Mechanism of improving quality of dry-aged pork loins in scoria-containing onggi, Korean earthenware as a storage container

  • Objective: Many scientists have investigated solutions to reduce microbiological risks in dry-aged meat after the dry-aging technology was revived for high quality and value-added premium meat product in the market. This study aimed to investigate the effect of scoria powder in onggi (Korean earthenware) on the meat quality of pork loins during 21 days of dry aging and to elucidate its mechanism of action. Methods: The pork loins were randomly divided into three groups: aged in vacuum-packaging, onggi containing red clay only (OR), and onggi containing 30% red clay and 70% scoria powder (OS). Microbial analyses (total plate count and Lactobacillus spp.) and physicochemical analyses (pH, shear force, volatile basic nitrogen [VBN], water activity, 2-thiobarbituric acid reactive substances, water content, water holding capacity, cooking loss, and color analysis) of aged meat were conducted. Far-infrared ray emission, quantification of immobilized L. sakei and microstructure of onggi were investigated to understand the mechanism. Results: On day 21, the meat aged in OS exhibited lower pH, shear force, VBN, and water activity than those aged in OR, along with an increase in the number of Lactobacillus spp. OS had a smaller pore diameter than OR, implying lower gas permeability, which could promote the growth of L. sakei. Conclusion: OS improved the microbiological safety and storage stability of pork loin during dry aging by increasing number of Lactobacillus spp. possibly due to low permeability of OS.

Antioxidant Activity of Radish Seed Oil and the Quality and Storage Characteristics of Pork Patties with Added Radish Seed Oil

  • This study investigated the antioxidant activity of radish seed oil (RSO) and its effects on the quality and storage characteristics of pork patties. To assess the antioxidant capacity of RSO, this study analyzed fatty acid composition, peroxide value (PV), and 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activity. Pork patties were manufactured with the addition of RSO-0.4%, 0.8%, 1.6%, and 2.4%-and measured in terms of proximate composition, pH, water holding capacity (WHC), cooking loss (CL), color, texture profile analysis, and a sensory evaluation. Total microbial count (TMC), volatile basic nitrogen (VBN), thiobarbituric acid reactive substances (TBARS), and PV were measured at 1, 3, and 7 days of refrigerated storage. The DPPH radical scavenging activity of RSO was found to be 75.46%. In the cases of WHC and CL, there was no significant differences observed between RSO0.4%, RSO0.8%, and positive control (PC; p>0.05). Meanwhile, RSO2.4% showed significantly lower hardness, springiness, gumminess, and chewiness than PC (p<0.05), and these values tended to decrease with the addition of increasing RSO. In terms of storage characteristics, with an increase in the amount of RSO added, TMC, VBN, TBARS, and PV all decreased; among the treatment groups, RSO2.4% showed the lowest values. In conclusion, RSO exhibits antioxidant activity, but when added in large amounts, it negatively affects the quality characteristics of patties while positively impacting their storage properties, thus necessitating a balanced consideration of both outcomes. Therefore, adding 1.6% RSO is considered to be the most appropriate level for formulations to be used in practice.

  • This research old age chestnut tree that loss function chestnut leaf renewal efficiency enlargement and development of cosmeceutical product by purpose. Chestnut leaf (CL) exhibits numerous pharmacological effect including anti-allergy and anti-microbial properties. However, the anti-wrinkle effect of CL is not completely understood. In this study, to find a possible explanation for the anti-wrinkle effects of CL, we evaluated the effects of CL on radical scavenging activity, elastase inhibition activity and collagenase inhibition activity. CL was extracted with various solvents including water (CLW), 70% ethanol (CLE) and 70% acetone (CLA). The results showed that CLW, CLE, and CLA have the radical scavenging activity. In addition, we showed that CLW, CLE, and CLA have the elastase inhibition activity and collagenase inhibition activity. Consequently, the CL has a potent anti-wrinkle effect and it could be a useful cosmeceutical product for anti-aging purposes.

Studies on Nutrient Components between the Chungjung Chicken Meats and General Chicken Meats (청정닭고기와 일반닭고기의 영양성분에 대한 연구)

  • It was performed to find out difference of the nutritional contents between chungjung chicken meats grown chemicals free and general chicken meats. The chungjung chicken was eat and given feeds of good quality mixed living microbial agent, power of ginseng leaves and by-product of extract liquefied sea foods from fishes producted clean area of the Western Sea, including plentiful calciums, amino acids, docosahexanoic acid(DHA) etc. Addition of they improved chungjung chicken yields and meat quality compared to general chicken given feeds mixed antibiotic etc. Also, chungjung chickens eaten miced type develop resistance to in disease. There were significant trend in crude proteins, calciums, crude lipids contents, and unsaturated fatty acids between the chungjung chicken meats and the general chicken meats. The crude proteins and calciums contents were higher in the chungjung chicken meats than the general chicken meats, but the crude lipids contents were higher in the general chicken meats than that. Also, contents of the n6 fatty acids and n3 fatty acids in chungjung meats were higher than that. Especially, contents of DHA in the chungjung chicken meats were detected higher than the general chicken meats. Therefore, the results from this experiments will provide a information for the nutritional knowledge of the 'white meats', especially the clean chicken meats.

  • Kefir is a unique fermented dairy product resulting from combined lactic acid and alcoholic fermentation of lactose in milk. Kefir is produced by the microbial activity of kefir grains. Kefir has numerous health benefits such as the reduction of cholesterol levels, stimulation of the immune system, antimutagenic and anticarcinogenic properties, and improvements of lactose intolerance. Furthermore, kefir is excellent as both a dietetic beverage and for protection against various diseases in small babies. Therefore, kefir has recently been regarded as an important functional dairy food. To date, the majority of research on kefir has focused on the applications of functional kefir using advanced biotechnology methods. The purpose of this review article is to facilitate the recognition of kefir as a novel functional food.

Removal of Dissolved Organic Matters in Drinking Water by GAC adsorption using RSSCT (RSSCT를 이용한 GAC의 상수원수 내 용존유기물질 제거)

  • Granular activated carbon (GAC) has been identified as a best available technology (BAT) by the United States Environmental Protection Agency (USEPA) for removal disinfection by-product (DBP) precursors, such as dissolved organic carbon (DOC) and dissolved organic nitrogen (DON). Rapid small-scale column test (RSSCT) were used to investigate four types of carbon (F400, Norit1240, Norit40S, and Aquasorb1500) for their affinity to absorb natural organic matter (NOM). DOC, $UV_{254}$, and Total dissolved nitrogen (TON) concentrations were measured in the column effluent to track GAC breakthrough. DOC and $UV_{254}$ breakthrough occurred at around 3500 bed volumes (BVs) of operation for all GACs investigated. The $UV_{254}$ breakthrough curves showed 33% to 48% at 8000 BVs, when the DOC was 48% to 65%. All GACs showed greater removal in DOC than $UV_{254}$. The NORIT1240 GAC was determined to have the highest adsorption capacity for DOC and $UV_{254}$. The removal of nitrate (NOTN) had not broken through over BVs. The initial TON breakthrough curves were started around 50%, when the DOC breakthrough was only 10 % at 500 BVs. The curves were gradually increased after 3500 BVs and approximately 69% through 81% of TON breakthrough occurred at 8000 BVs. All of the GACs were able to remove TON, in the case of this investigation the majority of the TON was present as DON. Because nitrate nitrogen was seldom removed and ammonium nitrogen ($NH_3-N$) was not detected in the effluent from RSSCTs even though raw water. The carbon usage rate of DOC was from 2 to 6 times less than that of TON. The NORIT1240 GAC demonstrated the best performance in terms of DOC removal, while the F400 GAC was best in terms of TON removal. Excitation emission matrix(EEM) analysis was used to show that GAC adsorption successfully removed most of Humic-like DOC and Fulvic-like DOCs. However, soluble microbial product(SMP)-like DOC in the absence of raw water were detected in the NORIT40S and Aquasorb1500 GAC. The authors assumed that this results is due probably to the part of GAC in the RSSCT which was converted into biological activated carbon(BAC). To compare with organics removal by GAC according to preloading, the virgin GACs had readily accessible sites that were adsorbed DOC more rapidly than preloaded GACs, but the TDN removal had not showed differences between those GACs.

Effect of manufacturing process using superheated steam on the quality improvement of pickled radish product (과열증기를 이용한 무우절임 제품의 제조공정 설정 및 품질 개선효과)

  • This study was conducted to develop radish as a food product for home meal replacement using superheated steam (SHS). Also, the change of quality characteristics was studied during their storage. The radish cuts were treated with SHS for 0, 3, 5, and 7 min, respectively, followed by complete drying at $80^{\circ}C$ for 6 hours. The results showed that radishes restored with mixed solution (drinking water:sugar:vinegar:salt=2:1:0.8:0.1) were harder than those restored with drinking water. All radishes were stored at 5, 10 and $15^{\circ}C$ for 56 days to investigate the changes of quality characteristics during the storage. Radishes in the control group, restored with drinking water and stored at $15^{\circ}C$, were spoiled after 7 days of storage. The radish in the experimental group did not show any change in the water content; except an increase on the first day of storage. The hardness of radish decreased with an increase in the storage period. It was found that microbial growth was inhibited due to low pH of the mixed solution, in which radishes of the experimental group were immerse.

Effect of the Extracts from Fermented-Rhus verniciflua Stem Bark with Fomitella fraxinea on the Growth and Enzyme Activity of Soybean Product-fermenting Microorganisms (장수버섯 배양으로 제조한 발효옻 추출물이 장류 미생물의 증식 및 효소활성에 미치는 영향)

  • We studied the effect of fermented Rhus verniciflua stem bark (FRVSB) extract (used in herbal med-icine by Koreans) on the microbial growth and enzyme activity of 12 soybean-fermenting microorganisms, including Bacillus spp., lactic acid bacteria, yeast, and other harmful bacteria. The ethanol and methanol extracts of FRVSB inhibited the growth of Bacillus subtilis, Bacillus licheniformis, Bacillus cereus, and Zygosaccharomyces rouxii, and in the disk diffusion assay, their inhibition zone diameters were 11.06-12.23, 12.32-18.38, 11.47-11.84, and 13.59-14.21 mm, respectively. The water extract did not show any inhibitory effect. In fact, the water extract addition enhanced the growth of B. subtilis and B. licheniformis by 1.3-4.5 fold and that of B. cereus by 1.2-1.4 fold. However, the water extract did not affect the growth of Lactobacillus plantarum, Lactobacillus mesenteroides, Saccharomyces cer-evisiae, and Escherichia coli. The addition of water extract increased the amylase and protease activity of B. subtilis and B. licheniformis.

Antimicrobial Activity of Allyl Derivate in Multi-purpose Solution as Natural Preservative (다목적용액에서 천연보존제로서의 Allyl 유도체의 항균활성)

  • Purpose: The purpose of this study is to investigate antimicrobial activity of ally derivative of garlic against eye diseases, and to get basic data for an application development of the derivative, as a natural preservative, to multi-purpose solution (MPS). Methods: Antimicrobial activity of allyl derivative of garlic, diallyl sulfide (DAS), against Pseudomonas aeruginosa (P. aeruginosa) and Staphyloccus aereus (S. aereus) was determined. After DAS treatment in MPS of no microbial activity, its growth inhibition effect to bacteria was also determined. Results: DAS concentrations of $IC_{50}$ against P. aeruginosa and S. aereus were found when both bacteria were treated with DAS concentration of 0.25% and 0.64%, respectively. At MPS test, a product from Company A did not show any effects against both bacteria, but one from Company B showed antimicrobial activity against both bacteria. Antimicrobial activity test of the product from Company B in MPS did not showed any significant difference on both gram-negative and gram-positive bacteria. For a trial application of antimicrobial activity of DAS as a natural preservative, DAS was added to MPS of Company A which did not show any antimicrobial activity at treated concentration. Addition of DAS into MPS of Company A resulted in antimicrobial activity of DAS, which suggested a possible application of DAS as a germicide for contact lenses. Conclusions: This study showed allyl derivative of garlic has antimicrobial activity against both P. aeruginosa and against S. aereus, but more effects on P. aeruginosa. The result suggests that allyl derivative derived from garlic can be developed to a preservative of MPS as a natural substance.

Preservative Effect of Garlic Stalk or Pork Cooked in Soy Sauce by the Addition of Botanical Antimicrobial Agent-Citrus and Red Ginseng Mixture (식물성 천연 항균복합소재 처리에 의한 마늘종 및 돈육장조림의 저장 효과)

  • The mixture of botanical antimicrobial agent-citurs product and ginseng extract mixture(BAACG) was applied to garlic stalk or pork cooked in soysauce to extend their selflife. BAACG showed a remarkable antimicrobial activity against a wide spectrum of food-borne infection microorganisms and thermal and pH stability. In comparison with scanning electron microscopic photos of microbial cells not-treated and treated with BAACG the physiological cytomembrane function of BAACG-treated microorganisms was destroyed and the dead cell numbers was increased. The quality of garlic stalk or pork cooked in soysauce was controlled by the addition of BAACG in their raw materials. BAACG-treated garlic stalk or pork cookeries showed considerably to decrease the numbers of total cell count and expressed no odor and no sticky state appeared in the control. BAACG was expected to be a preservative agent which could be applied to raw or processed food stuffs in the view of food safety.
