Usability of a smartphone food picture app for assisting 24-hour dietary recall: a pilot study

  • BACKGROUND/OBJECTIVES: The Recaller app was developed to help individuals record their food intakes. This pilot study evaluated the usability of this new food picture application (app), which operates on a smartphone with an embedded camera and Internet capability. SUBJECTS/METHODS: Adults aged 19 to 28 years (23 males and 22 females) were assigned to use the Recaller app on six designated, nonconsecutive days in order to capture an image of each meal and snack before and after eating. The images were automatically time-stamped and uploaded by the app to the Recaller website. A trained nutritionist administered a 24-hour dietary recall interview 1 day after food images were taken. Participants' opinions of the Recaller app and its usability were determined by a follow-up survey. As an evaluation indicator of usability, the number of images taken was analyzed and multivariate Poisson regression used to model the factors determining the number of images sent. RESULTS: A total of 3,315 food images were uploaded throughout the study period. The median number of images taken per day was nine for males and 13 for females. The survey showed that the Recaller app was easy to use, and 50% of the participants would consider using the app daily. Predictors of a higher number of images were as follows: greater interval (hours) between the first and last food images sent, weekend, and female. CONCLUSIONS: The results of this pilot study provide valuable information for understanding the usability of the Recaller smartphone food picture app as well as other similarly designed apps. This study provides a model for assisting nutrition educators in their collection of food intake information by using tools available on smartphones. This innovative approach has the potential to improve recall of foods eaten and monitoring of dietary intake in nutritional studies.

여대생 및 젊은 여성층을 위한 영양교육 웹사이트 개발 (Development of a Website-Based Nutrition Education Program for Female College Students and Young Women)

  • This study was designed to develop a website for providing nutrition information and education for college women and young women. The website focuses on two topics ; general nutrition and desirable weight control. This program is located at http : // www.ezydiet.co.kr. This program is composed of 5 major sections. The first two sections were designed to provide information ; one for general nutrition, and the other for providing information regarding weight control. The first section includes information regarding young adult women's diet, nutrition standards, such as the RDA or Korean Food Pyramid, drinking and smoking. The second section coveres information regarding desirable control, foods with high or low calories, eating disorders and popularly used dieting methods. The third section is for simple nutrition assessment, consisting of assessment of ideal body weight and obesity, energy requirements, and eating habits. The fourth section was designed to introduce and help users to apply behavioral modification techniques, such as monitoring, goal setting, stimulus control and reinforcement. The final section was designed for meal planning, by introducing a food exchange list and menu examples for one week. The characteristics of this web-based program are as follows ; 1) provide nutrition information systematically, 2) involve sections for the participation of the user, 3) include food pictures to help understanding of nutrition information, 4) include management modules for some sections to revise or update the information. One-hundred and ten female university students participated in the evaluation of this website. The evaluation results were favorable. About 90% of subjects rated that this program covers major topics 'well ' or 'very well', and that it was 'easy'to 'very easy'to understand the contents on website. Two-thirds of subjects rated quite positively on questions regarding attractiveness, overall quality and technical quality of website. In addition, about three-fourths of subjects answered that this website was helpful in increasing nutrition knowledge and in applying nutrition information into daily life. These results suggested the possibility of using a website as a means of providing nutrition information and education for young adult women.

초등학교 저학년을 위한 실천중심의 식생활 교재 및 교사용 지침서 개발 (Development of Practical Dietary Education Textbook and Teaching Manual in Elementary School Students)

  • This study was conducted for researching demand on dietary education of low-level elementary school students and to develop an activity based textbook and a teaching manual on the subject. For necessity of dietary education, 88.8% of subjects answered dietary education is needed. The desirable frequency of the education was once a week (65.7%). The most appropriate time for the education was "school lunch" (37.5%), "special activity" (29.9%), "regular class" (12.4%) and "after school activity" (12.1%). The most preferred educational method was "experiment and practice" (40.1%). The desirable educational materials were "computer materials" (20.7%), "actual objects" (20.1%), "videotapes" (16.5%), "photographs-pictures" (12.2%) and "fairy tales-cartoons" (12.2%). The students wanted dietary information as "cooking" (26.1%), "growth and nutrition" (23.7%) and "right food information" (20.1%). The textbook was composed of five major chapters, which were "Traditional Dietary Culture", "Food", "Dietary Habit", "Hygiene and Environment" and "Cooking". Each major chapter had five to six smaller chapters, adding up to total of 32 chapters. The textbook had fun characters, illustrations, photographs and cartoons to deliver the main theme of each chapter. The textbook was in activity format so that it coul be readily and directly used in actual classes. The teaching manual was composed of background, goals, teaching plans and teaching points. The smaller chapters had learning goals, teaching-learning resources, important points, teaching-learning processes and reference materials. Videos were produced to help cook five snacks in the cooking chapter. Also, "Healthy Song" was created to be used in classrooms. This textbook will be helpful in children's right dietary habits and growth.

어린이의 비만 예방과 관리를 위한 영양교육 웹사이트 개발 및 평가 (Development and Evaluation of a Nutrition Education Website for the Prevention and Management of Childhood Obesity)

  • Childhood obesity has rapidly increased worldwide and is one of the most serious health problems in this age group. In order to prevent and manage childhood obesity, we developed a nutrition education website. The website consisted of three parts. The first part was made for self-assessment with regard to obesity index, dietary habits, food frequency, dietary attitude, nutrition knowledge, nutrient intake, energy expenditure, and the stage of behavioral change, and tailored messages and advice according to the assessment results. A total of 612 real-size food photos as well as a nutrient database of 3,346 foods and 541 dishes were created to help children estimate nutrient intakes accurately. In addition, an energy expenditure database of 156 activities for children was established to calculate calorie consumption. The second part was made for setting long-term and short-term goals and keeping track of the changes in energy intake and expenditure in one's own page. The third part was made for education. Various types of nutrition information were provided; texts, pictures, calculators and games. The readability and design of the website were evaluated by 46 obese children. Usefulness, design and readability of the website were found to be desirable for children. This website is expected to be used by an obese child alone or with parents or nutrition teachers in order to control body weight through healthy dietary habits and physical activities. In addition, a non-obese child can also use this website for maintaining healthy dietary habits and preventing obesity.

포크(Foulk)의 일기에 기록된 전라감영의 접대문화 (Hospitality Culture of Jeollagamyoung Recorded in Foulk's Diary)

  • 본 연구는 1884년 11월 10일, 12시 10분에 전주에 도착하여 2박 3일간 머문 죠지 클레이턴 포크의 일기를 바탕으로 하였다. 머무는 동안 감사로부터 대접받은 음식, 술, 연회, 선물 등으로 당시 전라감영의 문화를 알 수 있었다. 특히 포크는 기록으로 부족한 내용을 그림으로 그리고 설명을 더했는데, 11월 11일 아침 10시에 전라감사로부터 특별히 대접받은 아침밥상의 반배도를 그려두었다. 이는 음식과 관련된 고문헌이 전무한 전주에서는 조선시대의 음식문화를 알 수 있는 최고(最古)이자 최초(最初)의 자료로 매우 가치가 있다. 또한 본 연구는 다른 학자들이 발표한 포크 일기와 관련된 연구에서 오류를 바로 잡고자 하였다. 따라서 포크의 일기를 당시 조선을 다녀간 많은 외국인들의 기록을 바탕으로 재해석하였으며, 다른 연구 분야와 통섭하여 전라감영 전체의 접대 문화를 살펴보았다. 이는 135년 전 외국인의 눈에 비친 전라감영의 문화를 객관적으로 이해하는 데 큰 의미를 둔 연구결과다.

2015 개정 중학교 기술·가정 교과서 '식생활 단원'의 식품안전 내용 분석 (Analysis of Food Safety Content in 'Food and Nutrition' Units of Technology and Home Economics Textbooks of the 2015 Revised Curriculum)

  • 본 연구는 2015 개정 교육과정에서 '안전'이 핵심 개념으로 등장함에 따라 기술·가정2 교과서 12종의 '가정생활과 안전' 단원의 식생활 영역의 안전 내용을 분석하였다. 분석 대상은 교육부 고시 제2015-74호 '실과(기술·가정)/정보과 교육과정을 준거로 하여 '식품 선택의 중요성', '식품의 안전한 보관과 관리', '위생과 안전을 고려한 조리', '식품안전 위해요인'을 내용 요소로 선정하였고, 본문과 구성 체제 요소, 활동 과제를 분석하였다. 그 결과, 본문에서는 '식품선택의 중요성'(3.08쪽), '식품안전 위해요인'(2.96쪽), '식품의 안전한 보관과 관리'(2.63쪽), '안전을 고려한 조리'(0.98쪽) 순으로 내용의 비중이 높았으며, 구성 체제 요소의 비율은 상이하였지만, 표·그림·사진으로 반영된 경우가 가장 많았고, 학습자료, 활동, 보조단, 중단원 정리, 중단원 도입 및 익힘 문제, 소단원 도입 순이었다. 활동과제에서는 '식품 선택의 중요성'를 가장 많이 다루었고, '식품의 안전한 보관과 관리'를 두번째로, 이후 '위생과 안전을 고려한 조리', '식품안전 위해요인' 순으로 많이 다루었으며, 집단 규모별 활동과제의 수는 개별 활동이 가장 많았고, 기능에 따라서는 조사하기, 평가하기, 제작하기, 적용하기, 실천하기, 추론하기와 판단하기, 활용하기와 제안하기 순으로 나타났다. 2015 개정 기술·가정 교과서 12종을 분석한 결과, 추후 교과서 개발 시 본문과 구성 체제요소에서 내용의 적절한 배분과 실제 현황을 반영한 교육 내용의 갱신, 집단 규모의 활동 과제를 증가시키는 것이 필요할 것으로 보인다.

  • 본 연구는 제7차 교육과정에 의한 중학교 1학년 기술 $\cdot$ 가정과 $\ulcorner$청소년의 영양과 식사$\lrcorner$단원의 학습 효과를 높일 수 있는 웹 기반 실천적 문제 해결 학습을 위한 교수 $\cdot$학습 과정안을 개발하였다. 식생활 영역 관련 선행연구를 고찰한 후, 영양, 식품자원, 식품 선택의 3개의 영역에서 비만 음식쓰레기. 가공식품. 유전자조작식품. 수입식품의 5개 학습 주제를 선정하여 교수 $\cdot$ 학습 과정안과 학습 자료를 개발하였다. 웹 기반 실천적 문제 해결 학습을 위한 교수 $\cdot$ 학습 과정안은 문제인식. 정보수집 및 평가, 대안 및 최선의 행동 선택, 행동하기, 그리고 행동평가의 5단계로 구성되었다. 그리고 효과적인 수업을 위한 보조 학습자료로 개별 학습지, 협동학습지, 비만도 검사, 애니메이션, 관련 사진자료, 모듈을 개발하여 함께 제공하였다. 본 연구에서 개발한 교수 $\cdot$학습 과정안은 현장 수업에서 직접 활용이 가능하여 가정과 교사들에게 도움이 될 것으로 기대된다.

가상현실 기반 인지재활 콘텐츠를 위한 영상 인식 및 군집화 (Image Recognition and Clustering for Virtual Reality based on Cognitive Rehabilitation Contents)

  • 4차 산업혁명과 초고령 시대로 인해, 가상현실을 의료 분야에 적용하려는 많은 연구가 진행되고 있다. 특히 치매에 대한 논의가 활발히 이루어지고 있다. 본 논문은 치매로 인해 발생하는 인지 및 신체 장애를 개선하기 위해 영상 인식 및 군집화 방법을 사용한 가상현실 인지재활 콘텐츠를 제안한다. 기존 인지재활 시스템과는 달리 본 논문에서는 치료 대상자의 추억이 반영되어 있는 여행사진을 사용한다. 자동화된 인지재활 콘텐츠 생성을 위해 사진으로부터 인물정보, 음식사진 여부, 장소 정보, 시간 정보를 추출하고, 군집화를 위해 정규화가 수행된다. 그리고 가상현실 공간에서 여행 사진을 활용해 인지재활 및 신체재활을 강화할 수 있는 시나리오를 제시한다.

소시호탕(小柴胡湯)으로 호전을 보인 소화기계 문제를 동반한 아토피피부염의 치험 2례 (Two cases of Atopic Dermatitis with Gastrointestinal Disorders treated with Soshiho-tang)

  • Objectives : The purpose of this study is to report the effectiveness of Soshiho-tang on the patients who suffered from atopic dermatitis with gastrointestinal disorders.Methods : We diagnosed the symptoms and the signs of the patients who suffered from atopic dermatitis with gastrointestinal disorders as Soshiho-tang syndrome(嘔而發熱) according to 'Treatise on Cold Damage Disease(傷寒論)'. Patients are treated only with Soshiho-tang. The severity of Atopic dermatitis was evaluated by SCORAD index, visual analogue scale(VAS) and pictures. Gastrointestinal disorders(mainly food allergy, indigestion) were evaluated by patients' subjective complaint.Results : After the treatment, not only the severity of atopic dermatitis but gastrointestinal disorders were also improved.Conclusions : Soshiho-tang has improved the symptoms of Atopic dermatitis with gastrointestinal disorders in this study.

카메라 모듈과 드론을 이용한 면적 자동 측정 프로그램 개발 (Development of a Pixel-based Area Measurement Program Using Drone and Camera Module)

  • As the drone industry has grown greatly in recent years, drones are being used or developed in many industrial fields such as image shooting, pesticide application, delivery service, food delivery etc. In this paper, therefore, we developed a program that takes a user's desired area at a certain height using a camera-equipped drone and obtains the area of the zone the user wants through image processing. The first user selects an area or a path. Afterwards, the drone flies and takes pictures, and then measures the user's needs. A digital image taken at a constant height and with the same resolution is composed of pixels, the area can be calculated easily if we know the number of pixels in the zone the user wants. Particularly, it is easy to calculate the area of various shaped zones, not terrain shapes such as triangles and squares. In addition, the total area of specific places of the entire zone can be calculated. With the program of this paper, anyone can easily calculate the area of the place the user wants using a drone rather than calculating the area through difficult formulas or specialized equipment.
