강원 지역 농촌 주부들의 전통 식생활 관리 현황에 관한 실태 조사(I) -식생활에 대한 태도와 일반적 현황을 중심으로- (A study of Korean traditional Food in Kang Won Do (I))

  • The purpose of this study was to improve and hand down traditional dining habits. Questionnaires were distributed to rural house wives in Kangwon-do. The results were as follows; 1. 30.8% of the respondents was 40 to 49 years old. 35.2% of their education was primary school. 49.5% of them had husbands and children. 44.2% of them had 3 to 4 family members. 26.9% of them earned 8 to 11 millon won yearly. 2. Their housing environment showed that 52.5% of housing was a Korean traditional house or Hanok. 72.1% of kitchen was a stand-up one. 66% of fuel was oil. 3. 99.3% of the respondents had refrigerators. 66.3% electronic range, 95.9% electronic rice cooker, 97.2% gas range, 59.6% mixer, 62% electronic fry pan respectively. 4. 73.5% of the respondents got information about Korean traditional food from seniors or friends. 36.6% of them learned new recipe from TV, newspapers and magazines. 43.3% of them thought their concern about meals was average. 48.4% of them paid much attention to prepare meals for themselves. 52.7% of them spent a half to one hour for preparing dinner. 48.3% of them ate processed foodstaffs often. 31.5% of them dined out once every two or three months. 5. 79.5% of them had rice for breakfast, 74.5% for lunch, and 98.4% for dinner respectively. 96.2% of the respondents made Kimchi and 55% among them had two kinds of Kimchi. 91.1% of them had two to three kinds of dishes except Kimchi for breakfast. 68% of them used a synthetic flavoring. 6. 16.2% of the respondents ate beef once a week, 40% pork, 23% chicken, 3% dog meat respectively. 37% of them ate mackerel pike, 25.5% mackerel once a week, 11.6% hairtail, 25.5% mackerel pike, 25.6% yeemunshu, 13.7% tuna respectively. Freshwater fishes such as mudfish, trout and Israel carp were their favorite onces.

서울 일부 지역 중학생의 식행동 특성에 관한 생태학적 연구 (An Ecological Study on Eating Behavior of Middle School Students in Seoul)

  • This study was conducted to evaluate the eating behavior and to analyze the various factors affecting eating behavior among middle school students. The subjents consisted of 212 middle school students(106 boys and 106 girls between 13-14 years) residing in Seoul. A questionnaire was used as the questionnaire consisted of four parts : the socio-demographic characteristics of the subjects, value toward food and nutrition, diet diversity(the number of food items) and eating behavior. Results showed that fifty three point five percent of males and fifty seven percent of females skipped breakfast. The main reason for skipping breakfast was shortage of time. Fifty five percent of the total number of subjects stated that they had more than two plasant meals a day. The number of food items eaten was significantly higher in males than in females. In only 16.4% of total subjects(18.5% of male and 14.2% of female), the primary pursuit in having meals was not to satisfy hunger but to consider nutrition and health. The eating behavior of the adolescents showed that 65% of the subjects had a 'good' eating behavior score and 17.4% had scores of 'excellent' and 'poor' respectively. The existence of parents, the economic level of the family, and concern of health and nutrition affected the eating behavior score. The less the subject skipped breakfast, the greater they placed a value toward food and nutrition. Value toward food and nutrition had a significant influence on their eating behavior. Those who placed a value toward food and nutrition had a higher eating behavior. Those who placed a value toward food and nutrition had a higher eating eating behavior. As a result of the multiple regression analysis, factors affecting eating behavior were 'pleasant meal' , 'the value toward food and nutrition' and 'the numbers of food items' in order(R2=0.2984).

전북 군산지역 중학생의 식생활 태도에 관한 연구 (A Study on Dietary Attitude of Middle School Students in Kunsan City, Jeonbuk Province)

  • The purpose of this study was to explore dietary attitude among middle school students by sex. The subjects were collected from 211 boy students and 198 girl students in the city of Kunsan, Jeonbuk province. The mean age of the subjects was 13.7 years old. The average score of food habit was 4.61 $\pm$ 1.92. The average score of food habit of boy students was higher than the score of girl students. The correlations between the score of food habit and father's education level. family income, and nutritional supplements were positive. The correlation between the scores of the nutrition knowledge and father's education level was also positive. On the other hand the mother's occupation did not have any influence on the scores of food habits and the scores of the nutrition knowledge. As a staple food, cooked rice was preferred on boy and girl students at breakfast(82.7%) and supper(94.3%). The preference of snacks was fruit and fruit juice. The reason of skipping breakfast was the lack of time and no appetite, and skipping lunch was due to no appetite. Lastly the main reason of skipping supper was playing computer on boys. on the other hand no appetite and weight control on girls. In order to improve the nutritional status of the middle school students, they must establish good food habits by eating three regular meals per day and balancing their diet. Also they should be notified that severe weight control is very harmful for health. This study indicate that nutrition education and correct information for body image. balanced diet. regularity of meals and food selection are required for middle school students at both school and home.

식생활 관련 변인들이 실과 식생활단원의 학업성취에 미치는 영향 (The Effect of Various Factors on the Academic Achievement in ′the Food and Nutrition′Units in Practical Arts)

  • This study investigated the effects of factors on the academic achievement in the 'Food and Nutrition' units in the Practical Arts : factors such as gender. family and home environment. and participation in. interest in attitude toward. and encouragement by mother in meal management. The factors were surveyed for 453 grade four elementary students (226 boys and 227 girls) and their mothers in Busan. The extent of participation in meal management. of interest. of attitude. and of the mother's encouragement was broken into three groups. Upon completing the 'Table Setting with Fruits'unit. the students'academic achievements were evaluated and compared according to these factors. The results were as follows : 1. The girls participated in meal management more frequently than the boys. Most of the children exhibited a high interest. the girls showing a higher interest than the boys. Both sexes showed a positive attitude toward meal management. Mothers encouraged girls more often than boys to manage meals at home. 2. The academic achievement of the girls was higher than that of the boys. Children living in apartments and more affluent environments scored higher than those who were less well off and living in independent households. 3. Those who frequently participated in meal management. exhibited a high interest. and showed a positive attitude towards it. achieved higher scores than those who showed a lower interest. less positive attitude. and only occasionally participated in it. 4. Those who were encouraged frequently to manage meals by their mother showed a tendency to score higher than those who wee encouraged only occasionally. In conclusion. academic achievement in the 'Food and Nutrition'units in Practical Arts was affected by gender. domestic economy. type of residence. participation in meal management in the home. interest in it. attitude toward it. and encouragement in participation by the other. Thus academic achievement in food. nutrition. and meal management is dependent upon both the school and home environments. Children would learn more in the 'Food and Nutrition'units when their parents set a positive and encouraging environment in the home.

한국전통음식과 패스트푸드에 대한 안산지역 초등 고학년 학생의 인식 및 이용실태 (The Perception and Utilization of Korean Traditional Food and Fast Food of Elementary School Children in Ansan Area)

  • This study was conducted to provide basic data for desirable food culture by surveying the perception and utilization of Korean traditional food and fast-food from 6th grade elementary school students in the Ansan region. According to the survey, elementary school students have insufficient perception about Korean traditional food but they understand fast-food relatively well. The key factor for their concern in Korean traditional food was the mass media, while the variety of tastes and quickness were key factors of fast-food. Among the respondents, 76.0% chose Korean traditional food as more nutritious than fast-food. From the investigation of their diet situation, daily meals came out as Korean traditional food, while fast-food covered snacks and nighttime meals. Normally, just following their parents' selection was the biggest reason for going to Korean traditional food restaurants. They chose fast-food restaurants because the price is proper and they can use that place for their conversation. Among Korean traditional foods, their favorite was "Gal-bi-zim" (beef ribs stew), and among fast-food, they liked hamburger and pizza. Over 90% of male and female students ate fast-food within 30 minutes, which was less than Korean traditional food. Generally, Korean traditional food was relatively more expensive than fast food. Respondents usually went to Korean traditional food restaurants with their parents and family members, whereas they went to fast food restaurants mostly with their friends. Positive factors of Korean traditional food, in order of satisfaction, were taste, hygiene, price, and quickness, while those of fast-food, in the same order, weretaste, price, quickness, and hygiene.

초등학생의 영양교육을 위한 식습관 및 영양지식 조사 (A Survey on Dietary Habit and Nutritional Knowledge for Elementary School Children's Nutritional Education)

  • The aim of this study is to survey the eating habits and nutritional knowledge of children in Pusan, with a view to uncovering problems and their underlying causes and cultivating desirable dietary habit and nutrition for children. Three hundred and fifty six elementary school students were asked questions about their eating habits and nutritional knowledge as well as general information about their personal characteristics. The results showed: 1. Only 53.5% of the subjects had breakfast every day. Seventy-six percent of the subjects had dinner every day. Only 40% of the children took meals and talked with family at both breakfast and dinner. Thus there was little opportunity for dietary guidance by parents. 2. About half of the subjects answered that their appetite decreased after eating snack foods between meals. A third of the subjects liked the baked goods as snacks. Because of their high sugar and fat content, they can damage children's health, resulting in child diabetes and tooth decay. For this reason, careful education is necessary to allow children to be able to select snack foods that are appropriate in kind and quantity. 3. About 85% of the subjects had an unbalanced diet. Therefore systematic nutrition education at school is necessary to instill in children the value of balanced diet. 4. Children preferred rice to other cereals as a staple food. They disliked kimchi, seasoned and blanched foods and salads as subsidiary foods. It is therefore necessary to teach children systematically the nutritional advantage of cereals and vegetables and to heighten their awareness of Korean food culture. 5. Children had a low level of nutritional knowledge. The knowledge of specific nutrients was lower than that of foods. In conclusion, systematical educational programs need to be developed at elementary school. These should include information about achieving a balanced diet, good eating habit, meal management and Korean dietary culture. Nutritional education at home must be emphasized.

의왕시 어린이집 아이들의 식습관 조사 (Dietary Habit Survey of Preschool Children in Uiwang-si, Gyeonggi-do)

  • The purpose of this study was to provide basic information for developing nutrition education programs for preschool children and their families. The subjects were 291 parents whose children went to daycare centers in Uiwang. The questionnaire contained 15 items for children's dietary habits and six items for parents' nutritional attitudes. The results of frequency analysis of children's dietary habits were as follows: 63.9% of children ate meals regularly, however breakfast (46.4%) was usually skipped; 44.0% of children ate a snack more than twice per day; 56.7% did not have late night meals; 49.5% ate out once to twice per week; 89.7% had dinner with family more than three times per week; and 43.6% had picky eating habits. The percentage of children who did not eat vegetables and seaweed was the highest among other food groups. Intake frequencies were low in fatty foods, instant foods, and fast foods. Some correlations were observed between picky eating habits and other dietary habits by cross-tabulation analysis. Intake frequency of non-picky eating children was lower for late night eating and fatty foods but higher for vegetables and seaweed compared to picky eating children. Parents answered that their nutritional knowledge level was normal (72.2%), and nutritional information was collected using the Internet (36.0%). Nutritional value was the most considered point in meal preparation of parents (43.3%), and the most difficult factor in child's diet management was lack of time due to working (36.1%). Parents cited method of creating a menu (27.0%) and table manners (25.3%) as topics of nutrition education by professionals. Therefore, various nutrition education programs need to be developed to improve healthy dietary habits for children and their families.

김치조리법 인지 여부에 따른 한식식사패턴 및 바른식생활 실천에 관한 연구 - 2014 국민식생활실태조사 결과를 토대로 - (The Study on Dietary Patterns of Korean food and the Level of Proper Eating Habits According to the Recognition of the Kimchi Cooking Method - Based on the Result of 2014 National Dietary Survey -)

  • Purpose: This study investigated the dietary patterns associated with Korean food and the level of proper eating habits according to recognition of the Kimchi cooking method, and aimed to suggest the necessity of dietary education of traditional foods such as Kimchi. Methods: Based on the results of the national dietary survey conducted in 2014 by Ministry of Agriculture, Food and Rural Affairs of Korea, a total of 1200 subjects were classified into two groups, one that knew how to make Kimchi (53.8%) and another that did not (46.2%). Results: The group that knew how to make Kimchi (FG) showed significantly higher scores in knowledge of how to cook most types of Korean foods and traditional fermented foods than the other group (NG). Moreover, FG showed significantly higher scores in regularity in meals and a higher frequency of Korean foods such as rice, Kimchi, and grilled or stewed food, while it showed significantly lower scores in dietary risk factors than NG. In addition, FG showed significantly higher scores in dietary education interest and number of meals with family during the week than NG. Finally, FG had significantly higher scores in the degrees of practice of all eight items related to proper eating habits. Conclusion: Since recognition of Kimchi cooking has a great influence on maintenance of dietary life, dietary education to improve the cooking ability of traditional foods should be further strengthened.

전남 여수시 일부 가정의 외식상태 및 분식 기호도에 관한 조사 연구 (A Study on the Status of Eating Out and Flour Preference of Some Houses in the Yosu, Chonnam Area)

  • 본 연구는 전남 여수시에 거주하는 가정의 외식상태 및 분식류의 기호도를 조사하기 위하여 전남 여수에 거주하는 주부들을 대상으로 설문조사를 하였으며, 내용은 조사대상자의 일반사항, 가족의 외식빈도 및 종류, 분식류 섭취빈도 및 종류에 대하여 조사하였다. 가정의 월수입은 100만원∼200만원 이하가 50.1%로 가장 많았으며, 가족구성은 부부와 자녀로 구성된 비율이 75.6%로 가장 높았고, 가족 수는 3∼4명이 57%로 가장 높고 주거형태는 아파트가 67.1%, 주택의 소유형태는 자가가 69.9%로 가장 높았다. 가족의 외식횟수는 1개월에 1회가 가장 많았으며, 연령이 낮을수록, 학력이 높을수록 외식횟수가 증가하였고, 외식은 주로 한식이었다. 분식류는 가족이 일주일에 2∼3회가 가장 많았으며, 분식류의 종류는 가격면에서 부담이 없는 라면이 가장 높게 나타났다. 이들 결과로 볼 때 여수지역 가정의 외식종류는 주로 한식으로 빈도는 낮았으며, 분식에 대한 기호도는 예부터 남도지역의 먹거리가 풍부하였기 때문에 면류에 접할 기회가 적었기 때문에 낮은 것으로 사료된다.

만성질환 증상을 두 가지 이상 보유한 성인에 있어서 개인 단위의 영양교육 효과 (The Effect of Individualized Nutritional Education on Adults having two or more Symptoms of Chronic Degenerative Disease)

  • This study was intended to evaluate the overall effects of nutritional education on adults having two or more symptoms of chronic degenerative disease. A nine week nutritional education program was provided for 65 adults with chronic diseases. We assessed the changes in dietary knowledge, eating behavior and socio-psychological factors. When we evaluated the nutrient intakes of the subjects, their energy intake was 79.4% of the Korean Recommended Dietary Allowances (RDA). Their dietary intake of other nutrients was also below the RDA level except for Vitamin C. Their knowledge of dietary therapy was slightly improved after the implementing of nutritional education. The dietary behavior of ‘night snacks before sleep’was significantly improved. While the overall fear due to disease was significantly increased, self-efficacy was not improved. Self-efficacy for eating “three regular meals” and “choosing fruit, vegetable and grain” were significantly decreased. Family support for “buying food which is good for my health” was also significantly increased, whereas “advises me to eat appropriate foods for health” was decreased. Biochemical analysis indicated that blood levels of triglyceride, cholesterol and blood pressure improved after nutrition education. Therefore, we concluded that nutritional education program for people with chronic degenerative diseases could change the diet therapy knowledge, dietary behavior, and the fear due to disease, support from family and behavior intention toward the direction to improve the chronic disease condition. However, it did not improve self-efficacy. Our study also indicated that nutritional education strategies to improve self-efficacy should be an important aspect in a long term education plan for patients to establish desirable eating habits.
