A Syudy on the Preference of Japanese Food in Capital area (수도권을 중심으로 한국인의 일본음식 선호도에 관한 연구)

  • The purpose of this study was to investigate the preference of the general public about Japanese foods. Self-adminitered questionnaires were collected from 217 residents in seoul and its vicinities. Data was analysed by chi-square test, t-test and one-way ANOVA. The preference of Japanese food was generally high except for the items. These was a significant difference in the average score of preference for each kind of Japanese food according to gender and age. Saengsunchobab, Saewootuegim, Gowangawhae, Yhachai tuegim, Naembiwoodong and kimchobab are highly preferred Japanese foods, whereas Domijiri, Moduemnaembi, Haesamchowhae and Mooneachowhae are poorly considered among the general public.

Study on the Perception and Preference of the Native Local Foods in Jecheon Area (제천지역의 향토음식에 관한 인지도 및 기호도 조사)

  • The purpose of this study was to have a proper understanding and a concern about native local food in Jecheon area. The data was obtained by use of questionnaires to residents in Jecheon and statistical analysis was performed The results were as follows: 1. Deodeokgui got the highest score in perception, preference, and possibility of development as a native local food in Jecheon. 2. Hyangeobaeksuk and Memiljeonbyung are significantly different in perception by gender. Perception scores of native local food were not significantly different by increase of age and resident period The perception scores of Dotorichaemuk and Minmulbibimhoe by nuclear family member were significantly high compared with that by extended family members. The perception score of Deodeokgui increased as the monthly income increased 3. Female subjects liked Gondeurebap and Memiljeonbyung whereas male ones liked Hyangeobaeksuk and Minmulbibimhoe. Preferences of Torimyun, Dotorichaemuk, Kongtang, Hyangeobaeksuk, Chikyori, Gobonju Seungumchotteok were increased as the age increased 4. According to this study, modernization was required for development of native local food.

A study on the nutritional Knowledge, food behavior, nutritional attitudes and food preference -in case of elderly living in home- (노인의 영양지식과 식행동 영양태도 및 식품기호도에 관한 조사연구 -서울시내 가정거주 노인을 중심으로-)

  • This study was designed to observe the nutritional knowledge, food behavior, nutritional attitudes and food preference of elderly living in home. Two hundred and thirty elderly were examined on questionnaire. The results of this study are summarized as follows. 1. The average score of their nutritional knowledge was 6.08 (the highest mark was 10.00). The nutrition knowledge score of the elderly live with spouse was higher than those live alone and goes up according to the education degree of elderly and pocket money. The correct answer ratio about a question of geriatric diseases was somewhat higher than another question. 2. The average score of their food behavior was 21.90(the highest mark was 33.00) and the score of the female was higher than that of the male and the college-educated elderly have the highest score. Generally their food behavior was improved by the increasing intake of animal protein and milk. 3. The average score of their nutritional attitude was 11.25 (the highest mark was 15.00) and those of 70~74 age old have the lowest score. And they answered that they are willing to change their food behavior for their health. In this study we expect that the authorities would operate the nutritional education for the prevention of degenerative diseases and the development of the food behavior at a public health center or another groups(no-in-jung) as a part of service for the welfare of elderly. 4. They prefered vegetable foods to animal foods and baking, broiling, and raw foods to the fried foods, and they liked the sweet foods, the fruits, milk and lactic acid beverage as snack or dessert.

A Study on the Relationship between Food Habits, Food Preferences and Personality Traits of Children (아동의 식습관 및 식품기호와 성격특성과의 관계연구)

  • To examine closely the relations between food habits, food preferences and personality traits, 141 boys and 146 girls in the 5th and the 6th grade of primary school in Incheon were studied by questionaires. The results of this study were as follows: 1. In food habit scores, girls got 2.28/3.00 and boys got 2.24/3.00 which meant boys and girls had the similar food habits. 2. The higher were their activity, sociability, responsibility, reflectiveness, and superiority, the higher score they showed in food habits. 3. Meats, fats and processed foods had much to do with emotional stability, and those who belonged to high group in emotional stability high preference for them. But girls who had high preference for meats were low in emotional stability. 4. Fishes of which bones we can eat, and potatoes had relation to activity, and those who belonged to high group in activity showed high preference for them. 5. Vegetables and processed foods had relation to sociability. Those who belonged to high group in sociability showed high preference for vegetables, but those who belonged to middle group in sociability showed highest preference for processed foods. 6. Meats and potatoes had much to do with responsibility. Those who belonged to low group in responsibility showed high preference for them. 7. Those who belonged to the high group in emotional stability, and superiority showed the high preferene for foods respectively, and superiority showed the high preference for foods respectively.

A Study on Dietary Behavior of Children According to the Their Preferences for Fast Food (패스트 푸드 선호도에 따른 식생활 행동에 관한 연구 -광주지역 초등학교 6학년을 중심으로 -)

  • The purpose of this study was to examine the dietary behavior of children according to their preference for fast food. The study was carried out on 470, 6th grade students (boys : 236, girls : 234) in September, 2002. The results are summarized as follows : The mean body mass index was 18.72 kg/$m^2$ for boys and 17.76 kg/$m^2$ $^2$ for girls. The subjective health disorder symptoms for the group preferring fast food was not significantly different than that of the other groups. The group preferring fast food consumed an inadequate volume of food, and they had an irregular and unbalanced diet. Their intake of green vegetables, vegetables, protein foods, and seaweed was significantly lower than that of the other groups. The food habit score for the group preferring fast food was lower than that of the other groups, and they had irregular meal times and had unbalanced diets. The group preferring fast food had a preference for sweet tastes, whilst members of the other group preferred a savory taste. The first choice for fast food by the group preferring fast food was hamburgers, the reason being that it tasted good. Results show that children who have a preference for fast food need to correct their dietary behavior. As a result, proper nutritional education and intervention is required in order to improve the consuming habits of children and their preference for fast food.

A Comparative Study on the Preference and Purchase/Recommendation Intention of Korean Food Menu among Major Countries by Continent (대륙별 주요국가들의 한식 메뉴 선호도와 구매 및 추천의도에 관한 비교연구)

  • Food is essential for sustenance and reflects a country's identity, making it crucial to identify the cultural needs for effectively localizing Korean food. This study surveyed 825 adults from four continents (eight countries) to examine their preferences, familiarity, and attitudes toward Korean food. Significant correlations(p< .001) were found between the familiarity and preference for Korean food, with variations observed across continents. Among the representative Korean food items, the average preference score was 4.67, and the purchase/recommendation intention score was 4.88. Seven items received above-average ratings (e.g., gogi-deopbap and kimchi-bokkeumbap), while some items showed high liking but low purchase/recommendation intention (e.g. dak-jjim and galbi-jjim). In addition, items such as gimbap and tteokbokki had high purchase/recommendation intention but low liking, and kimchi and vegetable foods etc. received low liking and purchase/recommendation intentions. In terms of the preferred meat according to the cooking method and seasoning, beef respondents preferred grilled·stir-fried and soup·stew·hot pot cooking methods, while pork or chicken respondents preferred grilled·stir-fried and frying methods. Soy sauce was the most preferred seasoning for all meat responses, followed by red pepper paste. These research findings provide fundamental data for developing Korean food products, segmented by continent.

Interrelations Among Fast Food Intake, Food Behavior, and Personality in Adolescents (패스트푸드 섭취가 청소년의 식행동 및 인성에 미치는 영향)

  • Especially, the teenage period, an important lifetime to develop both physically and mentally, needs to be helpful to promote the growth of the body and to keep a well-balanced mind through a balanced and nourishing diet. It is well known that the western style fast food is the most liked meal by teenagers. Wrong recognition about fast food and its frequent intake by adolescents can lead to unbalanced diet and food behaviors which may also connect with a poor impact on their personalities as well as their physical health. In this study, therefore, relationships between fast food intake frequency and food behavior, sociability, and personality, such as anger expression, were surveyed from 1,295 adolescents (666 in Seoul, 316 in Changwon, and 313 in rural communities), and then analyzed using SPSS program. The results are shown as follows. The fast food preference score and the fast food intake frequency score showed no differences between male students (22.9/30, 14.4/30 respectively) and female students (23.0/30, 14.0/30 respectively). But, the fast food preference score correlated positively with the intake frequency score (r=0.304) significantly (p<0.001). The more frequently eating of fast food group showed significantly lower scores (r=-0.233, p<0.001) in food behaviors. The frequency of fast food intake had no relationships with sociability, but it had a significantly effect on anger expression (r=0.213, p<0.001) and control (r=-0.l47, p<0.001). From these results, we could see the necessity of various nutrition education programs to build proper eating-out habits and also more studies are needed to find the relationships between fast food intake and growth and personality.

Study on Preference and Using Behavior of Chungkukjang Products in Daegu and Gyeongbuk Area (대구.경북 지역의 청국장 제품에 대한 기호도 및 이용실태 조사)

  • Survey data from 654 adults (225 males, 429 females) were analyzed based on frequency, percentage, chi-square test, one-way ANOVA; and Duncan's multiple range test. The main results were based on the preference for chungkukjang_(CKJ) products using a 5-point Likert scale. According to the survey, traditional CKJ products received the highest score_(3.64) according to personal preference among all tested products. The responses to eight questions about CKJ products were also measured using a 5-point Likert scale. The question_ as to whether or not "CKJ has anticancer function" received the highest score_(4.24) while the "CKJ is good for hangover" scored the lowest. Regarding the preference for CKJ products, "good for health" (55.3%) and "unpleasant smell" (72.9%) were the most popular answers, Regarding the intention to eat CKJ food products, CKJ tofu was most often selected. Among the 11 items, CKJ tofu, CKJ steak, CKJ hamburger, CKJ ice cream; and CKJ vegetable salad were highly preferred foods. The percentage of respondents that expected "increasing" prospects for CKJ consumption was 55.2%, most likely because 76.9% of the respondents selected "healthy food". Regarding the reasons for decreasing prospects, 68.9% of the respondents chose "peculiar smell". In the same manner, 53.4% of adults replied that future quality improvement should "improve the smell".

Preference Test of Yukwa in the particular regions of America (유과의 미주 현지인 기호도 조사)

  • This study was to investigate the preference test of among 10’s and 20’s in New York, Atlanta, Chicago and Sanfrancisco in USA. Preference of packaging, design, printing, flavor, texture and overall preference surveyed. About thirty percent of the respondents showed high score in packaging among the items. The design and color of Yukwa was 22.0% and 24.1% in “excellent”. American did not prefer the texture due to stickiness of Yukwa. However, 92.7% of the respondents showed high score in overall acceptability of Yukwa. On the basis of this result Yukwa would he developed for residential people’s preference. It is possible to export successfully the Korean traditional snack, Yukwa.

Development and Field Application of Meal Service Menu for the Elderly on Busy Farming Season in Hongchun, Gangwon (강원 홍천군 거주 노인의 농번기 급식용 메뉴개발과 적용)

  • Meal service menu for the elderly on busy farming season in Hongchun, Gangwon was developed and applied using seasonal foods from local crops. Acceptance of each menu right after the meal service was investigated while unit cost and leftover of each menu were also monitored. Acceptance of the staple food in Menu 4 showed the highest value with a score of 8.97.and side dishes of Menu 4 were greatly prdferred with a score of 8.69(p<0.05). General preference on menu was the highest at Menu 4 scoring 8.87(p<0.05). The amount of leftover for a special meal of Menu 3 was 75.80 g, which was the highest (p<0.05). Males left the least of Menu 4(30.82 g) whereas females did of Menu 2 (10.63 g, p<0.05). The foeld application of preference and satisfaction, and the small amount of leftover of the supplied meals.
