한외여과를 이용한 Mozzarella Cheese Analogue 제조에 관한 연구 (Production of Mozzarella Cheese Analogue by Ultrafiltration)

  • The purpose of this study was to improve the production of Mozzarella cheese analogues manufactured using mixtures of soy milk and concentrated raw milk by performing ultrafiltration (UF) and to assess the quality of these cheeses during a 30-day storage period at $4^{\circ}C$, relative to that of Mozzarella cheese manufactured with the traditional method. The solid consistency of Mozzarella cheese analogue prepared from milk mixtures was lower than that of cheese manufactured from raw milk or soy milk and increased during storage, which is considered to be the result of decreasing water levels, as well as with increasing soy milk concentrations. In the Mozzarella cheese analogue generated using the milk mixtures, the fat content decreased with increase in the soy milk concentration, while it decreased during the storage period. Lactose levels were lowest in cheese composed of soy milk or raw milk and processed by UF, and decreased during storage in cheese produced using milk mixtures. In milk mixtures containing soy milk, the protein concentration increased with increasing amounts of raw milk and did not change during the storage period. The water-soluble nitrogen compound level was similar between cheeses and increased only slightly during storage. The amount of non-protein nitrogen compounds was higher in the cheese analogue than in the control cheese and tended to increase during storage. Analysis of the physicochemical traits of the Mozzarella cheese analogue yielded the following results: During storage, titratable acidity levels increased while pH tended to decrease. After analysis using electropherograms, it was classified as ${\alpha}$-, ${\beta}$-, or ${\kappa}$-casein. The results of rheometry tests showed that in the Mozzarella cheese analogue prepared from milk mixtures, with raw milk concentrated by UF, increases in concentration rate lead to lowered hardness, elasticity, cohesiveness, and brittleness. When cheese was produced from milk mixtures and concentrated by UF, meltability increased as the concentration rate increased, although to an extent that was less than that observed for the control cheese, and tended to increase during storage. Sensory evaluation showed that the analogue cheese was much better than the control cheese in terms of formation, appearance, and flavor.

염소계 VOCs의 UV 광분해 연구: 제거율 및 부산물 (UV Photodegradation of Chlorinated VOCs: Removal Efficiency and Products)

  • In this study, 4 gases containing typical chlorinated volatile organic compounds (VOCs) were treated by ultraviolet (UV) irradiation. The typical chlorinated VOCs are dichloromethane (DCM), trichloromethane (TCM), carbon tetrachloride (CTC) and trichloroethylene (TCE). The removal efficiency (RE) and the products of chlorinated VOCs by UV irradiation are investigated. At this time, 2 types of background gas (air and nitrogen) were used to figure out the RE by photooxidation and photolysis. The specification of UV-lamp used in this study was low-pressure mercury lamp emitting wavelength of 185~254 nm. The experimental conditions were set as initial VOC concentration of $180{\pm}10ppm$, empty bed retention time (EBRT) of 53 s, temperature of $23{\pm}2^{\circ}C$ and relative humidity of $65{\pm}5%$. In the photolysis condition with nitrogen ($N_2$) as background gas, the averaged RE of the 4 types of chlorinated VOCs was about 24% higher than that with photooxidation; and the REs of VOCs except CTC were confirmed as >99%. The composition of off-gases after UV photooxidation in air was investigated and several intermediates from DCM, TCM and TCE were detected by GC/MS. Among them, phosgene which is a toxics was detected as an intermediate of TCM. In addition, the concentration of carbon dioxide ($CO_2$) in the off-gases was measured to calculate the mineralization rate (MR). With the photooxidation, TCE showed the highest RE (>99%) while MR was the lowest (17%); and the MR of DCM was the highest (86%). In addition, particulate matters (PM) in the off-gases was also detected and high concentrated $PM_{10}$ ($21,580{\mu}g{\cdot}m^{-3}$) and $PM_{2.5}$ ($6,346{\mu}g{\cdot}m^{-3}$) were detected in TCE off-gas. More than 99% of the chlorinated VOCs could be removed using UV254-185 nm lamp, while it is necessary to conduct further studies on the production and treatment of secondary pollutants.

  • 7H-dibenzo[c,g]carbazole(DBC)과 dibenz[a, j]acridine(DBA) 및 이의 대사물 trans-DBA-1,2-dihydrodiol(DBA-1,2-DHD), trans-DBA-3,4-dihydrodiol(DBA-3,4-DHD), trans-DBA-5,6-dihydrodiol(DBA-5,6-DHD)]에 의한 DNA adduct형성을 알기 위해 Hsd:ISR 생쥐 피부에 이를 투여하고 용매 추출법으로 DNA를 분리하고 $^{32}P$-postlabeling법으로 DNA adduct를 분석하였다. DBC를 피부에 투여하여 DNA adduct가 국소작용 부위인 피부와 내장기관인 간, 폐 및 신장에 형성되어 DBC는 국소 및 전신 발암작용이 있음을 알 수 있었다. 또한 DNA adduct활성도가 간에서는 높고 피부, 폐, 신장에서는 상대적으로 낮아 DBC에 의한 발암의 주 표적 장기는 간임을 추측할 수 있었다. DBA, DBA-3,4-DHD 및 DBA-5,6-DHD 투여에 의해 두개의 adduct가 피부에서 관찰되었다. 대사 물질인 DBA-5,6-DHD에 의해 2개의 adduct가 형성되었으나 그 양상이 DBA 및 DBA-3,4-DHD와는 달랐으며 DBA-1,2-DHD에 의해서는 DNA adduct 형성이 관찰되지 않았다. 이상의 결과로 DBA는 국소발암작용이 있으며 활성 대사물인 DBA-3,4-DHD가 최종 발암원(ultimate carcinogen)이고 DBA-1,2-DHD는 무독화 대사물질로 추측된다.

Pseudomonas cepacia 균주가 생산하는 항진균성 Cyclic Lipopeptide의 생물학적 및 물리 화학적 특성 (Biological and Physico-chemical Properties of Antifungal Cyclic Lipopeptides Produced by Pseudomonas cepacia Strains)

  • 토양으로부터 항진균 활성을 나타내는 5종류의 Pseudomonas cepacia 균주 AF027, AF069, AF2001, AF2011, SD02가 분리되었으며 이들은 각각 cyclic lipopeptide계 항진균 물질 CLP027A, CLP069A, Cepacidine A, CLP2011A, CLP02A를 생산하였다. 조사된 P cepacia 균주들은 배지중에 함유된 질소원 및 탄소원의 종류에 따라 항진균 물질 생산성에 현저한 차이가 있었는데, 질소원으로서는 polypeptone-S, 탄소원으로서는 glucose와 fructose가 생산성 증대에 가장 효과적이었다. 항진균물질 $CLP069A_1$$CLP069A_2$는 각각 분자량이 1215와 1199이며, 아미노산 조성, UV spectrum, IR spectrum 및 항진균 스펙트럼에 있어서, Xylocandin $A_1,\;A_2$와 일치하였으며, CLP027 $A_1$$A_2$ 또한 이러한 물리 화학적 특성이 Cepacidine A와 완전히 일치함으로써 동일 물질로 생각된다. $CLP2011A_1,\;A_2$$CLP02A_1,\;A_2$는 아미노산 조성 및 항진균 스펙트럼이 Xylocandin $A_1,\;A_2$와 다르고, Cepacidine $A_1,\;A_2$와는 항진균 스펙트럼에서 현저하게 차이가 났다. CLP2011A, CLP02A가 분자량, 아미노산 조성, UV spectrum, IR spectrum에서 Cepacidine A와 동일하지만 항진균 스펙트럼이 상이한 것은 이들이 다른 물질임을 시사하며, 이는 aliphatic side chain이 Cepacidine A의 그것과 다른 데에서 비롯된 분자구조의 상이함에서 기인된 것으로 추론된다.

Effect of phytol in forage on phytanic acid content in cow's milk

  • Objective: Bioactive compounds in ruminant products are related to functional compounds in their diets. Therefore, this study aimed to explore the effect of forage sources, Italian ryegrass (IR) silage vs corn silage (CS) in the total mixed ration (TMR), on milk production, milk composition, and phytanic acid content in milk, as well as on the extent of conversion of dietary phytol to milk phytanic acid. Methods: Phytanic acid content in milk was investigated for cows fed a TMR containing either IR silage or CS using 17 cows over three periods of 21 days each. In periods 1 and 3, cows were fed CS-based TMR (30% CS), while in period 2, cows were fed IR silage-based TMR (20% IR silage and10% CS). Results: The results showed that there were no differences in fat, protein, lactose, solids-not-fat, somatic cell count, and fatty acid composition of milk among the three experimental periods. There were no differences in the plasma concentration of glucose, triglycerides, total cholesterol, and nonesterified fatty acids among the three experimental periods, while the blood urea nitrogen was higher (p<0.05) in period 2. The milk phytanic acid content was higher (p<0.05) in period 2 (13.9 mg/kg) compared with periods 1 (9.30 mg/kg) and 3 (8.80 mg/kg). Also, the phytanic acid content in the feces was higher (p<0.05) in period 2 (1.65 mg/kg dry matter [DM]) compared with period 1 (1.15 mg/kg DM), and 3 (1.17 mg/kg DM). Although the phytol contents in feces did not differ among the three feeding periods, the conversion ratio from dietary phytol to milk phytanic acid was estimated to be only 2.6%. Conclusion: Phytanic acid content in cow's milk increases with increasing phytol content in diets. However, phytol might not be completely metabolized in the rumen and phytanic acid, in turn, might not be completely recovered into cow's milk. The change of phytanic acid content in milk may be positively correlated with the change of phytol in the diet within a short time.

호도나무 줄기와 가지의 병원균(病原菌) 삼종(三種)의 동정(同定)과 균사생장(菌絲生長)에 영향(影響)을 미치는 요인(要因) 구명(究明) (Identification of Three Fungi Associated with Stem and Twig Diseases of Juglans sinensis in Korea and Characterization of Factors Affecting Their Growth)

  • 본(本) 실험(實驗)의 목적(目的)은 천원(天原), 영동(永東), 괴산(塊山)에서 재배(栽培)하고 있는 호두나무(Juglans sinensis Dode)에 가지마름과 고사(枯死)를 일으키는 병원균(病原菌)을 분리(分離)하여 동정(同定)하고 이들 병원균(病原菌)의 병원성(病原性) 및 배양적(培養的) 특성(特性), 발병율(發病率) 등(等)을 조사(調査)하는 것이었다. 분리(分離)된 병원균(病原菌)의 균학적(菌學的) 특성(特性)을 조사(調査)한 결과(結果), 이들균(菌)은 Botryosphaeria dothidea (Mou g. ex Fries) Casati et de Notaris(가지마름병(病)), Phomopsis albobestita Fairman (Phomopsis 가지마름병(病)), Melanconis juglandis (Ellis et Everhart) Graves(검은 돌기 가지마름병(病))로 동정(同定)되었다. 온실내(溫室內)에서 이들균(菌)의 병원성(病原性)을 검정(檢定)한 결과(結果) 2년생(年生) 호도나무 묘목(苗木)에서 병원성(病原性)이 입증(立證)되었다, 균사생육(菌絲生育)에 미치는 온도(溫度)의 영향(影響)을 조사(調査)한 결과(結果) B. dothidea와 P. albobestita는 $25{\sim}30^{\circ}C$ 사이에서 생육(生育)이 양호(良好) 하였으며, M. juglandis는 $20{\sim}25^{\circ}C$에서 생육(生育)이 가장 좋았으며 세 가지 균(菌)모두 $4^{\circ}C$$40^{\circ}C$에서는 생장(生長)하지 않았다. 분리(分離)된 세 균(菌)의 생육(生育)은 배지(培地)에 따라 차이(差異)를 보이지 않았으며 생육최적(生育最適) pH는 B. dothidea와 M. juglandis의 경우 4.0~8.0의 범위(範圍)이며 P. albobestita의 경우(境遇) 4.0~5.0으로 나타났다. 균사생육(菌絲生育)에 미치는 탄소원(炭素源)과 질소원(窒素源)의 영향(影響)을 조사(調査)한 결과(結果) B. dothidea의 경우(境遇) 탄소원(炭素源)으로는 glucose, sucrose, starch 및 maltose을, 질소원(窒素源)으로는 histidine과 potassium nitrate를 첨가(添加)한 배지(培地)에서 생육(生育)이 좋았다. P. albobestita의 경우(境遇) 탄소원(炭素源)으로 glucose 와 sucrose를 질소원(窒素源)으로 alanine과 potassium nitrate를 함유(含有)한 배지(培地)에서 생육(生育)이 좋았으며 M. juglandis는 glucose, sucrose, potassium nitrat, 함유(含有) 배지(培地)에서 생육(生育)이 좋았다. 주요 호도나무 재배지역(栽培地域)에서 발병(發病) 상황(狀況)을 조사(調査)한 결과(結果) 조사지역(調査地域) 모두에서 P. albobestita에 의한 피해(被害)가 가장 심하였으며, 15년생(年生) 이상(以上)된 수목(樹木)이 어린나무보다 더 피해(被害)가 큰 것으로 나타났다.

옻칠한지의 제조 및 특성 (The Characteristics of Hanji Prepared with Lacquer)

  • The purpose of this study is to make a functional Hanji treated with an oriental lacquer which has various functionalities. The raw oriental lacquer produced in China was used in this study This lacquer was diluted with ethanol and terpene in different solvent ratios. The diluted lacquer in the solvents had two layers. The upper layer was solvent soluble and the lower contained precipitates. Hanji was treated with the solvent solubles and the mixture containing precipitates, and then properties of the Hanji were evaluated. The oriental lacquer consisted of 25.04% of water, 60% of urushiol, 3.13% of nitrogen-containing compounds, and 5.66% of gum. The pH of oriental lacquer was 5.3 and the viscosity was 1680 cP. The average weight, thickness, and density of Hanji treated with oriental lacquer tended to gradually decreased as the lower concentration of lacquer was used and as the solvent soluble was treated. Tensile strength of the treated Hanji decreased when the diluted lacquer was used and Hanji treated with terpene dilutes at the ratio of lacquer to solvent of 1:5 (v/v) showed higher tensile strength than ones treated with ethanol dilutes. The folding endurance decreased as the less concentrated lacquer was used and the highest value was obtained when 1:40 (v/v) of lacquer to solvent ratio in both ethanol and terpene mixture. Absorption ratio was higher in the Hanji treated with ethanol mixture, treated with the lacquer in higher concentration, and treated with ethanol mixture. Hanji treated with ethanol dilutes at 1:20 (v/v) and the lower ratio of lacquer to solvent showed a hydrophobic property. Amount of the bound dye materials tended to be decreasing as the concentration of lacquer becomes lower and it was higher in Hanji treated with ethanol mixture than with terpene mixture. Color of Hanji treated with the solvent diluted mixture was Y to YR-type, whereas that of Hanji treated with raw oriental lacquer was Y-type, terpene

Sesquiterpenoids Bioconversion Analysis by Wood Rot Fungi

  • Sesquiterpenoids are defined as $C_{15}$ compounds derived from farnesyl pyrophosphate (FPP), and their complex structures are found in the tissue of many diverse plants (Degenhardt et al. 2009). FPP's long chain length and additional double bond enables its conversion to a huge range of mono-, di-, and tri-cyclic structures. A number of cyclic sesquiterpenes with alcohol, aldehyde, and ketone derivatives have key biological and medicinal properties (Fraga 1999). Fungi, such as the wood-rotting Polyporus brumalis, are excellent sources of pharmaceutically interesting natural products such as sesquiterpenoids. In this study, we investigated the biosynthesis of P. brumalis sesquiterpenoids on modified medium. Fungal suspensions of 11 white rot species were inoculated in modified medium containing $C_6H_{12}O_6$, $C_4H_{12}N_2O_6$, $KH_2PO_4$, $MgSO_4$, and $CaCl_2$ for 20 days. Cultivation was stopped by solvent extraction via separation of the mycelium. The metabolites were identified as follows: propionic acid (1), mevalonic acid lactone (2), ${\beta}$-eudesmane (3), and ${\beta}$-eudesmol (4), respectively (Figure 1). The main peaks of ${\beta}$-eudesmane and ${\beta}$-eudesmol, which were indicative of sesquiterpene structures, were consistently detected for 5, 7, 12, and 15 days These results demonstrated the existence of terpene metabolism in the mycelium of P. brumalis. Polyporus spp. are known to generate flavor components such as methyl 2,4-dihydroxy-3,6-dimethyl benzoate; 2-hydroxy-4-methoxy-6-methyl benzoic acid; 3-hydroxy-5-methyl phenol; and 3-methoxy-2,5-dimethyl phenol in submerged cultures (Hoffmann and Esser 1978). Drimanes of sesquiterpenes were reported as metabolites from P. arcularius and shown to exhibit antimicrobial activity against Gram-positive bacteria such as Staphylococcus aureus (Fleck et al. 1996). The main metabolites of P. brumalis, ${\beta}$-Eudesmol and ${\beta}$-eudesmane, were categorized as eudesmane-type sesquiterpene structures. The eudesmane skeleton could be biosynthesized from FPP-derived IPP, and approximately 1,000 structures have been identified in plants as essential oils. The biosynthesis of eudesmol from P. brumalis may thus be an important tool for the production of useful natural compounds as presumed from its identified potent bioactivity in plants. Essential oils comprising eudesmane-type sesquiterpenoids have been previously and extensively researched (Wu et al. 2006). ${\beta}$-Eudesmol is a well-known and important eudesmane alcohol with an anticholinergic effect in the vascular endothelium (Tsuneki et al. 2005). Additionally, recent studies demonstrated that ${\beta}$-eudesmol acts as a channel blocker for nicotinic acetylcholine receptors at the neuromuscular junction, and it can inhibit angiogenesis in vitro and in vivo by blocking the mitogen-activated protein kinase (MAPK) signaling pathway (Seo et al. 2011). Variation of nutrients was conducted to determine an optimum condition for the biosynthesis of sesquiterpenes by P. brumalis. Genes encoding terpene synthases, which are crucial to the terpene synthesis pathway, generally respond to environmental factors such as pH, temperature, and available nutrients (Hoffmeister and Keller 2007, Yu and Keller 2005). Calvo et al. described the effect of major nutrients, carbon and nitrogen, on the synthesis of secondary metabolites (Calvo et al. 2002). P. brumalis did not prefer to synthesize sesquiterpenes under all growth conditions. Results of differences in metabolites observed in P. brumalis grown in PDB and modified medium highlighted the potential effect inorganic sources such as $C_4H_{12}N_2O_6$, $KH_2PO_4$, $MgSO_4$, and $CaCl_2$ on sesquiterpene synthesis. ${\beta}$-eudesmol was apparent during cultivation except for when P. brumalis was grown on $MgSO_4$-free medium. These results demonstrated that $MgSO_4$ can specifically control the biosynthesis of ${\beta}$-eudesmol. Magnesium has been reported as a cofactor that binds to sesquiterpene synthase (Agger et al. 2008). Specifically, the $Mg^{2+}$ ions bind to two conserved metal-binding motifs. These metal ions complex to the substrate pyrophosphate, thereby promoting the ionization of the leaving groups of FPP and resulting in the generation of a highly reactive allylic cation. Effect of magnesium source on the sesquiterpene biosynthesis was also identified via analysis of the concentration of total carbohydrates. Our current study offered further insight that fungal sesquiterpene biosynthesis can be controlled by nutrients. To profile the metabolites of P. brumalis, the cultures were extracted based on the growth curve. Despite metabolites produced during mycelia growth, there was difficulty in detecting significant changes in metabolite production, especially those at low concentrations. These compounds may be of interest in understanding their synthetic mechanisms in P. brumalis. The synthesis of terpene compounds began during the growth phase at day 9. Sesquiterpene synthesis occurred after growth was complete. At day 9, drimenol, farnesol, and mevalonic lactone (or mevalonic acid lactone) were identified. Mevalonic acid lactone is the precursor of the mevalonic pathway, and particularly, it is a precursor for a number of biologically important lipids, including cholesterol hormones (Buckley et al. 2002). Farnesol is the precursor of sesquiterpenoids. Drimenol compounds, bi-cyclic-sesquiterpene alcohols, can be synthesized from trans-trans farnesol via cyclization and rearrangement (Polovinka et al. 1994). They have also been identified in the basidiomycota Lentinus lepideus as secondary metabolites. After 12 days in the growth phase, ${\beta}$-elemene caryophyllene, ${\delta}$-cadiene, and eudesmane were detected with ${\beta}$-eudesmol. The data showed the synthesis of sesquiterpene hydrocarbons with bi-cyclic structures. These compounds can be synthesized from FPP by cyclization. Cyclic terpenoids are synthesized through the formation of a carbon skeleton from linear precursors by terpene cyclase, which is followed by chemical modification by oxidation, reduction, methylation, etc. Sesquiterpene cyclase is a key branch-point enzyme that catalyzes the complex intermolecular cyclization of the linear prenyl diphosphate into cyclic hydrocarbons (Toyomasu et al. 2007). After 20 days in stationary phase, the oxygenated structures eudesmol, elemol, and caryophyllene oxide were detected. Thus, after growth, sesquiterpenes were identified. Per these results, we showed that terpene metabolism in wood-rotting fungi occurs in the stationary phase. We also showed that such metabolism can be controlled by magnesium supplementation in the growth medium. In conclusion, we identified P. brumalis as a wood-rotting fungus that can produce sesquiterpenes. To mechanistically understand eudesmane-type sesquiterpene biosynthesis in P. brumalis, further research into the genes regulating the dynamics of such biosynthesis is warranted.

  • 본 연구는 고추와 배추 재배 시 요소분해효소 억제제 NBPT가 함유된 원예용 비료 시용에 따른 온실가스 저감 효과 구명을 위하여 경기도농업기술원 시험포장에서 2년간(2015~2016년) 수행하였다. 고추 재배기간 중 $N_2O$ 배출량은 연도별 기상환경에 따라 배출양상과 배출량에는 차이가 있었으나 처리별 저감효과는 통계적으로 유의하게 나타났으며, 3요소 표준시비(대조)에 비해 질소 표준시비 기비량 0.5배, 1.0배 해당량 NBPT 함유 원예용 비료 처리에서 각각 43%, 20% 적게 발생되었다. 고추 생육(초장과 줄기직경) 및 건고추 수량은 3요소 표준시비와 NBPT 함유 비료 NF0.5, NF1.0 처리구에서 대등한 경향으로 나타났다. 고추 정식 후 60일 토양화학성 중 질산태질소는 3요소 표준시비에 비해 온실가스 발생량이 적었던 NF0.5 처리구에서 적은 경향이었으며, 유효인산과 치환성칼륨은 NBPT 함유 비료 처리구와 3요소 표준시비 처리구가 대등한 경향이었다. 배추 재배지에서 발생하는 온실 가스 또한 재배기간 중 기상환경에 따라 $N_2O$ 배출양상과 배출량에는 차이가 있었으나 처리별 저감효과는 통계적으로 유의하게 나타났으며, 3요소 표준시비에 비해 질소 표준시비 기비량 0.5배, 1.0배 해당량 NBPT 함유 비료 처리에서 온실가스가 각각 58%, 19% 적게 발생되었다. 배추 정식 후 60일의 토양 중 화학성 변화에서 질산태질소와 전기전도도는 3요소 표준시비에 비해 온실가스 발생량이 적었던 질소 표준시비기비량 0.5배 해당량 NBPT 함유 비료 처리에서 적은 경향이었으며, 유효인산과 치환성칼륨은 NF0.5, NF1.0 처리구에서 적은 경향이었다. 배추 식물체 질소 이용효율은 처리간 유의한 차이가 없었으며, 배추 수량은 3요소 표준시비 7,936 kg/10a와 질소 표준시비 기비량 1.0배 해당량 NBPT 함유 비료 처리에서 대등하게 나타났다. 이와 같이 고추와 배추 재배지에서 요소분해효소 억제제 NBPT 함유 비료를 시용하면 표준시비와 같은 생육상황에서 온실가스 저감효과를 볼 수 있는 것으로 분석되었다.

새우 가열(加熱)중의 아미노산의 변화(變化) 및 향기성분(香氣成分) 생성기구(生成機構)에 관한 연구(硏究) (Changes of Amino Acids and Formation Mechanism of Flavor in Cooked Small Shrimps)

  • 새우 및 크릴류 향기생성(香氣生成)의 전구물질(前驅物質)을 밝히기 위해 유리(遊離)아미산과 전(全)아미노산에 관하여 가열전후(加熱前後)의 조성(組成)을 조사(調査)하였다. 젓새우에 있어서 유리(遊離)아미노산 중 함량(含量)이 현저하게 많은 것은 Pro과 Tau이고 함량(含量)이 적은 것은 Cys, Tyr과 His 등이 된다. 대부분의 유리(遊離)아미노산은 가열처리(加熱處理)에 의해 감소(減少)하였다. 현저하게 감소(減少)하는 것으로는 Thr, Val, Ile, Leu, Lys과 Glu 등이었다. 남극(南極)크릴의 유리(遊離)아미노산 중 함량(含量)이 많은 것은 Gly, Tau, Ala 등이고, 함량(含量)이 적은 것은 Cys, Glu 등이었다. 곤쟁이의 유리(遊離)아미노산 중 함량(含量)이 많은 것은 Gly, Tau, Pro 등이고, 함량(含量)이 적은 것은 Car, Glu 등이었다. 남극(南極)크릴과 곤쟁이에 있어서도 가열전후(加熱前後)의 유리(遊離)아미노산의 현저한 감소(減少)가 있다. 남극(南極)크릴에서는 Thr, Ser, Cys, Leu과 Lys이, 곤쟁이에서는 Lys, His과 Asn 등이 급히 급격하게 감소(減少)하였다. 젓새우 및 크릴류에서 가열(加熱) 중에 감소(減少)된 유리(遊離)아미노산은 amino-carbonyl반응(反應) 등의 화응반응(化應反應)을 일으켜 새우 혹은 크릴류의 가열향기(加熱香氣) 생성(生成)에 크게 기여하리라 생각된다. 또 새우류의 가열향기(加熱香氣) 생성기구(生成機構)를 규명(糾明)하기 위해 새우 중에 있는 저분자(低分子)의 당(糖)과 유리(遊離)아미노산의 가열반응(加熱反應), 즉 amino-carbonyl 반응(反應)을 이용(利用)한 모델계(系)를 설정하여 검토(檢討)한 결과(結果) 모델계(系) 1(Pro+glucose), 모델계(系) 2(Pro+glucose+Tau)와 모델계(系) 3(Pro+glucose+Bet)의 휘발성농축물(揮發性濃縮物)은 새우향기(香氣)가 거의 없고 휘발성성분(揮發性成分)의 대부분은 1,4,5,6-tetrahydro-acetopyridine과 2-acetyl pyridine이었다. 이것들은 Pro 유래의 것이라 생각되며, 이 결과(結果) 새우류에 함량(含量)이 높은 아미노산과 당(糖)을 이용(利用)한 단순계(系)만으로는 새우류의 가열향기(加熱香氣)를 재현하는 것이 어렵고, pH의 영향 등 더욱 복잡한 요인들이 관여하여 특유의 가열향기(加熱香氣)를 생성(生成)하리라 생각된다.
