Gum류를 첨가한 우육 Patty의 품질 특성 (Quality Characteristics of Beef Patty Containing Gums)

  • In order to investigate the possibility of lwo fat meat products, beef patties were prepared with gums such as carrageenan, methyl cellulose, and xanthangum. The quality characteristics of beef patties were examined. Moisture contents of raw and cooked patties of control were lower than those of patties containing gums, and fat content was higher than those of containing gums. There was no significant difference in the protein contents of patties. In case of L-value(lightness) of raw patty, the control was higher than those patties containing gums. a-(redness) and b-value(yellowness) among patties were not significantly different. Cooking yield, fat retention, and water holding capacity of beef patties containing gums were higher than control beef patty, but salt soluble protein and gel strength were not significantly different. Significant difference did not exist among beef patties in hardness, but the chewiness and gumminess of patties containing gums were higher than control. In case of sensory evaluation, there was no significant difference among patties in aroma and palatability. Texture of control was higher than patties containing gums, and juiciness of control was higher than patties containing carrageenan.

  • The all pass filter generates a virtual q-axis voltage component with $90^{\circ}$ phase delay but the virtual q-axis voltage cannot detect the voltage depending on the phase of the grid voltage. To overcome the problem, q-axis voltage component is generated from difference between the current and previous value of d-axis voltage component in the stationary reference frame. However, the difference voltage between the current and previous value around the zero crossing voltage is not enough to detect the voltage sag. Therefore, the new detection scheme which can detect the sag around the zero crossing voltage is proposed.

개인의 모바일 정보격차가 모바일 인터넷의 인지적 가치 차이에 미치는 영향 분석 (An Analysis on the Impact of the Mobile Digital Divide on the Cognitive Value of the Mobile Internet)

  • 최근, 스마트폰의 보급으로 인해 모바일 인터넷의 사용량이 급격하게 증가되어 왔지만, 기존의 유선 인터넷에서 발견되었던 정보격차의 현상이 모바일 인터넷 환경에서는 어떠한 방식으로 진화하였는지에 대한 연구는 아직 진행되지 않았다. 과거 정보격차 연구에서는 주로 이용자들의 이용 환경만을 고려하여 통계적인 방법으로 접근하였지만, 본 연구에서는 이용자들의 이용 환경뿐만 아니라 이용자의 인지적 가치를 함께 고려하여 정보격차를 분석하였다. 이에 따라, 본 연구에서는 모바일 인터넷 환경에서 이용자들의 인지적 가치를 직접 설문하여 조건부가치측정법(Contingent Valuation Method, CVM)을 통해 추정하였고, 이러한 가치의 차이를 발생시키는 정보격차 요인이 무엇인지 분석하였다. 분석 결과, 국내 이용자들은 모바일 인터넷에 대해 월간 51,723원 만큼의 가치를 인지하고 있는 것으로 분석되었다. 또한, 기존 선행연구를 통해 정보격차 요인을 접근성, 역량성 및 활용성으로 분리하여 가치 차이를 분석한 결과 접근성으로 인해 31,878원의 차이가 발생되었고, 역량성은 7,736원, 활용성은 6,463원의 가치 차이를 일으키는 것으로 분석되었다. 특히, 접근성은 현재 국내 모바일 인터넷 환경에서 이용자의 인지적 가치 차이를 가장 크게 만드는 정보격차 요인인 것으로 분석되었다.

국내 시판중인 목재펠릿의 특성 (Characteristics of the Commercial Wood Pellets)

  • This study has been carried out to investigate the characteristics of the commercial wood pellets such as moisture content, heating value, ash content, and chemical component. The wood pellets from national forestry cooperatives federation and China were evaluated to see if they can be 1st or 2nd class of Korea standard. Indonesian pellet was estimated to be a 3rd class because of the heating value and high ash content. It is considered that there is a quality difference in wood pellets in accordance with the production nations. It could be originated from the difference of raw materials produced in different region.

치자 추출물이 쌀밥의 관능적 특성 및 부패미생물에 미치는 효과 (Effect of Water Extract of Gardenia jasminoides on the Sensory Quality and Putrefactive Microorganism of Cooked Rice)

  • The purpose of this study was to investigate the effect of water extract of Gardenia jasminoides (WEGJ) on the sensory qualities, color value and shelf-life characteristics (pH, total no. of Bacillus and TBA value) of cooked rice. The total color difference(ΔE) was increased when WEGJ was added. The sensory dualities of cooked rice added with WEGJ had no significant difference in color, taste and torture compared with control group. The pH value of cooked rice addeded with 250 ppm and 500 ppm of WEGJ was less declined compared with control group. WEGJ at the concentration of 250 ppm and 500 ppm had an antimicrobial activity and WEGJ at 500ppm showed an antioxidant activity in cooked rice.

쓰레기종량제에 따른 쓰레기의 특성 및 발열양 분석 (The Characteristics and Heating Values Analysis of Municipal Solid Wastes according)

  • This study was on the characteristics and heating values analysis of municipal solid wastes according to the volume- rate garbage collection system in Busan. Each waste sample was analyzed to obtain physical composition, proximate analysis, heating value, chemical composition. And the heating value were compared with those of the past waste collection system. The average physical composition of A.P.T. area was food waste 54.0~65.7% , while that of common residence was food waste 57.9~61.2% . The density of solid waste were largely different for site and the highest densities of waste was $399.6kg/m^{3}$ from Market. The low heating value of waste from residence site was 996.9kca1/kg~1, 238.1 kcal/kg which was lower than 1, 000kcal/kg~1, 800kca1/kg of the past wastes. These difference was mainly due to the difference of moisture content and the amount of vegetables.

  • The paper presents the design of a segmented type synchronous reluctance motor(SynRM) to increase its torque and power factor. The main feature of a segmented type synchronous reluctance motor is the flux barrier. Thus, the design process to find optimum value of various geometric parameters including flux barrier will be explained. Optimum value of each parameter is found where the d, q inductance difference and saliency ratio are maximized because these inductance characteristics are related to torque and power factor. Finite Element Analysis will be used to simulate motor characteristics. Analysis results of redesigned SynRM show higher saliency ratio over 10 and improved value of maximum power factor.

Modified Cubic Convolution Interpolation for Low Computational Complexity

  • In this paper, we propose a modified cubic convolution interpolation for the enlargement or reduction of digital images using a pixel difference value. The proposed method has a low complexity: the number of multiplier of weighted value to calculate one pixel of a scaled image has seven less than that of cubic convolution interpolation has sixteen. We use the linear function of the cubic convolution and the difference pixel value for selecting interpolation methods. The proposed method is compared with the conventional one for the computational complexity and the image quality. The simulation results show that the proposed method has less computational complexity than one of the cubic convolution interpolation.

  • In this paper an asymptotic numerical method named as Initial Value Method (IVM) is suggested to solve the singularly perturbed weakly coupled system of reaction-diffusion type second order ordinary differential equations with negative shift (delay) terms. In this method, the original problem of solving the second order system of equations is reduced to solving eight first order singularly perturbed differential equations without delay and one system of difference equations. These singularly perturbed problems are solved by the second order hybrid finite difference scheme. An error estimate for this method is derived by using supremum norm and it is of almost second order. Numerical results are provided to illustrate the theoretical results.

  • In this paper, a finite difference scheme for a two-point boundary value problem of 2nth-order ordinary differential equations is presented. The convergence and uniqueness of the solution for the scheme are proved by means of theories on matrix eigenvalues and norm. Numerical examples show that our method is very simple and effective, and that this method can be used effectively for other types of boundary value problems.
