The process of cultivation and production of oak mushroom (Lentinula edodes (Berk.) Pegler) on sawdust surface beds were investigated. Sawdust surface bed cultivation is the method by which oak mushrooms are cultured and produced on sterilized sawdust surface bed without using bags. The bed was made by inoculating with 3 to 1 ratio of bed sawdust to oak mushroom mycelial inoculum. The sawdust bed medium with 65% water content was pasteurized at $65^{\circ}C$, inoculated with sawdust spawn and spread on the surface on vinyl film in cultivation shed. During 78 days of cultivation period, water content in the medium varied from 61 to 72%, its pH decreased from 5.6 to 3.9~4.6 and ergosterol concentration increased to $0.33{\sim}0.59{\mu}g/g$. $CO_2$ concentration in the medium rapidly increased to 8.06% in two weeks. In seven weeks the medium surface started browning and $CO_2$ concentration increased to about 5.63%. Until 11th week the $CO_2$ concentration was maintained at 6~7%. After removing the plastic cover on the bed for ventilation in 12 weeks, $CO_2$ within the bed reduced dramatically to 1.5%. In the cultivation shed the internal temperature was $7.1{\sim}29^{\circ}C$ and humidity was 27.3 to 100%, while bed temperature ranged $11.6{\sim}30^{\circ}C$. Oak mushroom fruiting started from late July, in 120 days after bed establishment in late March and continued for approximately 100 days until early December with eight cycles of irrigation treatment. The mushroom yield of the eight cycles were 288~352 kg during the 1st (7/29~8/4) to 3rd cycle (9/3~9/7), 800 kg at the 4th cycle (9/19~9/24), 1,296~1,853 kg during 5th (10/3~10/8) to 7th cycle (4.11~11/9) and 990 kg at 8th cycle (11/23~12/7). Total production was approximately 7.4 tons from 33.0 tons of oak sawdust medium, thus harvest efficiency of the mushroom production was approximately 22.4%.
To provide further information for reutilization of the waste wood obtained after cultivating oak mushroom in Kangwon-do, the crystal structures of the waste wood were investigated and compared to those of normal woods by a series of x-ray diffraction analysis. The results obtained are as follows: 1. An x-ray diffraction diagram of cultivated wood for 5 years was same as that of typical cellulose with some orientation of cellulose crystallites, but that of cultivated wood for 8 years a random. 2. Crystallinity indices in normal and cultivated woods for 5 years ranged from 57% to 60%. In the cultivated wood for 8 years, however, the value showed about 40%. 3. Crystallite widths of cultivated woods for 5 years and for 8 years were 3 nm and 2.5 nm, respectively. 4. Intensity ratios of equatorial and meridional layers did not show any significant differences. From the above results, it is clear that the waste wood obtained after cultivating oak mush room for 5 years showed basically same crystal structures with normal wood. Therefore, we think that the waste wood may be used available for cellulosic material instead of normal wood.

To investigate constituents of Lentinus edodes grown on various, quantitative analyses of ash, crude protein, crude fiber, crude fat, water, nonsoluble nitrogen of the mushrooms were carried out by ordinary methods. The crude fat of the mushroom grown on chestnut tree(1.82%) was greater than that grown on oak (0.76%) or alder (1.17%) tree. The crude fiber of the mushroom grown on oak tree (12.50%) was greater than those grown on alder and chestnut trees, 9.85% and 8.52%, respectively. The crude protein, ash, nonsoluble nitrogen and water contents of the mushrooms grown on the three different trees were similar.

Auricularia auricula-judae is an edible mushroom, which is known as wood ear, free ear, black ear mushroom, and free jelly fish. Present experiments were conducted to determine the possibility of artificial cultivation with oak sawdust of A. auricula-judae. The duration of mycelial growth and days of pinhead formation on oak sawdust bag (1.4 kg) were 29~32 days and 13~17 days, respectively. The yield of fresh fruit-body was 275~350 g.

A computer vision based automatic intelligent sorting system for dried oak mushrooms has been developed. The developed system was composed of automatic devices for mushroom feeding and handling, two sets of computer vision system for grading , and computer with digital I/O board for PLC interface, and pneumatic actuators for the system control. Considering the efficiency of grading process and the real time on-line system implementation, grading was done sequentially at two consecutive independent stages using the captured image of either side. At the first stage, four grades of high quality categories were determined from the cap surface images and at the second stage 8 grades of medium and low quality categories were determined from the gill side images. The previously developed neuro-net based mushroom grading algorithm which allowed real time on-line processing was implemented and tested. Developed system revealed successful performance of sorting capability of approximate y 5, 000 mushrooms/hr per each line i.e. average 0.75 sec/mushroom with the grading accuracy of more than 88%.
To enhance the utilization of Larch(Larix leptolepis Gorden) wood, the sawdusts were tested as cultivating media for Lentinus edodes(Mori 290) by varying the composition of the media. The economic efficiency for producing mushrooms from larch sawdusts was evaluated. The results are as follows. 1. Larch sawdust was as much efficient as oak sawdust in the growth of the mycelia and production of good quality of oak mushrooms. 2. The mushrooms were able to be harvested starting six months after beginning the cultivation. No differences were found among the qualities of the mushrooms produced by various treatments. 3. The contents of lignin(28.6-28.7%) in the fresh sawdust of larchwood are higher than those in the residues of the used media(18.2%). But lignin content of 1% NaOH extracts(30.4-34.4%) in fresh sawdust of larch was lower than those in the residues(68.0%). 4. The production of mushroom was relatively high to be 29.7-31.5%(760-780g.)/2.5kg pack) of mushroom weight. The net profit estimated was 1,475Won per pack.
Xylogone ganodermophthora, an ascomycetous fungus, is known to cause yellow rot in the cultivated mushroom Ganoderma lucidum. In this study, we investigated the dissemination of this fungal pathogen in G. lucidum grown in cultivation houses. To determine the role of ascospores produced by X. ganodermophthora in disease development, we constructed a green fluorescent protein-labeled transgenic strain. This X. ganodermophthora strain produced a number of ascomata in the tissues of oak logs on which G. lucidum had been grown and on the mushroom fruit bodies. However, the ascospores released from the ascomata were not able to germinate on water agar or potato dextrose agar. Moreover, less than 0.1% of the ascospores showed green fluorescence, indicating that most ascospores of X. ganodermophthora were not viable. To determine the manner in which X. ganodermophthora disseminates, diseased oak logs were either buried in isolated soil beds as soil-borne inocula or placed around soil beds as air-borne inocula. In addition, culture bottles in which G. lucidum mycelia had been grown were placed on each floor of a five-floor shelf near X. ganodermophthora inocula. One year after cultivation, yellow rot occurred in almost all of the oak logs in the soil beds, including those in beds without soil-borne inocula. In contrast, none of the G. lucidum in the culture bottles was infected, suggesting that dissemination of X. ganodermophthora can occur via the cultivation soil.

The quality properties of oak mushroom were investigated using extraction conditions and enzyme treatments. The physiochemical properties were excellent at the extraction temperatures of $20^{\circ}C\;and\;40^{\circ}C$. The quality was increased as the extraction time increased but was best at the extraction time of 10 hr. The physiochemical properties such as soluble solid, reducing sugar and crude protein contents were best at the solvent ratio of 1:100 (w/v) so that it was set at 1:100. Thus, enzyme treatment was done at $50^{\circ}C$ for 2 hr with the solvent ratio of 1:100. The result showed that the best quality was shown using 0.2% protease and 0.2% cellulase. With the enzyme treatment, the essential amino acid contents increased by two folds but no difference was shown in $\beta-glucan$ content.
