalence of FFH was $47.8\%$, and among all types of FFH, nutritional supplements were taken most frequently, followed by red ginseng products > enzyme containing products > plant extract-fermented products. FFH use was higher in older aged-group, subjects lived in small or middle city, and those from families with a high socioeconomic status in comparison to each corresponding group. Health concern on offsprings by parents and usage ratio of FFH by family was higher in users than in nonusers of FFH. Total score of dietary assessment was higher in users than in nonusers of FFH, and users had a more positive view concerning the potential health benefit of FFH than did nonusers. Most users of FFH took FFH when they were healthy ($50.7\%$) , and they did not feel special effects through the FFH use ($57.1\%$) . Most users of FFH got the information on FFH through family and relatives ($61.5\%$) , and most of them purchased FFH at pharmacy or oriental medicine clinics ($55.1\%$) . FFH users preferred vitamin C-and Ca-supplements most among the vitamin mineral supplements belonged to FFH. Given the widespread use of FFH by adolescents, the reasonable use of these products for the contribution to their overall health and well-being is a subject that is emphasized in nutrition education for them. 우리나라 일부 대학생의 건강기능식품 섭취 실태 및 섭취 요인 연구 (A Study on the Use of Health Functional Foods and Its Related Influencing Factors of University Students in Korea)

  • We surveyed 848 university students, $21.4{\pm}2.5$ years of age, attending university in Seoul, Kongju, Chongyang-Gun in the Chungnam province of Korea, for their use of health functional foods (HFF) and for significant variables in this use, namely demographic characteristics, health related variables, dietary variables and nutritional beliefs. The prevalence of the use of HFF was 33.6%. Among all types of HFF, nutritional supplements were taken most frequently, followed by (in order) red ginseng products, apricot extract products and ginseng products. HFF use was higher in females (p<.05), in subjects living in a dormitory (p<.05) and those from families with a relative high socioeconomic status (p<.001). Self-health concern (p<.05) and usage ratio of HFF by family (p<.001) was higher in users than in nonusers of HFF. The total score of dietary assessment was higher in users than in nonusers of HFF (p<.001), and users had a more positive point of view concerning the potential health benefits of HFF than did nonusers (p<.001). Most users took HFF when they were healthy (37.2%) or when they were sick (27.4%). They did not feel special effects through the HFF use (49.8%). Most users got the information about the specifics of HFF from family and/or relatives (55.8%). Most of users confirmed nutrition facts when they purchased the HFF (70.9%), but a considerable number of users could not understand these nutrition facts (48.1%). Users preferred vitamin C- and Ca-supplements most among vitamin mineral supplements belonged to HFF. These results show that the use of HFF is common among university students. As well, the use of HFF by students is affected by various variables. Supplementary nutritional education should be undertaken among university students, in order to give them a reasonable guideline for the use of HFF, based upon influencing factors and usage behaviors that we learned from this survey.

부모의 경제수준에 따른 자녀의 식습관과 식품기호도에 관한 연구 (I) -서울.경기 (인천)지역을 중심으로- (A Study on the Children's Eating Habits and Food Preference according to Their Parents' Economic Status (I) - Seoul & Gyeonggi (Incheon) Area -)

  • 본 연구는 유아기, 학동기, 청소년기 자녀를 대상으로 부모의 경제수준에 따라 식습관과 식품기호도를 조사 비교함으로써 부모의 경제수준에 따른 자녀의 식생활 경향을 알아보고, 자녀의 균형적인 영양 공급을 위한 조리법 개발을 위한 기초 자료로 삼고자하며, 그 결과를 요약하면 다음과 같다. 1) 조사대상자 중 학동기 두 집단 모두 과체중 대상이며, 유아기와 청소년기 두 집단은 정상 수준이었다. 2) 아버지와 어머니의 학력은 대졸이 가장 많았으며, 모든 집단 간 유의한 차이가 있었다. 모든 연령 집단에서 아버지의 직업은 사무직이 가장 높게 나타났으며, 유아기의 경우 400만원 미만 (전문직)을 제외한 어머니 직업은 주부가 가장 높게 조사되었다. 3) 학동기는 400만원 미만 (끼니거름)을 제외한 조사대상자의 식사습관 차이는 없었으며, 선호하는 음식류에서 모든 연령층이 육류를 좋아하였으며, 야채를 가장 싫어하는 것으로 조사되었다. 모든 연령 집단에서 외식횟수는 $1{\sim}2$회가 가장 많았고, 다음은 $3{\sim}4$회로 나타났다. 4) 간식 선호도에서는 빙과류와 과일 및 주스, 과자류를 연령에 상관없이 전반적으로 좋아하며, 학동기 400만원 이상은 우유 (딸기맛, 초코맛), 햄버거, 피자에 대하여 높은 선호도를 나타냈다. 5) 외식 시 가장 좋아하는 음식류는 유아기의 경우 중국식 (자장면, 탕수육), 학동기 400만원 미만 집단은 한식류(갈비, 불고기), 400만원 이상 집단은 패밀리레스토랑 (스테이크, 립), 청소년은 모두 한식류 (갈비, 불고기)를 가장 선호하였다. 6) 조리법은 유아기의 경우 구이류 (생선, 김), 학동기는 구이류 (육류), 청소년 400만원 미만은 찌개류 (김치, 된장), 400만원 이상은 구이류 (육류)를 가장 선호하였고, 학동기 집단에서 400만원 이상이 튀김류와 찜류 (갈비, 생선)을 400만원 미만 보다 더 좋아하는 것으로 나타났다. 결론적으로 부모의 경제수준에 따른 식품기호도는 선호도의 미소한 차이만 있을 뿐 큰 차이가 나타나지 않았다. 간식류 중 선호도가 놓은 과일을 간식으로 자주 섭취하는 것은 바람직하며, 빙과류와 과자류의 섭취 횟수를 줄이기 위해 부모는 관심을 가지고 같이 참여하여야 한다. 또한 좋아하는 음식류에서 육류에 편중되는 것은 아동의 비만과 어린이 성인병을 유발시킬 수 있으므로, 싫어하는 음식에서 가장 높은 선호도를 보이는 야채류와 서류 (감자, 고구마 등)의 섭취를 증가시킬 수 있는 조리법의 개발이 필요하다. 외식 시 선호하는 음식을 선택 할 때에는 패스트푸드보다는 한식이나 건강을 위한 음식을 선택하도록 부모의 교육과 지도가 필요하며, 야채와 해조 어패류를 혼합한 음식을 개발하여 제공하는 것도 좋을 것으로 사료된다. 또한 부모의 사회 경제수준을 중심으로 자녀의 식습관과 식품 기호도에 대한 연구는 미흡한 실정이므로 부모의 사회경제수준을 보다 구체적으로 조사한다면, 부모의 경제수준에 맞는 자녀를 위한 식습관과 영양교육을 할 수 있을 것으로 사료된다. 본 연구는 도시지역을 중심으로 조사한 결과를 바탕으로 이루어졌기에 비 도시지역의 자녀의 식습관과 식품기호도를 반영하지 못하고 있다. 그러므로 앞으로는 도시지역과 비도시지역을 비교하는 조사 연구가 필요하며, 이러한 조사결과를 바탕으로 자녀의 식습관에 대한 교육을 위한 교재, 교구의 개발과 영양, 식습관 교육프로그램의 개발을 통해 가정과 학교에서 부모와 교사가 자녀의 식생활 지도 관리를 돕고 가정과 교육기관이 연계한 교육 프로그램이 활성화 될 수 있도록 지속적인 관심을 기울여 나가야 할 것이며, 이에 따른 후속 연구들이 계속적으로 이루어져야 할 것이다.

도시지역 직장인들의 외식행동에 관한 연구(I) - 일반적 특성과 외식행동과의 관련성 중심으로- (A Study on the Eating-out Behavior of City Workers (I) -The Relationship between General Characteristics and Eating-Out Behavior-)

  • This study was carried out to investigate the relationship between demographic characteristics and conscious behavior of 287 workers. The results of the study are as follows: The participants of the study were composed of 139 males $(48.4\%)$ and 148 females $(51.6\%)$. 75 workers are 25 years old or younger $(26.1\%)$. Regarding the frequency of eating out, 211 workers $(73.6\%)$ answered that they had eating out ever once a week. Males ate out more frequently than females (p<0.001). The motives for eating out was mostly for meals. This response was more frequent for female than male. To the contrary, more males answered that they ate out for the purpose of social intercourse. As the level of average monthly income increases, the purpose of eating out changed from the purpose of meals to the purpose of social intercourse (p<0.001). For cost of eating out, the older workers and those who had higher monthly income spent significantly more expenditure. However gender difference didn't make any significant difference in the eating out expenses per person. The average monthly eating out expenses were significantly higher for female than male, for the order workers than the younger, for the married than the single, and for those who have higher monthly income than lower. However, the expenses were not significantly different in occupation. Regarding the types of restaurants that the workers preferred for eating out, the most workers preferred Korean restaurant. The types of restaurants that workers preferred significantly related to all the demographic characteristics (p<0.01). In general, participants had eating out with their family. However, younger, single, and low income workers seemed to more eat out with their friends. The most preferred menu was pork dishes. Male rather than female, the married rather than the single, and those who have a professional occupation appeared to like it more. It is necessary to research the major customers' demographic characteristics and their preferences, and then to develop new goods which fit to the customers before entering the restaurant business. It may be concluded that it should be important to develop nutritious, safe, and delicious foods.

부산지역 청소년의 칼슘에 대한 인식 및 섭취실태 (Calcium Intake and Cognition on Calcium of Adolescents in Busan Area)

  • 청소년들의 칼슘에 대한 인식 및 섭취실태를 파악하기 위하여 부산시내 초등학교 6학년 145명, 고등학교 2학년 140명, 총 295명을 대상으로 이들의 칼슘에 대한 인식 및 섭취실태를 설문 및 식이섭취조사 방법을 통하여 조사하였다. 연구결과, 청소년들은 칼슘과 우유의 기능, 골다공증과 칼슘과의 관계는 잘 인식하고 있었으나, 칼슘의 흡수와 관련이 있는 영양소에 대해서는 인식이 낮은 것으로 나타났다. 칼슘에 대한 인식의 정도는 여학생들이 높은 점수를 얻었으며 초등학교 남학생에서 가장 낮은 점수를 나타내었다. 칼슘식품에 대한 기호도는 아이스크림, 김, 요구르트 순으로 높았으나 콩 및 뱅어포 등은 낮은 것으로 나타났으며, 연령 및 성별에 따라 좋아하는 정도가 달랐다. 청소년들의 하루 평균 칼슘 섭취량은 여학생에서 491.51~530.5 mg, 남학생이 554.5~636.7 mg이었으며 이는 한국인 영양권장량의 각각61.4~66.3%, 69.3~70.7%의 범위를 나타내었다 칼슘 섭취량이 RDA 66.7% 미만의 경우가 고등학교 여학생에서 54.9%로 다른 집단보다 높게 나타났으며 특히 여고생들이 운동의 횟수나 운동량이 적다는 사실도 함께 나타나 이 집단에 대한 영양교육의 필요성이 절실하였다. 또한 청소년들의 칼슘급원 식품군은 우유 및 유제품, 채소류, 어패류 및 곡류 순이었으며, 칼슘섭취량은 칼슘에 대한 영양지식과 양의 상관관계를 보여 인식이 높을수록 칼슘섭취량이 많은 것으로 나타났다.

Patterns of Vertical Distribution and Diel Vertical Migration of Zooplankton in the East Sea of Korea (Sea of Japan)

  • To find out the changes in vertical distribution patterns over the 24-h period, a key and the first step to tackle the problem of adaptive significance of diel vertical migration (DVM), vertically stratified time series samplings with multiple opening/closing plankton samplers were done in the East Sea of Korea (Sea of Japan). Sampling was done almost every 4 h for one day period following the same water parcel in Nov. 1995 and May 1996, respectively. Resultant patterns of vertical distribution showed that some species such as most abundant taxa Metridia pacifica and Scolecithyicella minor, both Copepoda, performed DVM even in the study area of strong thermal stratification. Their patterns of DVM such as distance scales and timing of movements were not the same each other, and they were separated from other taxa in the dendrogram obtained by the cluster analyses, Most minor taxa grouped in one, however, seemed not to do DVM in the study area of strong thermal stratification. They usually preferred the warmer surface layer where the foods were probably more abundant.

음주습관이 중상류층 중년남성의 영양상태에 미치는 영향 (Relationship of Habitual Alcohol Consumption to the Nutritional Status in Middle Aged Men)

  • The effect of habitual alcohol consumption on the nutrient intake. body weight and serum values were studied in 194 upper middle class men aged 35-55yr. living in Seoul. Each subject was interviewed to get information of alcohol and nutrients intake. Blood samples were taken. Mean values for each variable were compared by fertile of alcohol intake. The average alcohol consumption of the subject was 32.2g/day. Most of times foods were taken along with drinks. The subjects preferred food items such as meat. fish, nuts. dry fishes when they drink. High alcohol consumers had a significantly higher intake of calorie. protein, fat. Fe, and riboflavin compared to nondrinkers and moderate drinkers. Body weight was significantly higher in high alcohol drinkers followed by moderate and nondrinker groups. They also showed the higher serum values of triglyceride and r-GTP. High alcohol consumption resulted in an increased intakes of most nutrients especially calorie and fat which leads to higher body weight and higher serum concentrations of triglyceride and r-GTP. Therefore it seems that heavy alcohol drinkers are more prone to obesity and related chronic diseases.

수도권 지역의 연령에 따른 전통 떡류에 대한 인지도 및 기호도 (A Study on the Recognition and Preference of Korean Traditional Rice Cake According to Age in Capital area)

  • The purpose of this study was to investigate the perception and preference of the general public about Korean traditional rice cakes. Self-administered questionnaires were collected from 511 residents in Seoul and its vicinities. Data was analysed by t-test and one-way ANOVA. The recognition of Korean traditional rice cake was generally low except for the items that could be easily seen as either seasonable or festive foods. There was a significant difference in the average score of recognition and preference for each kind of Korean traditional rice cake according to gender and age. Injulmi, Yaksik, Songpyun, Baiksulgi and Garaeduk are highly preferred Korean traditional rice cakes, whereas Suktanbyung, Dootupduk, Soemuriduk and Daechoodanja are poorly considered among the general public.

축산물의 선호도와 구매행태에 관한 연구 (A Study on Livestock Products Preference and Purchasing Behaviors)

  • This study was carried out in order to analyze consumers' attitudes of purchasing livestock products. Data were gathered through questionnaires from a total of 628 consumers throughout November to December, 2005. The results obtained were as follows: 1. The most favorite meat of consumers was pork(43.6%). However, there were highly significant differences among socio-economic status (SES) of consumers (p<0.001). 2. Among milk and meat products, including fermented foods, city milk was the most favorite of consumers (39.7%) and the next was ham & sausage (34.1 %). 3. A majority of consumers preferred domestic livestock products (85.0%) to imports (6.5%). 4. Some of the most important factors in purchasing animal products included price (38.0%), safety (37.0%) and brand (13.4%). Significant differences were found among age groups, education levels, and jobs. 5. A majority of consumers purchased their livestock products at big shopping malls (54.7%), super markets (11.0%), and so on.
