채소와 과일, 생선 섭취 강조 영양중재교육이 아토피 피부염 영유아의 중증도 변화에 미치는 효과 (Effects of Nutrition Education Promoting Vegetable, Fruit, and Fish Intake on the Severity of Atopic Dermatitis in Children: Results from a One-year Follow Up Study)

  • Atopic dermatitis (AD) is believed to be associated with the intake of antioxidant nutrients and fatty acids due to its immunological dysfunction. The purpose of this study was to examine the effects of nutrition education promoting vegetable, fruit, and fish intake on the severity of AD in children. Children with AD aged 6 months to 5 years were randomly assigned into education and control groups, and followed for 1 year. Seventy-six children completed the study (38 for control, 38 for education). The education group received education promoting the intakes of antioxidant-rich foods (vegetables, fruits) and n-3 fatty acid foods (fish). A 24-hour food recall was collected for the diet information. After education, all vegetables (p < 0.001), fruits (p < 0.01), and fish (p < 0.05) intakes per 1000 kcal increased significantly in the education group, whereas only vegetable intake increased in the control group (p < 0.001). The SCORAD index, the severity of atopic dermatitis, decreased significantly in the education group (p < 0.05). Increased consumption of dietary vitamin E was significantly associated with reduction in the SCORAD index, after adjusting for age and gender (p < 0.05). A nutritional education program to increase vegetable, fruit, and fish intake may be effective in reducing the severity of AD, and vitamin E intake may be associated with the decreased severity of AD. More controlled studies on the relationship between these intakes and severity of AD, with intensive diet and/or supplement intervention programs, are needed to obtain conclusive results.

고령친화식품산업의 성장과 규모 전망 -건강기능식품과 특수용도식품을 중심으로- (A Prospect for Growth and Economic Size of Foods-for-Elderly Industry -Focused on Health Functional Foods and Foods for Special Dietary Uses-)

  • 본 연구에서는 향후 고령친화식품의 중심적인 상품군이 될 건강기능식품과 특수용도식품의 시장규모에 대한 예측을 시도하였다. 건강기능식품과 특수용도식품 중 고령친화와 관련된 시장의 범위를 설정하고 현황에 대해서 분석한 후 향후 전망에 대해서 예측하였는데, 경제성장과 민간소비지출의 변화 그리고 이에 따른 노령인구의 경제력 변화, 의료보험 및 연금저축의 변화 등을 반영하였다. 한편 관련기업들을 대상으로 한 설문조사 결과를 활용하는 한편, 노인인구의 변화 및 주요 만성질환의 발병률을 분석하여 예측에 반영하였다. 결과를 보면 2010년부터 2025년까지 건강기능식품과 특수용도식품 중 고령친화와 관련된 부문의 연평균 성장률은 최소 4.54%에서 최대 8.32%로 예측되었으며, 시장규모 예측치는 모형과 예측방식에 따라 2025년에 최소 7,073억원에서 최대 10,976억원으로 나타났다. 향후 고령친화제품의 수요는 고령인구의 증가와 보험급여 확대 등으로 크게 성장할 것으로 예상되는 반면에, 기업들은 수요의 변화를 관망하고 있는 상황으로 판단된다. 따라서 이는 자칫 수요에 비하여 부족한 공급 문제를 야기시킬 수 있다. 따라서 정부의 R&D에 대한 적극적인 지원, 고령친화식품에 대한 표준화 및 인증제 실시, 관련산업의 DB구축 등이 필요한 상황이다.

Analysis for Individual-authorization of Functional Food Materials in Korea

  • Objectives: This study aimed to provide basic information for the trend of individual-authorization on functional food materials in Korea to side of Korean medicine. Methods: Approval of materials for individual-authorized functional food in Korea was analyzed from 2004 to August 2015 using database from Ministry of Food and Drug Safety (MFDS), regarding the kinds of function, materials and their functional level by year. Results: Korean functional food market has rapidly grown to 1.56 trillion Won in 2014, with about 10% of annual growth rate. In particular, the increase of individual-authorized functional food is worth of notices, in detail 313 kinds of functional materials covering 31 body functions have been approved by August 2015. 15.7% of individual-authorized functional foods have used the herbal materials. This quantitative and qualitative expansion of functional foods, especially of individual-authorized functional foods, will affect the herbal drug industry negatively. Conclusion: This study figured out the current pattern of material approval for individual-authorized functional food in Korea, which would be essential in development of strategies by Korean medicine community in order to overcome such conditions.

  • In spite of high incidences in gastrointestinal cancers in Korea, there have been few studies so far, which tried to detect or isolate the mutagenic, namely the carcinogenic substances in the Korean taste traditional foods. Among the many plausible dietary sources of carcinogens, the pyrolytic products of proteins or amino acids would be the major ones. And it is more noteworthy that the food pattern analysis showed the increasing consumption of protein foods by Korean as pyrolytic products, such as Bulgogi and Kalbi, etc.

임신부의 섭식변화에 관한 조사연구 (A Stduy on Dietary Changes during Pregnancy)

  • Interviews of 208 women concerning dietary changes during pregnancy were under-rtaken from September 1986 to January 1987 at the medical centers in Seoul and Kyung Ki. 84% of the total subjects felt the morning sicksnes such as nausea and vomiting within the first trimester of pregnancy. There was a significant correlation between the experience of moring sickness and some environmental factors such as school carreer, food intake in early pregnancy, the number of meals and taking of medicines for promoting nutrition. Foods for which specifie cravings were frequently cited were fruits, meats, cold noodle, noodle and chinese food. Foods of aversions were Kimchi, meats, fish and fatted foods. With regard to beverage, there were the increase in milk and fruint juices consumption and the decrease in coffee ingestion during early pregnancy primarily attributed the concern for feto-maternal health. Possible explanation for these changes associated with pregnancy discussed.

  • Certain heavy metals which may lead peoples to poisonous status are widely used in industry and their uses have been increasing along with rapid industrialization of this country. Such an increasement of metal uses aggravates the status of environmental pollution affecting foodstuffs which are the most important life supporting factor of animal and humanbeing. Concerning the safety measures to minimize food-borne transmission of such hazardous metals, surveillance is the backbone of them and probably more so with a potential problem such as intoxication. Theoretically, this surveillance should include the determination of levels of heavy metal toxicants in foods, the determination of food consumption patterns and typical total diet, and the estimation of total load of the metal contaminant from all sources of exposure including air, water, and occupational sources. In recent year, actually, such estimates on the total daily intake of some heavy metals from foods have been made in several developed countries and a wide variation of date by season, locality, and research method was recognized. Also in this country, this kind of research data is vitally needed to make up for the serious shortage or lack of references to estimate the total amount of heavy metal intake of the people. In this study, a modification model for estimation of the total daily intake of cadmium copper, nickel, zinc, and lead through foods was applied and concentrations of the above metals in crops cultivated in this country were measured with atomic absorption spectro photometer to get the following results. 1. Level of heavy metal concentration in crops Generally, the levels of such metals in essential crops such as rice, cucumber, radish. chinese cabbage, apple, pear, grape, and orange are similar or lower than those in Japan and other developed countries. By the way, a striking result on cadmium concentration was increasement of its concentration in rice from $0{\sim}0.035ppm$ in 1970 to 0.11ppm in this study. However, the value is still far below the. Japanese Permissible Lebel of 1.0ppm. 2. Estimation of total daily intake per capita from foods A new model for estimation was devised utilizing levels of metal concentration in foods, amount of food consumed, and other food factors. Based on the above method, the daily intake of cadmium was estimated to be $70.53{\mu}g/man/day$ in average which was as high as the Limit Value of ILO/WHO(up to $71.4{\mu}g/man/day$). Also, 3.89mg of Zinc, 1.65mg of cuppor, 0.32mg of lead were given as the total daily intake per capita by this research. 3. Efficacy of washing or skinning to decrease the amount of metals in crops After washing the crops sufficiently with commercial linear alkylate sulfonate, the concentration of heavy metals could be reduced to $50{\sim}80%$ showing decreasement rate of $20{\sim}50%$. Also, after skinning the fruits, decreasement rate of the heavy metal concentration shelved $0{\sim}50%$.

  • Adverse reactions to foods are common and increasing problems worldwide. It is important to differentiate between the different forms of adverse reactions to foods, in particular the difference between food intolerance and food allergy. Food allergy is an adverse immunologic response to food and typically rapid in onset, whereas food intolerance is consequence of a variety of non-immune mechanisms and slow in onset. It has been difficult to diagnose food intolerance because of lack of diagnosis measure. There are now effective findings to identify food intolerance, and paradigms with food allergy are shifting. Food intolerance affects virtually every part of the body-from mildly uncomfortable symptoms to severe illness. While there is no known simple 'cure' for food allergy and food intolerance, there are a number of measures that will help avoid and lessen symptoms and correct the underlying causes. We focus the diagnosis and treatment of food intolerance through various views.

연령에 따른 종합병원 건강 검진자의 식이 섭취 패턴 분석 (A Study on the Food Intake Patterns by Age People in Medical-chechuped Persons in National Health Insurance Corporation Ilsan Hospital)

  • The purpose of this study was to analyze food intake patterns of individuals by age group. based on the nutrition counseling data from medical health examinations. The subjects were 5811 adults(3258 males and 2553 females) who had undergone comprehensive medical testing in Gyeonggi area, and were evaluated from January 1, 2005 to December 31, 2005. The survey samples were divided by age group: 30>, 30${\sim}$39, 40${\sim}$49, 50${\sim}$59, 60${\sim}$69, 70${\leq}$ years. The subjects were composed 56.1% male and 43.9% female. The results showed significant differences between the group for their intakes of several foods such as Seolleongtang, Samgyetang, canned foods, butter and cream bakery items, vegetables cereals and grain products but eggs, cod roe, kim-chi, salted pickled fish and seaweed showed no significant differences. As a result, nutritional imbalances among these age groups are expected for the future. In conclusion, this study showed there are age-related variations in the dietary patterns and age-specific nutritional education programs on adequate food intake are required.

탈북자 면접을 통한 북한 주민의 건강과 식품섭취 실태 탐색 (A Glance at the Health Status and Food Intake of North Koreans)

  • We performed this study to understand the health status and food intake of North Koreans. Information was collected by individual closed in-depth interviews of 11 escapers from North Korea as well as books, newspapers and North Korean movies. Interviews were done from October, 1996 to May, 1997, covering their heights and weights, their appearance and disease, food system and intake of various main/side foods, concern about health and hygiene. North Korean's height and BMI were lower than those of South Koreans. Difference of BMIs between North and South Koreans was profound in middle aged women than in other age groups. Childrem showed many malnutrition appearances of moon face, large abdomem, arrow-like legs, flaky skin, decolored hair, etc.. Main foods in North Korea were rice-shaped corn, corn flour, wheat flour and wet noodle, and side foods were kimchi and/or soups and steamed soy paste. Food supply system there seemed not to work normally for many years, so foods, especially in cities, has been extremely short in government-operating shops, but some in private market. Many housewives were eager to make and sell simple snack food products, We noticed that North korea schools didn't check students' health even though their medical policy was based on preventive medicine. Their living environmental hygiene was shown to be oyt of control.

스토리텔링을 접목한 상주향토음식 개발 - '정기룡장군 밥상'을 중심으로 - (Development of Native Local Foods in Sangju by Storytelling-combined - A Case of 'General Jeong's Table' -)

  • This study intends to discover stories and sensibilities connected with characteristics and symbols of the history and culture of Sangju to develop contents about the native foods of Sangju. 'General Jeong's Table', which supplied the energy and nutrition necessary for soldiers during war, is set with Jobap, Patipguk, Euneogui, Baechumoojeon, Kongnamulheojib, Patipnamul, and Munamulsileagideanjangmuchim. 'Sangjuseong retaking wartime food', as a kind of ready-to-eat meal, which stresses convenience above everything else, is composed of Konggarujumeokbap, Bbongipjuk, Gamjangajji, and Odigojgammodeumbagitteok for table setting. 'General Jeong's liquor table', which allowed the general to regain his energy or was set to entertain generals of allied forces in the Myeong Dynasty, is formed by Baeksuk, Gojgamssam, Kongjukjijim and Sangsurisul. Efficacies of food materials were analyzed in the Part of Drug Formula of the best-known medical book in Asia. Foods on 'General Jeong's Table' has health efficacies that protect the five viscera and maintain the spleen and stomach.
