The charantin contents of leaves, stems, female and male flowers, and fruits in bitter gourd (Momordica charantia) were analyzed at different harvest seasons to investigate the availability of potential edible parts other than fruits. The charantin contents of fruits ranged from 14.7 to $16.0mg{\cdot}g^{-1}$ dry weight (DW) and those of leaves ranged from 131.4 to $138.0mg{\cdot}g^{-1}DW$, which was eight times higher than in fruits. The charantin contents of female and male flowers and stems were also significantly higher than those of the fruits. The ratio of total charantin content was highest in leaves (48%) of DW, followed by female flowers (20-21%), male flowers (14%), stems (12-13%), and fruits (5%). The charantin contents of fruits harvested 14 days after fruit setting was higher in June to mid-July (20.2 to $23.3mg{\cdot}g^{-1}DW$) than in late July to late August (13.3 to $19.4mg{\cdot}g^{-1}DW$). The higher the fruit weight, the lower the charantin contents, which showed that a negative correlation exists between fruit weight and charantin contents in bitter gourd. These results suggest that to obtain bitter gourd fruits with high charantin contents, fruits should be harvested until mid-July when fruit growth is fast and temperature is high. In addition, leaves, stems, and female and male flowers of bitter gourd can be used as for food, which are known to reduce blood sugar level.

We screened the methanol extracts from 133 plant species growing in Korea for antimicrobial activity against enterohemorrhagic Escherichia coli 0157 : H7. Those are selected from three plant grouping ; traditional medicinal herbs, edible plants, and flowers. They were tested by disk diffusion assay. From evaluation of the inhibition zone diameter of microbial growth, we found that the flower extract of Rhododendron Schilpenbachii Max had the most significant antimicrobial activity against this bacteria. Extracts from most of the vegetables and plants did not show antimicrobial activity except for the leaves of Ginkgo biloba L. and seeds of Prunus Dallicina L. did not show antimicrobial activity except for the leaves of Ginkgo biloba L. and the seeds of Prunus sallicina L.
Seven antioxidative flavonoids were isolated from Jindalrae flowers (Rhododendron mnonulatum Turcz.), an edible plant in Korea. These compounds were identified as afzelin, ampelopsin, catechin, myricetin, myricitrin, quercetin and quercitrin on the basis of IR, UV, FAB-MS, $^1H\;NMR,\;and\;^{13}C\;NMR$ data. These compounds were consisted of two flavonols, three flavonol glycosides, a flavane, and a dihydroflavonol. The flavonol glycosides (14.4 g) present in th ethyl ether and ethyl acetate fractions comprised up to 82% of their total flavonoid amount (17.6 g) finally recovered by means of polyamide C-200 column chromatography, preparative TLC, recrystallization, and Sephadex LH-20 column chromatography. The antioxidant activities were measured in an ethanol solution of linoleic acid in the presence of ferric thiocyanate. 141 methanol extracts from 125 plant species which populate in Korea were screened for antimicrobial activity against various food-borne pathogens and food spoilage microorganisms. Those plants were selected from 3 different plant groups: traditional herbs, edible plants and flowers. The methanol extracts were tested by using the disk diffusion assay against five bacteria: Bacillus subtilis, Staphylococcus aureus, Pseudomonas aeruginosa, Enterobacter aerogenes, Escherichia coli. From the evaluation of the inhibition zone diameter of microbial growth, the most significant antimicrobial activity against Bacillus subtilis, Staphylococcus auresus, Pseudomonas aeruginosa, Enterobacter aerogenes, Escherichia coli was observed from the extract of Schizandra chinensis (Turcz.) Baill., Rheum officinale Baill., Schizandra chinensis (Turcz.) Baill., Koelreuteria paniculata Lax and Crataegus pinnatifida Bunge, respectively. The extract from many plants - Koelreuteria paniculata Lax, Chaenomeles sinensis Koehne, Scutellaria bacicalensis Georgi, Castanea crenata Sieb. et Zucc., Rosa centifolia L., Allium fistulosum L. var. giganteum Makino, Crataegus pinnatifida Bunge, Schizandra chinensis (Turcz.) Baill., Lonicera japonica - showed antimicrobial activity all four tested bacteria.
During the late Chosun Dynasty, famine was the main cause of climate ecological background, such as frequent floods and droughts, the Little Ice Age (小氷期), and epidemic. In addition, it influenced the social and cultural background, such as failure toprovide Yiangbeop (移秧法), breakout of war and revolt, loss of farming cattle, grain consumption due to brewing, the concentration of wealth, and tenacity of shamanism. "Limwongyungjeji" "Injeji" of the last part had been written about the famine; wild plants to raw, dried, or dried powder, or processed pharmaceutical goods. Grain couldbe replaced in more than 330 types of famine relief food and recipes; 170 species of vegetables, 34 species of vegetation, and 33 kinds of fruit - the botanic foods were mainstream. Edible parts of these plant foods are those of 14 kinds: 175 species of leaves, 113 species of sprouts, 99 kinds of buds, and other fruits, roots, stems, flowers, etc. The recipe (poaching, salting, and oil-marinated) was written 186 times or forsoup, raw, and boiled.

In the middle areas of South Korea, we collected 308 wild herbaceous species for studying the possibility of landscaping and, growing them at West in Yongin country of Kyunggi province. We observed their vegetative and flowering characteristic. And the result is as follow: 1. 76 species(24.7%) such as Hosta capitata, etc. of them are thought useful for flower-bedding or landscaping for park and ground-covering, while 94 species(30.6%) are regarded useful for ground-covering, potting and indoor-planting. They are Nepatica maxima and Thaliticum minus var. hypoleucum, etc. 46 species(15%) seems to be useful for flower-bedding, ground-covering and potting. 2. 264(85.7%) of all the observed species are for the enjoyment of their flowers, while 36 species(11.4%) for the enjoyment of their leaves, and 9 species(2.9%) for their fruit. They are Viburnum dilatatum, etc. 3. As for the relation of their habits to light conditions, 148 species(48%) grow int he full sun of more than 50,000Lux, 138 species(44.8%) usually in in the half shade of 20,000 to 30,000Lux, 15 species(4.9%) in the shade of some 10,000Lux, and 7 speciese grow either in the full sun or in the shde. 4. some species such as Wasabia koreansa, Allium succuliferum, Asterglehni, Ligulariafisheri, Ligularia stenocephala Epimedium koreanum are considered available as edible plants as well as ornamentals plants, and Houttuynia cordata. Saururus chinensis, Epimedium koreanum need to be further developed not only as ornamental plants but also medicinal plants.
Contents of phenolics, flavonoids, and catechins, and antioxidant activity were investigated in the ethanol extracts of three different flower species, Magnolia denudata, Prunus mume, Carthamus tinctorius. Total phenolics were more present in M. denudata than P. mume or C. tinctorius, ranging from 72.6 to 118.0 mg/kg (p < 0.05). Total flavonoids level had same tendency to total phenolics content, showing highest amount (25.1 mg/kg) in M. denudata. The antioxidant activity of the methanol extracts from all the flowers dose-dependently increased. DPPH free radical scavenging activity at 250 mg/kgwas higher in M. denudata and P. mume by 93.0 and 92.6%, respectively, than C. tinctorius by 23.0% (p < 0.05). Total catechins content including 6 compounds was higher in M. denudate (9,425.5 mg/kg) than that in P. mume or C. tinctorius (3,407.8 or 190.6 mg/kg). However, P. mume extracts showed highest amount in caffeine as well as vitamine C. DPPH radical scavenging activity in three different flowers was highly correlated with contents of total phenolics ($r^2=0.7994$), total flavonoids ($r^2=0.9131$), and total catechins ($r^2=0.5929$), and their content and activities were different depending on species.

With well-being boom recently, the common people, but not experts, are increasingly taking in them directly by picking wild herbs. However, only experts can distinguish between edible vegetables and poisonous herbs from the wild herbs. Especially, it is not even easy for experts to distinguish them only by looking into buds in spring without flowers or fruit. So, sometimes many patients are being carried into the emergency room by the toxic symptom after taking by misunderstanding the poisonous herbs as edible vegetables. For herb intoxication as well as drug intoxication, what kinds of vegetables patients took in, and when and how much they took in them are important information for curing. Of course, in the case of intoxicating in the wild herbs, the patients can have a lot of symptoms and sings-hemodynamic alteration and abnormal neurologic sign as well as gastrointestinal symptoms-according to the kinds of herbs which they took in. Therefore, it is difficult to find the kinds of herbs which they took in through the specific symptoms. Recently we experienced a case with showing typical anticholinergic symptoms after ingestion of Scopolia japonica. As a result, the publicity activities about the wild plants needs because if the person without their previous knowledge take in the poisonous herbs, serious side effects can be produced..

This experiment was conducted to determine optimal hot-air drying time for producing antioxidative calendula tea. The edible calendula was dried in hot air at $60^{\circ}C$ for 5, 10, 15 hours and Hunter's color value was measured and extracted with 95% ethanol as a solvent. The contents of total polyphenol, total flavonoid, total carotenoid and DPPH (2,2 Dipheny-1-picrylhydrazyl) radical scavenging activity were investigated. The correlation between the amount of antioxidant and antioxidant activity was analyzed. As the treatment time increased, the Hunter values of L, a, and b tended to decrease, and the L value and b value decreased significantly at 15 hours. The color change was occurred in all treatments compared with the control, and the total color difference (${\Delta}E$) was the largest at 15 hours treatment. The contents of total flavonoids, total carotenoids and DPPH scavenging activity increased in the 5 hours, but decreased in the 15 hours compared to the 10 hours. The content of total polyphenol was not changed with different treatment time. A positive correlation ($p{\leq}0.01$, r = 0.610) between carotenoids and DPPH radical scavenging activity was demonstrated. The DPPH radical scavenging activity was increased at 5 and 10 hours compared to the control and decreased at 15 hours. Therefore, 5 hours or 10 hours of treatment is appropriate and further studies are needed to determine the specific treatment time.
In order to promote the value of the flowers as new agricultural products, we investigated the biological activities of rape, arrowroot, and rose extracts. Biological activities investigated included antioxidant activity and the effects on 3T3-L1 fibroblast cells. When each flower was extracted with methanol, the antioxidant index and electron donating activity of roses was the highest $(IC_{50}$ of rose extract was $17.6 \mu{g}/m\ell$). When 3T3-L1 fibroblast cells were treated with extracts made with hexane, ethyl acetate, and ether, the rape extracts had a cytotoxic effect on the cells. 12.2% of cells survived when treated with a 3mg/$m\ell$ ether extract while those treated with the same concentration of hexane and ethyl acetate had survival rates of 76.2% and 78.6% respectively. In contrast to rape, the ether extract of arrowroot and rose stimulated the growth of 3T3-L1 cells. The effect of rose extracts was much bigger than those of other extracts. Although every rose extract stimulated the growth of the 3T3-L 1 cells, the ether extract stimulated growth up to 168.6% compared to the control at the concentration of $0.3mg/m\ell$, and 148.3% at the concentration of $1mg/m\ell$. The toxicity on cells treated with $H_2 O_2$ of $450\mu{M}l$was decreased with the addition of rose extract. The survival rate after treatment with rose extract at the concentration of $100\mu{g}/m\ell$ was increased to 71% compared to the 32% survival rate of control. From these results, it can be concluded that the extracts of arrowroot and rose seem to stimulate cells, whereas the extract of rape has a cytotoxic effect. Biological activities of ether extract were the strongest compared to those of other extracts at the tested concentrations.
