The purpose of this study was to investigate the dietary habits, the nutritional knowledge and the consumption patterns of convenience foods of 618 university students located in the Gwangju area, from November twentieth to November thirtieth, 2002. The subjects included 301 males (48.7%) and 317 females (51.3%). This survey was conducted using a self-administered questionnaire. The percentage of students who were underweight, normal and overweight based on their body mass index (BMI) was 3.7, 88.0 and 8.3 far the males, and 29, 71 and 0 for the females, respectively. Most students (73.8%) skipped breakfast. This was because of lack of time (65.1%) of the cases. Self-reported eating habit problems were eating irregular meal (52.4%), overeating (21%), prejudiced meal (12.4%) and skipping meal (7.4%). The type of favorite snack was biscuit (31.9%) and cup Ramyon (31.9%). The rates of alcohol drinking in male and female students were 88.0% and 85.8% respectively, and the rates of smoking were 35.9% and 28% respectively. Males ate fiequently cup Ramyon (2.08 $\pm$ 2.95), fries (pork cutlet, fried potato) (1.91 $\pm$ 2.58), Ramyon (1.81 $\pm$ 3.00) and kimbab (1.70 $\pm$ 3.17) more frequently, while females ate kimbab (2.25 $\pm$ 3.26), cup Ramyon (1.89 $\pm$ 2.09), fries (pork cutlet, fried potato) (1.77 $\pm$ 2.67), Ramyon (1.46 $\pm$ 1.1.95) and fish paste (1.45 $\pm$ 2.22) more frequently. The nutritional knowledge score was higher in females than in males. The mean consumption patterns of convenience foods of students living in home were lower than that of students living in dormitory and boarding w/cooking. When the amount of pocket money available and the body mass index increased and the nutritional knowledge level was low, the mean consumption of convenience foods increased. The mean consumption of convenience foods correlated negatively with nutritional knowledge (p < 0.01). Therefore, nutritional education for university students is needed so as to improve their health and nutritional education program should be developed to meet the various needs of these students. This research was conducted to investigate the performance of a weight control program in university students in Daejeon during 3 months from November 2014 to February 2015. This program measured body measurement and composition analysis, nutritional education, and counseling every month. The status of students' weight control was surveyed before and after the program. The participants were 17 males (24.5 years old) and 15 females (20.8 years old). Their weights before the program were 78.2 kg (male) and 57.2 kg (female), whereas after the program, weights were 77.6 kg (male) and 56.2 kg (female). Weight reduction in students was 53.1%, and weight increase was 40.6% by the weight control program. Body mass index (BMI) tended to decrease after the program. Body fat % and muscle masses were not significantly different by program practice. Body image decision of females showed mainly 'normal' status while that of male was 'over fatty constitution', Before and after the program, the most prevalent method of weight control was exercise for all students. The most selected exercise was 'walking and jogging' during the program. For the most effective weight control method, female acknowledged both 'reducing amount of meals' and 'increasing exercise' while males selected 'increasing exercise.' On the side effects of weight control, over 40% of all students chose 'no experience' and 'loss of volition'. The degree of student's goal achievement was largely 20 ~-20% compared with their goal weights. Accordingly, this program didn't show significant effects. For effective weight control, it is recommended to conduct nutritional education. Students can exercise regularly and control diet to sustain a healthy and satisfactory body status.
Purpose: This study was done to identify the relationships between body mass index, nutritional knowledge and the health promotion behavior of nursing students. Methods: Participants consisted of the entire 330 members of the student body of a Korean nursing college. Variables included body mass index, nutritional knowledge and health promotion behavior as well as demographic variables. Data was analyzed by frequencies, ANOVA and Pearson's correlation with the SPSS/Win 21.0 program. Results: The mean score for body mass index was $20.23kg/m^2$ for nutritional knowledge, $14.27{\pm}3.07$ on a total 20-point scale, and for health promotion behavior, $3.03{\pm}0.34$ on a 4-point scale. Nutrition knowledge positively correlated with health promotion behavior (r=.368, p<.001). Health promotion behavior positively correlated with underweightness (r=.120, p=.005), normal weight (r=.212, p<.001), negatively correlated to overweightness (r=-.351, p<.001), and obesity (r=-.413, p<.001). Nutrition knowledge positively correlated to underweightness (r=.155, p=.005), and normal weight (r=.346, p<.001), negatively correlated to overweightness (r=-.548, p<.001), and obesity (r=-.342, p<.001). Conclusion: In order to enhance the effective health promotion behavior of nursing students, it is important to actively intervene to improve body weight control behavior and nutritional knowledge. Therefore, developing an educational program for improving nutritional knowledge and body weight control behavior of nursing students is recommended.
The present study was designed to observe whether nutritional education on children or mothers of the children who avoid to eat vegetables can improve the preferences for the vegetables of the subjects. The subjects were 45 children who are fourth to sixth grade of primary school in Bibong. They were assigned to one of three groups which are Control, Children Education and Mothers Education groups. Control group was not given any special education, while experimental groups were given nutritional education for 4 weeks. The effects of education was evaluated in the aspects of preference changes for vegetables, nutritional knowledge, attitude and food behavior of the subjects The results are summarized as follows. 1. Preferences to cucumber, lettuce, chinese cabbage and raddish were high in three groups while greenonion, onion, lotus roots and red pepper didn't suit for their taste. 2. Significantly increased scores for the preference to red pepper, pumpkin, Dorajee(root of chinese bell-flower), braken, mushroom was shown only in the children who had nutritional education while the children in the group of Mothers Education improved their preference only cabbage and lotus roots. 3. Nutritional knowledge of the children in Children Education group has improved significantly(p<0.05). While there was no significant difference between control and Mothers Education group. 4. When scores for food habit of mother and children were estimated, there was no significant difference among three groups. However, score of food habit in children was higher than that of mothers. 5. Food habit and nutrition knowledge of mother were not well corelated with dietary attitude and behavior of their children. These results indicate that the program of nutrition education in the present study can improve the food choice of children for vegetable and correct one-sided food habit. The program applied in this study would serve a kind of model for the dietetic teachers to guide the children who mainly dislikes vegetables.
The purpose of the study was to implement and evaluate a nutrition capacity training program for dietitians and other professionals working at customized home visiting health services (CHVHS). This program focused on nutrition services for hypertension or diabetes mellitus patients including topics regarding CHVHS, and composed of 10 sessions with lectures, discussion and practice. Dietitians (n = 54) and other professionals (n = 20) participated in the program and completed the questionnaire to assess their understanding of nutritional management, nutrition services and CHVHS before and after the program, and to examine program satisfaction and education needs. Subjects were mostly women (98.6%) and college or university graduates (93.2%). Total score (p < 0.001), as well as all items (p < 0.001 or p < 0.01) of understanding regarding nutritional management, nutrition services and CHVHS, were significantly increased after the program both in dietitians and in other professionals. Subjects were generally satisfied with the program, showing more satisfaction with items regarding subject's participation, acquiring new knowledge, usefulness of the program for CHVHS, and education materials. In future nutrition capacity training programs, subjects wanted to have classes regarding nutrition services for specific chronic diseases, development of education materials, methods for dietary life education, modifying eating habits and so on. Other professionals compared to dietitians, showed higher education needs in meal management (p < 0.01) and nutrition counseling skills (p < 0.05). This study showed the effectiveness of a nutrition capacity training program for home-visiting dietitians and other professionals, and suggests the need and direction for future nutrition capacity training programs.
Purpose: The purpose of this study was to examine the effect of a swallowing rehabilitation program for elderly on the stage of dysphagia, nutritional status, and swallowing-quality of life. Methods: The research design was Pretest-Posttest Nonequivalent Groups Design. The subjects of this study consisted of 85 elderly patients hospitalized at geriatric hospitals between August 23rd and October 25th in 2012. Eighty five research subjects were assigned to experimental (42 patients) and control (43 patients) groups. The rehabilitation program was provided to the experimental group 5 days per week for 8 weeks. The effects were evaluated by measurement of Mid-upper Arm Muscle Circumference (MAMC), Total Lymphocyte Counts, albumin, Total Cholesterol, and Swallowing Quality of Life (SWAL-QOL). The collected data were analyzed with x2-test and independent t-test using PASW WIN 18.0. Results: Changes in the stage of dysphagia were not significant (p>.05). In nutrition status, the degree of MAMC points in the experimental group was significantly increased compared with that in the control group (t=2.36, p=.021). In swallowing quality of life, the score of SWAL-QOL in the experimental group was significantly increased, particularly burden (t=3.34, p=.002), frequency (t=2.68, p=.011), fear (t=2.44, p=.019), mental health (t=2.47, p=.018), and sleep (t=2.08, p=.044). Conclusion: Based on the results, this swallowing rehabilitation program for elderly would be helpful in promoting their nutritional status and swallowing-QOL in geriatric hospitals.
Materials for nutrition education to promote nutrition intake and prevent diseases in elderly individuals were developed, nutrition education was provided to 46 elderly females for 12 weeks, and its effects on the body composition, blood profile, and nutritional quality of subjects were qualitatively analyzed. After the education program, the weight of subjects decreased from 56.7 kg to 56.0 kg (p<0.001), their body fat dropped from 20.8 kg to 19.6 kg (p<0.01), their body mass index (BMI) declined from $25.2kg/m^2$ to $24.9kg/m^2$ (p<0.01), and their percentage of body fat decreased significantly (p<0.05). On the other hand, blood sugar showed a significant increase from 131.6 mg/dl to 141.8 mg/dl (p<0.05). Overall, the percentage of nutrition intake rose. In particular, the estimated energy requirement increased from 89.3% to 99.5% (p<0.05). Further, the contrast ratio of recommended intake showed significant increases in protein (p<0.01), phosphorus (p<0.05), vitamin $B_2$ (p<0.05), vitamin $B_6$ (p<0.05), and niacin(p<0.001), and that of adequate intake showed a significant increase in sodium (p<0.05). The nutrient adequacy ratio (NAR) showed a significant increase only in niacin (p<0.05), and the index of nutritional quality (INQ) showed significant increases in protein (p<0.05) and niacin (p<0.001). After the nutrition education program, a qualitative analysis of nutrients consumed by subjects was conducted. The results show improvements across the board except for the deficient intake of calcium and folic acid, suggesting that the nutrition status of subjects changed in a positive direction through the program. The implementation of this program for elderly individuals in a continuous and repetitive manner is expected to facilitate their nutrition management.
The purpose of this study was to investigate the effects of a nutrition education and personalized lunch service program in a senior welfare center. A total of 30 elderly (14 males, 16 females) aged 62~89 years participated in this study. Nutrition education lessons (2 hour/lesson/week) were provided for 4 weeks. Also, ten weeks from week 3rd to week 12th, personalized lunch providing 1/3 personal needed energy was served 5 times for a week. After the nutrition intervention program, we compared anthropometric characteristics, blood biochemical characteristics, nutrition knowledge, dietary attitude and dietary intake using 24 hr recall with those before the intervention. The body weight (p < 0.001) and body mass index (BMI) (p < 0.001) were decreased. There were significant increases in score of nutrition knowledge (p < 0.01) and consumption of milk & milk products for snacks. There was a positive effect on fasting blood sugar (FBS) showing significant decreases in portion of impaired fasting glucose and diabetes mellitus (p < 0.05). Also, serum triglyceride (TG) was significantly decreased (p < 0.05). In evaluation of nutrient intake by Dietary Reference Intakes for Koreans (KDRIs), riboflavin (p < 0.01), vitamin C (p < 0.001), calcium (p < 0.05) were positively improved. The index of nutritional quality (INQ) and intakes of vitamin C (p < 0.001), riboflavin (p < 0.05), Ca (p < 0.01) and Fe (p < 0.05) were increased. In conclusion, this nutrition education and lunch service program providing 1/3 personal needed energy can be used to develop and implement a tailored nutritional intervention programs in the setting of a community senior welfare center to improve health and nutritional status of Korean elderly.
This stusy was designed to develop nutrition education program for the primary school children served by the national school lunch program and to evaluate ist educational effects. Subjects consisted of 61 elementary school children(30 in the control group and 31 in the treatment group) in the 5th grade. Only the treatment group participated in a twelve-week nutrition education program. To evaluate the effects of the nutrition education program, the control and treatment groups were given a pretest and posttest for nutrition knowledge, food attitude, food habits, food preference and plate wastes before and after nutrition education. The results obtained are summerized as follows ; the nutrition knowledge test score (30.4) of the treatment group was significantly higher than that (17.4) of the control group after nutrition education . However, there was no significant difference between the two groups in food attitude test scores after nutrition education. We also did not find any difference induced by nutrition education or the food preferences of the treatment group. After nutrition education , the amount of plate waste of some menus were significantly decreased in the treatment group, but the amount of plate waste of the control group was not significantly changed. However, there was no significant difference in the post test scores above food habits between two groups. It was concluded that a twelve-week nutrition education program can improve nutrition knowledge and decrease plate waste but is not enough to change food attitude , food preference and food habits. It can besard that the two components of foodservice are nutritional foodservice and nutrition education. Foodservice management alone without nutrition education is hardly enough to improve the nutritional status of school children. The result of this study indicate that applying the nutrition education program to elementary school children who are served by the national lunch program can maximize the effects of the national school lunch program.
The purpose of this study was to evaluate the multilateral weight control program provided by the university health care center for female college students. The program was 8weeks long and composed of nutrition consultation, exercise, and behavior modification. Nutrition education focused on a low calorie and balanced diet, increasing the intake of protein and micronutrients and reducing carbohydrate and fat consumption. Evaluations were made upon completion of an 8-week program and upon follow-up at 6 months after the end of program. A total of 92 women completed the 8-week program, while 20 completed the follow-up survey. Upon completion of the 8-week program, significant decreases in body weight, BMI, body fat (kg), and %body fat were observed, and muscle mass was also reduced. The total energy and carbohydrates intake were also significantly decreased in subjects with weight loss, while the percentage of subjects whose consumption of protein, calcium, iron, vitamin $B_1$, $B_6$, and niacin did not meet the EAR, were decreased. The blood values of glucose, total cholesterol and HDL-cholesterol were decreased. The follow-up survey revealed that the subjects continued to lose weight after completion of the program. In addition, a Mini nutrition assessment revealed that diet quality improved, especially with respect to reductions in the consumption frequency of fried, greasy and salty food. In conclusion, the multilateral weight control program with diet education for female college students was effective for long lasting weight control and improved dietary behavior. Nutrition education for weight reduction should focus on balanced nutrition as well as lowering the total caloric intake.
