  • In order to secure competitiveness of the home meal replacement (HMR) industry from a long-term perspective, development of packaging and processing technologies must be achieved. The development of technology that can secure freshness, nutrition, and taste but secures the shelf life is the key to the future growth of HMR. The future of HMR can be considered in terms of nutrition, environment and safety. From the nutritional point of view, it is expected that development of healthy HMR such as low-salt, low-sugar, low-fat, and high fiber and premium HMR with functional ingredient enhanced, and personalized HMR for silver, infant and patients will be done. And it is expected that development of HMR utilizing environmentally friendly food or local food, development of energy reduction and environmentally friendly disinfection technology, development of environmentally friendly packaging material, and providing information on HMR preparation using QR code and RFID from the environmental and safe point of view.

  • In recent times, NFC technology adaptations for smartphones have been increasing. This study proposes the adaptation of agri-food business models based on NFC technology and presents the basic technological characteristics of NFC. An NFC tag can store more information than prior tagging technology methods, such as QR codes, and provides a better user experience. Based on the unique features of NFC, this study suggests an NFC business model application for the agri-food business.

서울특별시 강북지역 유통 농산물 중 농약잔류실태조사(2008) (Survey on Pesticide Residues in Commercial Agricultural Products in the Northern Area of Seoul(2008))

  • This study was carried out to investigate the current status of pesticide residues in 3,735 agricultural products in the northern area of Seoul from January to December in 2008. 3,735 samples, comprising 119 types of agricultrural products were assessed via a multiresidue method to detect 260 pesticides. Pesticide residues were detected in 19.7% (737 of 3,735 samples), and the rate at which the detected residues violated the maximum residue levels(MRLs) of the Korean Food Code was 3.2% (121 of 3,735 samples). Pesticide residues were detected in 72 spin-aches, 64 peppers, 45 sweet peppers, 40 perilla leaves, 38 korean cabbages and 37 dried agricultural products. The samples that violated the MRLs included 14 perilla leaves, 13 spinaches, 12 leek, 6 lettuces(leaf), 6 chards and 6 gyeojchaes. Procymidone, endosulfan, chlorfenapyr, cypermethrin, bifenthrin, tebuconazole and fenvalerate were all frequently observed. Procymidone, endosulfan, dimethomorph and diniconazole were the pesticides most frequently detected at levels that violated the Korean Food Code MRLs.

  • 방사성핵종의 대기방출로 인한 인근주민의 연간 집단선량을 대기확산모델과 USNRC에서 제안된 지상먹이연쇄모델을 결부시켜 AIRDOS-EPA전산코드를 사용하여 평가하였다. 평가결과는 전신의 경우, $3.348{\times}10^{-1}manrem$으로 GASPAR전산코드에 의해 계산된 값과 다소 차이가 있었으나 갑상선의 경우, 84.95manrem으로 아주 낮게 평가되었다.

단호박 분말 첨가 영아용 쌀 가공 스낵의 관능적 미생물적 품질 특성 (Sensory and Microbial Characteristics of a Rice Processed Snack using Sweet Pumpkin Powder for Infants)

  • The sensory characteristics of a rice processed snack for 6 to 12 month old infants were investigated. The microbiological safety of all samples was also tested. The moisture content of snack of the SW snack was 6.33 significantly higher than in the other snacks (p<0.05). The sensory intensities of RW were highest in glossiness brightness, uniformity, sweet aroma, savory flavor, sweet flavor, chewiness and crispiness. In the; consumer acceptance test, RW showed significantly higher glossiness, uniformity, sweet aroma, savory flavor, sweet flavor, rancid, chewiness, adhesiveness, crispiness and overall acceptance than the other snacks (p<0.05). The aerobic plate counts were negative in all the samples tested. E. coli and pathogenic microorganisms tests were also negative or not detected, showing that all the samples tested were microbiologically safe according to the food code which applies to food manufacturers. Overall, potentially high value products of rice processed snacks for 6 to 12 month old infants were developed and tested They are expected to be utilized and in the competitive and growing infant food industry.

Classification of honeydew and blossom honeys by principal component analysis of physicochemical parameters

  • The physicochemical parameters of honey are used to determine the botanic origin of honey and to specify the composition criteria for honey in regulations and standards. The parameters of honeydew and blossom honeys from Korean beekeepers were determined to investigate whether they complied with the composition criteria for honey in the food code legislated by Korean authority and to establish the parameters which should be subjected to principal component analysis for improved differentiation of honeys. The fructose and glucose contents of the honeydew honey did not comply with the composition criteria. The ash content of the honey was closely correlated with CIE a* and CIE L* The principal component analysis of fructose to glucose ratio, CIE a*, CIE L*, ash content, free acidity, and fructose and glucose contents enabled classification of honeydew, chestnut, multifloral, and acacia honeys. Additional advantage of the principal component analysis (PCA) is that the physicochemical parameters, such as fructose to glucose ratio (F/G) and color, can be determined using the analytical instruments for composition criteria and quality control of honey. This study suggested that composition criteria for honeydew honey should be established in the food code in accordance with international standards. The principal component analysis reported in this study resulted in improved classification of the honeys from Korean beekeepers.

고등학교 가정과 식생활 문화 단원에 적용한 게임 기반의 교수·학습 과정안 개발 및 평가 (Development and Evaluation of a Game-Based Lesson Plan Applied to the 'Food Culture' Unit of the High School Home Economics Class)

  • This study develops and evaluates a game-based lesson plan applied to the 'Food Culture' unit of a high school Home Economics class. We developed, implemented, and evaluated lesson plans for seven periods that contained 'the Korean food table setting card,' 'the world's food culture card,' and the procedure for cards games according to the Analysis, Design, Development, Implementation, and Evaluation (ADDIE) model. 'The Korean food table setting card' consisted of 'the Korean food table setting order card' to easily understand 10 types of Korean traditional daily meals based on pictures and 'the Korean food table setting food card' to easily understand Korean traditional food based on 104 kinds of food picture and quick response (QR) code. 'The world's food culture card' consisted of 'the world's food culture quiz card' to help learners easily understand influential food culture formation factors, features of food culture, typical foods from 16 countries, and 'the world's traditional food card' to help learners easily understand typical foods from 16 countries through 63 kinds of pictures. Respective 'game guides' were also developed. High school students who studied the game-based Home Economics classes and who participated in the 'Food Culture' unit, could easily and enjoyably learn the food culture of Korea (and other countries), actively participate in learning activities, and understood the content of food culture. In addition, they evaluated that the game-based instruction was easy to remember with minimal memorizing.

다소비 식품의 식품첨가물 사용 실태조사 (The Survey on Food Additives in Frequently Consumed Food)

  • 2007년 3월부터 11월까지 광주지역에 소재하는 재래시장과 할인마트에서 구입한 건과류 채소류와 건포류 등 94건, 전통 막걸리 판매점 등에서 구입한 탁류 23건, 모두 117건을 구입하여 식품첨가물인 이산화황, 타르색소와 인공감미료를 조사하였다. 건과류 채소류와 건포류 등 94건에서 이산화황을 조사한 결과 17건에서 $11.5{\sim}4,452.3\;mg/kg$이 검출되었으며, 식품공전의 기준을 적용한 결과 건조과실류인 대추채 2건이 각각 2,476.6 mg/kg, 4,452.3 mg/kg이 검출되어 부적합하였고, 중국산 건방울 토마토에서 88.9 mg/kg, 국내산 건호박에서 1,653.7 mg/kg이 검출되어 부적합 판정되었다. 또한, 주류 23건을 구입하여 인공감미료와 타르색소를 검사한 결과, 탁주에서 사용할 수 없는 인공감미료인 삭카진나트륨이 2건에서 0.4 mg/kg, 11.1 mg/kg이 검출되었으며, 합성 착색료로 주류에서 많이 사용할 가능성이 있는 황색5호 등 타르색소는 검출되지 않았다.

구전설화에 나타난 음식의 상징성 (Symbolism of Food Expressed in Oral Folk Tale)

  • Oral folk tale, which are organized stories that have been handed down to each district, includes a lot of mention about local specialties related to food. In folk tales consisting of linguistic signs, food plays a role in expressing not only instinct and desire but also order, exclusion and communication of human beings. Understanding the matters of concern or consciousness that community members of the time have put an emphasis on through food included in folk tales can be useful for better understanding the culture of the time and the food in folk tales can be a symbolic code. In this study, food mentioned in folk tales were classified into six groups, medicine, love, god, livelihood, provision and power focused on both inland and coastal regions that are referred to in most of the sixteen volumes of Korean Oral Folk Tales. In addition, the symbolic meanings of these groups were examined. This study can contribute to establishing the foundation of the globalization of the Korean food by determining the way Korea food can become a world class food. This study aims to reinterpret and combine culture and art with the food of Korea based on six symbolic meanings of food expressed in Korean Oral Folk Tales.

균류의 새로운 명명 규약과 일균일명 체계로의 전환 (Introductions of the New Code of Fungal Nomenclature and Recent Trends in Transition into One Fungus/One Name System)

  • 곰팡이의 명명을 규정하는 규약이 '국제식물명명규약(International Code of Botanical Nomenclature, ICBN)'에서 '국제 조류, 균류, 식물 명명 규약(International Code of Nomenclature for algae, fungi and plants, ICN)'으로 바뀌게 되었다(2011.7). ICBN에서 ICN으로 바뀌게 되면서 많은 변화가 있지만 가장 큰 변화는 곰팡이의 이중명명을 더 이상 허용하지 않는다(2013. 1)는 것이다. 새로운 이름을 가질 곰팡이는 이 규칙에 따라 명명하면 되지만 문제는 2013년 1월 1일 이전에 완전세대와 불완전 세대에 근거하여 두 개의 이름을 이미 가지고 있는 10,000-12,000개의 곰팡이의 경우이다. 우선 ICN에는 이에 대한 혼란을 막기 위해서 2013년 1월 1일 전에 이전의 명명규약에 의하여 보고된 학명은 유효성과 합법성을 유지한 채 우선권의 원칙에 따라 서로 경쟁한다는 조항을 추가하였다. 하지만 결국은 세대에 관계없이 하나의 곰팡이 이름을 사용해야 할 것이며 이에 따라 세계 균학계는 곰팡이 분야별 작업반 또는 위원회를 결성하는 등 바쁘게 움직이고 있다. 일균일명 체계로의 전환에 대한 배경, 경과, 그리고 향후 전망에 대하여 상술하였다. 이 외에도 전자출판이 유효출판으로 인정(2012.1)되게 되었고, 영어신종기술도 정당출판으로 인정되게 되었으며(2012. 1), 또한 신종의 학명과 필수정보를 공인정보저장소에 등록하는 것이 의무화 된다(2013. 1). 곰팡이의 새로운 명명규약과 일균일명 체계로의 전환에 대한 국제 균학계의 움직임을 국내에 한글로 쉽게 소개하였다.
