친환경 과일의 구입 행위 분석: 포도와 감귤을 대상으로 (An analysis on the purchase behavior of environment-friendly fruits: grape and mandarin)

  • Even though many Korean consumers have bought environment-friendly fruits, including grapes and mandarins, farmers and suppliers still have little information about how they make a decision for the actual purchase in the real markets. Without the suitable information of purchase behavior of environment-friendly fruits, farmers and suppliers cannot set up the efficient marketing strategy which can create the better agricultural products for Korean consumers. The purpose of this paper is to analyze the consumers' purchase behavior of environment-friendly fruits in Korea. Especially, this study was focused on the grapes and mandarins, through the survey research and the frequency analysis. The results of study in this paper present a few findings useful as follows: First, Korean consumers have the strong concern of environment-friendly agricultural products, including fruits. Second, consumers usually buy environment-friendly fruits by two times per month. Third, consumers generally concern taste, freshness, and food-safety, when they buy environment-friendly grape or mandarin.

곰팡이 생육 및 곰팡이 독소 생산의 억제에 있어서의 유산균의 역할 (The Roles of Lactic Acid Bacteria for Control of Fungal Growth and Mycotoxins)

  • 최근 기후의 급속한 변화에 따라서 식품과 농산물에 Aspergillus, Fusarium 및 Penicillium속에 해당하는 곰팡이에 의한 오염이 빈번하고 이들에 의해 생성되는 aflatoxins, fumonisins, ochratoxins, patulin, trichothecenes, zearalenone등의 곰팡이 독소로 인해서 인간의 건강에 위해를 끼치고 또한 경제적인 손실을 가져오게 하고 있다. 최근 건강에 대한 소비자의 관심으로 인하여 기존에 사용되고 있는 프로피온산 및 소브산과 같은 보존료에 대한 거부감이 증가하고 있어 천연의 소재로부터 이를 대체할 만한 항진균제의 개발이 필요한 상황이다. 본 총설에서는 곰팡이의 생육 및 독소 생성을 제어하기 위한 생물학적 방법으로 유산균의 역할에 대하여 살펴보고자 하였다. 최근의 연구에 의하면 유산균은 저분자 화합물인 유기산, reuterin, 단백질 유래 화합물, 하이드록시 지방산, 페놀 화합물과 같은 다양한 대사산물을 통하여 곰팡이의 생육을 효과적으로 억제시키고 있으며, 또한 유산균의 세포벽 구성성분과의 흡착, 곰팡이 독소의 분해 및 곰팡이 독소의 생산 저해 등을 통하여 곰팡이 독소의 생산을 감소시키고 있는 사실이 제시되고 있다. 유산균은 다양한 종류를 포함하고 있으며 다양한 대사산물을 생산하고 있으므로 이를 바탕으로 효과적으로 곰팡이의 생육 및 독소 생산을 제어할 수 있는 잠재력 갖추고 있으므로, 유산균은 식품에 있어서 곰팡이의 생육을 조절하는 소재로서 주목 받을 것으로 기대된다.

Potential Antioxidant Trace Mineral (Zn, Mn, Cu and Fe) Concentrations Measured by Biochemical Indices in South Koreans

  • The concern of the antioxidant micronutrient status in normal healthy people, including antioxidant trace minerals such as Cu, Zn, Mn, Fe and Se is focused since systemic oxidation is involved in various chronic diseases. In the present study, we evaluated the concentration of trace minerals (Cu, Zn, Mn, and Fe) which are considered as potential antioxidant minerals in plasma, red blood cells (RBCs) and urine in normal healthy Korean subjects. The 760 subjects (male 341, female 419; mean age 54.2 $\pm$ 18.9) were recruited from the rural, urban and metropolitan city in South Korea. Dietary intake was evaluated using 24-hours recall for general major nutrient intake assessment. The trace elements (Cu, Zn, Mn, and Fe) concentrations in plasma, RBCs, and urine were measured by inductively coupled plasma spectrophotometer (ICP) and atomic absorption spectrophotometer (AAS). Cu and Zn levels in plasma, RBCs and urine in normal healthy South Koreans were within the normal range of those mineral levels, but Mn and Fe levels were higher compared to the normal range of those mineral levels. None of the selected trace mineral levels in plasma and RBC's was lower than the normal range value. The results showed that Zn and Cu levels in plasma and RBC's in Korean were within the normal range, and plasma and urinary Mn and Fe levels were higher than the normal reference values. Potential antioxidant trace mineral (Cu, Mn, Zn and Fe) levels in Koreans are within or a bit higher than the normal range.

임신부의 섭식변화에 관한 조사연구 (A Stduy on Dietary Changes during Pregnancy)

  • Interviews of 208 women concerning dietary changes during pregnancy were under-rtaken from September 1986 to January 1987 at the medical centers in Seoul and Kyung Ki. 84% of the total subjects felt the morning sicksnes such as nausea and vomiting within the first trimester of pregnancy. There was a significant correlation between the experience of moring sickness and some environmental factors such as school carreer, food intake in early pregnancy, the number of meals and taking of medicines for promoting nutrition. Foods for which specifie cravings were frequently cited were fruits, meats, cold noodle, noodle and chinese food. Foods of aversions were Kimchi, meats, fish and fatted foods. With regard to beverage, there were the increase in milk and fruint juices consumption and the decrease in coffee ingestion during early pregnancy primarily attributed the concern for feto-maternal health. Possible explanation for these changes associated with pregnancy discussed.

  • In recent year, animal welfare is more and more attracted public concern. Many countries have legislated animal welfare laws especially in EU. Now, it is appearing as an international issue in livestock product trade area because of animal welfare standard differences. The concept of animal welfare is not scientific but Ideological. In relation to consumer quality, animal welfare was defined confidential quality attribute. Therefore it is hard to approach to technical quality characteristic. This article reviewed interrelationships of animal welfare and product quality included in animal welfare as a quality factor, the mechanisms of determined quality influenced by animal welfare, relations of the type of animal welfare and quality profiles, and global perspectives.

서울과 경기지역 주부들의 콩나물에 대한 이용실태와 만족도에 관한 연구 (Consumption Pattern and Satisfaction Degree for Bean Sprout by Housewives Living in Seoul and Kyungki-do Area)

  • The consumption frequency, preference, purchasing behavior and satisfaction degree for bean sprout were surveyed from the housewives living in Seoul and Kyungki-do area. Most of the subjects (84.3%) took bean sprout less than 4 times per 21 meals. Major reasons for the rare consumption were the poor safety, habitual, and long cooking time, in deceasing order. Packed bean sprout was purchased more in Kyungki-do but unpacked was preferred in Seoul. While the major reason for purchasing unpacked bean sprout was the cheap price (57.8%), that for the packed was the safety (82.00). The most unsatisfactory factor for packed bean sprout was the high price, however, unlabelled additives were the primary concern for the unpacked. The satisfaction degree for the quality was higher in packed bean sprout compared with the unpacked. The most unsatisfactory factor for the quality of both packed and unpacked bean sprout was the overall acceptability, followed by texture, taste, and color.

소고기 원산지에 대한 태도와 건강 관심도가 소고기 구입에 미치는 영향 분석 (The Analysis of the Impact of Attitudes and Health Concerns Towards Beef Origin on Beef Purchase)

  • This study examines how consumer attitudes toward food origin and health concerns influence beef purchasing behavior. Using data from the Korea Rural Economic Institute's food consumption behavior survey, we analyzed the frequency of purchasing domestic and imported beef. Results indicate that when not distinguishing between domestic and imported beef, perceptions of lower origin quality and higher health concerns are associated with an increase in purchasing frequency. However, such influences are statistically insignificant for imported beef. Further analysis reveals that for consumers exclusively purchasing domestic beef, these factors do not significantly impact purchasing frequency, while for consumers simultaneously purchasing both domestic and imported beef, these factors do significantly impact purchasing frequency.

북한이탈여성의 자아존중감과 외모관리행동과의 관련성 (The Relationship between Self Esteem and Appearance Management Behavior in North Korean Immigrant Women)

  • 본 연구는 북한이탈 여성의 자아존중감과 외모관리행동의 관련성 및 외모관리행동에 영향을 미치는 요인을 파악하기 위한 연구이며, 2014년 12월부터 2015년 2월까지 북한이탈여성 총 201명의 자료를 분석하였다. 자료는 SPSS 21.0을 이용하여 분석한 결과는 다음과 같다. 첫째, 대상자의 자아존중감은 4점 만점에 2.40점으로 조사되었다. 외모관심도는 5점 만점에 3.20점이며, 외모관리 행동은 5점 만점에 2.67점으로, 대상자들은 메이크업과 의복관리 행동을 많이 하지만 운동, 섭식 행동은 평균보다 낮은 것으로 조사되었다. 둘째, 대상자의 자아존중감과 외모관심도는 연령, 체중조절의도 및 성형관심도에 따른 유의한 차이를 보였으며, 외모관리행동에서는 외모관리 하위 영역별 차이는 있으나, 연령, 성형관심도, 재북시 직업과 유의한 차이를 보였다. 셋째, 대상자의 자아존중감은 외모관심도, 외모관리행동과 연령, 체중조절의도 및 성형관심도와 유의한 상관관계가 있었다. 외모관심도는 외모관리행동, 연령, 체중조절의도 및 성형관심도와의 상관관계를 보였으며, 또한 외모관리행동은 연령, 체중조절의도 및 성형관심도와 유의한 상관관계를 보였다. 넷째, 자아존중감과 외모관심도는 대상자의 외모관리행동을 44.7% 설명하였다. 따라서, 본 연구는 한국사회의 중요한 구성원인 북한이탈여성들의 자아존중감 향상 및 외모관리 프로그램 개발의 기초자료로 활용될 것이라 기대한다.

한국 청소년의 비타민.무기질 보충제 섭취 및 관련 요인에 관한 연구 (Prevalence of vitamin.mineral supplement use and its related factors among Korean adolescents)

  • This study is conducted in order to investigate the prevalence of vitamin mineral (VM) supplement use and its related factors among Korean adolescents. Using a cross-sectional study design, information was obtained by questionnaires from adolescents selected by stratified sampling in large, small and middle-size cities, as well as rural areas of the whole country, followed by convenience sampling. The total number of participants in this study was 1,407 adolescents ($15.2{\pm}1.6$ years) attending middle or high schools, chosen from various cities and rural areas in Korea. The prevalence of VM supplement use was 65.5%, and there was no significant difference between the genders. City dwellers took VM supplements more frequently than those adolescents from rural areas (p < 0.01). The VM supplement users tended to have higher family income, parents' academic background, and socioeconomic status, respectively (p < 0.001). The greater part of VM supplement users replied that they acquired their nutritional information from their parents, relatives and friends, while many nonusers replied that they did it from school classes (p < 0.05). Compared to nonusers, VM supplement users had greater 'self concern about health' (p < 0.05), 'parents' concern about child's health, growth, and nutritional intake' (p < 0.001), and 'parents' concern about child's grade point' (p < 0.01). However, there was no significant difference between users and nonusers when it came to 'self perception of body shape' or 'BMI'. In addition, users significantly had greater nutritional beliefs concerning VM supplements than nonusers (p < 0.001). These results showed that VM supplement use has been common among adolescents in Korea, and supplement use of subjects has been related with various factors. Among them, it was shown that especially parents great influence the use of VM supplements by adolescents. Thus, not only education for adolescents, but also that for parents is needed to help adolescents take VM supplements properly.

Battery-less Pork Freshness Monitoring Based on High-Efficiency RF Energy Harvesting

  • Food safety has emerged as a growing concern for human health in recent times. Consuming contaminated food may lead to serious health problems, and therefore, a system for monitoring food freshness that is both non-detrimental to the quality of food and highly accurate is required to ensure that only high-quality fresh food packages are provided to the customers. This paper proposes a method to monitor and detect food quality using a compact smart sensor tag. The smart tag is composed of three ultra-low-power sensors, which monitor four major indicators of food freshness: temperature, humidity, and the concentrations of ammonia and hydrogen sulfide gases. An RF energy scavenging circuit is integrated into the smart sensor tag to harvest energy from radio waves at a high frequency of 13.56 MHz to supply sufficient power to the tag. Experimental results show that the proposed energy harvester can efficiently obtain energy at a distance of approximately 40 cm from a 4 W reader. In addition, the proposed smart sensor tag can operate without any battery, thereby eliminating the requirement of frequent battery replacement and consequently decreasing the cost. Meanwhile, the freshness of preserved pork is continuously monitored under two conditions--room temperature and refrigerator temperature--both of which are the most common temperatures under which food is generally stored. The food-monitoring experiments are conducted over a period of one week using the proposed battery-less tag. Based on the experimental results, the food assessment is classified into four categories: fresh, normal, low, and spoiled.
