Objectives: The 2003 WHO/FAO technical report described that Korea has largely maintained its traditional high-vegetable diet despite major social and economic changes, and had lower than expected levels of obesity prevalence than other industrialized countries. However, the prevalence of obesity in Korea has recently been rapidly increasing. The aim of this study was to elucidate the determinants of this rapid growth of obesity prevalence in Korea and to compare the results of national nutrition surveys between Korea and Japan. Methods: The trends of the National Health and Nutrition Survey in Korea instituted every 3 years and that in Japan conducted every year were compared. The results of obesity prevalence defined as more than 25 of the Body Mass Index, the percentage of habitual exercisers and the results of the nutritional surveys were examined from 1992 to 2005 in Korea and from 1992 to 2004 in Japan. Results: The prevalence of obesity in males has been gradually increasing in both Korea and Japan since 1992. Though until 1995 the prevalence of obesity in the Korean male population was less than that in Japan, after 1998 Korea surpassed Japan and a markedly increasing trend was observed. In females, the increasing trend of obesity was slower than males in both Korea and Japan. However, the prevalence of obesity was much higher in Korea compared with that in Japan. The percentage of exercisers was much lower in Korea than in Japan. Although, the definition of an exerciser varies with the survey year in Korea and is different from that in Japan, almost 70% of the population was not regularly engaging in moderate or hard intensity exercise in Korea. From 1995, the total energy intake was increased by 9.8% in Korea but it was decreased by 6.9% in Japan. Presently, the energy intake per capita per day in Korea exceeded that in Japan. Remarkable increases in the intake of meat and poultry, vegetable oils and fats, and milk and dairy products were observed in Korea from 1995 to 2005. On the other hand, these values decreased during the same period in Japan. Conclusion: The prevalence of obesity in Korea is increasing and has surpassed that of Japan. The current trends could be attributed to the low prevalence of habitual exercisers, and an increase in energy intake and the proportion of energy intake from fat.
The degradation of herbicide $^{14}C-bifenox$ was studied in soils under anaerobic conditions. $^{14}C-bifenox$ was treated in silty loam and sandy loam soils, respectively at a rate of 2.1 mg/kg, and the soil was incubated under anaerobic conditions at $25^{\circ}C$ for 180 days. The mineralization, solvent extractable and non-extractable residues, degradation products of bifenox were investigated during the experiments. The relative amounts of $^{14}CO_2$ were 1.97 and 0.9% of applied $^{14}C$ in silty loam and sandy loam soils, respectively. The non-extractable residues of sandy loam soil increased dramatically up to 79.12% of applied $^{14}C$, and were higher than those of silt loam soil, suggesting physico-chemical properties and especially organic matter contributed to the difference of $^{14}C$ between two soils. The non-extractable residues were formed mainly humin fraction and increased with time. The major metabolites were nitrofen, 5-(2,4-dichlorophenoxy)-2-Nitrobenzoate, 2,4-dichlorophenoxy aniline and methyl 5-(2,4-dichlorophenoxy) anthranilate by GC/MS analysis. From the results of volatilization, mineralization and degradation of bifenox, bifenox was stable chemically and biologically in soil.
This study was conducted to propose residue limits of organophosphorus pesticides in functional foods produced from peels of citrus fruits. For these, not only reduction factors of pesticides in cooking and processing were estimated, but factors needed in order to produce residue limits were identified and their application method was devised. The results were as follows: (1) reduction factors appeared as 0.09-1.60 by different processings of various foods, (2) residue limits of pesticides on dietary fiber and bioflavonoid products could be computed from maximum residue limit of pesticides on the raw agricultural produce, reduction factors, and the anticipated amount of consumption of the functional foods. (3) residue limits of 18 organophosphorus pesticides were proposed in the range of 0.01-3.0mg/Kg on the dietary fiber product and 0.1-80mg/Kg on the bioflavonoid product from citrus fruit peels.
In this study, the effects of feeding citrus byproducts on nutritional components of Korean native chickens were investigated. Two samples of Korean native chickens were used for this study: T0 (chickens fed with only feed for laying hen until they became 39 weeks old, not with citrus byproducts) and T1 (chickens fed with citrus byproducts). The feed for T1 was the same as T0 for the first 16 weeks, and then was made by adding 4% of citrus byproducts to the feed for T0 between $17{\sim}39$ weeks. The chicken used for the experiment was obtained by chilling them for 2 days after slaughter. There was no significant difference between T0 and T1 regardless of feeding citrus byproducts, in terms of their breast/thigh's calorie, contents of moisture, protein, fat and ash, total structural amino acid, total free amino acid and composition of saturated/unsaturated fatty acids. The breast's cholesterol amount of T0 and T1 were 48.4 mg/100 g and 47.6 mg/100 g, respectively, while that of thigh for T0 and T1 were 75.7 mg/100 g and 72.8 mg/100 g, respectively, which implies that T1 showed lower amount of cholesterol than T0. T1 showed significantly higher amount of phosphorus, potassium, magnesium and vitamin B2 for thigh than T0 (p<0.05).
Natural anti-oxidative compounds have important disease prevention and food preservation properties, in addition to anti-bacterial, anti-inflammation, anti-cancer, and skin whitening effects. High-performance liquid chromatography (HPLC), with an ultra vilolet (UV) detector coupled to a reverse phase C18 column and an online measurement system for 1, 1-diphenyl-2-picryl hydrazyl (DPPH) radicals, was used to search for potent antioxidative compounds in crude extracts. The online HPLC-DPPH assay was then applied to confirm antioxidative compounds in water extracts from Radix of Pueraria lobata, Rhizoma of Zingiber officinale, Fructus of Chaenomeles sinensis, Cortex of Ulmus pumila, and Radix of Astragalus membranaceus. To determine the yields of the extracts, the Brix% of each extract solution was measured using a refractometer. When the relative DPPH radical scavenging ability values of the water extracts were compared with those of a positive control (ascorbic acid), the water extracts of P. lobata, C. sinensis, and U. pumila were 7.77%, 4.71%, and 4.19%, respectively. The results suggest that this method provides a useful assay for rapid measurement of DPPH radical scavenging abilities and conformation of antioxidative compounds in natural products. Moreover, it can reduce the time spent on the separation of active compounds from natural materials, such as medicinal plants, in addition to the use of reagents for separation.

Recently, several researchers have been developing cosmetics from natural ingredients for skin whitening and anti-aging products. The red sea cucumber (RSC), Apostichopus japonicas, is a species of sea cucumber in the family stichopodiae, which is widely distributed in China, Japan, and Korea. To use Red Sea Cucumber as a cosmetic ingredient, its inhibitory effects on melanogenesis and the anti-aging effects of RSC extracts were investigated. First, a tyrosinase activity assay was performed, which showed that RSC inhibited tyrosinase activity at a concentration of $200{\mu}g/ml$. An MTT assay was carried out to evaluate cell toxicity, and the results showed that RSC extract has no cytotoxicity in HaCaT cells. Furthermore, the mRNA expression levels of tyrosinase, tyrosinase related protein 1 (TRP-1), tyrosinase related protein 2 (TRP-2), microphthalmia-associated transcription factor (MITF), and matrix metalloproteinase (MMPs) genes treated with RSC extract in B16F10 and HaCaT cells decreased. Moreover, a wound-healing assay was performed to identify the cell regeneration effect of RSC extracts. Also, a skin turnover effect was confirmed by creating a three-dimensional cell culture with HaCaT and human fibroblasts. Altogether, the results suggested that Red Sea Cucumber may possess a high ability to induce whitening and anti-wrinkle effects as a cosmeceutical ingredient.
The use of synthetic additives for preservation and enhancement of the market quality of food products has been emerging as a societal issue in terms of safety as well as changes in consumption patterns. Various research related to natural additives is being conducted to address these issues. This study examined the antibacterial effects of 79 types of medicinal herbs used as oriental remedies on bacteria isolated from beverages of damaged marketable quality. The antibacterial effects of methanol extracts on 13 Bacillus sp. and three Paenibacillus sp. were evaluated. We found that 43 of the herbal medicines analyzed had antibacterial effects on the isolated bacteria. Of those, eight were selected, and their antibacterial effects were further examined using water, ethanol, methanol, and ethyl acetate as solvents. The results revealed that Prunus mume, Rhus javanica, and Coptis japonica had excellent antibacterial effects against the isolated bacteria. In particular, they exerted greater antibacterial effects when water and ethanol were used as solvents. This result indicates the possibility of developing natural additives using these substances. Since P. mume in particular, has not been sufficiently studied compared to other herbal medicines, it presents an opportunity for additional investigation and the possibility for development as a new product in the future.

The objectives of this study were to develop models to predict quality parameters of Korean bee-honeys by visible and NIR spectroscopic technique. Two kinds of bee-honey fronl acacia and polyflower sources were tested in this study. The honeys were harvested in the spring of 2000 and stored in the storage facility at 20$^{\circ}C$ during experiments. Total of 394 samples of honey were analyzed. Reflectance spectra, moisture contents, ash, invert sugar, sucrose, F/G (fructose/glucose) ratio, HMF (hydroxymethyl furfural), and C12/C13 ratio of honeys were measured. The average values for the tested honeys were 19.9% of moisture contents, 0.12% of ash, 68.4% of invert sugar, 5.7% of sucrose, 1.27 of F/G(fructose/glucose) ratio, 14.4 mg/kg of HMF, and -19.1 of C12/C13 ratio. A spectrophotometer, equipped with a single-beam scanning monochromator (NIR Systems, Model 6500, USA) and a horizontal setup module, was used to collect reflectance data from honey. The reflectance spectra were measured in wavelength ranges of 400∼2,498 nm. with 2 nm of interval. Thirty-two repetitive scans were averaged, transformed to log(1/Reflectance), and then were stored in a microcomputer file, forming one spectrum per measurement. A sample cell and reflectance plate were made to hold honey samples constantly. Spectra of honey samples were divided into a calibration set and a validation set. The calibration set was used during model development, and the validation set was used to predict quality parameters from unknown spectra. The PLS(Partial Least Square) models were developed to predict the quality parameters of honeys. The first and the second derivatives of raw spectra were also used to develop the models with proper smoothing gap. The MSC (multiplicative scatter correction) and the SNV & Dtr.(standard normal variate and detranding) preprocessing were applied to all spectra to minimize sample-to-sample light scatter differences. The PLS models showed good relationships between predicted and measured quality parameters of honeys in the wavelength range of 1100∼2200 nm. However, the PLS analysis was not good enough to predict HMF of honeys.

While periodic marketing systems have lasted for more than hundreds of years in Korea, the weekly (periodic) markets have emerged since the latter half of the 1990s in the densely populated urban areas. In Jinju, weekly markets are opened on eight densely populated area: Ehyeon Wellga Apt.(Monday market), Gumsan Apt.(Tuesday market), Juyak Hanbo Apt.(Wednesday market), Chojeon Apt.(Thursday market), Manggyeong Hanbo Apt.(Thursday market), Pyeonggeo Dulmalhanbo Apt.(Friday market), Gajoa Jugonggreenville Apt.(Saturday market), and Gaho Apt.(Saturday). The merchants of Jinju's weekly markets can be classified into three groups as follows: the migrating specialized(full-time) merchants, who sell fruits, fish, and other daily necessities: the farmer part-time women merchants in the sixties or in the seventies, who sell the agricultural products that they themselves have grown around the rural areas; and the vendor merchants, who sell mostly dduk-bok-ki, eo-mug(odeng), and other fast food. The origin and persistence of periodic markets are explained in terms of the concepts of central place theory, the economic/comparative advantage of periodic markets, and the traditional organization of time and inertia.

Chlorsulfuron, an acetolactate-synthase-inhibiting sulfonylurea herbicide, induces many metabolic and physiological changes in susceptible plants. The objective of this study was to determine to what extent chlorsulfuton-induced phytotoxicity was due to a shortage of final products(the branched-chain amino acids valine, leucine, and isoleucine) or to an accumulation of a toxic metabolite(2-ketobutyrate), or both, in a susceptible species. Chlorsulfuron-treated canola seedlings showed growth inhibition and injury symptoms that included chlorosis, downward leaf rolling, and accumulation of anthocyanins. Supplementation with valine, leucine, and isoleucine prevented the chlorsulfuron-induced growth inhibition and injury symptoms only partially, suggesting that factor(s) other than a shortage of the branched-chain amino acids also are involved in the phytotoxicity. Canola seedlings treated with 2-ketobutyrate showed reduced growth, but they showed different changes in metabolites than seedlings treated with chlorsulfuron. The results suggest that 2-ketobutyrate is not involved in chlorsulfuron-induced phytotoxicity. We conclude that chlorsulfuron-induced phytotoxicity is due at least in part to a shortage of branched-chain amino acids.
