This study was carried out to investigate the dining-out behavior of breakfast and preference on the menu of female college students. 500 questionnaires were distributed and 417 were used for statistical analysis(SAS program). This survey was conducted from June, 2000 to October, 2000. 72.8% of the respondents thought there were problems in eating breakfast. The problems were 'skipping breakfast frequently(33.1%)', 'short eating time(20.9%)', 'simple menu(18.8%)'. Preference of dining-out breakfast menus were 'bread & milk(43.8%)', 'conventional menu(34.7%)', 'snack(15.5%)', soup or 'porridge(6.0%)'. A general preference of breakfast menus were conventional (63.7%), 'bread & milk(21.1%)', 'milk and breakfast cereal(8.7%)', 'soup or porridge(6.5%)'. Increase on the amount of monthly allowance decreased the preference of conventional type of breakfast(P<0.05). The questions about the breakfast were 'what is the best menus for breakfast(49.2%)', 'alternative to rice(17.1%)', 'the amounts of breakfast(12.1%)'. But there was no significant difference among these variables. In conclusion, development of convenient & well-balanced breakfast model and nutritional education are needed to increase the nutritional status of female college students.
This study examined the dietary behaviors and dietary quality of high school students according to the number of times they skipped breakfast. A total of 474 high school students (225 boys and 249 girls) residing in Incheon participated in this survey. The subjects were divided into the three groups according to the frequency of eating breakfast; Regualr (eating breakfast everyday, n=226), Irregualar (eating breakfast 1~6 times/week, n=143, and Skipping (skipping breakfast everyday, n=105). The dietary quality was assessed using a nutrient quotient for adolescents (NQ-A). A higher monthly allowance and a higher rate of working mothers were significantly associated with a higher frequency of skipping breakfast. A higher intake frequency of processed beverages, and street food was significantly associated with a higher frequency of skipping breakfast. Students who had a higher rate of breakfast skipping had significantly lower intake frequency of fruits, white milk, bean and bean products, and fish. The high frequency of skipping breakfast among high school students was associated with lower dietary quality, as illustrated by the low total NQ-A score and sub group score including balance, environment, and practice. This information can inform efforts to provide nutrition education program to promote breakfast consumption and guidelines to students who skipped breakfast frequently.
The present study investigated the nutritional intake and health condition of 389 female college students living in Iksan, Jeonbuk, dependent on their frequency of breakfast. The subjects were evenly distributed in terms of their age, 61.7% were living at home with their parents, and most responded that they were from a middle income level. Of the subjects, 43.2% always had breakfast (more than 5 times a week), 26.5% sometimes (3 to 4 times a week); 30.3% seldom had breakfast (less than twice a week). The most frequent reason why they skipped breakfast was they were late risers (53%); 38.7% started to skip breakfast during their high school days. The nutritional intake based on whether or not they had breakfast showed that the intake of all nutrients including energy was higher in the students who always or sometimes had breakfast than in those who seldom did (p<0.05-0.001). The presence of clinical symptoms was dependent upon their intake of breakfast. It showed that the students who seldom ate breakfast, had more symptoms of convulsions, nervousness, neck or shoulder pain and indigestion, than those who always, or sometimes ate it (p<0.05-0.01). In all three groups, the largest number of students exercised once or twice a week. Their major reason for exercising was to lose weight. The degree of obesity based on the Body Mass Index (BMI) was in the normal range for 69.7% of the subjects. Female college students ate breakfast irregularly seemed to have a lower intake of nutrients and poorer health. In this regard, we should recognize the importance of eating breakfast, and should make a habit of doing so.

The purpose of this study was to determine the factors related to eating breakfast for middle and high school students in Seoul using the Theory of Planned Behavior. Out of 2,280 questionnaires distributed to 22 schools, 2,060 were returned (90.4% response rate) and 1,899 were analyzed (83.3% analysis rate). Gender, self-perceived household income level and mother's working status were examined as demographic factors. "Attitude", "Subjective norm", "Perceived difficulty in access to breakfast", "Perceived time restriction" and "Self restriction to breakfast" were extracted as psychosocial factors as the results of factor analysis and reliability test using 17 items. In case of middle school students, boys were more likely to skip breakfast than girls. The students perceiving their household income level "low or middle low" were more likely to skip breakfast than those who perceived their household income level "high or middle high". The students whose mother had a job tended to skip breakfast than those whose mother had no job. In case of high school students, the students perceiving their household income level "low or middle low" tended to skip breakfast than those perceiving their household income level "high or middle high". The results of analysis of variance, all the psychosocial factors examined in this study-"Attitude", "Subjective norm", "Perceived difficulty in access to breakfast", "Perceived time restriction" and "Self restriction to breakfast"- were related to the frequencies of eating breakfast during weekdays in both the middle and high school students.
This study examined changes in dietary life and dietary life satisfaction in one-person households during the COVID-19 pandemic. Using a sample of 916 one-person households from the Food Consumption Behavior Survey, we applied ANOVA and a system of equations model for our analysis which produced four main results. Firstly, during the COVID-19 pandemic, eating homemade and delivered meals increased, whereas eating restaurant, group, and HMR meals decreased. Eating breakfast and regular eating habits also increased during the pandemic. Secondly, approximately 30% of the sample reported increased expenditure on fresh food and HMR meals. The proportion of positive changes in dietary life was also greater than negative changes, and dietary life satisfaction was about three times higher than it had been before the pandemic. Thirdly, having breakfast and regular eating fully mediated the relationship between spending on fresh food and dietary life satisfaction, as well as the relationship between HMR purchases and dietary life satisfaction. Changes in expenditure on fresh food and HMR meals positively affected dietary life satisfaction through eating breakfast and regular eating. Fourthly, increased consumption of delivered food had a positive direct effect on dietary life satisfaction. Among sociodemographic variables, gender, education, occupation, and age were also significantly related to changes in dietary life satisfaction.
A survey of ecological aspects of food, focused on breakfast of 1,526 adults with various professional occupations such as professors, teachers, employees of government, bank and company, and 1,928 students of various levels in the urban areas, was conducted from March, 1984 to February, 1985. The results were shown as follows: Significancy was found between appetite at breakfast, and bed time, status of sleep, eating outside the home on the previous evening, meal or snack of the previous late evening, and exercise before breakfast. The study showed that only 15.2% of the subjects had a good appetite at breakfast; 28.1% had a poor appetite; others had indifferences. About 45% of the subjects had their evening meal between 7pm. and 8pm.; bank employees had breakfast further later than 9pm.. Surprisingly, 31.3% of the subjects had snacks later than 10pm..Nearly one-fourth of subjects, in general, and 34.4% of the subjects in Seoul, had breakfast by themselves due to different schedules of family members. Breakfast patterns of the subjects during a period of 7 days were distributed as follows: 5.5 times for rice-oriented Korean meal; 0.6 times for bread type meal; 0.9 times for the omission of meal. The study described that the subjects who had bread type breakfast consumed only 3.7 items of food, whereas the subjects who had Korean breakfast consumed 7.1 items, on the average. Better breakfast eating habits for an adequate daily diet should be emphasized through nutrition education for adolescents and at the worksite.
We studied teachers' breakfast habits and their preferences on various breakfast types so that we will furnish data to nutrition education including ideal breakfast habit and development of various menus. The meal considered as most importantly were dinner (66.2%), fellowed by lunch(21.6%), all three meals(6.4%) and breakfast(5.8%). Men considered breakfast more importantly than women. On the contrary, women considered dinner more significantly compared to men. The group aged 45 and over emphasized breakfast and all three meal. 78.1% of subjects answered that breakfast is necessary and 61.5% of subjects ate breakfast regularly. Those who have breakfast regularly was lower in women(50.0%) than in men(71.3%). Instead, those who eat breakfast irregularly or skipping it was higher among women(50.0%) than among men(29.7%). The percentages of having breakfast regularly was higher in older groups. For breakfast, 82.1% of subjects had conventional meal which included rice, soup and Kimch. On the other hand, 13.9% of subjects had Western style breakfast such as bread, cornflakes and milk. The major reason for eating breakfast regularly was answered as 'maintain health(71.8%)'. The major reason for eating breakfast irregularly or skipping was 'don't have enough time to eat(48.0%)', 'poor appetite(28.6%)'. The major physical discomfort after skipping breakfast was 'experience brash(35.6%)', 'lack of physical strength(35.1%)'. Subjects answered that breakfast served as 'source of physical strength(64.9%)', 'provides nutritional balance for a day(21.1%)' and 15.0% of subjects ate out breakfast. Therefore, it is suggested that teachers as well as school children be provided breakfast and snack in school. The preference and opinion regarding breakfast types wer conventional food including rice, soup and Kimch(67.0%). There was a little preference in Western style food such as bread, milk and coffee(14.3%), cereals mixture and porridge(10.7%). It was noticeable that 49.1% of females and those who reside in Seoul(42.2%) selected various breakfast types excluding conventional food. Therefore it will be accepted to working women as breakfast if it is nutritionally balanced and cook well in short time.

The objectives of this study were to survey stress, eating behavior, and the influences of stress on eating behavior of high school boys and girls. The subjects of this study were 510 high school students(boys 240, girls 270) in Cheongju area. The questionaires were distributed to 510 students, self-evaluated and collected from Mar. 23 to Apr. 4, 1998. The results of this study were as follows: First, the third grade students of high school were suffering from many stress. The rate of such students was 33.9% of total students. Second, eating problems of students were unbalanced diet, irregular diet, omitting a meal. The most irregular meal was breakfast, especially girl students ate breakfast more irregular than boy students. Third, the higher the level of stress of stress of the students, the more eating problem existed. The more students met with stress, the more eating behavior was irregular in eating quantity. In conclusion, stress influences eating behavior of high school students negatively. Therefore, to improve eating behavior of students who are suffering from stress, the program on stress release and nutrition education should be developed and supplied to them.
Background According to the Sasang constitutional medicine, eating habits according to the characteristics of Sasang Constitution (SC) types affect management of chronic diseases and health conditions. The aim of this study is to identify the association between eating habits, such as breakfast, eating frequency, and energy intake, according to SC, and quality of life. Method This study is a cross-sectional study of people aged 33 to 55 years, sampled by stratification based on population distribution. The SC types were classified into Taeeumin (TE), Soeumin (SE), and Soyangin (SY) using a structured questionnaire (KS-15). Items examined regarding eating habits were whether the subjects had breakfast; the frequency of eating such as breakfast, lunch, dinner, and after-dinner snacks; and energy intake surveyed using a food frequency questionnaire. As for quality of life, SF-12, which is widely used worldwide to assess health conditions, was utilized. A regression analysis was conducted on the relations between eating habits according to SC and quality of life. Results The SC distribution of the 3,895 subjects was 47% for TE, 22% for SE, and 31% for SY. The scores indicating quality of life differed for TE and SY depending on whether they ate breakfast and eating frequency groups, and those of SE varied depending on levels of energy intake. A regression analysis having adjusted all covariates demonstrated for TE a positive relation between the eating frequency of three times per day or more (compared to 1.5 to 3 meals per day) and quality of life (B=1.365, p<0.001). For SE, there was a negative association between low energy intake (compared to adequate energy intake) and quality of life (B=-1.642, p=0.004). Meanwhile, no relation was found between eating habits and quality of life for SY. Conclusion This study identified the association between eating habits according to SC types and quality of life. For TE, it was found to be important to eat evenly dispersed adequate amounts as opposed to overeating or binging at once. For SE, adequate energy intake affected good quality of life. This study suggests that eating habits based on SC improve quality of life, and health management customized for each constitution should be performed in the future through proper eating habits.
This study was performed to examine dietary habits, nutrition knowledge and dietary behaviors of elementary school students by sex and skipping breakfast. The subjects were 3rd grade elementary school students in Ulsan area (total 1,349; 734 males and 615 females). The skipping breakfast group were 215 students, 15.4% of total subjects. Major reasons for skipping breakfast were 'have no time' 27.8%, 'no appetite' 26.9%, 'over sleeping' 14.9%. Females and eating breakfast group had better dietary habits than males and skipping breakfast group. The scores of nutrition knowledge of females were higher than those of males. The dietary behaviors scores of eating breakfast group were higher than those of skipping the breakfast categories. Our results showed that these difference by sex and skipping breakfast in dietary habits, nutrition knowledges, dietary behaviors should be considered in developing of nutrition education program for low-grade elementary school students.
