The purpose of this study was to assess the nutrition education and training needs as a basis for program planning for day care providers. A sample of 239 day care teachers responded to a questionnare assessing demographic characteristics, nutrition education experiences, and measuring the level of basic knowledge of food & nutrition. Menu planning was added to the questionnarie for 158 day care center directors. The results of this study can be summarized as follows: 1) majority(92.5%) of day care teachers and 74.1% of day care directors were interested in receiving nutrition education and training programs. 2) The topics generating the greatest interest for day care teachers were good food habits, food preparation & meal planning and food sanitation. 3) As a result of measuring the level of basic nutrition knowledge, day care teachers possessed the moderate amount of knowledge about five basic food groups, cholesterol, protein containing food, fat, while they possessed the poor knowledge about vitamin and calorie. 4) Day care teachers and directors possessed a certain level of knowledge about what the good snacks are and how to teach the unbalanced diet oriented children, while they possessed a low level of knowledge about children's nutrition requirement.
This study evaluated the satisfaction and healthy eating index of nutrition-plus program providing nutritional supplements to pregnancy, lactating women, infant and children. This program was carried out at Public Healthcare Center, Seodaemun-gu in Seoul from February 2014 to June 2014. The subject selected among applicants for low income family financing of the government included 159 subjects. There was no statistically significant difference for degree of satisfaction with supplementary food by age, but the degree tends to get higher at lower age. Degree of satisfaction with supplementary food by the duration for participation was shown higher as the duration gets longer. For questions of 'Do you check nutrition label?' and 'Do you preserve food as described at food label?' in healthy eating index evaluation, the scores appeared higher at younger age group as they check the nutrition label more. Also as the duration for participation gets longer, the scores appeared higher which can be interpreted as effect of nutrition education from Nutrition-Plus. Frequency of having breakfast gets lower at higher age of subjects. And it gets higher as the duration for participation gets longer even though that there's no difference between '3 to 4 months' and '5 to 8 months' of the duration of participation. For evaluation of food security in recent 1 year, 86.8% of subjects responded 'Food sufficiency' and 'Enough but not always the kinds of food we want', and there is no difference by age and the duration of participation. As a result of this research, it is shown that the subjects of nutrition support project are relatively satisfied with the support. And healthy eating index gets improved as the duration of participation gets longer which can be considered as effect of nutrition education. It seems to be necessary to keep nutrition education as well as food support so to perform food life education on appropriate purchase and consumption of food.
The purpose of this study is designing a daily diet according to the nutrition by using genetic algorithms. The ratio of the amount of nutrients needed for each individual is different. For example, people who want to lose, maintain or gain the weight need different amount of nutrition and ratio. In addition, the nutrition should be different between the age groups such as child, youth and senior. So, it is important for each person to individualize content of nutrition that they need not the nutritional standard table. Thus, in this study, by using the genetic algorithm, our study is about the program that can make a daily diet which is optimized for individual. The program has the information of main dish, soup and side dish that we entered before. And person who uses the program can see the daily diet which is optimized related by nutrition what the person entered before. Generally, it is really difficult to design a meal by considering all of the nutrition at home because there are a lot of things to be considered. Therefore, the goal of our study is to make the program what can make a balanced daily diet at home.
This study was performed to investigate the effectiveness of nutrition education and exercise intervention in a weight management program. The subjects were 24 obese women whose body mass index (BMI) was over $25kg/m^2$. Nutrition education was given once a week, and subjects did swimming three times a week. The program lasted for 12 weeks. Nutrient intakes were assessed by 24 hour recall method. Also food habits, dietary behavior and nutrition knowledge were examined by self-administered questionnaires before and after the weight control program. Height, weight, body composition and blood composition were measured before and after the weight control program. Over the 12 weeks in the weight control program, body weight significantly decreased from 69.7kg to 65.8kg(p<0.001). Body fat and BMI also significantly decreased(p<0.001). Cholesterol level significantly decreased at p<0.001 and blood sugar also significantly decreased (p<0.05). After taking nutrition education, dietary behavior and nutritional knowledge scores increased, energy intakes decreased from 1426.5kcal to 1408.5kcal and calcium from animal products significantly increased(p<0.05). A negative correlation between nutrition knowledge and BMI(r=-0.42) existed(p<0.05). A negative correlation of eating behavior with EER(r=-0.48) showed(p<0.05). We concluded that combined nutrition education and exercise was an optimal method for reducing weight.
This study was conducted to investigate actual conditions and needs of nutrition education in order to develop a nutrition education program for pregnant women in health centers. The questionnaires were mailed to 245 health centers and 146 questionnaires were returned. Most health centers(76%) had nutrition education program for pregnant women. About 63% of supervisors were the nurses and 43% of educators were dieticians. The teaching method which was used most frequently was lecturing(34%). Teaching material which was used most frequently was material brought by invited speakers(31%). The subjects of education were the relationship between nutrition for pregnant women and the baby's health(19%), dietary guide and directions for pregnancy(19%), nutrient supplement for pregnant woman(17%), weight gain during pregnancy(16%), abnormal symptoms of pregnancy and health(15%), pregnancy complications and health(13.0%), and others. These subjects were the same ones which educators thought were needed in education. Important success factors in education were giving accurate information and guide and practice, while failure factors were lack of proper space, lack of practice, and others. Lack of a standardized nutrition education program was the biggest barrier to running a program. The subjects which were taught and the needs in nutrition education were significantly different according to respondents' age, educational level, job position, and residence of health center. Therefore, a standardized program, proper space for practice, and professional educators are needed to promote the effectiveness of nutrition education.
For the purpose of developing ‘Web-Based Nutritional Education Program’, this study did instructional analysis, analysis of entry behaviors and learner characteristics to select instructional contents for nutritional education program for junior/senior high school students. Survey questionnaires were distributed from October 21, 2002 to October 26, 2002 to a total of 564 junior/senior high school students in Seoul. The total number of questionnaires collected and used in our study was 479, which is 84.9% of the total questionnaires distributed. As a result of the curriculum analysis of ‘Technology-Home economics’, subjects related with ‘food and nutrition’ in the 7$^{th}$ educational course study result, lessons including the contents of food and nutrition were ‘nutrition and meal of adolescent’ in 7th grade, ‘family meal management’ in 9th grade and ‘practice of home life’ in 10th grade. According to the curriculum analysis, ‘nutrition’ and ‘food’ were chosen for the superior subjects of nutrition education program and four subordinate subjects per superior one were developed. Then, entry behaviors and learner characteristics were analyzed: life characteristics, internet usage, anthropometrics data and nutritional knowledge. Students were interested in using computer and preferred passive activity to dynamic activity. According. to the analysis of internet usage, WBI for students should composed active parts such as game, moving image, immediate reply and follow-up bye-mail, bulletin board and com- munity activity. Students’ BMI were in normal range but they were lacked nutritional knowledge. We wrote performance objectives that were specific behavior skills to be learned, the conditions under which they must be performed and the criteria for successful performance. The next step for developing the WBI nutrition education program would be based on the results mentioned above.
Purpose: This study aimed to investigate the effect of a video-based enteral nutrition education program using QR codes on the perception, knowledge, and performance of enteral nutrition for intensive care unit (ICU) nurses. Methods: This was a quasi-experimental study with a nonequivalent control group pre- and post-test design. The participants were nurses working at six ICUs within a single university hospital, with 55 nurses in the experimental group and 55 nurses in the control group. The video-based enteral nutrition education program using QR codes was repeated three times to the experimental group. Results: There was a statistically significant pre-post difference in perceptions between the two groups (Z = -4.04, p < .001) with 2.00 points (± 5.57) for the control group and 7.89 points (± 7.95) for the experimental group, in knowledge (Z = -7.48, p < .001) with 0.02 points (± 1.91) for the control and 4.18 points (± 2.33) for the experimental, and in performance (Z = -2.20, p = .028) with 0.06 points (± 3.96) for the control and 2.00 points (± 5.14) for the experimental. Conclusion: The video-based enteral nutrition education program using QR codes was effective in improving the perceptions, knowledge, and performance of enteral nutrition among ICU nurses. This enteral nutrition education program using QR codes in clinical education can contribute to evidence-based nursing practice by improving perceptions and knowledge of enteral nutrition.

BACKGROUND/OBJECTIVES: Dietitians frequently use nutrition education tools to facilitate dietary counselling sessions. Nevertheless, these tools may require adaptation to keep pace with technological advancements. This study had a 2-fold purpose: first, to identify the types of nutrition education tools currently in use, identify their limitations, and explore dietitians' perspectives on the importance of these tools; second, to investigate the features that dietitians prefer in digital nutrition education tools. SUBJECTS/METHODS: A semi-structured face-to-face interview was conducted among 15 dietitians from selected public hospitals, primary care clinics, and teaching hospitals in Malaysia. Inductive thematic analysis of the responses was conducted using NVivo version 12 software. RESULTS: Most dietitians used physical education tools including the healthy plate model, pamphlets, food models, and flip charts. These tools were perceived as important as they facilitate the nutrition assessment process, deliver nutrition intervention, and are time efficient. However, dietitians described the current educational tools as impersonal, outdated, limited in availability due to financial constraints, unhandy, and difficult to visualise. Alternatively, they strongly favoured digital education tools that provided instant feedback, utilised an automated system, included a local food database, were user-friendly, developed by experts in the field, and seamlessly integrated into the healthcare system. CONCLUSION: Presently, although dietitians have a preference for digital educational tools, they heavily rely on physical nutrition education tools due to their availability despite the perception that these tools are outdated, impersonal, and inconvenient. Transitioning to digital dietary education tools could potentially address these issues.
This study is a part of a software program which was developed for efficient foodservice management of elementary school foodservice. The foodservice management system consists of general information, manu planning, inventory management, and printing of results. Advantages of software programs developed in this study, compared with previous elementary school foodservice programs are as follows. 1) This program can be used to foodservice and nutrition management at the same time. 2) The screen is designed as a homepage for convenience. 3) This program is useful in cycle menu planning. 4) Seasonal menu could be reflected in menu. 5) This program has the results printing function. 6) Data can be revisable. 7) This program can be used to middle and high school.
Teachers who are responsible for children's education are very important to help the school age children to have right nutrition knowledge, they are confronted with difficulties to teach due to the lack of nutrition knowledge as well as materials that can be easily understood by children. The purpose of this study was to look into the basic knowledge of elementary school teachers on nutrition. The elementary school teachers investigated didn't get good marks in nutritional knowledge, food and cooking method knowledge and sanitary knowledge, as the collective averages in those areas were respectively $56.08{\pm}14.80$, $60.52{\pm}10.95$, and $45.25{\pm}16.13$. Sixty seven percent of respondents the largest group, acquired nutritional information through mass media, but they wanted to be given teaching information in the form of educational materials(49.0%). More than 70 percent believed that nutrition should be educated by nutrition teachers (p<0.01), and as for what should be handled in nutrition education, they thought that students should be educated to build the right eating habits (59.5%). Based on the results, a sequential nutrition education program for the lower grades of school children was developed. This program consisted of five different categories, and according to the results, that was designed to deal with the knowledge of teachers on nutrition, food, cooking method and hygiene, table manners and food-borne illness.
