The purpose of this study was to identify dietary factors related to the incidence of diabetes mellitus in Korea. The study consisted of 165 diabetic patients, male and female, aged 30 to 70 years and 198 healthy persons as controls. Diabetic patients who had been diagnosed with diabetes mellitus for less than five years before the study period were recruited from eight different hospitals located in Seoul, Korea. Socioeconomic status, state of illness, physical activity, food habits and food intake were assessed. Food intake was assessed by food frequency questionnaire method using a 105-food frequency questionnaire developed for diabetic patients. The stress and activity indices of diabetic patients were not significantly different from control, but alcohol consumption and smoking levels were higher in diabetics than controls. Other diseases of male diabetic patients included liver diseases, digestive system diseases, and hypertension, while those of female diabetics were hypertension, neuralgia, arthritis and digestive system diseases. These disease patterns are different from Western countries whose most common complications are hypertension and hyperlipidemia. More irregular and less varied meals were found in the diabetic group compared to the control group, suggesting that diabetic patients have generally undesirable food habits. Otherwise, food and nutrient intake of diabetics did not differ greatly from the control group. It was found that diabetic patients consumed more cereals and less fruit than the control group, and also that male diabetics consumed more alcohol. The carbohydrate : protein : fat energy distribution ratio was 61.7 : 15.8 : 22.5 in male patients and 65.1 : 14.9 : 19.7 in female patients. Discriminant analysis showed that diabetes risk factors differed with sex. In male patients, the important factors were body mass index(BMI), vitamin C intake, family diabetic history and vegetable intake, while in female patients they were BMI, cereals intake, carbohydrate intake, vitamin C intake, stress, food habits and Ca intake. These results show that excessive intake of energy and fat are not the major causal factors in Korean NIDDM. Therefore, the diabetes risk factors of Western countries may not directly apply to Koreans. Mors study is needed to clarify the risk factors of Korean NIDDM.

Experiments were conducted to evaluate the nutritional value of yellow-seeded rapeseed meal (YRSM). In the first experiment nutrient retention was recorded by 48 Arbor Acres-broiler chickens (28-d old) to determine AMEn (nitrogen-corrected apparent metabolizable energy), coefficient of apparent protein digestibility based on ileal digesta nitrogen, excreta nitrogen and uric acid nitrogen. The second experiment was carried out with 304 Arbor Acres-broiler chickens to compare effects of SBM (soybean meal) and YRSM on performance, carcass and digestive tract status. In the control treatment, SBM was replaced by graded levels of YRSM at 15, 22.5 and 30% of diet. Digestibility of YRSM protein was significantly lower (p<0.001) than SBM protein. The protein digestibility based on ileal measurement was significantly higher (p<0.001) than protein digestibility from excreta samples. There was no significant difference (p>0.001) between ileal and excreta digestibility of protein based on uric acid. AMEn as a fraction of gross energy was 0.54 in SBM and 0.45 in YRSM. With the exception of 30% YRSM, other YRSM treatments resulted in major effects on length and weight of the gastrointestinal tract. The results of this study have shown no adverse effect on performance as well as protein digestibility and energy value in response to replacement of SBM by YRSM with the exception of 22.5 and 30% YRSM.
This study intended to evaluate the validity of the simple nutrition screening test that had been developed with the elderly living in Cheongju as a subject. Nutrition screening score(NSS) and reference standards for nutritional and health status(nutrient intakes, mean adequacy ratio, perceive health, and serum albumin, hematocrit, and hemoglobin) were estimated by using the date obtained in 1996 from the 174 elderly living in Taejon, Statistical analysis showed significant correlations between mean adequacy ratio(MAR) and NSS(r=0.341) and also between NSS and biological indices such as albumin and hematocrit, Around 65-75% of the elderly with perceive health and low level of serum albumin, hemoglobin and hematocrit had NSS$\leq$ll. Sensitivity, specificity, and positive predictive values(PPV) were calculated from the crosstabulation of the three categories of NSS(high, moderate, and low nutritional risk) and low categories MAR(< 0.75, undernutrition;$\geq$0.75, normal) to validate the cut-off point for high or low nutritional risk by NSS. It was suggested that point l1 was appropriate as a criterion to determine high risk of undernutrition, but point 16 was better than 17 as criterion to determine low nutritional risk in the Taejon elderly. When point ll was used as a criterion of high nutritional risk, sensitivity, specificity, and PPV are 59.5, 60.5 and 82.1 respectively. When point 16 was used as a criterion of low nutritional risk, sensitivity, specificity, and PPV are 25.6, 95.4, and 64.7%, respectively. In conclusion, nutrition screening test that had been developed can be a simple, easy, and proper instrument to classify the high risk group of undernutrition. A further validation study seems to be required among other groups of individuals for the screening test to the finalized as a more valid instrument identifying Korean elderly at nutrition and health risk(Korean J Nutrition 33(8) : 864-872, 2000)
The dietary habits and eating behaviors of nonagenarian subjects over 90 years old in Korean representative longevity belts of Damyang, Gokseong, Kurye, Sunchang were evaluated. The subjects of the study were 91 elderly people (26 males and 65 females) over 90 years old and their dietary habits, food preferences and meal patterns were collected by individual interview. The percentage of subjects, who answered 'very good' or 'good' for their health status, was $65.9\%$. In this study, $55\%$ of subjects were without chronic diseases, and there was no significance difference in gender. Many subjects had performed regular exercise and outdoor activity. The rate of eating together with their family was $79.1\%$. Most of subjects ($91.2\%$) had a regular mealtime consuming three meals a day, and they had good appetite and pleasure of eating. The higher preference of food group was fruits ($95.6\%$), legumes ($94.5\%$), mushrooms ($93.4\%$) and vegetables ($92.3\%$), but the amount of intakes is higher in vegetables than the others. Eating with family, regular exercise and self-rated good health are improved their nutrient intakes. Most frequently consumed meal pattern was rice plus soup and side dishes. The side dish consumed frequently was Namul (blanch and seasoned vegetables). From this study, the nonagenarian populations in longevity belt in Korea have good dietary habits such as regular mealtime, constant amount of meal and eat with pleasure. They are taking Korean traditional meal pattern, providing enriched antioxidant vegetable foods. Also, it can be concluded that the amount and quality of diet in the long-lived elderly are responsible for the Korean traditional family system.
The purpose of this study was to assess biological river water quality by using epilithic diatoms at 40 selected sites in Geum, Youngsan, and Seomjin River systems. The sampling and analyses were performed during three seasons including January, April and June in 2005. Various water quality parameters also were analyzed. We attempted to classify the water quality condition by epilithic diatom indices (DAIpo and TDI) with the results of corresponding analyses of various chemical water quality parameters. A five class system was delivered to describe the water quality condition ranged from "very good" to "very poor." We also proposed a way of classifying water quality condition by combining two diatom indices of DAIpo and TDI. Our results showed that biomass of epilithic diatoms varied not only seasonally but spatially; it was not likely that winter diatoms represent average water quality condition, due to high concentration of nutrients. Water quality status assessed by diatom indices was generally worse than that assessed by BOD, indicating that BOD standard likely underestimates the biological condition of the water body. Importantly, nutrient-based diatom index (TDI) generally overestimated organic matter-based index (DAIpo) at most study sites, indicating that diatoms in studied rivers were likely more affected by nutrients than organic matter. Thus, management strategy to improve river water quality in Korea is suggested to emphasize more on the nutrients than organic matters.
This study was conducted to investigate weight control status and associated factors among health-related major female college students. The subjects consisted of 41 nutrition and 78 physical exercise major female college students. Nutrient intakes, biochemical index, nutrition knowledge (recognition and accuracy), interest of weight control, body satisfaction, self-recognition of health condition, self-evaluated body weight were studied. About 73% of nutrition and 79% of physical exercise major female students were in the normal range of BMI ($18.5{\sim}23$) and 2% of nutrition and 1% of physical exercise major female students were underweight, 10% of nutrition and 6% of physical exercise major female students were obese. There were no significant differences in height and weight by major but %body fat and WHR in physical exercise majors were significantly lower than nutrition major students (respectively p<0.01, p<0.05). Overall, nutrition intakes of subjects were not shown to be appropriate, especially Ca/P of subjects was shown $0.54{\sim}0.64$, fat% out of energy of subjects was shown $24.7{\sim}29.0$ and Na intake was shown above 2000mg. Recognition and accuracy of nutrition were higher than those of physical exercise majors (p<0.001). There were no significant differences in self-recognition of health condition, self-evaluated body weight, satisfaction of body shape by major and weight control attempt. But interest of weight control of attempter was higher than that of no-attempter in nutrition (p<0.05) and physical exercise major students (p<0.01). Significantly negative correlation was found in satisfaction of body and BMI, body fat mass, %bodyfat, WHR. And significantly positive correlation was found in interest of weight control and BMI, %bodyfat, WHR. It was noticeable to see that interest of weight control was positively correlated to accuracy and accuracy was negatively correlated to blood cholesterol level. Therefore, proper nutrition education for female college students is needed in order to improve their weight control-related health.
This study was designed to investigate nutrition intakes and its relation to the obesity and the prevalence of anemia in 252 children(136 boys, 116 girls) aged $2{\sim}6$ years. The hematological parameters, daily nutrient intakes and height and weight were measured. Calorie intakes of 2 and 3year-old-children were over their RDA while those of 4-6 years were below the RDA. Intakes of protein, P, and vit B complex were far over the RDA in all ages of children. Fe and vit A intakes were insufficient in all ages except 3 years while Ca intakes were insufficient in all ages except 2 and 3 years. About 18.2% of the children were evaluated as obese. However, very few children were anemic by hematologic parameters. The mean Hb concentrations were 12.2mg/dl in boys and also in girls. The mean Hct was 36.2% in boys, 35.8% in girls. Serum Fe concentration was 100.1mg/dl in boys, 101.1mg/dl in girls. RBC count was significantly higher in boys while MCH was significantly higher in girls. Intakes of protein, P, Fe, vit $B_1$, niacin, vit C were significantly higher in obese group compared to under weight group. There were significant positive correlations between protein intake and Hb, Hct, MCH, and MCHC. The correlation between Fe intake and Hb or Hct was not significant. In conclusion, it seems that the nutritional status of the most children was in very good condition. However, they needed to take more foods supplying Fe, Ca, and vit A.
The purpose of this survey was to investigate the status of dietitians' nutrition management in school lunch program. Questionaries were distributed to 233 dietitians of elementary schools and 10 dietitians of high schools in Seoul and Incheon provinces. The statistical analysis of data was completed using SPSS program. The results were summarized as follows : 78.4% of Seoul and 48.6% of Incheon among the whole students were served their meals in the classrooms. 70.0% of dietitians were 30-39 years old and 31.4% had a career less 5-7 years old. The standardized recipe was used in 71.6% of total schools but not effectively in both provinces. The students' nutrition and preferences were the very first to be considered in menu planning in both provinces. The nutrient value of meals was evaluated by the dietitians in most schools. Nutrition surveys of the meals which students are eating at home were surveyed in 27.3% of Seoul and 53.2% of Incheon. Students' preferences were studied regularly in 65.4% of Seoul and 78.9% of Incheon, and students evaluations of meals were carried out by the school lunch program in 74.6% of Seoul, and 68.8% of Incheon. In 49.6% of Seoul and 53.2% of Incheon, leftover foods were measured for each meal. 38.5% of Seoul used per a week and 48.6% of Incheon used per 2-3 week the processed foodstuffs. In 17.2% of Seoul and 25.2% of Incheon, nutrition education was executed by direct education, but educational methods were done mostly by letterssent to students' parents(76.9% of Seoul and 85.3% of Incheon). Evaluation studies on nutrition management, and nutrition education were hardly correlated to the dietitian's career and educational level. The number of meals served by the school lunch program have no related with the students' preferences. For improvement of nutrition management of school lunch program, it is necessary to develop new nutrition management model and nutrition education program.
This study was conducted to obtain data and offer advice regarding dietary intake at kindergarten and to recommend dietary habits to prevent childhood obesity. The study was conducted in 85 children aged 4 to 5 years. Body weight and height, dietary intakes of lunch served at Kindergarten and questionnaires for dietary behaviors in Kyeongnam area were studied. All subjects were classified by their weight-length index (WLI). According to the standard WLI values, 41.2% of the children were within the normal value ($90{\leq}$WLI<110), 23.5% of the children were overweight ($110{\leq}$WLI<120), and 35.3% of the children were obese ($WLI{\geq}120$). The mean energy intake at lunch for kindergarteners was $287.1{\pm}13.4$ kcal in the normal group, $307.6{\pm}10.2$ kcal in the overweight group and $323.7{\pm}8.6$ kcal in the obese group. The percent energy of estimated energy requirement (EER) was 21.8%. The intake of protein, iron, zinc, vitamin A, and pyridoxine were significantly different by WLI (P<0.05). A comparison of nutrients in the lunch menu provided with those of 1/3 recommended intake (RI) showed that preschoolers took in fewer calories, calcium, and vitamin $B_2$, and that their deficiency rates were high (81.2%, 76.5% and 70.6% of recommended levels, respectively). There was a significant difference in the preference of fruits and milk and dairy products by WLI. Therefore, a nutritional education program and new guidance in the proper nutrition management for kindergarteners should be developed to enhance nutritional status during childhood.
금반 한국여자대학생 28명에 대하여 소비열량과 영양상황을 조사한 결과를 요약하면 다음과 같다. 1) 본조사에 있어서 여자대학생(20-21세)의 평균신장은 157.1cm, 체중 51.75kg, 체표면적 1.5m$^2$, 기초 대사량 1303Cal, 안정시 대사량 1563Cal, 활동대사량 469Cal, 1인 1일 총평균 소비열량(요구열량) 2032Cal였다. 한편 그들의 섭취열량은 1880Cal 로서 152Cal가 소비열량보다 부족하게 섭취되어져 있었다. 2) 단백질, 철분, 비타민B1, C는 요규량에 족하였고, Calorie, 지방, 탄수화물, 칼슘, 비타민 A, B2 는 섭취량이 부족하였다. 3) 총 54종의 식품에 의하여 먹혀졌으며 주로 식물성식품(83.7%)에 의하여 영양이 공급되었고 동물성식품은 16.2%밖에 공급되지 않았었다. 또한 수산동식물성 식품은 불과 7.4% 밖에 영양을 주지 못한 식성구성을 이루고 있었다.
