서양 요리 품질이 고객 가치, 고객 만족, 고객 충성도에 미치는 영향 - 호텔 서양 조리 레스토랑 중심으로 - (Effects of Western Culinary Quality on Customer Values, Customer Satisfaction and Customer Loyalty)

  • This paper aims to examine the effects of western culinary quality on customer values, customer satisfaction and customer royalty. To examine hypotheses, we collected 217 questionnaires from 20 western restaurants in Seoul. The results using a structural equation model are customers' perception of western culinary quality influences significantly customer loyalty through customer values and customer satisfaction. This result indicates that restaurant managers should improve the levels of western culinary quality, customer values, and customer satisfaction for customer loyalty.

  • This study performed a analysis of customer purchasing behavior in family restaurant. The type of family restaurant marketing activity was classified to free gift promotion, special menu promotion, discount promotion, membership program, coupon, co-marketing promotion were assumed to stimulus. The awareness of stimulus and exposure, attention, comprehension process was assumed to attraction and the contribution of stimulus was assumed to satisfaction on this study. A sample of study is assigned women customers are core customer group not family restaurant but all of industry. The study has showed co-marketing is the most outstanding marketing activity in family restaurant all of aspects and the awareness and attraction of co-marketing is higher than satisfaction. A result of t-test for awareness and attraction of discount and coupon promotion is attended. Attraction of them is higher than awareness. But satisfaction of them is lower than attraction means that family restaurants should makes an effort to develop the customer satisfaction to ensure customer loyalty through the discount and coupon promotion. On one-way ANOVA of awareness, attraction and satisfaction by age, discount and coupon promotion is related to it Speciality as low age as sensitive in awareness, attraction, satisfaction of discount promotion.

레스토랑 실내의 색채와 배경 음악의 조화가 고객의 감정적 반응 및 행동 의도에 미치는 영향 (The effect of restaurant in-store color and music congruency on customer's emotional responses and behavioral intentions)

  • 본 연구는 레스토랑의 실내 색채와 배경 음악 및 레스토랑 분위기의 일치성이 고객의 감정적 반응 및 행동의도에 미치는 영향을 알아보고자 하였다. 서울 및 경인 지역 20~30대 400명을 대상으로 웹 서베이를 실시하였다. 색채와 음악의 앙상블 효과를 확인하기 위해 3D studio MAX를 활용하여 high-stimulus(exciting) 자극물과 low-stimulus(calm) 자극물을 제작하여 3D 가상현실 레스토랑 시뮬레이션 자극물로 활용하였다. 통계 분석은 SPSS/WIN 18.0을 사용하였고, 신뢰도 분석, 요인 분석, 회귀 분석 등을 실시하였다. 요인 분석 결과 감정적 반응은 긍정적 감정, 부정적 감정의 2개 요인으로 분석되었다. 만족도와 충성도는 1개 요인으로 분석되었다. 크론바하 알파값이 조사 도구의 신뢰도 분석을 위해 사용되었으며, 0.7 이상을 나타내어 적합하게 나타났다. 색채와 음악이 레스토랑 분위기와 어울리는 정도는 긍정적, 부정적 감정에 유의한 영향을 미쳤다. 긍정적 감정과 부정적 감정은 만족도에 유의한 영향을 보였으며, 만족도는 충성도에 유의한 영향을 나타내었다. 배경음악의 어울림이 실내 색채의 어울림보다 긍정적 감정에 더 큰 영향을 미쳤으며, 실내 색채의 어울림이 배경음악의 어울림보다 부정적 감정에 더 큰 영향을 미치는 것으로 나타났다. 본 연구 결과는 레스토랑 분위기와 색채, 음악의 조화에 대한 연구의 기초 자료로 활용될 수 있을 것으로 기대된다.

남해안 지역 음식점들의 서비스 품질, 지각된 가치와 만족도의 평가 (Measuring the Service Quality, Perceived Value and Satisfaction in Namhaean Area Restaurants)

  • The purpose of this study was to measure the effects that service quality, perceived value and satisfaction have on loyalty in Namhaean area restaurants. A total of 273 questionnaires were completed. The structural equation model was used as an analysis method to measure the causal effects of service quality, perceived value, satisfaction and loyalty. The results demonstrated that the structural analysis result for the data was an excellent model fit. The effect of service quality on value, the effect of perceived sacrifice on value, the effect of service quality on satisfaction, the effect of value on satisfaction, and the effect of satisfaction on loyalty were statistically significant. Moreover service quality had an indirect effect on satisfaction through perceived value, and service quality also had an indirect effect on loyalty through perceived value and satisfaction. Perceived value had an indirect effect on loyalty, and an effect through satisfaction. Perceived sacrifice had an indirect effect on satisfaction through perceived value, and it also had an indirect effect on loyalty, and an effect through satisfaction. Further study is still required, and should be aimed at identifying the causal mechanisms of constructs, such that restaurant managers might be better prepared to offer value and satisfaction to their customers.

프랜차이즈 햄버거전문점의 브랜드자산과 행동의도와의 관계에서 국내외 브랜드의 조절효과 검증 연구 (The Moderating Effects of Local & Global Brand on the Relationship between Brand Equity and Behavioral Intention in Franchised Hamburger Restaurant)

  • 본 연구는 프랜차이즈 햄버거전문점의 브랜드자산과 행동의도와의 관계에서 국내외 브랜드의 조절효과를 연구하고자 한다. 따라서 다음과 같은 연구 과제를 두었다. 첫째, 햄버거전문점에서의 브랜드자산 요인을 분석한다. 둘째, 브랜드자산이 행동의도에 미치는 영향을 연구한다. 셋째, 국내외 브랜드가 브랜드자산과 행동의도와의 관계에서 조절역할을 확인한다. 본 연구를 위한 모집단은 '80년대부터 지속적으로 브랜드자산을 형성해온 롯데리아, 버거킹, KFC, 맥도널드를 이용해 본 충청지역 대학생을 대상으로, 300부를 배포하여 최종적으로 253부를 분석 자료로 사용하였다. 연구결과는 첫째, 햄버거전문점의 브랜드자산 요인은 브랜드 인지, 브랜드 이미지, 브랜드 충성도의 3요인으로 분석되었다. 둘째, 브랜드 충성도, 브랜드 이미지, 브랜드 인지의 순으로 행동의도에 유의한 정(+)의 영향을 미쳤다. 셋째, 브랜드자산이 행동의도에 미치는 영향관계에서 국내외 브랜드는 조절작용을 수행하였다. 본 논문은 대형 업체 4곳으로 국한된 표본의 한계점을 지녔기에, 다양한 업체를 연구 대상으로 확대할 경우 의미 있는 결과를 기대할 수 있다.

외식프랜차이즈의 서비스 가치가 인지적 태도, 정서적 태도, 그리고 충성도에 미치는 영향 (Effects of Service Value on Attitude, and Loyalty in Food-Service Franchise)

  • Purpose - The recent franchise industry is rapidly developing. Some franchisees have a low barriers to entry and competition among companies is intensifying. In this dynamic competitive environment, companies need to focus on customer preferences, quality, and technical interfaces to gain competitive advantage. As a result, companies are required to measure the performance of service values in order to provide differentiated services from competitors. In the franchise industry, customer experience marketing of service values will enable companies to create new businesses. Franchise firms should explore a variety of services to increase service value and reduce failures. Research design, data, methodology - The questionnaire of this study was based on the previous research. Surveys were conducted on panels of online surveys. Surveys were conducted on the panel who had visited the restaurant franchise within the past month. The survey was conducted for about 7 days from February 13, 2019 to February 19, 2019. Total 300 samples, 293 were used in the analysis except for seven unfair questionnaires. Results - The findings of this study are as follows: Emotional, monetary, and reputation values have positive effects on cognitive and affective attitudes. Quality value and behavioral value did not effect cognitive attitude and affective attitude significantly. In addition, affective attitude has positive effect on loyalty, but cognitive attitude did not significant effect on loyalty. Conclusions - First, food-service franchise company should develop a service that enables customers to use the store conveniently. We need to develop a comfortable environment for our customers and provide intangible services. Second, food-service franchise company should provide a reasonable price service. Food-service franchise company needs to sell a high quality menu at a reasonable price to generate profits. Third, food-service franchise companies need to strategically respond to their reputation. In other words, food-service franchise company needs to constantly monitor the reputation of its customers and respond appropriately to market conditions. Fourth, food-service franchise company needs to develop a service method capable of emotional interaction with customers. Food-service franchise firms need to develop ongoing service methods and educate their staff.

경영자의 인적자원관리에 따른 고객만족, 고객충성도 그리고 재무성과의 관계에 관한 연구: 한식당을 중심으로 (A Study on the Relationships among an Executive's Human Resources Management, Customer Satisfaction, Customer Loyalty, and Financial Performance: Focusing on Korean Traditional Restaurants)

  • 본 연구의 목적은 한식당 경영자의 인적자원관리수행 수준에 따라서 고객만족(제품만족, 서비스만족)과 고객충성도에 어떠한 차이가 있는지 살펴보고, 고객만족이 고객충성도에 어떠한 영향을 미치는지 살펴보고자 하였다. 또한, 고객충성도와 재무성과 간의 어떠한 연관성이 있는지 살펴보고, 경영자의 인적자원관리와 재무성과 간의 어떠한 연관성이 있는지 살펴보는 것이다. 조사기간은 2012년 1월 2일부터 1월 17일까지 15일 동안 점심시간과 저녁시간에 진행되었다. 객단가 12,000원 이상의 대구, 경북지역 15개 한식당을 대상으로 실시하였고, 경영자 15부와 고객 336부가 최종분석에 사용되었다. 분석결과, 한식당 경영자의 신규직원교육 및 합리적인보상에 대한 인적자원관리수행 수준이 높은 경우 고객들이 지각하는 제품만족과 서비스만족수준이 유의하게 높은 것으로 나타났고, 신규직원채용, 신규직원교육, 업무성과평가에 대한 인적자원관리수행 수준이 높은 경우 고객들이 지각하는 충성도의 수준이 유의하게 높은 것으로 나타났다. 또한, 제품만족과 서비스만족은 고객충성도의 유의한 영향을 미치는 것으로 나타났으며, 충성도와 재무성과는 유의한 관련성이 있는 것으로 나타났다. 아울러 경영자의 인적자원관리와 재무성과 간에도 유의한 관련성이 있는 것으로 나타났다.

푸드테라피와 서비스품질이 긍정적 감정 및 브랜드충성도에 미치는 영향: 대구·경북지역 한식뷔페레스토랑 고객을 중심으로 (Effects of Service Quality including Food Therapy Element on Positive Emotion and Brand loyalty: Focusing on Daegu-Gyeongbuk Hansik Buffet Restaurant Customers)

  • 본 연구에서는 푸드테라피와 서비스품질이 긍정적 감정 및 브랜드 충성도 간의 관계를 살펴보고자 하였다. 푸드테라피와 서비스품질이 긍정적 감정에 미치는 영향을 살펴보고, 긍정적 감정이 브랜드 충성도에 미치는 영향을 살펴보았으며, 푸드테라피와 서비스품질이 브랜드 충성도에 미치는 간접효과를 살펴보고자 하였다. 본 연구의 목적을 달성하기 위하여 한식뷔페레스토랑에 방문하는 고객들의 직업 비율에 의한 할당 표본추출을 실시하였다. 조사는 2018년 7월 1일부터 7월 25일까지(25일간) 설문조사를 실시하였고, 전체 850부를 배포하여 회수된 설문지 805부에서 불성실한 설문지 19부를 제외한 786부가 최종분석에 사용되었다. 분석결과, 음식품질, 접점서비스, 신체적테라피, 심리적테라피는 긍정적 감정에 유의한 영향을 미치는 것으로 나타난 반면, 서비스환경은 유의하지 않았다. 또한, 긍정적 감정은 충성도에 유의한 영향을 미치는 것으로 나타났으며, 음식품질, 접점서비스, 신체적테라피, 심리적테라피는 충성도에 유의한 간접효과가 있는 것으로 나타났다. 본 연구를 통하여 푸드테라피 요소가 레스토랑 관련 연구에서 충성도를 향상시키는데 얼마나 중요한 역할을 하는지에 대해 밝혔다는 측면에서 의의가 있다.

An Application of Smith's Marketing Ethics Sequential System Model to Generation Z Consumers: A Case Study of Hotpot Restaurant Chains in China

  • This study attempts to discover a differentiated service strategy for the hotpot restaurant industry from the perspective of Chinese Generation Z customers, as well as to further explore the inner needs of Chinese Generation Z to make practical implications for discovering the method of gaining their satisfaction and loyalty. This paper employs questionnaires to collect analytical data and through a case study to produce company strategies. Smith's Marketing Ethics Sequential System Model (SMESSM) is introduced in this paper for the decision of whether the case study company Haidilao Hot Pot should make a new strategy on service based on Generation Z's consuming behavior. The findings of this study demonstrate that hotpot restaurant must differentiate their services for Generation Z from older generation customers to gain a sustainable development of the hotpot business. Proper differentiated service will not only improve Generation Z's dining experience but also reduce costs. This paper is the first to discuss differentiated service strategy in the hotpot restaurant business from the perspective of Generation Z customers. And a Chinese experience of SMESSM for practical use is introduced in this paper, which enriches the relevant implications for future research on business strategy.

프랜차이즈 호텔의 LMX가 종업원의 직무스트레스, 직무역할성과, 그리고 충성도에 미치는 영향 (Effects of LMX on Work Stressors, Work Role Performance, and Employee Loyalty in Franchising Hotels)

  • Purpose - In hotel industry, quality of leader-member exchange(LMX) relationship is very critical, because it impacts on the employee's work attitude and behaviors. Thus, this research examines the effect of LMX on employee loyalty in the context of hotel business and identifies mediating roles of work stressors, work role performance in the relationship between LMX and employee loyalty. This research suggests the guidelines for how hotel leaders should manage their employees and build employee loyalty that improve management and business performance. Research design, data, and methodology - This study tests the structural relationship between LMX, work stressors, work role performance, and employee loyalty. Work role performance divide into three sub-dimensions such as individual task proficiency, individual task adaptivity, and individual task proactivity. In order to examine the purposes of this research, research model and hypotheses were developed. All constructs were measured with multiple items developed and tested in the previous studies. The data were collected from 113 franchise hotel employees and were analyzed using SPSS 22.0 and SmartPLS 3 program. Result - The findings of this research are as follows. First, leader-member exchange(LMX) have significant positive impacts on work stressors, work role performance, and employee loyalty. Second, work stressors have significant negative impacts on work role performance and employee loyalty. Third, work role performance has significant positive impact on employee loyalty. Conclusions - The outcomes of this research indicate that hotel leaders should focus on the dyadic relationship with their employees how to improve employee productivity through LMX relationship. In turn, the quality of this relationship influences employees's work attitudes and behaviors. As a result of increasing job demands in hotel business which relies heavily on human resources, the hotel leader must find ways to prevent or reduce stressors and associated strains. If hotel employees perceive the high quality of LMX relationship, they improve their work role performance which influences loyalty. Therefore, the hotel leaders should develop monetary or non-monetary reward system for the employees and, make an efforts to have unique social exchange relationships with employees.
