  • This study investigated the correlations of five constructs - health concerns, healthy eating practices and attitudes, food choice motives, attitudes toward organic foods - in the formation of behavioral to the purchasing intentions of organic foods. An instrument encompassing health perception, attitudes, habits and personal traits was developed through the comprehensive reviews of the literature and the assured validity and internal reliability of the contents. The questionnaire was administered to the students of three universities at Daegu, Kyungpook province. A total of 288 questionnaires were collected for a response rate of 96.0%. The correlations of five constructs and purchasing intention were tested simultaneously using structural equation modeling. Healthy eating practices and attitudes toward organic foods were found to be the determinants which directly influence the intention to purchase organic foods. Health concerns didn't show direct relation to the purchasing intention of organic foods. The hypothesized path from the health concerns to the purchasing intentions was not supported. The results indicated that food choice motives and healthy eating attitudes should be managed to achieve higher behavioral intention to purchase organic foods.

  • This study investigated the effects of mothers' nutritional attitudes and knowledge on their children's obesity inducing factors: eating habits, food preferences, food frequencies, and physical activities. The subjects were 774 mothers and their elementary school children (774) in Busan. About thirty percent of the children had a tendency toward obesity as a result of their eating habits, food preferences, food frequencies, and physical activities, but their mothers' nutritional attitudes and knowledge had little affect on their children's obesity inducing factors. Though the children were interested in their body weight changes, they chose not to practice appropriate eating habits. Thus, education about good eating habits and appropriate physical activities should be promoted for children's health and growth. Because the mothers' nutritional attitudes and knowledge had little affect on their children in this study, nutrition education in school needs to be enhanced. However, because mothers play many roles in their children's habit and health, they also need to be educated in order that their nutritional attitudes and knowledge help their children's health and growth directly. And school and home should be more closely connected.

  • A cross-sectional survey was used to investigate the rates of overweight and obesity (BMI$\geq$25), and eating attitudes among college students. Data were collected at a large southeastern university. Adolescents (ages 18-25) self-reported weight and height (to calculate BMI), and, in addition to demographic information, completed the eating attitudes (EAT 26) scale to assess dieting tendencies. Significance of the mean BMI differences between gender and ethnic background were assessed by one-way analysis of variance (one-way ANOVA). Chi-square was used to determine whether the rate of those with BMI$\geq$25 between gender and ethnic background was statistically significant. While 52.7% of the students' BMI were within the normal weight category, 15.2% were underweight, 21.3% were overweight, and 10.8% were obese. The rate of BMI$\geq$25 differed by gender and ethnicity, with males and African Americans having higher rates. About 12 % of the participants reported disturbed eating behavior, which is lower than previously reported. Even so, results support the generally held belief that disturbed eating attitudes and unhealthy dieting are common among college students, especially among females. At the same time, disturbed eating attitudes are not just the domain of young female students; about 10% of college males reported disturbed eating attitudes. Findings of this study call for obesity prevention/intervention and lifestyle modification outreach programs among college students. Weight status and unhealthy eating behaviors of college. students should be a concern to health care professionals. While obese young adults will likely remain obese throughout their adult life, excessive dieting among students, which is linked to eating disorders and other health hazards, does not provide healthy and adequate alternatives for maintaining a normal BMI. Implications for obesity prevention programs are discussed.

  • This study was designed to develop, implement and evaluate a nutrition education program for elementary school children. Subjects consisted of 47 children in the 6th grade in Seoul, Korea. They received five sessions of nutrition education from June to July, 1999. Topics for nutrition education included function of nutrients, food sources of nutrients, balanced diet, meal planning, and adequate energy intake. Each session lasted 40 minutes. To evaluate program effectiveness, one group pretest-posttest design was used. Subjects were given a pretest and a posttest on nutrition knowledge, eating attitudes, eating behavior, and dietary intake. All data were statistically analyzed mainly using the paired t-test and $\chi$$^2$-test. There was a significant difference between pretest and posttest score on nutrition knowledge(p<0.001), subscales of nutrition knowledge including food sources of nutrients, function of nutrients, and balanced diet(p<0.001). These changes in nutrition knowledge were also shown both in boys(p<0.001) and in girls(p<0.001). Eating attitudes, subscales of eating attitudes, and eating behavior were not significantly changed after nutrition education, although some changes were observed in these variables. Dietary intakes were not significantly were not significantly changed after nutrition education for all subjects ; however, different patterns in dietary intakes were observed when examined by sex. There was an increase in nutrient intakes among boys, while there was a significant decrease in nutrient intakes among girls after program implementation. Especially, it was noted that girls had diets deficient in iron, calcium, and vitamin A, even after nutrition education. It was concluded that a five-week nutrition education program can improve nutrition knowledge or some dietary intake, but this might not be enough to induce changes in food attitudes, eating behavior or dietary intakes. It might be necessary to incorporate diverse approaches, targeting sub-groups of children, and follow-up in nutrition education for elementary school children. • This study was designed to examine weight control, nutritional knowledge, dietary attitudes and eating behaviors of 370 high school girls and to investigate if there were differences in these variables by weight control status. The weight control attempters (65.1%) had significantly higher body weight and BMI (p<0.001). The difference between desired and current body weight was -9.1 kg in the attempters, showing a significantly higher difference than the counterparts (p<0.001). The attempters also showed more interest toward weight control (p<0.001), but were less satisfied with their body size (p<0.001). Most of subjects (88.1%), especially in the attempters (96.7%) responded that they would try to control their weights in the future. The regular exerciser was 22.9% in the attempters while the percentage of the counterparts was 11.9% (p<0.05). The use of internet or television watching was not significantly different by weight control status. Subjects scored 15.8 out of 20 on a nutritional knowledge scale, which showed a moderate level of knowledge. The nutritional knowledge score was 15.7 for the attempters and 15.8 for the counterparts. None of the nutritional knowledge items reached statistical significance, although the percentages of correct answers regarding weight control or balanced meals were slightly lower in the attempters. The attempters showed more favorable eating attitudes than the counterparts (p<0.001), especially in the attitudes of applying nutritional knowledge to daily life (p<0.01), attitudes for modifying diets (p<0.01) and importance of having adequate meals (p<0.01). The eating behavior was moderate, with mean scores of 31.1 (possible score: 15 - 45). Subjects showed problems in eating a variety of foods, eating meals regularly, eating slowly, eating breakfast and consumption of some food groups (e.g., dairy foods, fruits). The attempters consumed seaweeds more frequently than the counterparts (p<0.05). Although there were not many significant differences by weight control status, this study suggested that nutrition education for adolescent girls should be planned to provide nutrition information regarding desirable weight control as well as modifying diets and eating behaviors.

  • This study analyzed the survey results of 302 college students from a coed university in Korea. The following three research components were examined: relationships among different eating styles, violation behaviors after unwanted eating, and consumption behaviors for three different food types. The analysis results showed that restrained eating was positively related to emotional eating, but negatively related to external eating. And emotional and external eating displayed a positive relationship. Body shape dissatisfaction was a significant variable in explaining restrained eating behavior. After unwanted eating, the restrained eaters expressed more regrets and stronger determination to diet than the less restrained eaters. The emotional eaters and external eaters responded that they could not stop eating and performed binge eating behaviors when they failed their diet. With regard to food attitudes and eating styles, snacks were favorably related to emotional eating. Fast food attitudes were negatively associated with restrained eating. Preference was the only significant variable in explaining snack consumption frequency; however sex, preference, and restrained eating were significant for fast foods. Finally, vegetarian foods were explained by preference and sex.
