대전지역 고등학생의 패스트푸드 섭취 실태 - 햄버거, 피자, 프라이드치킨 섭취 실태 - (Fast Foods Intake of Highschool Students in Daejeon Area - Hamburger, Pizza, and Fried Chicken Intake -)

  • 간편성과 저렴한 가격, 대중매체를 통한 광고의 영향으로 청소년 소비층이 증가하지만, 한편 정크 푸드(junk food)'라는 오명을 지니는 패스트푸드에 대하여 대전에 거주하는 고등학생을 대상으로 섭취 실태를 조사하였다. 섭취빈도 조사 결과 프라이드치킨은 33회/년, 햄버거 29회/년, 피자 17회/년 섭취하고 있는 것으로 나타났다. 햄버거, 피자, 프라이드치킨의 섭취빈도는 BMI 비만도별, 아침과 저녁 식사빈도별, 패스트푸드를 처음 먹었던 시기별 차이가 없었으며, 용돈의 경우 피자와 프라이드치킨은 용돈액수가 많은 사람이 섭취빈도가 높았다. 패스트푸드의 섭취자제 점수는 저체중 또는 비만 학생이 정상 체중의 학생보다 높았으며, 기대체격별 패스트푸드 섭취자제 점수는 차이가 없었다. 결론적으로 비만도, 식사 빈도, 패스트푸드의 처음 섭취 시기는 패스트푸드 섭취빈도와 관련이 없었던 반면, 용돈액수는 많을수록 패스트푸드의 섭취빈도가 높았던 것으로 나타나 용돈액수를 줄이는 것이 패스트푸드의 섭취빈도를 낮추는 효과적인 수단으로 확인되었다.

  • The schools in the survey consisted of 61 schools where foodservice was managed by themselves and 49 schools where it was done cooperatively. According to the style managed, the urban style was 42 schools, the rural style was 46, and the island style was 22. With regard to the amount for each student that parents have to pay. it was 745 won at schools managed by themselves and 616 won at schools managed cooperatively. The budgeted amount was 75 won at schools managed by themselves and 97 won at schools managed cooperatively. The result showed that parents at schools managed for themselves paid much more for the cost of food and management. The mean area of kitchens was 31 pyong (102 sq. meters) in environment of cooking utilities, and management was done wherever they were needed. The budgeted amount was supplied from the Educational Office and parents. In the situation of utilities and instruments for cooking, the places to wash hands and flush toilets, which were regarded as sanitary facilities were insufficient. The rates of containing measuring instruments and thermometers for cooking were also insufficient. The list to be considered in the management of menu was concentrated on raising acceptance of students served, based on the order of the tastes of students served, the quantity of the cost, nutrition needed, and then facilities. The replies that leftover food was thrown away after meals were numerous and the rate of leftover food was reflected on the menu. In purchase and management, the rate of food needed to be purchased was calculated through experience. A private contract was chosen to purchase food. The frequency of purchasing food was usually once a day, which would nutritists examined food, concentrating on the order of quality, number, and price. In the management of operation, a schedule for making food was seldom formed, referring to it only at the time needed. All the food was made in a day but some special foods were made the day before they would be required. It shows the situation was thought to be the most important. Guidance for sanitation was carried out once a month and the content of the guidance was about the sanitary treatment of food. With regard to degree of satisfaction with the management of meal service, all the dietitian at schools managed for themselves and cooperatively were somewhat satisfied with all the questions about the budgeted amount of food, and management, the management of purchase, operation, and sanitation. However, they were not satisfied with the environment of facilities.

주부들의 영양태도, 식품구매 및 식생활 평가의 차이에 관한 비교 연구 -서울특별시와 경기도 일부 지역에 거주- (Comparative Study on Nutrition Attitudes, Food Purchase Behaviors, and Dietary Habits of Housewives Living in Seoul and Kyunggi Area)

  • This study focused on the nutrition knowledge, food purchase behaviors, and dietary habits of 213 housewives (41 women under 39 years, 98 women 40~49 years, and 74 women over 50 years). Younger housewives held more special jobs, whereas older housewives worked as housewives or had no jobs ($p$<0.05). The average monthly income of the three family groups was 3,000,000~5,000,000 won, and the monthly dietary expenditure for all three groups was 200,000~500,000 won. Familial frames for the three groups was nuclear family (over 80%), but housewives younger than 39 years (19.5%) lived together with their parents and let them take care of their children. Housewives (over 50 years) prepared a balanced diet for every meal, utilized less drastic cooking methods to prevent loss of nutrients, and shopped at many places in order to save money on various food materials. Further, they purchased food materials that resulted in the least amount of left overs. On the other hand, housewives under 39 years visited large supermarkets and purchased cooked foods more than other groups. Housewives under 39 years considered nutrients content as the most important factor when purchasing food materials, whereas 74.5% of housewives between 40~49 years and 51.4% of housewives over 50 years put the most importance on flavor ($p$<0.05). Housewives under 39 years were interested in manufacture date, nutrient content, and food price, in decreasing order, whereas housewives between 40~49 years and over 50 years were interested in manufacture date, food prices, and nutrient content. Older housewives were interested in brown rice and fruits, whereas younger housewives under 39 years were interested in meat, fish, eggs, fried foods, and fast food. Older housewives over 50 years did not consume fried foods more than two times per week and consumed three regular meals more often than younger housewives. Accordingly, for younger housewives, it is necessary that healthy foods be cooked for their families.

패스트 푸드의 외식행동(外食行動)에 관한 2차(次) 실태조사(實態調査) -여의도(汝矣島) 지역(地域)을 중심(中心)으로- (A Secondary Survey of Fast Food Dining out Behaviours -Focused on Youido Apartment Compound in Seoul-)

  • A secondary survey was conducted of 503 customers, to investigate eating out behaviours at five fast food restaurants of Youido apartment compound in Seoul, in April of 1988. The results are summarized as follows: The majority, 84% of customers, were aged 14 to 30, consisting of junior and senior high school children, college students and company employees. In contrast to the previous survey of 1986, in which no elderly customers were found, a small number of elderly customers were observed in this study. The reasons given by customers for patronizing fast food restaurants were the following, from most to least frequent: 'convenient', 'allows for companionship', 'the pleasant place to eat', 'dining equipment and tableware are hygienic', 'to be able to stay as long as I want', and 'foods rapidly served'. Only 24.2% of the customers purchased the fast foods for a full meal, 38.3% purchased the foods for snacking, and others purchased ice cream only or drink only. The majority of the customers ate the purchased foods at the fast food restaurants. However, a limited number of female customers preferred to take the packed fast foods to their homes. Taste preference was a major factor in food selection from available menu items, among the younger customers; whereas customers over 30 years old were concerned with nutritive balance. Fried chicken, pizza, rolled rice with laver, ice cream, and juice were high on the list of liked foods; in contrast, lower preference was for fish burger, doughnut, spaghetti, Chajang noodles and chili beans. The survey discovered that the preference for fried chicken, pizza, and salad had increased compared to the previous survey of 1986. Preference by food nationality was highest for Korean food, then Western food, Chinese food, and Japanese food, in that order. Customers offered suggestions for better fast food service, such as lowering the price; greater variety in the menu; developing fast foods from the traditional Korean foods; and increasing the proportion of vegetables and fruits on the fast food menu. The customers, in particular, emphasized a need for the development of Korean traditional beverage of malt drink and persimmon punch, as well as mungbean pan cakes and sweet- spicy rice noodles (docbokki), as fast foods.

원주지역 중학생의 패스트푸드 섭취정도에 따른 패스트푸드 이용태도 및 식습관 비교 (Fast Food Consumption Pattern and Food Habit by Fast Food Intake Frequency of Middle School Students in Wonju Area)

  • 본 연구는 강원도 원주 지역에 소재한 3개 중학교에 재학하는 1, 2학년 454명을 대상으로 패스트푸드 섭취 빈도에 따른 패스트푸드의 이용 태도, 패스트푸드에 대한 인식, 식습관, 건강관련 사항 등을 파악하기 위해 설문지를 이용하여 조사하였다. 대상자 중 패스트푸드 자주 섭취군(주 1회 이상)은 29.5%, 보통 섭취군(한 달에 2~3회 정도)은 50.7%, 비섭취군(한달에 1회 이하)은 19.8%로 분류되었다. 패스트푸드를 먹는 목적으로 '간식용'의 비율은 자주 섭취군과 보통섭취군이 비섭취근에 비해 유의하게 높았고, 패스트푸드에 관한 개선점으로 세 군 모두 저렴한 가격과 덜 기름진 음식을 희망하였다. 패스트푸드에 대한 인식에서 자주 섭취군, 보통 섭취군은 비섭취군에 비해 패스트푸드가 배고픔 해소에 도움을 준다고 인식하였으며, 패스트푸드의 섭취 빈도가 많을수록 패스트푸드를 쉽게 사 먹을 수 있고, 메뉴가 다양해 질리지 않는 것으로 인식하였다. 또한 패스트푸드 비섭취군은 자주 섭취군, 보통 섭취군에 비해 식사량이 적당하고, 여러 가지 다양한 식품을 섭취하고 있었으며, 밥, 채소류, 과일류, 단백질, 우유 및 유제품, 해조류의 섭취가 더 많았다. 건강이상 증상 조사에서 자주 섭취군과 보통 섭취군은 비섭취군에 비해 졸음이 오고, 손발이 차고, 피부가 거칠은 증상을 더 자주 느꼈다.

1인가구와 다인가구의 배달·테이크아웃 식품소비행태 비교 분석 (An Analysis of Delivery and Take-out Food Consumption According to Household Type)

  • 본 연구는 최근의 1인 가구 증가와 식품의 비대면 구매 증가 현상 속에서 7차 식품소비행태조사(2019) 자료를 이용하여 1인가구와 다인가구의 식품소비행태가 어떤 차이를 보이는지, 그리고 차이가 나는 원인은 무엇인지를 실증적으로 분석하였다. 보다 구체적으로 1인가구의 인구 특성별 요인과 배달 및 테이크아웃 식품 이용 빈도가 배달·테이크아웃의 지출액 변화에 미치는 효과를 검정한 후 다인가구와 비교 기술하였다. 분석 결과, 첫째 1인가구와 다인가구 모두 소득이 증가할수록 배달 및 테이크아웃 지출비용이 증가하는 것으로 나타났고, 1인가구가 다인가구에 비해 지출액이 높았다. 둘째, 1인가구의 여성일수록 배달 및 테이크아웃 지출비용이 높았으며, 다인가구의 여성은 상대적으로 배달 및 테이크아웃 지출비용이 낮은 것으로 나타났다. 셋째, 연령에 따라 배달 및 테이크아웃 지출비용에 영향을 줄 것으로 기대했으나 특정 연령에 따른 지출비용 차이는 검증되지 않았다. 넷째, 1인가구와 다인가구 모두 배달 및 테이크아웃 이용 빈도가 증가할수록 지출비용이 증가하는 것으로 나타났으나, 1인 가구에서 주 4회 이상 배달 및 테이크아웃을 이용하는 소비자들은 지출비용이 줄어드는 것으로 분석되었다. 한편, 2020년 음식료 배달 시장은 코로나-19로 인해 전국 17개 시·도 중 12곳에서 전년대비 2배 이상 증가하며 보편적인 서비스산업으로 자리 잡았다고 볼 수 있다. 따라서 국내 식품산업이 식문화 트렌드 변화와 인구구조 변화에 부합하도록 정책적 지원과 관심이 필요한 시점이다.

Effects of β-glucan with vitamin E supplementation on the growth performance, blood profiles, immune response, pork quality, pork flavor, and economic benefit in growing and finishing pigs

  • Objective: This study was conducted to evaluate the effects of β-glucan with vitamin E supplementation on the growth performance, blood profiles, immune response, pork quality, pork flavor, and economic benefit in growing and finishing pigs. Methods: A total of 140 growing pigs ([Yorkshire×Landrace]×Duroc) were assigned to five treatments considering sex and initial body weight (BW) in 4 replications with 7 pigs per pen in a randomized complete block design. The experimental diets included a corn-soybean meal-based basal diet with or without 0.05% or 0.1% β-glucan and 0.02% vitamin E. The pigs were fed the diets for 12 weeks (phase I, 0 to 3; phase II, 3 to 6; phase III, 6 to 9; phase IV, 9 to 12). The BW and feed intake were measured at the end of each phase. Blood samples were collected at the end of each phase. Four pigs from each treatment were selected and slaughtered for meat quality. Economic benefit was calculated considering the total feed intake and feed price. Pork flavor was analyzed through inosine monophosphate analysis. Results: The average daily gain and feed efficiency were improved compared to the control when β-glucan or vitamin E was added. Supplementing 0.05% β-glucan significantly increased the lymphocyte concentration compared to the addition of 0.1% β-glucan and the content of vitamin E in the blood increased when 0.02% vitamin E was added. The treatment with 0.1% β-glucan and 0.02% vitamin E showed the most economic effect because it had the shortest days to market weight and the lowest total feed cost. The addition of β-glucan or vitamin E had a positive role in improving the flavor of pork when considering that the content of inosine monophosphate was increased. However, carcass traits and meat quality were not affected by β-glucan or vitamin E. Conclusion: The addition of 0.1% β-glucan with 0.02% vitamin E in growing and finishing pig diets showed great growth performance and economic effects by supplying vitamin E efficiently and by improving the health condition of pigs due to β-glucan.

경찰서 유치장 시설 및 운영에 관한 유치인의 인식연구 (A Study of Detainees' Perceptions of the Detention Facilities of the Police Station and their Operation)

  • 본 연구는 경찰서 유치장에 구금되어 있는 유치인들의 인식분석을 통하여 유치장의 시설 및 운영 실태를 분석하고, 그에 대한 정책적 시사점을 제시하는데 목적이 있다. 한국 경찰서 유치장 시설에 대한 유치인 인식조사 결과에 따른 정책적 제언은 첫째, 유치장 구조는 인권친화적인 일자형으로 배치하고, 여성${\cdot}$남성${\cdot}$장애인${\cdot}$소년범등의 피의자를 차별하여 유치할 수 있는 유치장 시설을 확충해야 한다. 둘째, 유치실 외부에 목욕장과 세면장 시설을 유치인들이 항상 이용할 수 있도록 하여야 한다. 셋째, 비상구가 설치되어 있지 않은 경우 빠른 시일 내에 비상구를 설비해야 하며, 수용된 유치인수와 내부면적을 고려하여 소화기를 충분히 비치해야 할 것이다. 넷째, 외부의 공기를 유치장 내부로 순환할 수 있도록 적절한 수의 창문을 확보하여야 할 것이며, 인공조명에만 의존하기 보다는 자연채광을 활보하는 실질적인 조치가 필요하다. 다섯째, 유치장 내 냉${\cdot}$난방 시설은 유치인의 수와 규모에 합당한 시설을 구비하여야 할 것이다. 또한, 경찰서 유치장 운영에 대한 유치인 인식조사 결과에 따른 정책적 제언은 첫째, 유치장 운영의 문제는 낙후된 유치장 시설과 함께 다루어져야 할 것이며, 빠른 시일 내에 예산확보 등과 같은 조치를 해야 한다. 둘째, 낡고 오랜 된 책들은 폐기하고, 독서 흥미를 유발 할 수 있는 잡지 등을 구비하는 것이 요구되며, 유치된 피의자 중에는 생계가 곤란한 점 등을 충분히 고려하여 기본적인 생필품 등은 지급하는 것이 바람직하다. 셋째, 영치물품의 관리는 모든 경찰서 유치장에서 동일한 제목의 서류와 양식으로 관리 되어져야 하며, 여성유치보호관 인력을 확충하여 여성 유치인들에 대한 신체검사 및 송치 등의 업무를 전담하게 하여야 한다. 또한, 장애인을 위해 구비된 목발이나 휠체어, 이동식 좌변기 등과 같은 장애인관련 시설물들을 잘 관리하고 보관할 필요가 있다.

호텔 뷔페음식(飮食)에 관(關)한 실태조사(實態調査) -제(弟) 2보(報). 여성(女性)들의 뷔페식당(食堂)에서의 끽식행동(喫食行動)에 관(關)한 연구(硏究)- (The Present State and Problems of Hotel Buffet Styled Restaurant -II. A Survey of Ecology in Food and Nutrition of Some Urban Females Dining in Hotel Buffet Styled Restaurant-)

  • An eating behavior research was done with 50 females at a buffet styled restaurant during their lunch time. Of the respondents, 52.0% were professional and 54.0% were graduate school graduates. Of the respondents, 58.0% of the company were friends and 24.0% were relatives. The average time period of eating was $93.0{\pm}23.4$ minutes. The average frequency of taking food was $4.0{\pm}1.1$ and the average frequency of taking food after satiety was $1.4{\pm}0.8$. It is significant that lower frequency of food consumption was directly proportional to the age groups of respondents. The average selected food items were $30.4{\pm}7.1$ out of 175 and the average weight of the consumed food was $995.0{\pm}240.9$ g. The older age group chose a similar number of food items, but the amount of each food item was considerably less than younger. So the younger the age group was, the more they ate. The average food items at one time was $7.1{\pm}2.2$ and the average food weight time was $233.7{\pm}69.7$ g. The percentage of respondents who evaluated themselves as 'ate too much' was 70.0% and those who evaluate themselves 'ate properly' was 14.0%. Most of them were satisfied with the buffet service. The average of number of food items consumed by respondents before cooking was $50.5{\pm}8.9$. The consumption of calories and nutrients was compared with the Korean Daily Recommended Dietary Allowances. The consumed calories were 60.9% of RDAs, protein 104.4%, calcium 77.1%, iron 129.8%, vitamin A 66.5%, thiamin 96.0%, riboflavin 95.7%, niacin126.6% and ascorbic acid 112.3%. This data exceeded 1/3 of the Korean Daily RDAs tremendously and tells us extreme overeating. The energy ratio of carbohydrate: fat: protein was 51.6: 29.9: 18.5. Caloric consumption of animal food was 27.9% and the consumption rate of the other nutrients from animal food was considerably high. But the consumption rate of vitamin A was 90.9% from vegetable groups. Accoding to this study, buffet service gives some advantages. It gives customers an good opportunity to vary their food intake, which enhances eating experiences and can cause an improvemont of food habits. But overeating is a problem. Therefore, we think it is necessary for those women who have influence over their family's food selection, to have nutrition education about a desirable order of eating a meal, food selection, and health problems due to overeating at buffet styled restaurant. There should be some improvement in the management of buffet service. For example, proper temperature, texture, and freshness of the food should be maintained. Prevention of mixed food smells should be considered as well. To lower the price it is desirable to reduce the number of similar items and to use seasonal food as much as possible. A buffet styled restaurant with less food items with cheaper prices is recommended. Various traditional food should be developed for the menu items. We expect buffet services to be sutable to maintain good health and to be popular to any eater.

수도권 대학생들의 패밀리 레스토랑에 대한 이용 성향과 만족도 평가 (Evaluation of the Behavior and Satisfaction of College Students for Family Restaurants in Seoul.Kyunggi Area)

  • 본 연구에서는 수도권에 거주하고 있는 남녀 대학생들을 대상으로 하여 패밀리 레스토랑에 대한 인식도 및 이용 성향 과 만족도를 알고자 설문하고 통계 분석하였다. 조사 결과 응답자의 92.0%가 방문한 경험을 가지고 있었으며, 주말 (72.4%)에 주로 이용하고 식사비용은 약 1만원$\sim$1만 5 천원을 지출하였다. 일반적 특성과 이용 이유간의 상관 분석에서는 성별 (p<0.01)에 따라, 주요 지출 목록 (p<0.05)에 따라 유의적인 차이가 있었다. 방문 시 분위기에서 가장 중요하게 보는 것은 푸드 스타일링이며 선택하는 기준은 '맛이 좋은 곳'이 43.5%로 가장 높았고 다음은 '할인을 할 수 있는 곳 (26.3%)'의 순이었다. 멤버십 카드 이용 경험은 86.4%가 가지고 있었으며, 활용에서 '만족한다'가 46.9% 이었다. 이용 실태와 각 항목별에 따른 만족도의 차이에서는 방문 횟수에서는 음식량 (p<0.05), 1 인 식사비용에서는 맛 (p<0.01), 모양 및 담기 (p<0.05), 분위기 (p<0.1), 실내 장식 (p<0.05), 이용 동기에서는 가격 (p<0.05) 과 위생 (p<0.05)에 있어 유의적인 차이가 있었다. 9 개 항목별 요인분석에서 서비스, 음식, 경제성의 3 가지 요인을 얻었으며, 이들의 크론바하 알파 (Cronbach's ${\alpha}$ ) 값은 각각 0.778, 0.671, 0.587 로 나타났다. 음식에 대한 만족도와 서비스에 대한 만족도 사이의 상관계수는 0.457로 양의 상관관계가 있었다. 이상에서 패밀리 레스토랑 전체 만족도를 높이는 것은 음식에 대한 만족도, 경제성에 대한 만족도의 순서이었으며, 서비스에 대한 만족도의 영향력은 유의하지 않는 것으로 나타났다. 그러므로 이러한 결과를 바탕으로 맛있는 음식을 제공하되 양을 줄여 가격을 인하하는 경영 전략을 수립하는 것이 바람직할 것으로 사료된다.
