Development in Computer Program for Standardized Quantitative Recipes in Military Services (국방 표준 식단 작성을 위한 전산화 프로그램 개발에 관한 연구)

  • The purpose of this study was to develop a computerized menu planning for military who need balanced diet for 365 days so that more effective and efficient food service can be provided. For this purpose, the evaluation of current military menu planning and production management system was carried out and the result was being applied to the computerized memo planning program which was being developed on this study. The contents of the computerized programs developed for this study were summerized as follows: 1) Programs for calculating nutrient value of foods and standarized meals. 2) Programs for outputing of meal table by a day or month. 3) Programs for outputing standardized recipes. 4) Programs for calculating nutrient value per day. 5) Programs for outputing one-sowing, one hundred-serving size and price. 6) Programs for calculating average of nutrient value by monthly and yearly. 7) Programs for calculating average of the amount used for a year. The personal computer type IBM PC-AT was used for the development of the software for this programs. Also, a work performance file was made by using the DBase III plus package.

A Study on Preference and Food Satisfaction of the Preschool Children Foodservice in Taegu (어린이집 급식에 대한 식품 기호도 및 만족도 조사 연구)

  • This study was conducted to investigate mean height, weight, food preference and satisfaction of 231 children in preschool in four different regions(Susung-ku, Jung-ku, Nam-ku, Dalseo-ku) of Taegu. Mean height of the children was increased by priority of Jung-ku, Dalseo-ku, Susung-ku and Nam-ku, and mean weight was of Jung-ku, Susung-ku, Dalseo-ku and Nam-ku. In food preference, boiled rice had the highest score of cooked rices in all of the different regions, jajangmyun had the highest score of noodles in Susung-ku, Jung-ku and Dalseo-ku. Cake had the hightest score of breads in Susung-ku and had significantly difference all the kind of other lesions. Songpyun had the highest score of rice cakes in all four regions. Jangjorim had the highest score of jorim foods in all four regions, but anchovy and green pepper jorim had the lowest. Toasted lavor and steamed chicken had the highest of toasted foods and steamed foods, respectively. Salads had the highest of muchimryu cooked potherbs and salads in all regions but kimchi and jangachi had low scores. Sujungkua had the lowest scores of beverages in all regions, but chocolate had the highest scores of cookies. In food intake satisfaction according to the regions, regularity, variety, hygiene, amount, and quantity of meal had the highest in dalseo-ku. Food temperature was highest in susung-ku. There was a direct correlation between type of housing and satisfaction in diversity of foods.

Dietary Behavior by Residence Types of Female College Students in Chungbuk Area (거주형태에 따른 충북지역 여대생의 식행동 비교)

  • This study was performed to compare dietary behaviors based on residence types of female college students. Self reports on dietary behavior and one-day dietary records were obtained from 227 female college students using anonymous questionnaires. The mean age of the subjects was $20.4{\pm}1.43$, and the height and weight were $162.5{\pm}4.8cm$ and $52.3{\pm}7.9kg$, respectively, The dietary behavior of female college students was inadequate, showing indifference to dietary balance, irregularity of meals, skipping breakfast, and high experience of drinking. One-day dietary records were obtained from 24k recall methods also showed a high number registering skipped meal status ($55.3\%$) and less diverse food intake (DVS, 12.5; DDS, 3.93). The students in self boarding residence were especially more likely not to eat properly and their dietary behaviors were found to be significantly poor. In the case of home residence, food intake frequency scores for milk and dairy products, fruits, and fishes were significantly higher, however the students in self boarding residences showed high food intake frequency scores in salted food, retort food, canned food, and especially instant ramyun. Therefore, more attention needs to be given to them to recognize the problems in their own dietary behaviors and more practical nutritional supports, like developing a menu for breakfast in college cafeterias, would be helpful to improve their dietary choices.

Dietary Behaviors of Preschool Children and Food Allergy Prevalence of Preschool Childcare Facilities in Gwangsan-gu, Gwangju Metropolitan City (광주광역시 광산구 보육시설 유아의 식행동과 식품알레르기 발생 현황)

  • This study aimed to evaluate dietary behaviors and food allergy status of preschool children in Gwangsan-gu, Gwangju Metropolitan city. The survey included 592 preschool children aged 1-5 years old in 31 childcare facilities. General characteristics, feeding type, complementary feeding, food allergy, dietary behaviors based on the NQ-P questionnaire, and dietary habits of their family were considered. Exclusively breast-fed children was 32.2% of the subjects and the breast feeding duration was 6.5 months. Subjects who had complementary feeding within 6 months was 77.2% and starting time of complementary feeding was 6.1 months. Fifteen percent of the subjects had food allergies and foods that induced allergy were instant foods, eggs, milk and dairy products, nuts, seafood. Food allergy was not related to breast feeding nor complementary feeding. The NQ-P score and its 3 factors including 'balance', 'moderation', and 'environment' were 59.9, 61.1, 56.0, 62.6, respectively. There were positive relations between children's dietary behaviors and family dietary habits such as breakfast eating frequency and meal regularity. As age of children increased, instant food intake increased and breakfast eating frequency decreased. Proper nutrition education is needed to children, their parents, and their care givers at childcare facilities to improve children's dietary behavior and health.

Gender and Age Differences in Dietary Behaviors and Food Consumption Pattern of Korean Americans Living in Western Parts of USA

  • This study was conducted to find the gender and age differences in dietary behaviors and food consumption pattern of Korean American adults living in western parts of USA. The structured survey forms and self-administered food frequency questionnaire were used to assess dietary behavior and nutrient intakes. It was found that younger subjects kept their meal time more irregularly and skipped breakfast more often than older subjects due to lack of time. There were significant age differences in skipping meals, kind of skipping meals, and the reasons for skipping meals. Young subjects consumed more American type food while older subjects consumed more traditional Korean food. Nutrient intakes of males' except for the elderly were significantly higher in energy, protein, Fe and P than those of females'. Vitamin A and vitamin C intake were significantly higher in females. Energy ratio of carbohydrate: protein: fat was 56.2 : 16.8 : 27.0. Females consumed more plant food as their dietary sources of protein, fat, Ca and Fe, compared to males. Ca intakes of participants' were below $75\%$ of RDA except for the youngest male and $30\~49$ aged male and females. Futhermore, Ca intake was below $70\%$ after age 50 in both genders. Effective nutrition education program targeting Korean Americans in the community should be developed and implemented to increase Ca consumption.

A Study on Obesity and Food Habit of Adolescents in Yeosu, Jeonnam Area (전남 여수지역 청소년들의 비만도와 식생활습관에 관한 연구)

  • This study was to investigate obesity and food habit of adolescents in Yosu, Chonnam area. It was surveyed using questionnaires with 551 adolescents consisted of 280 boys and 271 girls. The questionnaire included general charac-teristics, obesity index, eating behavior and snack intake pattern. The results were as follows. The proportion of obese subjects was 10% by Rohrer index but the rate of obesity by body mass index was 3.3%. The self perception of body shape were optimal (47.9%), fat (29.8%), slightly lean (14.5%), obese (4.7%) and lean (3.1%). Generally, the propor-tion of girls responded them as “fat” was greater than boys. The greater percentage of boys responded them as “lean” than girls. The subjects don't take breakfast regularly were 50.8% and the main reason for skipping breakfast was the lack of time (55.2%). The main type of breakfast was cooked rice (78.9%). The most favorite snacks hun out to be cookies (36.5%) and 45.7% of subjects take snacks during the rest. The reason for taking snacks was “feeling hungry” (52.6%) and the taste was the most important factor of snack choice. The results of this study showed that the most of subjects were not in a serious obesity condition, and their eating habits were generally satisfactory. Also, this study has found that it is necessary to educate the students the importance of regular intake of a balanced meal. (Korean J Community Nutrition 8(2) : 129∼137, 2003)

Root Rot of Carnation Caused by Phytophthora nicotianae (Phytophthora nicotianae(Breda de Haan)에 의한 카네이션 역병)

  • Root rot of carnation caused by isolates of Phytophthora was found at Kongju, 1996. Infected plants appeared symptoms of wilting, brown discoloration on collar area and consequently led to death. The causal pathogen was identified as Phytophthora nicotianae based on morphological, cultural and physiological characteristics. Mycelium was grown to rosette colony pattern on corn meal agar and the growth was 10.2 mm/day on 10% clarified V8 medium at $25^{\circ}C$. Swelling with radiating hyphae was formed in water and on agar within 7 days. Chlamydospores were abundantly produced on agar within 7 days. Sporangium was prominent papillate, 2~3 apex, 1.2 : 1 l/b ratio, lateral attacment on sporangiospore and was rarely produced on solid media but produced in water. The shape of sporangium was spherical or ovoid, and the size was 34~73$\times$32~60 (av. 33$\times$66.5) ${\mu}{\textrm}{m}$ in dimension. The isolates were heterothallic, and mating type A2. Oogonium was spherical, ovoid, 26~36 (av. 36 ${\mu}{\textrm}{m}$) in diameter, and antheridium was amphygynious to oogonia. The fungus was able to grow 10~35$^{\circ}C$, and optimal temperature was 27$^{\circ}C$.

Effects of a Nurse Short-Message Service via Cellular Phones for People with Diabetes (휴대전화 문자 메시지를 이용한 당뇨 교육이 당뇨벙환자 혈당에 미치는 효과)

  • Purpose: The purpose of this study was to evaluate the effect of a six month web-based diabetic education on plasma glucose in people with diabetes. Method: A randomized design with control and experimental groups being assessed pre- and post-intervention was used. Seventeen patients were randomly assigned to a control group and 18 to an experimental group. Participants were requested to input the blood glucose level weekly to http://www.biodang.com by cellular phone or wire Internet for 6 months. The researcher sent optimal recommendations to each patient using the short message service (SMS) for cellular phone and wire Internet. Messages were sent weekly for 6 months. Results: Glycosylated hemoglobin ($HbA_1c$) decreased 1.5 percentage points at 3 months and 1.4 percentage points at 6 months compared with baseline in the intervention group. Patients in the intervention group had a decrease in 2 hours post meal glucose (2HPMG) of 94.3mg/dl at 3 months and 82.5mg/dl at 6 months compared with baseline. Conclusion: This web-based intervention using SMS for cellular phone improved HbAlc, and 2HPMG for six months in patients with type 2 diabetes.

  • Institutional foodservice is a type of meal provided to workers in industry and affects the health and psychological wellbeing of workers and productivity. Thus, research on customer satisfaction with institutional foodservice is important. In addition to food industry and food culture developments, the requirements of institutional foodservice customers are diversifying due to COVID-19. Therefore, the purpose of this study was to identify factors that affect customer satisfaction with institutional foodservice using a user-based approach. In this study, the quality of institutional foodservice was defined using customer satisfaction or dissatisfaction, and by using in-depth interview and open coding (a qualitative research method), we derived qualities of institutional foodservice from the user's perspective and compared these with those of previous studies. This study is meaningful as the quality of institutional foodservice was analyzed using a user-based approach, in-depth interview, and open coding and compares results with those of previous studies.

Mukbang's Foodcasting beyond Korea's Borders: A Study Focusing on OTT Platforms

  • Mukbang is a type of foodcasting where a host records or streams their eating rituals for audience consumption in live format. With origins in South Korea via the online broadcast genre found on Afreeca TV in the mid-2000s, the phenomenon has since found global popularity. Its development as a full-fledged genre is based on a communication culture that invites people to a meal rather than to talk to one another; viewers watch in silence as a host consumes a copious number of dishes from Korean gastronomy to fast food to other ethnic cuisine on display. An invitation to eat means the beginning of a public relationship that quickly turns to a private shared experience. This study analyzes several Mukbang video postings and makes use of Linden's culture approach model to provide a view toward a number of cross-cultural connections by Koreans and non-Korean audiences. Prior to the study, 10 Korean eating shows were selected and used as standard models. Korean Mukbang mainly consists of eating behavior and ASMR, with very few storytelling or narrative devices utilized by its creators. For this reason, eating shows make a very private connection. In other ways, this paper shows how 28 Mukbang-related YouTube contents selected by Ranker were evolving and examined through notions of acculturation and reception theory.
