Coffee Husk By-Product as Novel Ingredients for Cascara Kombucha Production

  • Kombucha, a fermented beverage, is gaining popularity due to its numerous beneficial health effects. Various substrates such as herbs, fruits, flowers, and vegetables, have been used for kombucha fermentation in order to enhance the flavor, aroma, and nutritional composition. This study aims to investigate the potential suitability of cascara as a novel ingredient for kombucha production. Our findings suggested that cascara is a suitable substrate for kombucha production. Fermentation elevated the total phenolic and flavonoid content in cascara, which enhanced the antioxidant, antibacterial, and prebiotic characteristics of the product. Furthermore, the accumulation of acetic acid-induced the pH lowering reached 2.7 after 14 days of fermentation, which achieved the microbiological safety of the product. Moreover, 14 days of fermentation resulted in a balanced amalgamation of acidity, sweetness, and fragrance according to sensory evaluation. Our findings not only highlight the potential of cascara kombucha as a novel substrate for kombucha production but also contribute to repurposing coffee by-products, promoting environmentally friendly and sustainable agricultural development.

Uncovering the Antibacterial Potential of a Peptide-Rich Extract of Edible Bird's Nest against Staphylococcus aureus

  • The diverse pharmacological properties of edible bird's nest (EBN) have been elucidated in recent years; however, investigations into its antibacterial effects are still limited. In the present study, we explored the antibacterial activity of a peptide-rich extract of EBN against Staphylococcus aureus, a notorious pathogen. The EBN extract (EEE) was prepared by soaking EBN in 80% ethanol for 2 days at 60℃. Biochemical analyses showed that peptides at the molecular weight range of 1.7-10 kDa were the major biochemical compounds in the EEE. The extract exhibited strong inhibition against S. aureus at a minimum inhibitory concentration (MIC) of 125 ㎍/ml and a minimum bactericidal concentration (MBC) of 250 ㎍/ml. This activity could be attributed to the impact of the extract on cell membrane integrity and potential, biofilm formation, and reactive oxidative species (ROS) production. Notably, the expression of biofilm- and ROS-associated genes, including intercellular adhesion A (icaA), icaB, icaC, icaD, and superoxide dismutase A (sodA), were deregulated in S. aureus upon the extract treatment. Our findings indicate a noteworthy pharmacological activity of EBN that could have potential application in the control of S. aureus.

  • In this paper, we investigate an initial boundary value problem for a nonlinear pseudoparabolic equation. At first, by applying the Faedo-Galerkin, we prove local existence and uniqueness results. Next, by constructing Lyapunov functional, we establish a sufficient condition to obtain the global existence and exponential decay of weak solutions.

  • We construct new families of smooth Fano fourfolds with Picard rank 1 which contain open 𝔸1-cylinders, that is, Zariski open subsets of the form Z × 𝔸1, where Z is a quasiprojective variety. In particular, we show that every Mukai fourfold of genus 8 is cylindrical and there exists a family of cylindrical Gushel-Mukai fourfolds.

  • Due to the high increment in usage and built-in advanced technology of smartphones, human activity recognition relying on smartphone sensor data has become a focused research area. In order to reduce noise of collected data, most of previous studies assume that smartphones are fixed at certain positions. This strategy is impractical for real life applications. To overcome this issue, we here investigate a framework that allows detecting the status of a traveller as idle or moving regardless the position and the direction of smartphones. The application of our work is to estimate the total energy consumption of a traveller during a trip. A number of experiments have been carried out to show the effectiveness of our framework when travellers are not only walking but also using primitive vehicles like motorbikes.

  • Graphis upretii is a new lichen species discovered in Vietnam. The species is characterized by a loosely corticate, rough, whitish grey to greyish green thallus, elongate and irregularly branched lirellae with an apically thin complete thalline margin (negrosina morph), laterally carbonized, entire proper exciple, clear hymenium, hyaline, 16~20 transversely locular ascospores, and about $50{\sim}95{\times}10{\sim}15{\mu}m$ in size. In addition, members of the taxon produce norstictic and stictic acids. Currently, the lichen flora of Vietnam include Arthonia radiata, Brigantiaea tricolor, Coenogonium implexum, Dirina paradoxa, Herpothallon sipmanii, Pertusaria pertusa, and Sarcographina cyclospora.

Gaussian Decomposition Method in Designing a Freeform Lens for an LED Fishing/Working Lamp

  • In this paper we propose a freeform secondary lens for an LED fishing/working lamp (LFWL). This innovative LED lamp is used to replace the traditional HID fishing lamp, to satisfy the lighting demands of fishing and the on-board activities on fishing boats. To realize the freeform lens's geometry, Gaussian decomposition is involved in our optics-design process for approaching the targeted light intensity distribution curve (LIDC) of the LFWL lens. The simulated results show that the illumination on the deck, on the sea's surface, and underwater shows only small differences between LED fishing/working lamps and HID fishing lamps. Meanwhile, a lighting efficiency of 91% with just one third of the power consumption can be achieved, when the proposed LED fishing/working lamps are used instead of HID fishing lamps.

  • This paper is to clarify on the Characteristics of the Layout of the Hue, the Capital of the Nguyen Dynasty in Vietnam, based on a close study of historical records. The results of this study are as follows: Hue was organized according to the traditional capital system of China, whereas the city wall was built Western-style called Vauban. It can be said that the construction of Hue was the result of reflecting both the regional situation that was under the influence of the Chinese culture and the situation of the time that required military facilities based on new technologies. The Axis of Hue oriented to southeast and the location of the government facilities related to way of construction, using the existing facilities. Some facilities that must be located within the imperial city were built its outside. Because facilities for ancestor worship was more important. The facilities for ancestor worship was able to get confirmation that Nguyen Dynasty was successor of ruler who dominated the country.
