Overhead and sub-irrigation of deep sea water to tomato seedlings reduced the height as 50% and 58% than control plants. In the same treatment with surface sea water and NaCl water, the reduced rate in tomato seedlings' height were 49% and 56% in overhead irrigation, and 47% and 57% in sub-irrigation, respectively. Most effective method for the inhibition of the growth of the seedling was sub-irrigation method, which supplied water through the roots. No significant difference was observed on fresh weight of the upper part of tomato and cucumber seedlings, though the sub-irrigation reduced the fresh weight than the overhead irrigation. The reduced rate of fresh weight of seedlings by overhead irrigation was by 38% and sub-irrigation by 49% as compared to control. Similarly dry weight of upper and under soil parts of seedlings showed same trend of results thereof as fresh weight. This result can be traced to reduction of growth caused by salts in the water. In stem diameter of seedlings no significant difference was observed between two irrigation methods, even though both deep sea and NaCl water reduced stem diameter, as compared to control water. Overhead irrigation can be chosen by seedling producers because of better seedling quality by using TH ratio. Seedling compactness were not noticed in both the overhead and sub-irrigation. Sub-irrigation was found more effective method far the inhibition of height and compactness of tomato seedlings. Higher the concentration of NaCl, deep sea, and surface sea water, lesser the growth in height, fresh and dry weight, stem diameter, and leaf area was obtained. No significant difference was found, though sub-irrigation suppress the growth of seedlings.
To investigate the effect of organic acids on suppression of fishy odor, the change of the odor and the remaining amount of trimethyamine (TMA), selected as the representative component of fishy odor in clam pickle (15.5% NaCl) were examined by sensory evaluation and gas chromatography. The fishy odor linearly decreased as the amount of vinegar increased at ${\alpha}=0.01$, but there was no significant difference of fishness score for the changes of storage period and kinds of acid. Overall acceptability score was found to be the best when 8 ml vinegar added to 100g clam pickle. The remaining amount of TMA showed the tendency to decrease as the amount of acetic acid and storage time increased and kinds of acid were changed in order of acetic, malic and citric acid. However when $4\;{\mu}l/ml$ acetic acid (=8 ml vinegar/100g clam pickle) was added, the percentage of the remaining amount of TMA showed little decrease from about 95% for 72 hours of storage time. From the results of sensory evaluation and gas chromatography, it was considered that acids have the effect on suppression of fishy odor by producing non-volatile salts by combining with TMA chemically and that the effect of acids on suppression of fishy odor is mainly due to the masking effect at the concentration commonly used.

This study compared quality changes among brined baechu cabbages manufactured by various salting methods and types of salt. Brine, brine and dry salting, and dry salting were used as salting methods. When baechu cabbages were salted by dry salting method, the salinity of brined baechu cabbage increased compared to salting by other methods, even though the quantity of salt used was small. In addition, salinities of leaf and stem were relatively equal among brined baechu cabbages using dry salting method compared to those of other methods. When baechu cabbages were salted using dry method at different salt concentrations (3%, 5%, and 10% of weight of baechu), brined baechu cabbage showed suitable salinity (1.41~1.42%) at 5% salt concentration. Among brined baechu cabbages prepared using dry salting method with different types of salt (purified salt, solar salt, and bamboo salt), bamboo salt produced the highest salinity. Brined baechu cabbages with solar salt and bamboo salt showed significantly lower counts of total aerobic bacteria and higher counts of lactic acid bacteria than others. These results indicate that baechu cabbage can be salted equally, and the amount of salt used can be reduced when baechu cabbage is salted using dry salting method. In addition, using solar salt and bamboo salt can increase the quality of brined baechu cabbage.
The optimum annealing conditions of corn starch slurry were studied for RS4 type resistant starch production by phosphorylated cross-linking. When a corn starch slurry was cross-linked by using phosphate salts (STMP/STPP mixture) in the presence of 0.9%, 1.2% and 1.5% NaOH/st.ds, a high concentration of NaOH resulted in a rapid increase of the RS contents at the early reaction stage. However, similar RS contents were obtained after 12 h of cross-linking regardless of NaOH concentrations. The annealing treatment was conducted under various conditions such as pH between 2-10, temperature $40-60^{\circ}C$, time 0-14 h followed by phosphorylated cross-linking. The lower slurry pH was for the annealing treatment, the higher RS contents were obtained after cross-linking. When the slurry annealed for various period of time and temperature, a maximal amount of RS was formed after 2 h of annealing at $50^{\circ}C$ of annealing temperature of the starch slurry (pH 2.0). Therefore, an optimal annealing conditions at pH 2.0 and $50^{\circ}C$ for 2 h were proposed under the cross-linking conditions of sodium sulfate 10%/st.ds, NaOH 1.2%/st.ds and 12 h of the reaction time. The RS contents were linearly increased with the increase of phosphate salt addition. The RS4 prepared under the optimal conditions contained RS 72.3% and its phosphorus content was 0.36%/st.ds, which was below the limit (0.4%/st.ds) of modified starch by Korea Food Additives Code.
Nutritional and physio-chemical conditions for mycelial growth and fruit-body formation of Pleurotus florida were determined in synthetic media. Mannitol and sucrose were good sugar substances for the mycelial growth and fruit-body formation whereas less mycelial growth and no fruit-body formation was obtained with arabinose, lactose and inulin. The optimum concentration of mannitol was about 2%. Peptone as a nitrogen sources resulted in a rapid mycelial growth and fruit-body formation with higher yield, but nitrite-nitrogens inhibited the mycelial growth. The higher yield was obtained with 0.2% peptone. Among the vitamins used, the greatest mycelial growth and fruit-body formation brought about by thiamine and folic acid. $KH_2PO_4$ and $MgSO_4$ at 0.2% and 0.02%, respectively, were effective for the mycelial growth and fruit-body formation, but other inorganic salts used were ineffective. The optimum temperature for mycelial growth and fruit-body formation were $25^{\circ}C$ and $20^{\circ}C$, respectively, and light intensity of $100{\sim}500\;lux$ and pH 6.0 appeared to be effective.

As a substitute for CCA, which is inhibited due to its environmental pollution and human harmfulness, and CuAz and ACQ with a high cost, okara-based wood preservatives were formulated with okara hydrolyzates using copper sulfate and/or borax as a metal salt. The efficacy of the preservatives and X-ray microanalysis of wood specimens treated with the preservatives were examined to confirm the potential of the okara-based wood preservatives. Most of the preservatives showed excellent decay resistance against brown-rot fungi, Postia placenta and Gloeophyllum trabeum. The efficacy was improved when the acid concentration and temperature used for the hydrolysis of okara increased. In addition, when borax was added into copper sulfate/okara hydrolyzates preservative formulations, any decay was not found in the specimens. From the microscopic observation of the specimens treated with okara-based wood preservatives, it seems that okara is contributed to the fixing of metal salts in wood blocks. Therefore, it is speculated that okara-based wood preservatives can effectively protect wood against fungal attack as CuAz, and that the preservatives are sufficient to use as an alternative wood preservative of CCA, ACQ and CuAz.
The effects of MS salt strength, sucrose, and cultural conditions on bulblet formation and growth were investigated to optimize the conditions for micropropagating bulblets from in vitro bulb scales of Lilium Oriental Hybrid 'Casa Blanca'. There was no difference on bulblet formation in the range of 1/2~2 $\times$ strength of MS salt, but it was inhibited remarkably in 3 $\times$ strength of MS salt. The growth of regenerated bulblets was most stimulated on MS basal medium. Favorable bulblet formation and its growth from bulb scales were achieved when grown on the media with 1 : 2 or 1 : 3 in the ratio of NH$_4$^+ : NO$_3$^- , as well as on MS basal medium (NH$_4$^+ : NO$_3$^- = about l : 2). Therefore, MS basal medium was very suitable for bulblet formation and growth from bulb scales. Bulblet formation was inhibited but its growth was stimulated with increase sucrose concentration in the medium. The growth of regenerated bulblets was very effective on the media with 9~12% sucrose. Addition of activated charcoal (AC) to the medium inhibited bulblet formation from bulb scales, but enhanced the growth of regenerated bulblets. Especially, the medium containing 1 g/L AC was most effective on the growth of bulblets. No difference was found on bulblet formation and growth from bulb scales under light and dark conditions. In vitro micropropagation of L. Oriental Hybrid 'Casa Blanca' was supposed very reasonable to enhance the growth of the bulblets after forming of bulblets from in vitro bulb scales, and then, subculture the bulb scales from the grown bulblets on MS medium with 9% sucrose and 1 g/L AC.

This experiment was carried out to study the preparations of red pepper oleoresin, the effects of pH and heat treatment on the stabilities of capsanthin and capsaicin in oleoresin state, and the interacting effects of ascorbic acid, metal salts and EDTA on the stabilities of capsanthin in the oleoresin-linoleate aqueous model system. The results were as follows: 1. Acetone was the most effective solvent to extract capsanthin and capsaicin from red pepper powder. The yield of oleoresin extracted with acetone was 14.27%. 2. Capsaicin was more stable at high temperature than capsanthin in oleoresin state. Capsanthin and capsaicin in oleoresin state were comparatively stable in the range (ron) pH 3 to pH 8. 3. Ascorbic acid acted as a prooxidant on the capsanthin oxidation reaction at concentrations up to $10^{-3}M$, but acted as an antioxidant at $10^{-1}M$. 4. The addition of $Cu^{+2}M$ and $Fe^{+3}M$ ions at all concentration increased the prooxidant activity on the degradation of capsanthin in oleoresin state. 5. EDTA showed a strong antioxidation the stability of capsanthin in oleoresin state.
Five strains of Armillaria mellea were collected from the forest of Chonbuk province and isolated from the tissue of fruit bodies. Nutritional and environmental characteristics of mycelial cultivation and rhizomorph production of Armillaria mellea isolated were determined in sawdust media, woody inocula and soils. The sawdust media of Styphnolobium japonicum, Culhamia simplex, Populus monilifera and Populua davidiana were proper for mycelial growth. The ranges of optimum pH, temperature and moisture content for mycelial growth were in the range of $4.5{\sim}5.0$, ${\sim}25^{\circ}C$ and $65{\sim}70%$, respectively. Among the various additives and inorganic salts added, 10% rice bran and 3% $CaCO_3$ were effective to mycelial growth. The woody inocula of Styphnolobium japonicum, Culhamia simplex, Quercus acutissima and Quercus veriabilis were proper for rhizomorph production. The ranges of optimum pH, moisture content and temperature for rhizomorph production were in the range of $4.5{\sim}4.9,$$45{\sim}55%\;(w/w)$ and $20{\sim}24^{\circ}C$, respectively. Distribution of rhizomorphs in soil was varied with depth, but the main concentration occurred in the range of $7.5{\sim}12.5\;cm$. They were rarely found below 25.0 cm.

Potassium added with bamboo salt showed better antioxidative effects than bamboo salt, solar salt, or purified salt. It also showed inhibitory effects on the mutagenicity of MNNG (N-methyl-N-nitro-N-nitrosoguanidine) in a Salmonella Typhimurium TA100 tester strain. At concentrations of 1.25 and 2.5 mg/plate, potassium bamboo salt and bamboo salt showed weaker co-mutagenicity effects than either purified salt or solar salt, respectively. Anticancer effects of salts were evaluated using MTT assay in HCT-116 human colon carcinoma cells. At a 1% salt concentration, the growth inhibitory rate of potassium bamboo salt was 54%, higher than that of 1 time baked bamboo salt (36%). However, purified salt and solar salt showed relatively lower inhibitory effects of 19% and 23%, respectively. To determine the inhibitory mechanisms of potassium bamboo salt, the expression levels of Bax and Bcl-2 genes in HCT-116 cells were determined by RT-PCR. Potassium bamboo salt significantly increased Bax and decreased Bcl-2 expression levels unlike bamboo salt, purified salt, and solar salt (p<0.05). Therefore, addition of potassium to salt decreased co-mutagenicity and increased in vitro antioxidative and anticancer effects.
