음료식품의 알루미늄 함량 (The Contents of Aluminum in Beverage Foods)

  • 여러 금속 원소 가운데 유해하지 않은 것으로 알려진 알루미늄 재질의 용기나 화합물의 사용이 증가하고 있어서 알루미늄의 허용수준에 대한 연구의 필요성이 대두되고 있으나 그에 대한 연구가 거의 없는 실정이어서 이의 기초자료를 얻고자 여러 가지 대중적인 음료식품 가운데, 유산균 음료, 탄산 음료, 과실 음료, 과실 통조림 등에 대한 알루미늄 함량을 원자흡수분광광도법으로 분석한 결과는 다음과 같다. 3개 제조사의 유산균음료중 액상요구르트는 161.667~173.333ppm, 호상 요구르트는 139.303~293.926ppm으로 호상요구르트 함량이 약간 높았다. 4개사의 캔 용기의 과실 음료와 탄산 음료는 각각 1,481~7,130ppm, 1,803~6,027ppm으로 이들 서로 간에 합량 차이는 크지 않았다. 3개사의 과실 통조림 중 포도 통조림은 5,661~5.927ppm, 복숭아 통조림은 4.600~7.053ppm의 범위였고, 3개 제조사의 차류 제품은 326.592~846.056ppm으로 그 중에서 녹차의 함량이 846.056ppm으로 제일 높았다.

식음료 서비스 산업의 과학적 경영 관리에 관한 연구

  • This study reviews the scientific management theories and discusses those theories within the food service industry. By providing the principles and the practical implications of the theories on the food service industry, this study tries to identify their philosophies and usefulness to the industry so that the managers in the industry use them in their dylmanic operations. In the fastly changing modern globalized world, we now face a situation where it's becoming more and more difficult to mange a restaurant business. In order to build a food industry business that can maintain a continuous development in today's business environment, one will have to apply the professional management theory in a cost-reduce strategy. It is more important though to have managers, organization members, in short, any person who can work to be motivated in accomplishing these two major issues-income increase and cost reduction. In this erawhere it's getting so difficult for researches on possible strategies for these business managers to overcome their difficulties. It is for certain that in the upcoming second millenium the travel and tourism industry will be one of the world's biggest industry worldwide. Korea's hotel industry has developed since the 1988 Seoul Olympic Games and has shown great amount of competition within the same business. Thus managers have become acquainted with the "know-how" strategy and the practical and scientific managemnet theories were introduced. This helped not only to increase income but also to maximize profit. However, rather than concentration on the "Hard-ware" aspect "Soft-ware" related professional management strategies were developed along with professionalism and human service were emphazied. As such, the actual cost of food and beverages are for the hotel industry business managers the biggest shortterm expense item. Due to the natural state of food items, there is a great chance of "Loss" in preservance, and this is the reason it is complicated to effectively maintain food. As a consequence, very often, the failure to managea hotel or restaurant depends on the capability of the food and beverage preservance mangement: on how they are able to manage effectively the original price of food and beverage. Finally, the main problem of the original price management of food and beverage in Korean hotels are: a) No fixation of set price b) The difficulty to calculate the price difference between a set price and an original price. c) Lack of professinalism in managing the food and beverage original price. d) Lack of perception of the highest ranking management personnels. So as to reform these matters it is necessary to : a) Reform on the management accounting system b) Emphasize to the people in charge on the idea of original price management c) Reinforce original price mangement prevention and assurance of indepedent inspection rights d) Reat manpower

IPA를 활용한 식음료 축제속성의 중요도와 성취도 연구 (Study on the Importance and Performance of Food & Beverage Festival Attributes Using IPA)

  • 본 연구는 식음료축제의 대표 지역축제인 '2018 대구치맥페스티벌'에 참가한 방문객의 축제속성을 규명하고, 축제속성 요인과 항목들의 중요도와 성취도의 차이를 알아보고자 하였다. 또한 IPA를 활용해 식음료 축제속성의 중요도와 성취도를 동시에 분석함으로써 학문적 및 실무적 개선점 및 시사점을 제시하고자 하였다. '2018 대구치맥페스티벌' 방문객의 식음료 축제속성 요인분석 결과, '위생적 환경', '음식맛과 다양성', '음식품질과 부가서비스', '음식구매편리성' 등 4개의 차원과 22개 항목으로 나타났으며, 실증분석을 통한 연구 결과는 다음과 같다. 첫째, 식음료 축제속성의 22개 항목별 중요도와 성취도의 차이를 알아본 결과, 22개의 축제속성 중 21개의 축제속성 항목에서 중요도와 성취도 간에 통계적으로 유의한 차이를 보였으며, 모든 항목에서 성취도가 중요도보다 높게 나타났다. 둘째, '2018 대구치맥페스티벌' IPA를 실시한 결과, I사분면(유지영역)에서는 4개의 요인 중 '음식구매편리성'과 '음식맛과 다양성' 요인과 이와 연관된 8항목이 포함되어 지속적으로 유지할 축제속성으로 나타났다. II사분면은 "이색적인음식", "음식/음료의 적당한 조리시간" 2항목이 포함되어 더욱 집중해서 성취도를 높일 필요가 있는 것으로 나타났다. 마지막으로, III사분면은 '음식품질과 부가서비스' 요인과 이와 연관된 9항목이 포함되었으며, IV사분면은 '위생적 환경' 요인과 이와 연관된 3개 항목이 포함되었으므로, 중요도가 낮은 속성들은 중요도 인식을 높이고, 성공된 축제를 위해서 성취도 또한 높일 필요가 있을 것이다. 본 연구결과는 앞으로 지역사회의 식음료 축제가 차별화된 지속가능한 경쟁력을 갖춘 축제로 거듭나기 위한 마케팅 자료로 활용될 수 있을 것이다.

야콘 뿌리를 이용한 발효 초음료 개발 및 발효 중 성분 변화 (A Study on the Development of Vinegar Beverage Using Yacon Roots(Smallanthus sonchifolius) and Analysis of Components Changes During the Fermentation)

  • The objective of this study was to develop a functional vinegar beverage using yacon roots, and examine the components' changes during fermentation. The alcohol fermentation was conducted by inoculation of Saccharomyces cerevisiae into yacon root juice with sugars. After 10 days of fermentation at $27^{\circ}C$, yacon wine contained 13% alcohol and $7.8^{\circ}Brix$ sugar contents. The yacon wine at 5% alcohol was fermented by Acetobacter aceti(KCTC1010) with 250 rpm agitation rate at $29^{\circ}C$ for 12 days. The acidity of yacon vinegar reached 4.4% after 12 days' fermentation. Statistically (p<0.05), the amount of Acetobacter aceti, pH, alcohol, with total polyphenol content of samples decreased with acidity, whereas individual sugar contents increased. Furthermore organic acids, total sugar, phenolic acids content, total antioxidant capacity, and color were not different among the five samples. The yacon vinegar beverage was prepared with high fructose syrup through the dilution of yacon vinegar. After making the yacon vinegar beverage, the pH, acidity, total sugar, and total microbial content were examined every week over 4 weeks' storage. There were no changes in the samples during that time.

역삼투막 농축에 의한 동치미를 이용한 이온음료 개발에 관한 연구 (Development of Ion Beverage from Dongchimi Product by Reverse Osmosis Concentration)

  • 동치미를 이용한 알카리성 이온음료 제조의 타당성 및 개선방안을 고찰하고자 염도 2.0%, 2.4%, 무와 소금물의 비율 1 : 1.5로 담구어 $0^{\circ}C,\;5^{\circ}C,\;10^{\circ}C$에서 각각 숙성시킨 동치미의 성분을 분석하여 최적으로 숙성된 동치미액을 취해 이를 역삼투공정에 의해 농축하여 성분을 비교 분석하였다. 당함량은 숙성이 진행되면서 증가하였다가 숙성적기 이후에는 감소하는데 이는 숙성이 진행되면서 동치미내의 미생물작용으로 당의 전환이 이루어지기 때문으로 사료되어진다. 무기물 함량변화는 소금성분이 무 조직내로 침투하여 조직내의 $K^{+},\;Mg^{2+},\;Ca^{2+}$와 치환되어 동치미액 중의 $Na^{+}$농도는 감소하고 $K^{+},\;Mg^{2+},\;Ca^{2+}$농도는 증가하는 경향이었으며 숙성온도가 높고 염도가 높은 동치미에서 보다 많이 검출되었다. 이들 동치미액 중 각 실험조건에서 최적의 품질을 나타내는 동치미를 5l 취해 역삼투시스템을 이용하여 농축한 결과 압력이 높을수록 고농도의 동치미액을 얻을 수 있었다. 한편 기존의 이온음료와 성분분석 비교 결과 당함량을 제외한 전해질 성분은 동치미 및 동치미 농축액이 기존의 이온음료보다 훨씬 많은 함량을 띠고 있어 향후 이온 음료로서의 개발 타당성이 매우 높은 것으로 사료되었다.

Family Restaurant의 음료 매출증대에 관한 연구 (A Study on a plan of Beverage Sales Step-up of Family Restaurant in Korea.)

  • The main purpose of this study is to propose that Beverage sales should be step-up in Family Restaurant. To achieve the purpose of this study theoretical and empirical approaches were used. In review of theoretical background, basic concepts and characteristics of beverage were studied. For empirical study, three Family Restaurant in Korea was selected and analyzed the beverage sales which classified to Liquor, Beer Wine and Non-alcoholic beverage. Based on it, I suggest a plan of beverage sales step-up of Family Restaurant as follow. First, keep the appropriate valance of the whole item: non-alcohol and alcohol item. Second, develop the menu should be effect beverage sales. Third, through the promotion and event the restaurant should derive the customer to purchasing behavior. Fourth. server can accommodate and offer the information of food and beverage menu that can evoke the customer's attention.

경주지역 특급호텔 식자재 관리시스템의 실태와 개선 방안(H호텔을 중심으로) (Study on the food control system of the five-star hotels in Gyeong-Ju area)

  • Although Korea has just passed the IMF intervention, the hotel business in Gyeongju does not seem to entirely recover from the econmic recession. In particular, the sales of food and beverage dominantly on domestic demand are still in difficulty. This research was undertaken in order to identify the problems of food control in the five-star hotels in Gyeongju area, and to recommend some suggestion of enhancing the current system to boost the revenue. It is revealed that most of the hotels in question are poorly operating for the food control. In particular, they have spent too much unnecessary cost for the ordering, inspecting, issuing and storing food. A five-star hotel is selected for the survey, and the data obtained from the survey are properly manipulated for the analysis. The problems of the food control system are as follows : Firstly, it hasn't developed a standardized manual for the ordering, inspecting, issuing and storing food. Secondly, an appropriate food control system incorporating the unique Gyeongju environment should be developed. Thirdly, 'first ordered, first issued' method should be applied to reduce to reduce the cost Lastly, few managers recognizes the importance of food control.

찰녹미 첨가 발효음료 품질 특성 (Quality Characteristics of Fermented Rice Beverage Prepared with Green Glutinous Rice)

  • In this study, we aimed to develop a fermented green rice beverage with a unique flavor and physiological function activity. With glutinous green rice and rice nuruk as independent variables, we modeled the antioxidant characteristics and α-glucosidase, α-amylase inhibitory activity of glutinous green rice fermented beverage to verify its significance. The total flavonoid content and α-glucosidase inhibitory activity were selected as Quadratic models, and DPPH radical scavenging ability and α-amylase inhibitory activity were selected as linear models. For the sensory characteristics of glutinous green rice fermented beverage, sweetness, sourness, savory taste, bitterness, throat feel, nuruk scent, and overall preference increased in preference as the amount of glutinous green rice and rice nuruk increased, but significantly decreased after the center point (p<0.01). A blending ratio of 180.00 g of glutinous green rice and 400.00 g of rice nuruk had the highest preference among all the sensory items. Based on these results, we developed a green rice fermented beverage with unique flavor and physiological function activity of rice using glutinous green rice and rice nuruk, and the optimal blending ratio was determined to be 164.04 g of white rice, 195.96 g of glutinous green rice, and 414.61 g of rice nuruk.
