진공동결건조 후 두부의 수분활성 및 품질변화에 관한 연구

  • 식품의 건조는 저장성을 향상시키고 수송을 간편하게 하나 특별한 경우는 건조과정에서 일어나는 성분변화에 의해 풍미, 색깔, 조직 등이 향성되게 하는 경우도 있다. 그러나 일반적으로 건조에 의해 풍미의 저하, 색깔의 퇴조, 영양성분의 손실 및 조직과 형태의 손상 등 품질을 저하시키므로 가능한 저온에서 단시간에 수분을 제거해야 한다. 건조식품의 저장성은 수분활성도, 제품의 종류, 저장온도등 다양한 요인들에 영향을 받으며, 특히 수분 활성도에 따라 비효소 갈색화 반응, 지방의 산패, 미생물의 발생정도가 달라진다. 따라서 건조식품 저장시 변질을 방지하기 위해서는 식품의 수분함량을 측정할 수 있는 등온흡습곡선을 작성하는 것이 중요하다. 또한 식품의 단분자층 수분함량을 결정하고, 흡습에 필요한 에너지를 구함으로서 건조식품의 저장조건 및 포장조건의 선택시 유용한 자료가 된다. 특히 식품분말의 흡습특성은 분말입자의 크기, 형태, 화학성분 등과 밀접한 관련이 있다. 위의 사실로 미루어 볼 때 본 연구에서는 시판 유통되고 있는 두부를 진공동결 시킴으로써 위생화와 장기저장 가능성을 연구하면서 진공동결 건조 후 시료의 수분활성, 재수화 및 일반성분 변화를 검토하고자 한다.

Change of Seed Dormancy at Different Storage Conditions in Rice (벼 저장조건에 따른 종실의 휴면성 변화)

  • This study was conducted to investigate change of seed dormancy during storage in rice. The result of germination rate observed at different storage duration after harvest indicated that two Japonica rice varieties, Sangpungbyeo and Hwaseongbyeo, tow sare type local varieties, Jakwangdo and Mongeunsare, and a Tongil type rice, Samgangbyeo, showed no dormancy in rice seed harvested at 40 days after heading, However, weak dormancy was found in matured rice seed of Sobaekbyeo and Odaebyeo, and strong seed dormancy was found in Jungwonbyeo, IR-20 and IR-42. Rice seed stored for 30 days after harvest at 2$0^{\circ}C$ constant temperature or 25/15$^{\circ}C$ of day /night temperature fluctuation showed higher germination rate above 90% in all varieties tested. But germination rate of seeds stored at 4$^{\circ}C$ for 30 to 180 days showed varietal difference, higher in rice varieties having weak seed dormancy and lower in strong dormancy varieties. Days to 80% germination and average days for germination were shortened by storage for 30 to 180 days after harvest at 2$0^{\circ}C$, 4$^{\circ}C$ with RH 40% or day /night 25/15$^{\circ}C$ temperature condition in all rice varieties tested, but the degree of acceleration was lower at the condition of 4$^{\circ}C$ with RH 40%.

Indentification of Cholesterol Oxides Formed in Butter under Varied Storage Conditions (상이한 조건에서 저장한 버터로부터 생성된 콜레스테롤 산화물의 확인)

  • The effect of storage conditions on the oxidative stability of cholesterol in butter was studied by identifing cholesterol oxides by TLC. Experimental variables for storage conditions were packaging(packaged and unpackaged), storage temperature(ambient and refrigerated), light source(dark, fluorescent and ultraviolet), and storage period(2, 4, 6, and 8 weeks). No cholesterol oxides were detected from packaged butter under all storage conditions. When unpackaged butter was stored under darkness at ambient and refrigerated temperatures, cholesterol oxides were not detected even after 6 weeks of storage, but small amounts of $7{\alpha}-and\;7{\beta}-hydroxycholesterols$ were detected after 8 weeks of storage. When unpackaged butter was stored under ultraviolet light at ambient temperature, $7{\alpha}-hydroxycholesterol,\;7{\beta}-hydroxycholesterol$ cholestane-triol, and cholesterol epoxide were detected after 2 weeks of storage, and when fluorescent light was used instead of ultraviolet light, the same species of cholesterol oxides were detected after 6 weeks of storage.

Effect of Storage Conditions on Quality Stability of Dried Laver(Porphyra tenera) (건조김의 품질 안정성에 미치는 저장 조건의 영향)

  • Quality stability of the dried layer Porphyra tenera depending on various light sources, water activities, packaging materials and storage temperatures were investigated by peroxide value and chlorophyll degradation. Major fatty acids of dried layer were 45.7% eicosapentaenoic acid and 13.6% palmitic acid. Quality stability was increased in order of darkness, incandescent and fluorescent increased sharply with the decrease of water activity and temperature, and also improved by the packaging material with strong barriers of water vapor, oxygen and light.

Changes of Quality Characteristics on the Cherry Tomatoes during the CA(Controlled Atmosphere) Storage (CA저장 중 방울토마토의 품질특성 변화)

  • The CA(Controlled Atmosphere) storage of cherry tomatoes were carried out under seven gas compositions including air. The weight loss of cherry tomatoes progressively increased with storage time. In the case of cherry tomatoes stored under CA conditions, increment of weight loss was reduced. However, cherry tomatoes (in air) tut about 15% weight at the end of storage. In CA stored cherry tomatoes lost about 10% weight at the same time. General trend was a decrease in titratable acidity with storage time. In air md 6.4% O$_2$, 4.2% CO$_2$, titratable acidity was lower than that in other storage conditions. During storage of cherry tomatoes, soluble solids increased till 8 days of storage, and then decreased. Stored cherry tomatoes in air and 6.4% O$_2$+4.2% CO$_2$ have lower values. Lycopene contents of cherry tomatoes with 6% O$_2$ storage condition increased and cherry tomatoes with 1% O$_2$+6% CO$_2$ and 3% O$_2$+3.1% CO$_2$maintained s initial contents. In air, flesh firmness decrease till 8 days, and then increase. At 1% O$_2$+6% CO$_2$ ethanol contents were ten times to that of other experimental conditions. Air and 6% O$_2$+7.8% CO$_2$ condition had lowest value for the ethanol content. In changes of organic acid and citric acid decreased slowly during storage, malic acid in air and below 3% O$_2$was disappeared at 8 days. Above 4% O$_2$concentration malic acid contents were maintained till 16 days. In over all acceptability, air and 6.4% O$_2$+7.8% CO$_2$ condition took a good score from the panel. Quality of stored cherry tomatoes was not edible condition in 1% O$_2$+6% CO$_2$. CA storage cherry tomatoes took a good score in firmness and juiciness where as control received good score in color and sweetness. This result was explained that in air ad 6.4% O$_2$+7.8% CO$_2$stored cherry tomato was ripened and full color development, but in CA was break stage because of suppressed ripening.

The Microbiological, Physicochemical, and Sensory Characteristics of Korean Pork Jerky Prepared with Kochujang (한국형 고추장 양념 돈육포의 미생물학적, 이화학적 및 관능적 품질 특성)

  • The aim of this study was to evaluate the microbial safety and quality changes of Korean sliced pork jerky, and to investigate these properties over 90 days and 28 days of storage at room temperature $(25^{\circ}C)$ and elevated temperature $(35^{\circ}C)$. Based on the microbial counts of pork jerky, mesophilic bacteria were detected at 2.50 log CFU/g at day 0. The mesophilic bacterial count did not change significantly for all samples, and coliform bacteria and Bacillus cereus were not detected in any samples during storage at either $25^{\circ}C\;or\;35^{\circ}C$. The following physicochemical qualities were also investigated: TBA value, Aw, and pH. In the case of $25^{\circ}C$ storage, the Aw of Korean sliced pork jerky was 0.72 at day 0, and was reduced to 0.58 after 90 days of storage. The TBA value increased as the storage time increased, and was 0.52 after 90 days of storage. The pH of all samples did not change significantly. In the case of $35^{\circ}C$ storage, the TBA, Aw, and pH values were not significantly different from those obtained during $25^{\circ}C$ storage. In addition, the sensory properties of all samples were not significantly different between storage at the two temperatures. In conclusion, these results suggest Korean sliced pork jerky could be used to study the development of commercial pork jerky.

Study of Stability in the Riboflavin Content of Dietary Supplements on Storage Conditions (국내유통 비타민보충용제품의 저장조건에 따른 비타민 $B_{2}$의 안정성에 관한 연구)

  • This study was carried out to observe the stability of riboflavin in dietary supplements. Dietary supplements were in the type of tablet, powder, capsule and liquid. Various factors on the stability of riboflavin such as effect of light, storage temperature and time were examined using HPLC method. Samples were exposed to various temperatures (-9, 4, $30^{\circ}C$) and light at room temperature far 9 months. As well as storage period became longer, reduction rate constant of riboflavin increased. Riboflavin reduction rate constants were higher during storage with light than without light. And there was a significant difference of reduction rate constants in types of dietary supplement. In other words, riboflavin in tablet types was significantly more stable than the others, and liquid type was the most unstable. Therefore, type, light, and packing container of dietary supplements containing riboflavin would be considered in order to establish their appropriate shelf lives. In consideration with riboflavin decrease in dietary supplements, riboflavin would be appropriate for the nutritional labelling guide when predicting them at the end of shelf lives.

Changes of Quality in Ginger according to Storage Conditions (저장조건에 따른 생강의 품질변화)

  • In order to establish proper storage conditions for ginger, the quality changes of gingers stored at three different temperatures(7$^{\circ}C$, 12$^{\circ}C$ and 20$^{\circ}C$) and three different relative humidities(75%, 85% and 95%RH) were investigated during 150 days of storage. Gingers stored at 7$^{\circ}C$ and 20$^{\circ}C$ showed rapid quality deterioration due to chilling injury and spouting respectively in any range of relative humidity. Ginger stored at 7$^{\circ}C$ was staled to show symptoms of the chilling injury such as moldiness, shrivelling, discoloration etc after 30 days of storage ; then it was deteriorated after 90 days of storage. Ginger stored at 20$^{\circ}C$ was completely lost its storage-life after 30 days of storage because of high sprouting ratio. However ginger stored at 12$^{\circ}C$, 75%RH showed better quality than ones stored at both 7$^{\circ}C$ and 20$^{\circ}C$, but it was not so good as the one at 7$^{\circ}C$, 95%RH. Consequently storage conditions of 12$^{\circ}C$, 95%RH was observed the best effecive condition for keeping rhizomes in good quality from weight loss, spouting, mouldiness and so on.

Influence of Packaging Methods and Storage Conditions on Recovery of Inoculated Foodborne Pathogens in Home-Delivered Meals (가정배달급식의 포장방법 및 저장조건이 식중독균의 생존에 미치는 영향)

  • The purpose of this study is to predict multiplication patterns of foodborne pathogens according to packaging methods and storage conditions in home-delivered meals. Pan fried oak mushroom and meat, soy sauce glazed hair tail and roasted dodok which inoculated $10^6\;CFU/g$ of foodborne pathogens were packaged by wrap packaging, top sealing, vacuum packaging and stored at 25, 4 and $-18^{\circ}C$ during 5 days. The result of study was revealed that the growth and multiplication pattern of the inoculated foodborne pathogens was inhibited in chilling and freezing storage after vacuum packaging, and was significantly influenced by storage temperature. The survival of Listeria monocytogenes was also significantly influenced by storage period. The effective method to preserve the bacteriologic safety of pan fried oak mushroom and meat and soy sauce glazed hair tail in home-delivered meals was stored for maximum three days in chilling storage after vacuum packaging.
