Effects of an educational program for improving the dietary quality of older adults at risk for dysphagia in South Korea

  • Purpose: Changes in eating habits and malnutrition due to dysphagia are important health problems for older adults. This study investigated the effects of an educational program aimed at improving diet quality in community-dwelling older adults at risk for dysphagia in South Korea. Methods: We assessed 27 individuals in the experimental group and 26 individuals in the control group between September and October 2015. All participants were aged 65 years or older and were at risk for dysphagia. A combined diet and exercise program was applied to the experimental group (n = 27) for six weeks. We examined changes in participants' eating habits and their knowledge and attitudes concerning dysphagia risk. The nutrition intake of all participants was measured before and after the intervention using 24-hr dietary recall. Results: There was a significant increase in knowledge of dysphagia risk in the experimental group, with scores increasing from 3.7 to 7.1, out of 10 points (p < 0.001). There were also significant improvements in eating habits after the intervention in the experimental group, with scores increasing from 21.9 to 28.3, out of 36 points (p < 0.001). The attitude score of participants in the experimental group increased significantly, from 15.2 to 16.7, out of 20 points (p = 0.016). Conclusion: Developing educational programs can help older adults living in the community lead a healthier lifestyle and improve their ability to manage their diet.

  • Nutrition surveillance can sometimes be a powerful tool for raising awareness of nutrition problems at national and community levels and for promoting improved policies and programs to improve nutrition. Whereas many countries have been collected nutrition surveillance data for several years, the experience is often discouraging in terms of converting this data into information deemed useful by decision-makers and in terms of demonstrating impacts on decision-making. This presentation will describe the results of multi-country review of this problem undertaken by UNICEF in 1992-1994, the revised concept of "Nutrition Informatin Strategies" that emerged from the review, and the efforts currently underway at communtiy level in upstate New York to implement this revised concept.d concept.

문제중심학습법을 적용한 중학교 가정과 융합교육프로그램 개발과 실행 효과: 지속가능한 식생활을 중심으로 (Development and Implementation Effect of Middle School Home Economics Convergence Education Program Applying Problem-Based Learning Method: Focused on Sustainable Food and Nutrition)

  • 본 연구의 목적은 문제중심학습법을 적용한 가정과 융합교육프로그램을 중학교 식생활 단원을 중심으로 개발하고 실행하여 이 수업이 중학생들의 문제해결력에 미치는 효과를 검증하는 데 있다. 이를 위해 타교과와의 연계성을 살펴 '지속가능한 삶'을 주제로 설정하여 핵심질문을 '식품자원의 환경과의 관계, 개인차원의 영향, 해결방법은 무엇인가?로 설정하고 문제와 8차시의 수업을 개발하였다. 문제중심학습법을 적용한 가정과 융합교육프로그램을 실시한 결과, 평균점수가 3.54, 사후 평균점수가 3.96으로 통계적으로 문제해결능력(p<.001)에 유의미한 차이를 보였다. 문제해결능력의 능력요소인 원인분석, 대안개발, 계획/실행, 수행평가에서 유의미한 차이가 있었으나, 문제명료화에서 유의미한 차이가 없었다. 따라서 문제중심학습법을 적용한 가정과 융합교육프로그램은 문제해결능력에 효과적인 수업이라는 것을 확인하였다.

  • The purposes of this study were to investigate the perception of community nutrition programs and the conditions to carry them out, for 32 directors of health centers where public health nutritionists are not employed. The results of this study can be summarized as follows. Nutrition intervention programs were not carried out actively except those for infants but the health center directors strongly felt the necessity of carrying out various nutrition programs. The factors that affect the selecting and priotizing of nutrition programs were the need of community residents, the perception of the local congressmen, and the head of the local government. The most urgent and important problem to be solved in order to intervene nutrition programs was employing public health nutritionists on a tenure basis. Other were securing necessary revenue, precise guidance, political support, hardwares, etc. These results showed the importance of employing public health nutritionists for intervening appropriate nutrition programs and improving the perception of nutrition services for health center directors, local congressmen and personnels in charge of formulating nutrition policies.

인천 지역 초등학생과 학부모의 학교급식에 대한 인식 및 만족도 (Awareness and Satisfaction on the School Food Service by Elementary Students and Parents in Incheon City)

  • The aim of this study is to investigate the awareness and satisfaction level of school meal services by elementary school students and their parents. Approximately 97.2% of student-subjects have agreed on the necessity of a free meal service for school lunch; 44.3% of student-subjects voiced the need to provide free meal services in order to eliminate discrimination of low-income students. Over one-third of student-subjects (36.7%) cited nutrition as the main benefit of providing a free meal service. The majority of parent-subjects (95.1%) have recognized the need for a free meal service in school; approximately 37.3% of parent-subjects responded to need the free meal service in order to eliminate the discrimination of impoverished students. Both student- and parent-subjects expressed a high level of satisfaction with the quality of ingredients and the type of soup/nutrition provided. Student-subjects insisted on better food hygiene and a new menu, but cited the noisy cafeteria as a problem associated with school meal services. In addition, approximately 56.5% of student-subjects responded to the need for nutritional education in school. Parent-subjects were primarily concerned with hygiene regarding the preparation of school meal services, noting the temperature of foods as the biggest problem in school meal services. The majority of parent-subjects (88.1%) responded to the need for the nutritional education in school. Results of this survey indicate that school meal services can be improved by increasing menu options and increasing food hygiene.

  • Poverty is an important issue, not only in developing countries but also in industrialised societies. In 1999 15% of the European population have been in risk of poverty and the number of people living in poverty in Germany continues to increase. As poverty concerns all aspects of life, it influences health, well-being and the nutrition of the people living on low-income. Although this problem is obvious, only few surveys have been conducted to analyse it and therefore there is only limited information on the nutritional situation and nutrition behaviour of the poor. A qualitative study, which looked closely at the nutrition behaviour of 15 low-income families, was carried out in Giessen, Germany. The results showed that the nutritional situation of poor families differs from that families with a higher income have, the reasons being that their scope for action is restricted by a shortage of money and that there is a lack of skills and knowledge to provide family members with adequate nutrition. Strategies to improve the nutrition situation of poor families should aim at encouraging them to acquire relevant information and appropriate skills to adopt a healthier diet within their financial, social and cultural constraints. Also there have to be socio-political arrangements, which improve existing financial and social provisions as well as preventive educational measures.

  • Recently, the desire for low body weight, which is an abnormal weight construct along with obesity, has become an evident and serious problem in teenagers. In Korea, the desire for low weight is not perceived as an important problem, but it is rapidly expanding relative to the physical changes and developmental issues teenagers experience. The social atmosphere presented through mass media is the key influencer for the increasing low weight occurrence in teenagers. Because thoughts about beauty have changed among people, and since there is apparent blind interest in slim body shape and appearance, already low-weight individuals are attempting to lose weight along with obese persons. Thus, we consider it necessary to guide teenagers toward having correct perceptions with regard to weight and their own body shape, and that a healthy and appropriate weight is beautiful. Therefore, for this study, we investigated body perception, abnormal weight, attitude toward weight control, and factors related to eating behavior among teenage girls, who are considered the at risk group for overt body weight control behavior. Based on this, we have attempted to set in motion a systematic and active nutrition education program that will allow us to increase body satisfaction by educating on nutritional issues related to development, and ultimately, implant healthy body shape perceptions.
