Sensory Characteristics and Consumer Acceptance of Frozen Cooked Rice by a Rapid Freezing Process Compared to Homemade and Aseptic Packaged Cooked Rice

  • Descriptive analysis and consumer acceptance tests were conducted with frozen (FCR), homemade (HCR), and aseptic-packaged (ACR) cooked rice products from two cultivars-IM and SD. FCR was prepared using a rapid freezing process, which may provide consumers with a quality similar to that of HCR. The intensity of the flavors of roasted, glutinous rice, rice cake, and rice starch and the textures of glutinousness, moistness, chunkiness, adhesiveness, and squishiness were all greater in the FCR as compared to the HCR and ACR (p<0.05) in IM and SD cultivars. The differences in sensory characteristics between the FCR and ACR were larger than the equivalent differences between the FCR and HCR. Overall consumer acceptance ratings for FCR in overall aspect, appearance, aroma, and texture were not significantly different compared to those for HCR (p>0.05); however, in most cases these factors showed significant differences when compared with ACR (p<0.05). From partial least square regression analysis, cooked rice was positively related to sweet, transparency, glossiness, roasted, glutinousness, chunkiness, moistness, glutinous rice, adhesiveness, rice shape, rice starch, and squishiness attributes but negatively related to raw rice, old rice, old rice aroma, a particle feeling, off-aroma, white color, scatteredness, slickness, size of cooked rice, and firmness attributes.

Optimization and Quality Characteristics of Balsamic Vinegar Jelly with Various Gelling Agents (겔화제를 달리한 발사믹 식초 젤리의 품질 특성)

  • The purpose of this study was to examine the optimization and quality characteristics of balsamic vinegar jelly by the addition of various gelling agents: agar, gelatin, arrowroot starch, potato starch. For this purpose, mechanical tests(moisture content, color value, pH, sugar content, texture) and sensory tests(quantitative descriptive analysis & acceptance test) were conducted, showing the following results. The moisture content of balsamic jelly was the highest in the gelatin addition group, the color intensity of the L value in the potato starch addition group, redness a value in the gelatin addition group, and the b value(yellowness) in the agar addition group. The pH of balsamic jelly was the highest values in the gelatin addition group while its sugar content was the highest values in the arrowroot starch addition group. As a result of measuring balsamic jelly texture, there were significant differences in hardness, chewiness and gumminess by gelling agents. In the quantitative descriptive analysis of sensory test, the gelatin addition group showed the most high level in purple color intensity, glossiness, transparency, and chewiness. As for the acceptance in the sensory test, the gelatin addition group showed the most high level in appearance, taste, texture, and overall acceptance, which also had a significant difference. In case of balsamic flavor, Arr added arrowroot starch showed the highest values, which also had a significant difference. The result of this study showed that the gelatin addition group made a positive acceptance and improvement of sensory and machinery quality characteristics.

Acceptance Testing and Commissioning of Robotic Intensity-Modulated Radiation Therapy M6 System Equipped with InCiseTM2 Multileaf Collimator

  • This work reports the acceptance testing and commissioning experience of the Robotic Intensity-Modulated Radiation Therapy (IMRT) M6 system with a newly released $InCise^{TM}2$ Multileaf Collimator (MLC) installed at the Yonsei Cancer Center. Acceptance testing included a mechanical interdigitation test, leaf positional accuracy, leakage check, and End-to-End (E2E) tests. Beam data measurements included tissue-phantom ratios (TPRs), off-center ratios (OCRs), output factors collected at 11 field sizes (the smallest field size was $7.6mm{\times}7.7mm$ and largest field size was $115.0mm{\times}100.1mm$ at 800 mm source-to-axis distance), and open beam profiles. The beam model was verified by checking patient-specific quality assurance (QA) in four fiducial-inserted phantoms, using 10 intracranial and extracranial patient plans. All measurements for acceptance testing satisfied manufacturing specifications. Mean leaf position offsets using the Garden Fence test were found to be $0.01{\pm}0.06mm$ and $0.07{\pm}0.05mm$ for X1 and X2 leaf banks, respectively. Maximum and average leaf leakages were 0.20% and 0.18%, respectively. E2E tests for five tracking modes showed 0.26 mm (6D Skull), 0.3 mm (Fiducial), 0.26 mm (Xsight Spine), 0.62 mm (Xsight Lung), and 0.6 mm (Synchrony). TPRs, OCRs, output factors, and open beams measured under various conditions agreed with composite data provided from the manufacturer to within 2%. Patient-specific QA results were evaluated in two ways. Point dose measurements with an ion chamber were all within the 5% absolute-dose agreement, and relative-dose measurements using an array ion chamber detector all satisfied the 3%/3 mm gamma criterion for more than 90% of the measurement points. The Robotic IMRT M6 system equipped with the $InCise^{TM}2$ MLC was proven to be accurate and reliable.

A Study on Patients' Satisfaction and Service Utilization in the DRG Based Payment System - Patients who Experienced Cesarean Section Before and After the Demonstration Program - (DRG 지불제도에서 환자의 의료서비스 만족도와 제공량에 관한 연구 - 시범사업 전.후 제왕절개 분만 경험 산모를 대상으로 -)

  • Background : The objectives of this study were to examine patients' satisfaction with the DRG based payment method and its association with their awareness of the method, to examine patient reported changes in doctors' caring attitude, level of their out-of-pocket payments, providers' acceptance of patients' request for additional services after the program, and to examine changes in service utilization recorded in medical records. Method : One hundred-four patients who had cesarean sections before and after the demonstration program at two hospitals located in Seoul participated in the study. Patients were surveyed before discharges when their charges were finalized. Their medical records were reviewed as well to collect data for service utilization during hospital stays. The association between patients' satisfaction with the payment method and their awareness of the method was analyzed by ${\chi}^2$-test, and the significance of changes in providers' acceptance of patients' request for additional services and service utilization after the program were examined by ${\chi}^2$-test and t-test, respectively. Results : A large proportion of patients did not know of the DRG based payment method at the time of survey and a significantly larger proportion of patients who came to the hospitals with the knowledge satisfied with the method. About the same proportion of patients reported improvement and deterioration in doctors' caring attitude compare to the previous hospitalizations and a similar result was found concerning out-of-pocket payments. Providers' acceptance of patients' request for medication, PCA and painless delivery decreased significantly after the program whereas the acceptance for additional hospital days and laboratory and radiology tests did not. Length of stay, the numbers of days on antibiotics and antianemic medication, and the number of blood tests decreased significantly after the program, however, decreases in the rate of antianemic medication and the number of urine analyses were not statistically significant. Re-operation, in-hospital death, and complications were not observed before and after the program. Conclusion : The study findings indicated a need for better patient education and publicity about the newly introduced payment method to improve their satisfaction with the system. Other study findings concerning service utilization and quality of care indicators were consistent with the government funded evaluation studies.

Run related probability function and their application to start-up demonstration tests

  • A start-up demonstration test is a mechanism that is usually used to determine the reliability of equipment, for example water pumps, car batteries and power generators. The simplest and oldest start-up demonstration tests are called CS (consecutive successes) which have been studied by Hahn and Gage (1983), Viveros and Balakrishnan (1993).At first Hahn and Gage (1983) discussed the start-up demonstration test. I was based on i.i.d (independently and identically distributed) binary outcomes with the specified number of consecutive successful start-ups. Oh (2016) studied CSNCF (consecutive successful, but not consecutive failures). In this paper, we investigated the CS and CSNCF models, also their applications to start-up demonstration tests. The numerical results showed that the expectations and variances of the total number of attempted start-ups until the acceptance of the unit are gradually increasing in all of the specified number of successes as the p (probability of a successful start-up in an single trial) decreases from 0.99 to 0.90. The difference between means of the CS mode and CSNCF model is small, but variances of the CS and CSNCF are big.

Static Fatigue Analysis of Welding Bogie Frame Under Variable Amplitude Loading (변동하중하에 용접대차프레임의 정적 피로해석)

  • Recently, the design process for a railway bogie frame in Europe has been carried out according to the norm EN 13749. The activities in the norm EN shall demonstrate that the design of the bogie frame fulfills the acceptances of 4 steps of the program such as structural calculation, static tests, fatigue test and on-tracks tests. At the end of the acceptance program, the on-tracks tests have the aim to measure the real stress history generated in operation and to verify that they are reasonably next to those calculated and measured on the test rig. Therefore, in order to assure the safety of the railway vehicle, it is important to examined the durability of that under load histories measured from on-tracks tests. In this study, under variable amplitude loading based on the actual acceleration history, fatigue analysis of the welding bogie frame is investigated by using durability software. Moreover, the fatigue life of the frame under the loading in the norm EN fatigue test condition is evaluated and compared with the life under variable amplitude loading.

  • Non-destructive field tests of the concrete has achieved increasing acceptance for the evaluation of existing concrete structures. As two major testing methods, this paper recommends the proper empirical relationship between the rebound number together with the ultrasonic pulse velocity and the core strength to fit the old concrete bridges in Korea.

  • The performance of machine tools is qualified by many test procedures given by the national/international standards or respected organisations. Among them, test regarding circular-interpolation accuracy is getting to be one of the important acceptance tests at the production level. Machine tool systems are composed of many mechanical and electronical sub-systems so that it is not easy to improve dynamic performance by examining only one particular part. Instead, overall systematic approach encompassing all the contributing elements is necessary to achieve good results. In this study, measures taken in circular accuracy improvements will be explained case by case.

  • The purpose of this paper is to propose the draft guidelines of seismic isolation design of Liquid Metal Reactor (LMR) using high damping laminated rubber bearings. The scopes of guidelines include design requirements of a seismically isolated system and components, seismic isolator, isolation system, interface system between seismic isolation and non-seismic isolation part, qualification and acceptance tests of seismic isolator, seismic isolation reliability, and seismic safety and monitoring system. Proposed guidelines shall be revised to extend to general design guideline for nuclear facilities by further research and discussions.
