Flour Characteristics and End-Use Quality of Korean Wheat Cultivars II. End-use Properties (국산밀 품종의 밀가루 특성과 가공적성 II. 가공 적성평가)

  • End-use properties of 26 Korean wheat cultivars (KWC) were evaluated to assess consumer satisfaction with 6 imported wheat and 5 commercial wheat flours. In end-use quality testing of cooked noodles, Absorption of noodle dough sheet of ASW (Australian standard white) was similar to Anbaek, Eunpa, Gobun, Hanbaek, Jeokjoong, Jonong, Namhae, and Sukang. Thickness of noodle dough sheet of KWC was showed thin difference. In imported wheat and commercial flour, Commercial flour for baking cookie (Com5) with lower protein flour was lower than those flours. In lightness of prepared noodle dough sheet, Lightness value ($L^*$) of KWC was lower than those of Commercial flour for making white salted noodle (Com1), commercial flour for making for yellow alkaline noodle (Com2), and commercial flour for multi-purpose (Com4). Lightness value ($L^*$) showed significantly negative correlations with particle size of flour, ash, damaged starch, and protein content. Hardness of cooked noodles positively correlated with protein content. In texture of cooked noodles, Hardness of Com1 was similar to that of Alchan, Dahong, Jeokjoon, and Sukang. Also, hardness of Com2 was similar to that of Gobun, Jokyung, Jonong, Keumkang, and Namhae. In end-use quality of bread, bread loaf volume of commercial flour for making bread (Com3) was similar to Alchan, Jokyung, Keumkang, and Namhae but firmness was low. Bread volume showed better relationships with higher SDS-sedimentation volume, longer mixing time of mixograph, higher height of dough during development. Firmness of crumb was negatively correlated with bread volume. Diameter of cookie showed significantly negative correlations with particle size of flour, damaged starch, and protein content. Also, Top gain score became higher as the increase diameter of cookie. In end-use quality testing of cooked cookie, Cookie diameter of Com5 was similar to that of Dahong, Geuru, Olgeuru, Tapdong, and Uri but top grain was low.

Effects of Semolina on Quality Characteristics of the Rice Noddles (세몰리나 첨가가 쌀국수의 품질특성에 미치는 영향)

  • Durum wheat semolina was added into wet-milled rice flour in order to improve chewy texture, firm bite ("al dente"), and resistance to overcooking of the ordinary rice noodles. Wet noodles were prepared by mixing 0 (control), 5, 10, 15, and 20% (w/w) of semolina per semolina and rice flour mixtures. Vital gluten (4%, w/w) and salt (2%, w/w) were added to form the pliable strands of wet noodles and final moisture contents of the raw mixtures were equalized at 45%. Pasting properties of the suspended flour mixtures as measured by the Rapid Visco Analyser (RVA) showed slight increases (up to $1.2^{\circ}C)$ in pasting temperatures along with the considerable decreases in peak viscosities as semolina increased at over 15%. Reduced shear thinning and retrogradation of the starch solution that leads to hardening of the cooked noodles were indicated by lowered breakdown viscosities and gaps between finaland setback viscosities from the RVA viscogram as semolina increased at over 10%. Reduced water uptake and turbidity increases of the cooking water as caused by the soluble starches from the noodle were also noted as the content of semolina increased. More or less significant (p<0.05) decreases in colorimetric L (lightness) value of the raw- and cooked noodles were observed as semolina increased while a- (redness) and b (yellowness) values were rather increased at the same moment. Textural properties of the cooked noodles such as hardness, springiness, cohesiveness, gumminess, and chewiness from TPA tests were significantly (p<0.05) influenced by added semolina, even at 5%-levels or more. It can be concluded that addition of semolina into rice flour could provide easy handling of the wet noodles without distortion during transportation, integrity and firm bite of the cooked noodles, and less loss of starch to the cooking water in comparison with the ordinary rice noodle. It was finally suggested that optimum level of the semolina in the product was approximately 10% for the quality wet rice noodle products.

Temporal Variations of Sea Water Environment and Nutrients in the East Coast of Korea in 2013~2017: Sokcho, Jukbyeon and Gampo Coastal Areas (2013~2017년 동해 연안의 해양환경과 영양염의 시간적 변동 : 속초, 죽변, 감포 연안)

  • To investigate the long-term variation characteristics of nutrients in the east coast of Korea, water temperature, salinity, dissolved oxygen, and nutrients were measured at three stations of Sokcho, Jukbyeon and Gampo coasts for five years from 2013 to 2017. For five years, the water temperature of the East Sea coast was in the range of $1.2{\sim}28.8^{\circ}C$, the salinity was in the range of 30.63~34.79 and the dissolved oxygen (DO) was in the range of 3.53~7.64 mL/L. Distribution and variation of the water environment factors in the study area were determined by the vertical stratification of water column and distribution of water temperature. The high DO concentration in Sokcho coast From 2015 to August 2016 is presumed to be the result of the southward inflow of North Korean Cold Water (NKCW). Concentrations of dissolved inorganic nitrogen (DIN, $NH_4-N+NO_2-N+NO_3-N$) ranged $0.11{\sim}24.19{\mu}M$, phosphate concentration ranged $0.01{\sim}1.75{\mu}M$, and silicate ranged $0.17{\sim}32.80{\mu}M$. The N:P ratio was in the range of 0.7~54.3 (mean 15.2) and the N:P slope was in the range of 11.67~13.75. The N:P ratios in this study were lower than the Redfield ratio (16), indicating that nitrate did act as a limiting factor in phytoplankton growth. The correlation ($R^2$) of total N:P ratio was as high as 0.95, indicating that the effect of the surrounding land or non-point sources was not significant. In conclusion, the spatial and temporal variation of nutrients in the east coast of Korea was determined by the vertical mixing of water mass with thermocline and mainly affected by physical factors such as influx of external water masses and coastal upwelling, and the influences from inflows from the land were minimal.

Effects of Light Intensity, Light Quality and Photoperiod for Growth of Perilla in a Closed-type Plant Factory System (완전제어형 식물공장에서 광량과 광질, 광주기가 들깨의 생장에 미치는 영향)

  • In order to select suitable light in a plant factory, electric energy use efficiency and light use efficiency should be considered simultaneously to consider operating costs as well as quantitative and functional aspects. The growth characteristics, electric energy use efficiency, light use efficiency by light intensity, LED ratio, and photoperiod conditions were compared together. Light intensity is 60, 130, 230, and 320 µmol·m-2·s-1 treatments, and light quality is the mixing ratio of red light and blue light 8:2, 6:4, 4:6, and 2:8 treatments. Photoperiod is 9, 12, 15, and 18 hours treatments based on the daytime. In the light intensity experiment, the growth rate increased as the light intensity increased, but there was no significant difference in the light use efficiency. When comparing the leaf fresh weight per power consumption, only the 320 µmol·m-2·s-1 treatment group showed significantly low efficiency, and there was no significant difference in the other treatments, so 230 µmol·m-2·s-1, which produced the most, was the most efficient. In the light quality experiment, the ratio of red light and blue light was measured to be high at the same time as the growth rate and light use efficiency in RB 8:2, and there was no significant difference in color difference and flavonoids content, so a Red:Blue ratio of 8:2 was the most suitable condition. In the photoperiod experiment, the longer the photoperiod, the higher the growth rate. However, there was no significant difference in the growth rate over 12 hours of daytime, so 12 hours considering the light consumption efficiency was a suitable condition. Based on the above results, LED light environmental conditions for perilla growth in plant factories were light intensity, light quality, and day length of 230 µmol·m-2·s-1 or more, 8:2, and 12 hours or more, respectively.

A Study of Life Safety Index Model based on AHP and Utilization of Service (AHP 기반의 생활안전지수 모델 및 서비스 활용방안 연구)

  • Purpose: This study aims is to provide a total care solution preventing disaster based on Big Data and AI technology and to service safety considered by individual situations and various risk characteristics. The purpose is to suggest a method that customized comprehensive index services to prevent and respond to safety accidents for calculating the living safety index that quantitatively represent individual safety levels in relation to daily life safety. Method: In this study, we use method of mixing AHP(Analysis Hierarchy Process) and Likert Scale that extracted from consensus formation model of the expert group. We organize evaluation items that can evaluate life safety prevention services into risk indicators, vulnerability indicators, and prevention indicators. And We made up AHP hierarchical structure according to the AHP decision methodology and proposed a method to calculate relative weights between evaluation criteria through pairwise comparison of each level item. In addition, in consideration of the expansion of life safety prevention services in the future, the Likert scale is used instead of the AHP pair comparison and the weights between individual services are calculated. Result: We obtain result that is weights for life safety prevention services and reflected them in the individual risk index calculated through the artificial intelligence prediction model of life safety prevention services, so the comprehensive index was calculated. Conclusion: In order to apply the implemented model, a test environment consisting of a life safety prevention service app and platform was built, and the efficacy of the function was evaluated based on the user scenario. Through this, the life safety index presented in this study was confirmed to support the golden time for diagnosis, response and prevention of safety risks by comprehensively indication the user's current safety level.

Characteristics on spatial distributions of phytoplankton communities in relation to water masses in the western South Sea, Korea in early autumn 2021 (2021년 이른 가을 남해 서부 해역의 수괴 분포 및 식물플랑크톤 군집의 공간분포 특성)

  • A survey was conducted to analyze water masses and spatial distributions of phytoplankton communities at 15 stations on the surface and chlorophyll a maximum layers (CML) in the western South Sea of Korea from September 8 to 9, 2021. As a result, water masses were classified into Coastal Waters (CW) with relatively low salinity, the Tsushima Warm Current (TWC) with high water temperature and high salinity, and mixed waters (MW) showing a mixture of these two water masses. Turbidity showed high concentration in both the surface and CML. The chlorophyll a concentration was as low as 0.90±0.43 ㎍ L-1 in the surface, more than 1.1 ㎍ L-1 in CW, around 1.0 ㎍ L-1 in MW, and less than 0.5 ㎍ L-1 in the TWC. CML was 1.64±0.54 ㎍ L-1. Regarding species composition of phytoplankton communities, there were 57 species in 31 genera(diatoms, 57.8%; dinoflagellates, 35.1%; and other phytoflagellates, 7.1%). The phytoplankton standing crop had 4.6±7.6 cells mL-1 in the surface, more than 30 cells mL-1 in the CW, 2-5 cells mL-1 in the MW, and less than 2 cells mL-1 in the TWC. CML was slightly higher than the surface with a variation of 5.7±8.4 cells mL-1. Dominant species were found to be Rhizosolenia flagilissima f. flagilissima, Skeletonema costatum-ls, and Nitzschia sp./ small size in the surface. For the CML Rh. flagilisima f. flagilissima showed a dominance of 12.0%. For the surface, the diversity variation was 2.36±0.40, which was high for TWC but low for MW. For CML, the diversity variation was 2.29±0.52, which was slightly lower than that of the surface. The dominance in the surface was 0.50±0.15, with a fluctuation range of more than 0.5 in MW and less than 0.5 in the TWC, which was different from the diversity. According to correlation analysis and principal component analysis (PCA), the presence of phytoplankton standing crops was high in CW but low in MW and TWC. That is, phytoplankton communities in early autumn were strongly affected by the expansion and mixing of water masses in western South Sea.

Characteristics of Blood Mixed Cement in Percutaneous Vertebroplasty (경피적 척추 성형술에서 혈액 혼합 시멘트의 특성)

  • Purpose: This study evaluated the efficacy of blood mixed cement for osteoporotic vertebral compression fractures in reducing the complications of percutaneous vertebroplasty using conventional cement. Materials and Methods: This study was performed retrospectively in 80 patients, from January 2016 to January 2017. Porous cement was formed by mixing 2, 4, and 6 ml of blood with 20 g of cement used previously. A tube with a diameter and length of 2.8 mm and 215 mm, respectively, was used and the polymerization temperature, setting time, and optimal passing-time were measured and compared with those using only conventional cement. Radiologically, the results were evaluated and compared. Results: The polymerization temperature was 70.3℃, 55.3℃, 52.7℃, and 45.5℃ in the conventional cement (R), 2 ml (B2), 4 ml (B4), and 6 ml (B6), respectively, and the corresponding setting time decreased from 960 seconds (R) to 558 seconds (B2), 533 seconds (B4), and 500 seconds (B6). The optimal passing-time was 45 seconds (B2), 60 seconds (B4), and 78 seconds (B6) at 73 seconds (R), respectively and as the amount of blood increased, it was similar to the cement passing-time. The radiological results showed that the height restoration rates and the vertebral subsidence rates similar among the groups. Two cases of adjacent vertebral compression fractures in the R group and one in the B2 and B4 groups were encountered, and the leakage rate of the cement was approximately two times higher than that in the conventional cement group. Conclusion: In conventional percutaneous vertebroplasty, the procedure of using autologous blood with cement decreased the polymerization temperature, reduced the setting time, and the incidence of cement leakage was low. These properties may contribute to more favorable mechanical properties that can reduce the complications compared to conventional cements alone.

Effects of Mixed Application of Chemical Fertilizer and Liquid Swine Manure on Dry Matter Yield and Feed Value of Whole Crop Barley (화학비료와 발효 돈분 액비 혼용 시용이 총체보리의 생산성 및 영양성분에 미치는 영향)

  • This study was carried out to investigate the growth characteristics, yield and chemical compositions of whole crop barley (Hordeum vulgare L.) according to mixing ratio of chemical fertilizer (CF) and liquid swine manure (LSM) in the paddy field cultivation. The experimental design was arranged in a randomized block design with five treatments and three replications. The manure fertilizer ratio of five treatments were CF 100% (T1), CF 70% + LSM 30% (T2), CF 50% + LSM 50% (T3), CF 30% + LSM 70% (T4), and LSM 100% (T5) of whole crop barley. At this time, the application of liquid swine manure was based solely on the nitrogen. Plant length was higher at T1 as compared to other treatments (T2, T3, T4 and T5). Fresh yield, dry matter yield and total digestive nutrients (TDN) yield were the highest in T1, whereas the lowest in T5 treatment (p<0.05). Chemical compositions (crude protein, crude fat, neutral detergent fiber, acid detergent fiber and TDN) did not show significant difference among treatments. Ca and Na contents were significantly lower at T1 as compared to other treatments (T2, T3, T4 and T5). However, Mg and P contents were significantly higher at T1 as compared to other treatments(p<0.05). There was no significant difference in total free sugar content among T2, T3, T4 and T5 treatments, but the chemical fertilizer (T1) was significantly lower than the other treatments (p<0.01). Considering the above results, liquid swine manure application showed lower dry matter yield and TDN yield than chemical fertilizer, but higher free sugar content. Therefore, in order to increase the productivity of whole crop barley, it is considered desirable to mix liquid fertilizer with chemical fertilizer, taking into account the decomposition rate and insufficient components (P, K) of the liquid swine manure.

Lithium Distribution in Thermal Groundwater: A Study on Li Geochemistry in South Korean Deep Groundwater Environment (온천수 내 리튬 분포: 국내 심부 지하수환경의 리튬 지화학 연구)

  • The value of lithium has significantly increased due to the rising demand for electric cars and batteries. Lithium is primarily found in pegmatites, hydrothermally altered tuffaceous clays, and continental brines. Globally, groundwater-fed salt lakes and oil field brines are attracting attention as major sources of lithium in continental brines, accounting for about 70% of global lithium production. Recently, deep groundwater, especially geothermal water, is also studied for a potential source of lithium. Lithium concentrations in deep groundwater can increase through substantial water-rock reaction and mixing with brines. For the exploration of lithim in deep groundwater, it is important to understand its origin and behavior. Therefore, based on a nationwide preliminary study on the hydrogeochemical characteristics and evolution of thermal groundwater in South Korea, this study aims to investigate the distribution of lithium in the deep groundwater environment and understand the geochemical factors that affect its concentration. A total of 555 thermal groundwater samples were classified into five hydrochemical types showing distinct hydrogeochemical evolution. To investigate the enrichment mechanism, samples (n = 56) with lithium concentrations exceeding the 90th percentile (0.94 mg/L) were studied in detail. Lithium concentrations varied depending upon the type, with Na(Ca)-Cl type being the highest, followed by Ca(Na)-SO4 type and low-pH Ca(Na)-HCO3 type. In the Ca(Na)-Cl type, lithium enrichment is due to reverse cation exchange due to seawater intrusion. The enrichment of dissolved lithium in the Ca(Na)-SO4 type groundwater occurring in Cretaceous volcanic sedimentary basins is related to the occurrence of hydrothermally altered clay minerals and volcanic activities, while enriched lithium in the low-pH Ca(Na)-HCO3 type groundwater is due to enhanced weathering of basement rocks by ascending deep CO2. This reconnaissance geochemical study provides valuable insights into hydrogeochemical evolution and economic lithium exploration in deep geologic environments.

Seasonal Circulation and Estuarine Characteristics in the Jinhae and Masan Bay from Three-Dimensional Numerical Experiments (3차원 수치모의 실험을 통한 진해·마산만의 계절별 해수순환과 염하구 특성)

  • Circulation, tides, currents, harmful algal blooms, water quality, and hypoxic conditions in Jinhae-Masan Bay have been extensively studied. However, these previous studies primarily focused on short-term variations, and there was limited detailed investigation into the physical mechanisms responsible for ocean circulation in the bays. Oceanic processes in the bays, such as pollutant dispersal, changes on a seasonal time scale. Therefore, this study aimed to understand how the circulation in Jinhae-Masan Bay varies seasonally and to examine the effects of tides, winds, and river discharges on regional ocean circulation. To achieve this, a three-dimensional ocean circulation model was used to simulate circulation patterns from 2016 to 2018, and sensitivity experiments were conducted. This study reveals that convective estuarine circulation develops in Jinhae and Masan Bays, characterized by the inflow of deep oceanic water from the Korea Strait through Gadeoksudo, while surface water flows outward. This deep water intrusion divides into northward and westward branches. In this study, the volume transport was calculated along the direction of bottom channels in each region. The meridional water exchange in the eastern region of Jinhae Bay is 2.3 times greater in winter and 1.4 times greater in summer compared to that of zonal exchange in the western region. In the western region of Jinhae Bay, the circulation pattern varies significantly by season due to changes in the balance of forces. During winter, surface currents flow southward and bottom currents flow northward, strengthening the north-south convective circulation due to the combined effects of northwesterly winds and the slope of the sea surface. In contrast, during summer, southwesterly winds cause surface seawater to flow eastward, and the elevated sea surface in the southeastern part enhances northward barotropic pressure gradient intensifying the eastward surface flow. The density gradient and southward baroclinic pressure gradient increase in the lower layer, causing a strong westward inflow of seawater from Gadeoksudo, enhancing the zonal convective circulation by 26% compared to winter. The convective circulation in the western Jinhae Bay is significantly influenced by both tidal current and wind during both winter and summer. In the eastern Jinhae Bay and Masan Bay, surface water flows outward to the open sea in all seasons, while bottom water flows inward, demonstrating a typical convective estuarine circulation. In winter, the contributions of wind and freshwater influx are significant, while in summer, the influence of mixing by tidal currents plays a major role in the north-south convective circulation. In the eastern Jinhae Bay, tidally driven residual circulation patterns, influenced by the local topography, are distinct. The study results are expected to enhance our understanding of pollutant dispersion, summer hypoxic events, and the abundance of red tide organisms in these bays.
