Physicochemical Properties and Antioxidant Activities from Hot-air and Freeze Dried Aged Black Ginger (Zingiber officinale) (열풍 및 동결건조에 따른 숙성 흑생강의 이화학적 특성 및 항산화 활성)

  • Hot-air and freeze dried powder from aged black ginger were mixed under the ratio conditions of sample "A" (8:2), "B" (5:5), "C"(2:8), "D" (10:0) and "E" (0:10), respectively. The physicochemical properties and antioxidant activities in the 5 kinds of powder were compared. The water absorption index was significantly higher in freeze dried powder, and it tended to be significantly increased depend on the ratio of freeze dried sample. The browning intensity was significantly higher in the hot-air dried samples, but the color intensity was not significant. Total and reducing sugar contents were significantly higher in freeze dried sample. Total sugar content in mixed sample tended to significantly increased as the amount of freeze dried sample. Total phenol content was significantly higher in the sample "A". The contents of gingerol and shogaol were significantly higher in mixed sample "A", 6-gingerol content showed no significant difference according to the drying method. Cholesterol absorption activity was significantly higher in the freeze dried sample "E". The DPPH radical scavenging activity showed a little difference according to the drying method, but the ABTS radical scavenging activity and reducing power in the hot-air dried sample were significantly higher than those of freeze dried. And the activity of mixed powder "A" was significantly higher than others. These results suggest that aged black ginger was superior in terms of quality and functionality of the hot-air drying compared to freeze-drying, and it would be economically effective to the mixed sample "A".

Oxidation of CrAlMgSiN thin films between 600 and 900℃ in air (CrAlMgSiN 박막의 600-900℃에서의 대기중 산화)

  • Thin CrAlMgSiN films, whose composition were 30.6Cr-11.1Al-7.3Mg-1.2Si-49.8N (at.%), were deposited on steel substrates in a cathodic arc plasma deposition system. They consisted of alternating crystalline Cr-N and AlMgSiN nanolayers. After oxidation at $800^{\circ}C$ for 200 h in air, a thin oxide layer formed by outward diffusion of Cr, Mg, Al, Fe, and N, and inward diffusion of O ions. Silicon ions were relatively immobile at $800^{\circ}C$. After oxidation at $900^{\circ}C$ for 10 h in air, a thin $Cr_2O_3$ layer containing dissolved ions of Al, Mg, Si, and Fe formed. Silicon ions became mobile at $900^{\circ}C$. After oxidation at $900^{\circ}C$ for 50 h in air, a thin $SiO_2-rich$ layer formed underneath the thin $Cr_2O_3$ layer. The film displayed good oxidation resistance. The main factor that decreased the oxidation resistance of the film was the outward diffusion and subsequent oxidation of Fe at the sample surface, particularly along the coated sample edge.

A Study on Recognition and Attitude of Residents in Seoul City about Air Environment (서울시민의 대기 환경에 관한 인식 및 태도)

  • The objective of this study were to identify the state of re. cognition and attitude of residents in Seoul city about air environment and to identify factors affecting attitude toward air environment. Study object was residents in Seoul city sampled by multistage random proportional sampling. Sample size was 0.0067%(500 persons) of total residents in Seoul city. The results were divided into two parts: (1) descriptive results of recognition and attitude toward air environment, (2) results of factor analysis to classify categories of attitudes toward air environment and regression analysis to identify factors affecting attitude toward air environment. Most of resident in Seoul city recognized that air environment in Seoul city was highly polluted and was not satisfactory. Experience of damage of air pollution was reported in about 70% of residents in Seoul city. More than 60% of residents in Seoul city had concern about air environment. Attitude toward air environment were classified into four categories using factor analysis: Necessity of intervention of local government for air environment conservation, Participation of residents and enterprises for air environment conservation, Optimistic attitude about air pollution, Preference of economy. Factors affecting the above attitudes were knowledge about air pollution, knowledge about policies and institutions related air environment conservation, concern about air environment, educational level, subjective assessment of air environment, sex, marital status. In conclusion this study suggested providing information of air environment in Seoul city to the residents and to educating residents for making positive attitude about air environment conservation.

Changes in Quality of Soybean Curd Residue as Affected by Different Drying Methods (건조방법에 따른 비지의 품질변화)

  • This study was carried out to determine the changes in quality during the drying process and the optimum drying condition for utilizing soybean curd residue. The quality criteria for soybean curd residue were acid value, peroxide value, fatty acid composition and microbial concentration. The acid values of soybean curd residue were 7.5, 4.5 and 5.9 KOH mg/g upon 12 hour drying with open-air sun, ambient-air blast and warm-air blast, respectively. The numbers of total aerobic bacteria and molds increased remarkably during drying with open-air sunlight, ambient-air blast and warm-air blast except for hot air blast. Among different drying methods, the hot air blast drying(1kg of sample) was the most effective methods, which completed in three hours. Also, the drying method demonstrated a typical drying curve ; settling down, constant rate drying and falling rate drying period were shown within one hour, from one and three hours and after three hours, respectively. Moreover, there was significant variation in the constant drying period for the quality of soybean curd residue.

  • A laboratory scale storage facility consisting of a cold room, sample jars and a ventilation device was designed and built. Storaging sample jars (1.7 l) for fruit were fabricated with transparent acryl and provided with a constant air flow. For the supplying of air to sample jars, the air distributing system was built with solenoid valves, an air precooling coil and a pressure equalizing tank. To provide the programmable storaging environment of the facility a microprocessor-based controller was designed and installed. The controller was built with the 8 bit microprocessor (Z-80), EPROM, RAM, programmable peripheral interface(8255 PPI), and A/D converter. Softwares for the auto-temperature measurement and control of the storage system were developed and systemized in ROM. The automated storage system was applied to citrus storage, and the temperature of the storage facilities was successfully acquisited to the computer and controlled.

Antioxidant Activity of Wa-song (Orostachys japonicus A. Berger) According to Drying Methods (건조 방법에 따른 와송의 항산화 효과)

  • Antioxidant activity of wa-song (Orostachys japonicus A. Berger) was analyzed to clarify the influence of extractive solvent and drying method such as sun, hot-air and freeze drying. The contents of total phenols and flavonoids were significantly higher in 95% ethanol extracts than water extracts. Ability of reducing power and DPPH radical, hydroxyl radical and nitrite scavenging ability were higher in the order of hot-air dried sample> freeze dried sample> sun dried sample and these abilities were also higher in 95% ethanol extracts than water extracts. In conclusion, antioxidant activities of wa-song extracts were in proportion to the contents of total phenols and flavonoids. Also, hot-air drying is the superior method for the enhancement of antioxidant activity of wa-song.

DEGRADATION OF NUCLEOTIDES IN THE MUSCLE OF SEA MUSSEL DURING DRYING (진주담치 건조중의 Nucleotides의 변화)

  • The present paper deals with the degradation of nucleotides in the muscle of sea mussel, Mytilus edulis, during drying. Three kinds of samples, raw, hot-air dried, and steamed-and-hot air dried were prepared and the contents of nucleotides were determined by ion exchange chromatography on columns of Dowex 1, X8. ATP and ADP were dominant in the raw muscle showed about $8{\mu}moles/g$, dry basis, respectively. The rate of degadation of ATP was very slow during drying compared with those of fish. The accumulation of ADP and AMP were observed during drying and the amount of total nucleotides (ATP+ADP+AMP) were not decreased remarkably by drying process. IMP was not detected in the all of the samples examined, however, the contents of inosine and hypoxanthine were increased during drying. In case of inosine contents, the hot-air dried sample marked an exceedingly high value equivalent to 8 times of the raw sample whereas steamed-and-hot air dried sample showed 2 times of raw samples.

A Study on the Air Travel Demand Forecasting using ARIMA-Intervention Model (Event Intervention이 일본, 중국 항공수요에 미치는 영향에 관한 연구)

  • The purpose of this study is to anticipate the air travel demands over the period of 164 months, from January 1997 to August 2010 using ARIMA-Intervention modeling on the selected sample data. The sample data is composed of the number of the passengers who in the domestic route for Jeju route. In the analysis work of this study, the past events which are assumed to have affected the demands for the air travel routes to Jeju in different periods were used as the intervention variables. The impacts of such variables were reflected in the presupposed demand. The intervention variables used in this study are, respectively, the World Cup event in 2002 (from May to June), 2003 SARS outbreak (from April to May), Tsunami in January 2005, and the influenza outbreak from October to December 2009. The result of the above mentioned analysis revealed that the negative intervention events, like a global outbreak of an epidemic did have negative impact on the air travel demands in a risk aversion by the users of the aviation services. However, in case of the negative intervention events in limited area, where there are possible substituting destinations for the tourists, the impact was positive in terms of the air travel demands for substituting destinations due to the rational expectation of the users as they searched for other options. Also in this study, it was discovered that there is not a binding correlation between a nation wide mega-event, such as the World Cup games in 2002, and the increased air travel demands over a short-term period.

A Low-Cost Open-Source Air Sampler for the Sorbent Tube Sampling for TD-GC/MS Analysis

  • In this study, we provide full descriptions of how to make a low-cost and completely open-source laboratory-made air sampler that will be used for sample adsorption for thermal desorption-gas chromatography mass spectrometry (TD-GC/MS) analysis. It is well known that harmful gases cause bad effects on human bodies, so it is necessary to identify the types and amounts of gases in industrial sites. One of the most commonly used methods for gas sampling is to utilize a sorbent tube using an air sampler. Commercially available air samplers are expensive, typically priced between $1,000 and $2,000, and their design often cannot be modified to fit the experiment. To address these shortcomings, we have developed a do-it-yourself (DIY) air sampler that is not only cheap enough, but also completely open-source. Furthermore, the performance of the fabricated air sampler was validated in conjunction with TD-GC/MS for the analysis of volatile compounds.
