Safety Inspection on Jeotgal, Salt-Fermented Sea Food

  • Jeotgal, salt- fermented sea food, is a kind of Korean traditional foods. We carried out hazard analysis on Changran (stomach and intestine of Alaska pollack) Jeotgal and squid Jeotgal through the whole processing procedures at H Co. located at Guryongpo from April 2000 to September 2001. During this studying period, we educated employee regularly and analyzed hazards on the whole process and then could conclude that pathogenic bacteria and metal particles were most important hazards in Jeotgal. Metal particles in end-product will be eliminated by laser detector before packaging. But bacteria must thoroughly manage through the whole process. Bacteriological qualities of the end products were much improved after education for the employees and by effort for HACCP (Hazard Analysis and Critical Control Point) program introduction. Pathogenic bacteria such as pathogenic Escherichia coli, Salmonella spp., coagulase positive Staphylococcus aureus and Vibrio parahaemolyticus were not detected from not only raw materials but also end products. The falling bacteria in the places such as thawing area, packaging area, seasoning area, fermenting room, subsidiary materials room and storage room were less than 30 CFU per plate for 30 minutes during working time. But those were increased more than 10 times during the resting time. It means that special measures are needed during the break time such as lunch time or exchanging working teams.

An Analysis about Characteristics of Students' Movement within a Recess by Physical Conditions of Homebase - Concentrated on the Classroom in Middle School on Variation Type - (거점공간의 물리적 여건에 따른 휴식시간 학생거동 특성 분석 - 교과교실형 중학교 교실공간을 중심으로 -)

  • This study was tried to find out characteristics of students' movement in classroom and homeroom. The object was the school whose homebase management was different by grade. Observation research was tried about middle school class that is simultaneously worked with different type of homeroom and the movement of students under various situations was analyzed. As a result, students in exclusive subject classroom moved in short time within one or two minutes after class. In case of exclusive homeroom, returning frequency of students was nearly about 85 to 100 percent within ten minutes in end of end. Behavioral characteristics of students in dual purpose homeroom was similar in exclusive subject classroom. The class using dual purpose homeroom showed high ratio in use of center homebase, therefore, returning frequency at short recess time was extremely low. In case of dual purpose homeroom at lunch time, next class students moved in early time and maximized within one or two minutes in end of end. These results are thought to be useful for planning spaces of variation type.

  • The boiler tubes and steam Pipes operating both at high temperature and pressure for a long period of time in a power plant are degraded by creep because of internal pressure. So, the remaining life of a component is evaluated by the creep rupture strength. Although the conventional method to evaluate the creep damage is widely used, it has some disadvantages such as requires large size specimen and long employed to evaluate the correlation between fracture toughness and evaluation time. Recently, new method so called "small lunch test' is used to evaluate degradation of creep. In this study, a conventional creep test and a small punch test are conducted using 2.25Cr-1Mo steel which is mainly used for the boiler tubes and steam pipes in power plant. The creep life, approximately 1,500 hrs, is determined by conventional method under a severe condition then specimens for a small Punch test are obtained after certain time intervals such as 1/4, 1/2 and 3/4 of final rupture time, respectively.

Study on the Eating Habit and Eating Out Behavior of the University Students (일부 경기지역 대학생의 식습관과 외식행태)

  • This study investigated difference of general eating habit and eating-out behavior between men and women of university students in Gyonggi area. The survey was conducted from 1 March to 1 April 2010, in Gyeonggi area. Self-administered questionnaires were collected from 250 students in Gyeonggi area. The research results show, first of all, that they eat twice a day, and they usually do not eat breakfast. The main reason why they do not eat breakfast is that they do not have enough time to eat. Between men and women, there is significant difference in eating amount and eating speed at 0.001 levels. Men's problems of eating behavior are irregular meal time and speed of eating time, and in case of women, they do not have a meal regularly and overeat at one time. Second, they usually eat out for a meal and gather with friends once to three times a week. Also, the lunch set-menu promotion is the most preferred one. Third, when men choose a restaurant, they consider in order of taste, convenience, amount, and service; women consider in order of atmosphere, taste, convenience, and service. Taste is the most important for men; atmosphere is the most important consideration for women. Taste (at 0.01 levels), sanitation (at 0.05 levels), and atmosphere (at 0.001 levels) are significantly different between men and women in choosing restaurant.

Calcium and Milk Intake of Elementary School Students from School Foodservices - Focus on the Gyeongsangbukdo Province - (초등학교 급식 식단과 우유를 통한 칼슘 섭취 실태 - 경상북도 일부지역을 중심으로 -)

  • The calcium intake of elementary school students residing in Gyeongsangbukdo province from their school foodservice and milk program was evaluated. A total of 252 subjects (50.4% boys and 49.6% girls) were examined. A significant percentage of the total subjects (32.9%) reported skipping breakfast once or more per week, with the major reasons for skipping breakfast being a lack of time and appetite. A majority of the to-tal subjects (78.2%) participated in the school milk program. The type of milk consumed by the subjects was mainly white milk, with a milk intake mostly between one and two cups. Participants in the school milk program consumed over the recommended nutrient intake (RNI) of calcium, but non-participants consumed only 48.1% of the RNI (P<0.001). The calcium intake rate according to food cooking methods, from highest to lowest was in the order bap, twigim, jeon, jjim, and gui. Although the food intake rate of guk was low, the calcium intake rate by RNI was the highest for guk. On the other hand, the food intake rate of bap and kimchi was high, but their calcium intake rate by RNI was relatively low. These results show that non-participants in the school milk program are significantly deficient in calcium. Therefore, to improve the calcium nutrition for children, school lunch menus containing high calcium need to be developed and children should be encouraged to enter a school milk program.

The effects of professional tooth cleaning and dental health education on dental clearances and dental health behaviors (전문가치면세정술 및 구강보건교육이 구강청결도와 구강보건행태에 미치는 영향)

  • The purpose of this study was to evaluate the effect of professional tooth cleaning and dental health education on dental clearances and dental health behaviors. This study was designed into two groups, 80 persons of control group for dental health education and 80 persons of experimental group for dental health education and professional tooth cleaning. In order to compare education effects, the researcher applied different educational methods. The parameters were the toothbrushing frequency, the average tooth brushing time, the action rate of toothbrushing after lunch, and the rate of using oral hygiene product. The data were analyzed and the following was the conclusion. The frequency of toothbrushing in two groups increased. Toothbrushing frequency of the experimental group was significantly higher than that of preliminary group and control group. The action rate of toothbrushing after lunch in two groups increased. But the experimental group was significantly higher. The score for dental clearances of the experimental group were higher than those of the control group. The data showed statistically significant difference.

Study on the Present Situation and Management of Free Meal Service for Elderly at Sungnam area (성남 지역의 노인을 위한 무료 급식시설의 급식 서어비스 현황 조사)

  • The purpose of this study is, to examine current foodservice management practices at free meal service organization for elderly people and, to evaluate the attitude of recipients about the service and their ecological background. 6 meal service center as well as randomly selected 120 recipients at Sungnam area were surveyed and interviewed and result were summarized as follow. The cost of each meal (lunch) was ranged from 1,300 won to 1,500 won and number of attendant at meal service were ranged from 50 to 200 persons. Meal time for lunch begins from 10:30 am to noon because greater portion of people (elderly) didn't take breakfast frequently. Most of the center adapted self-service system. Standard recipe was not developed and meal preparation was controlled under the experiences of volunteer’s. Recording system of, nutrition management, production control, storage and inventory control was not well adapted by most of the center. In order to measure the level of storage, sanitation etc., scorin system in survey was adapted in this study and result are as follow: The score of sanitation of kitchen was lower than dinning area and that of food storage was lowest score. It was suggested that not only financial but also systematical support on management by local government may be necessary to meet the goal of supply nutritionally balanced food at the center. The score given by the recipient on the satisfaction of meal service was rate as 4.8 at the 5-point maximum scale. Meeting friends and share social relationship was major reason (41.6% of the total) of visiting to the center. It is suggested that in order to meet the changes of the patterns of change of social and family structure, the service of the center should be extended in urban area and it is necessary to develop systematic management models for the center.

Workers intake too much salt from dishes of eating out and food service cafeterias; direct chemical analysis of sodium content

  • The average sodium intake of Koreans was reported to be 5,279.9 mg/day, which is one of the highest intake levels worldwide. The average Koreans intake 19.6% of sodium from kimchi, showing kimchi as the main contributor of sodium in this country (Ministry of Health and Welfare, 2005). The sodium content of dishes that are frequently chosen by workers, and which were served by foodservice cafeterias were chemically analyzed. The average sodium content of one meal provided by 10 foodservice cafeterias was 2,777.7 mg. Twenty-one, one-dish-meals, frequently chosen by workers for a lunch menu, were collected at 4 different restaurants for each menu by one male, aged in the twenties and analyzed chemically also. Workers who eat lunch at a workplace cafeteria everyday could intake about 8 g of salt at a one-time meal and those who eat out for a one-dish-meal would intake 3-8 g of salt without counting sodium content from the side dishes. From these study results, one could estimate that over 10 g of salt could be possible for a single meal for workers who eat out everyday. A nationwide nutrition campaign and education for low salt diets for restaurant owners and foodservice providers should be seriously considered.

A Study on the Meal Portion Size of Kindergarten (유아교육기관 교사의 급식 제공량에 관한 연구)

  • This study was performed to weigh the average meal portion sizes served for preschoolers by kindergarten teacher. The subjects were 53 teachers from 8 kindergartens, which are random sampled by meal service number. Using the weighing method assessed the meal portion sizes of food items at lunch. The data was complied by performing $\chi^2-test$ using SPSS WIN 11.0. The result was as followed: 98.0% of teacher agreed with the meal service because of 'better food habit and table etiquette'(68.0%), 'health promotion with balanced diet'(22.0%), 'owing to extending school time'(6.0%) and 'demand of parents'(2.0%). Preschooler eat lunch at class (84.9%) and meal serving size was decided by teacher (79.2%). Teachers thought that they know very well about portion size 3.8%, 96.2% of teacher thought that they don't know much about portion size. Portion size were not significantly different by food tray types but there was much different (almost 100%) compared with minimum and maximum within dishes. Most average portion size was not met dietary reference intake except cooked rice, soups and fish cutlet. Working experience effected on portion size. More served, more working experienced of teacher. For example Bulgogi was served 26.8 g by teacher who has over 6 years working experience compared with 2-6 years (20.4 g) and less than 2 years (17.1 g) (p < 0.01). Spinach portion size was significantly different by teacher's working experience (p < 0.01). Portion size were not significantly different by preschooler's age. The reference of dietary for preschooler was different by age, but teachers served meal by their experience. According to the results of this study, it is necessary to educate meal portion size for kindergarten teacher who take charge in meal serving. To provide guidance to teacher about reasonable portion sizes for preschoolers, teacher need to take nutrition education about meal service and child nutrition in college. This study would be useful to those who plan meals for preschoolers and to researchers studying dietary intakes of preschooler.

A Study Examining Glucose Tolerance Tests, Food Habits, and Nutrient Intakes in Female College Students according to BMI in the Kyunggido Area (경기 지역 여대생들의 BMI에 따른 경구 당부하 검사, 식습관 및 영양 섭취 상태 조사)

  • The purpose of this study was to investigate the food habits, dietary intakes and GTTs (glucose tolerance tests) of female college students according to BMI in the Kyunggido area. Questionnaire surveys, 24 hr dietary recalls, and GTTs were conducted with 108 students (36 under-weight students, 42 normal weight students, and 30 over-weight students). The results were as follows: The under wt. and over wt. groups had lower frequencies of eating breakfast but higher frequencies of eating lunch than the normal wt. group. The ratio of students having dinner everyday was low in the order of under wt. > normal wt. > over wt.. The over wt. group skipped breakfast mainly due to lack of time and the need to get to school, and the under wt. group had a high ratio (48.1%) of lunch skipper as a result of having brunch. The over wt. subjects had poor habits of eating fast and overeating, but the under wt. students ate their meals slowly. The under wt. group had a high ratio of students who ate snacks and fast-food. All subjects wanted to immediately improve their poor habit of overeating. Plant oil, animal Fe, and vitamin E intakes were lower in the under wt. group than in the other groups. For the GTT, the over wt. students had significantly lower blood glucose levels after 30 min. than the other groups. BMI was negatively correlated with blood glucose level after 30 min, but positively correlated with crude fiber, ash, Ca, plant Ca, P, animal Fe, Na, K, $\beta$-carotene, vitamin $B_6$, niacin, and vitamin E.
