A Study on the Importance of Selection Attributes according to the Types of Makgeolli Consumers based on Purchase and Drinking Motives (막걸리 구매 및 음용 동기에 따른 소비자 유형별 선택속성 중요도에 관한 연구)

  • The purpose of this study is to establish a marketing strategy for the makgeolli manufacturing industry. We fractionized cousumer types depending on motives for purchase of customers who had bought makeolli or drunk it for the last six months. We also examined the relationship between makgeolli selection attributes and customer satisfaction by the cousumer types. SPSS 15.0 statistical package was used to process data. Frequency analysis, factor analysis, a reliability test, K-means cluster analysis, one-way ANOVA, and multiple regression were executed. As a result, the motives to purchase and drink were divided into four factors - marketing, effect on health, self-desires, outside environment; consumers into three types - dependent type, loving type, indifferent type; makgeolli selection attributes into five factors - health characteristics, visual elements, brand characteristics, drinking characteristics, purchase characteristics. It was shown that the makgeolli loving type considered all the makgeolli selection attributes as most important; the dependent type considered the health characteristics and visual elements as less important than the loving type did. The indifferent type considered all the makgeolli selection attributes as less important compared with the other types. Among the makgeolli selection attributes, drinking characteristics and the purchase characteristics had effects on customer satisfaction.

  • In this study, the real state of local foods was examined targeting Gyeongju citizens to help in developing distinguishing foods and to promote cultural to excellence of local foods widely. Ultimately, this study aims to promote cultural excellence of Gyeongju's local foods widely by examining the kinds of local foods in Gyeonggju area. In addition, current study was conducted to provide basic data of local foods which inherit and develop our precious assets, in order to keep up with the Korean Wave as well as globalization. For this study, a survey was performed with the 274 sample of local food consumers, and analyzed the data using descriptive, cross tabulation analysis, and t-test. Results shown that Janchi guksu(banquet noodles) and Jeonbok juk(abalone rice porridge) obtained the highest awareness and preference when awareness and preference of Gyeongju local foods were analyzed depending on the marital status. Significant implication in the study is that there is a need to develop and promote local foods and open local food restaurants for local residents. More discussion and limitations are suggested.

Quality Characteristics of Yanggaeng containing Various Amounts of Loquat Fruits Puree (비파 퓨레 첨가량을 달리한 양갱의 품질특성)

  • In this study, a Yanggaeng with added loquat fruits puree was developed and studied on quality characteristics. The mixed ratio were 0%, 20%, 40%, 60%, 80%, 100% of loquat fruits puree. Loquat fruits puree have 83.49% of water, 0.36% of crude protein, 0.04% of crude fat, 0.46% of crude ash, $14.3^{\circ}Brix$ of sweetness, 75.10(mg/kg) of polyphenol and 4.01 of pH. The water contents of Yanggaeng were 41.78~53.37%, and showed significant increase (p<0.001). The sugar contents of Yanggaeng were increased from $28.7^{\circ}Brix$ at control group to $36.0^{\circ}Brix$ at 100% mixing group (p<0.001), while pH were decreased from 6.4 at control group to 4.26 to 6.4 at 100% mixing group. In color, the brightness (L-value) gradually decreased from 72.69 at control group to 43.64 at 100% mixing group (p<0.001), the redness (a-value) of control group was the lowest by -1.72 while 100% mixing group was the highest by 8.64 (p<0.001). The yellowness (b-value) of control group was 15.91 while that of 100% mixing group was 21.98 (p<0.001). The DPPH radical scavenging activity of control group was the lowest by 9.24% while that of the group 100% mixing was the highest by 46.17%. Total polyphenol was not detected from control group and 20% mixing groups, and 100% mixing group was The highest by 16.69 mg/100 g (p<0.001). Preference test showed the groups with mixing loquat fruits puree 60% or more were preferred (p<0.001) in color. There were no significant difference from sweet taste but sour taste of 100% mixing group was The highest by 4.85 (p<0.01). For texture and overall preference the most preferred groups were the groups of mixing of 60% and 80% of loquat fruits puree.

  • This study was intended to provide fundamental data concerning franchising companies' characteristics and performance in foodservice business by employing financial data from the firms' IDS(Information Disclosure Statements). Multiple regression analysis method was used to identify any correlations among franchising size, marketing competency, operational characteristics, and performance according to technique based upon 169 IDS data as of 2013. In terms of franchisor size and performance, the number of company-operated stores had statistically significant corelation with sales, net income, the total number of stores, and the number of franchisees. With respect to marketing competency and performance, advertising expenses showed statistically significant correlation with sales, the total number of stores, promotion expenses with sales, net income, and the total number of stores. On the other hand, there was no statistically significant correlation with current year's net income. At last, present study found significant correlations among business years, sales, current year's net income, and the total number of stores by regarding operational characteristics and performance, but there was no significant correlation between brands and performance. This study is cross-sectional study which is a limitation to be overcome in further studies. In addition, it is required to review the possibility for franchise management style to contribute to expanding the Korean traditional foods.

Quality Characteristics of Hamburger Patties adding with Tofu Powder (두부분말을 첨가한 햄버거 패티의 품질 특성)

  • This study was conducted to investigate the effect of Tofu powder on the quality properties of hamburger patties. Thus, this study analyzed the physicochemical and sensory characteristics of hamburger patties containing Tofu powder(25%, 50%, 75%, 100%) instead of bread crumb. The result was as followed. Increasing the amount of Tofu powder in hamburger patties tended to increase the pH. Moisture content of control was higher than other hamburger patties when containing Tofu powder. Increasing the amount of Tofu powder in hamburger patties tended to decrease the moisture content. There were no significant differences in cooking loss rate regarding the weight. The addition of Tofu powder decreased the cooking loss rate of the diameters and increased the thickness. It also increased the lightness (L), the redness (a), and the yellowness (b) in the hunter color value of the hamburger patties. For the textural characteristics, the addition of Tofu powder increased the hardness, elasticity and gumminess of the hamburger patties; however, it decreased the brittleness. In the sensory evaluation, an addition of 100% Tofu powder had the best score in appearance, taste and the overall preference. Therefore, this result suggests that adding Tofu powder amount of 100% can be applied to the hamburger patties for preference and nutritional aspects purposes. Furthermore, it is believed that the development of healthy patty-type Tofu powder products may resolve worries about fast food and quality-related problems in hamburger patties.

A Study on the Relationship between Cooks' Job Inconsistency and Job Performance on Intention of Changing Jobs (외식업체 조리사의 일자리 불일치와 직무성과 간의 관계가 이직의도에 미치는 영향에 관한 연구)

  • This study sought to examine the effects of job inconsistency of cooks in the food service businesses on job performance, and the effects of such causation on intention of changing jobs. For job inconsistency, cooks produce limited menu products due to the segmentation of jobs in the same industry, and can hardly exercise their skills obtained through education. Thus, 275 samples of job inconsistency were made to undergo frequency analysis, factor analysis, reliability analysis, correlational analysis, and multiple regression analysis, using the SPSS 17.0 program. Hypothesis 1 was established as cooks' job inconsistency having a positive effect on job performance; thus, with regard to job performance factors, skill inconsistency (${\beta}$=-.432), and wage inconsistency (${\beta}$=-.250) had a negative effect on job performance, but education inconsistency (${\beta}$=-.048) did not have an effect. Hypothesis 2 was established as cooks' job performance having a significant effect on intention of changing jobs; thus, intention of changing jobs had a significant negative effect on job performance (${\beta}$=-.238). So if job performance was improved, the intention of changing jobs would be reduced. This study implies that: cooks who were engaging in the food service businesses experienced job inconsistency, and led themselves to having an intention to change jobs; in this process, individual cooks' job level inconsistency and their wage levels have an important effect on intention of changing jobs.

A Study on the Influence of Empowerment of Restaurant Cooks on Job Satisfaction, Organizational Commitment, and Customer Orientation - Centering on Busan - (외식업체 조리사의 임파워먼트가 직무만족, 조직몰입, 고객지향성에 미치는 영향에 관한 연구 - 부산지역을 중심으로 -)

  • This study examined how empowerment of restaurant cooks influences job satisfaction, organizational commitment, and customer orientation, targeting 260 restaurant cooks in the Busan area. SPSS 18.0 was employed to perform frequency, factor, reliability, and multiple (simple) regression analyses. Empowerment was analyzed using 3 factors (self-authority, meaning and competence) while job satisfaction, organizational commitment, and customer orientation were analyzed using 1 factor each. Results of a correlation analysis of the hypothesized model revealed positive correlations among the variables. Multiple (simple) regression analyses of the hypothesized model found that the sub empowerment factors will have a positive influence on job satisfaction with self-authority (${\beta}$=.372, p<.001), meaning (${\beta}$=.451, p<.001), competence (${\beta}$=.240, p<.001). It was also found that the sub empowerment factors will have a positive influence on organizational commitment with self-authority (${\beta}$=.433, p<.001), meaning (${\beta}$=.473, p<.001), competence (${\beta}$=.302, p<.001). Lastly, the hypotheses that job satisfaction will have a positive influence on organizational commitment (${\beta}$=.775, p<.001), that job satisfaction will have a positive influence on customer orientation (${\beta}$=.467, p<.001), and that organizational commitment will have a positive influence on customer orientation (${\beta}$=.567, p<.001) were adopted.

A Study on the Removal Efficiency of Harmful Pollutants in the Cooking Chamber (조리실내의 유해오염물질 제거율에 관한 연구)

  • The purpose of this study is to reduce the contaminants (total volatile organic compounds (TVOCs), fine particle, odor and total airborne bacteria) during cooking process in cooking chamber, and to decrease the health damage in indoor space that has bad work environment. In order to solve the shortcomings of existing air purifiers and remove all kinds of pollutants effectively, this study focused on the development of indoor air purifiers which are made of bar type. Bio-ceramics filter which combines activated carbon and loess. The air cleaners developed with 4 measuring items including TVOCs, particulate matter, complex odor and total airborne bacteria were measured comparing their pre-service test to their post-service test after a period of time. The measured results showed higher removal efficiency of 91.02% as the concentration of TVOCs was reduced from $2,500{\mu}g/m^3$ to $223{\mu}g/m^3$. Second, the particulate matter removal ratio was 97.51% efficient with average concentration of $26.68{\mu}g/m^3$. Third, the odor showed 95.20% reduction as air dilution ratio averaged out at 144. Last, total airborne bacteria was eliminated by over 94% showing the changeable concentration from $787{\sim}814CFU/m^3$ to $47{\sim}40CFU/m^3$. In addition, the removal rate of harmful pollutants is excellent, and it is expected that the environment of the existing poor cooking room will be greatly improved by using the developed air purifier in combination with the ventilation device and the stove hood.

Studies on the Fermentation Characteristics of Yogurt Added with Pregelatinized Rice Flour (호화쌀가루를 첨가한 요구르트의 발효특성에 관한 연구)

  • The purpose of this study is developing a formulation with an optimum sensory point by using yogurt added with rice flour and pregelatinized rice flour(alpha rice flour) optimized by response surface method(RSM). The pH, acidity, sugar content, viscosity and number of lactic acid bacteria during fermentation of two types of yogurt(added with rice flour and pregelatinized rice flour) optimized by RSM were analyzed As the fermentation time of both types of yogurt increased, pH showed decreasing trend. The titratable acidity showed increasing trend as fermentation time increased. Sugar content decreased as fermentation time increased. The reasons are believed to be the sugar decrease during glycolysis and lactic acid fermentation. Viscosity was the highest at 6 hours of fermentation. After 10 hours of fermentation, the viscosity was higher than it was before the fermentation. The number of lactic acid bacteria of yogurt added with rice flour and pregelatinized rice flour was 7.43~9.00 log CFU/mL, which is more than optimum value. Therefore, it is possible to confirm that adding rice flour during yogurt manufacturing increases the number of lactic acid bacteria.

  • This study was empirically to investigate awareness of the on-the-job training of university students of co-op programs and satisfaction of the training for their job intention. The main study results as follows; First, the results of the influential relationship between the importance of on-the-job training and the satisfaction with the training, it was found that students participating in on-the-job training is related to curriculum of the department, job specification, language ability, and future job prospect. Second, the results of influential relationship between the importance of on-the-job training and the satisfaction with the job intention was connectivity factor. That is why the students had the intention to work for a company that is matched for their major and the company where they took the on-the-job training. Third, the results of influential relationship between the satisfaction with the on-the-job training and the satisfaction with the job intention, satisfaction with the on-the-job training was influenced by the satisfaction with the job intention. Through the on-the-job training, it was evaluated that work ability and skills of the students were improved, and they were satisfied with the future employment.
