Major Characteristics of Burdock(Arctium lappa L.) Native to Yeong-Narn Region (영남지역 재래종 우엉(Arctium lappa L.)의 주요특성)

  • This study was aimed to obtain basic information on the characteristics of local cultivars of burdock(Arctium lappa L.) grown in Yeong-Nam region. The characteristics of seeds were shown a remarkable diversity among the local cultivars. Germination rate was the highest at 25$^{\circ}C$ and Munkyong' as the highest germination rate(42.2%) at l0$^{\circ}C$ respectively. In Youchon' and 'Chilgok', about 10% was bolted but the other was rarely or none. The range of root length was 62∼77cm and lateral root number was maximum 5.5('Koryong') and minimum 0.3('Songju). 'Chongdo I' contents 14.2mg/100g of tannin in root and 'Kyongsan', 'Koryong', 'kyongiu',’ Kumi' and 'Haman' taste not bitter in leaves.

  • 맛을 인지하는데 있어 색채가 끼치는 영향에 대한 선행 연구들에 의하면 사람은 특정 색이 상기시켜주는 맛을 기억하고 있고, 맛과 그 강도를 예측하고 판단하는데 있어 색에 크게 의지하고 있음을 알 수 있다. 본 연구에서는 사람들이 음식물 색에 대한 경험의 종류와 정도에 따라 색채로부터 연상되는 맛에 대한 특성을 파악하기 위해 2회에 걸친 실험을 진행하였다. 실험 1에서는 색상환에 고르게 분포한 여섯 가지 대표 색을 가진 초콜렛 샘플을 준비하고 피험자들에게 단맛과 쓴맛의 정도에 대해 각각 평가하도록 하였다(N=20). 실험 2에서는 실험 1의 색을 활용하되, 이를 알약에 적용한 후 동일한 평가를 진행하였다(N=20). 실험 결과, 맛에 대한 경험이 풍부한 난색 계열에서는 단맛, 쓴맛에 대한 일관된 경향을 나타냈지만, 그렇지 않은 파랑색에 대해서는 분산된 반응을 나타났다. 본 연구의 결과는 경험의 정도에 따라 색으로부터 연상되는 공감각적 특성에 대한 통찰력을 제공하며 효과적인 식품 패키지 디자인에 참고로 활용될 수 있을 것이다.

가교화 ${\beta}-Cyclodextrin$ 을 이용한 콜레스테롤 제거 크림치즈의 연구

  • 본 연구에서는 가교화 ${\beta}-CD$로 크림치즈의 콜레스테롤을 효과적으로 제거하는 실험을 수행 하였으며, 크림치즈의 이화학적 변화와 관능적 특성을 살펴보았다. 크림치즈를 만들기 위한 유지방 함량 36%의 크림을 가교화 ${\beta}-CD$로 처리 시 콜레스테롤 제거 최적 조건은 가교화 ${\beta}-CD$ 10%를 첨가해 교반온도 $20^{\circ}C$, 교반시간 30분, 교반속도 800rpm으로 실험한 결과 콜레스테롤 제거율이 평균 82.0%로 나타났다. 가교화 ${\beta}-CD$처리 크림치즈는 short-chain fatty acid의 경우 저장 기간이 지남에 따라 control과 powder ${\beta}-CD$ 처리한 크림치즈에 비해 저급 지방산 생성에 변화가 거의 없고, 쓴맛을 내는 아미노산의 경우 저장 기간 동안 control과 powder ${\beta}-CD$처리 크림치즈에 비해 생산량이 현저하게 적었다. 또한 가교화 ${\beta}-CD$처리 크림치즈의 조직검사에서 다른 항목에서보다 저장 기간 동안 응집성이 변함이 없으며 그 수치가 높게 평가되었다. 관능검사 결과, 가교화 ${\beta}-CD$처리 크림치즈는 저장 기간 동안 쓴맛의 증가가 거의 없었고 전체적인 기호도 또한 높았다. 위 실험 결과에 따르면, 가교화 ${\beta}-CD$ 사용결과 cholesterol 제거율이 높으며, 제품에 적용시 재활용이 가능하고 품질이 향상되므로 이를 유가공 산업에 활용이 가능할 것으로 기대된다.

Sensory properties of Satsuma mandarin by quantitative descriptive analysis (감귤의 묘사적 관능 특성)

  • This study investigated the sensory attributes of Satsuma mandarins to provide basic data for the establishment of a quality grade establishment of mandarins. Samples of the mandarins in different sizes (small, medium, and large) were collected via organic green house cultivation, conventional cultivation without pesticides and conventional cultivation in Jeju Island. Eight trained panels performed the triplicate measurements. From the results of the quantitative descriptive analysis, mandarin samples were selected with five types of appearances (gloss intensity, color intensity, peel width, damage degree, and peel texture), three types of odors (sour, sweet, fresh), six types of tastes (sour, sweet, bitter, fresh, tasteless, and off flavor) four types of texture (hardness, granule toughness, juicy, and tough feel), and three types of after-tastes (sour, sweet, and bitter). The results of the analysis of the quality characteristics of the samples showed that their, pH, total acidity and solids contents differed depending on the size of the samples more than their cultivation methods. The correlation coefficients between the quality properties of the mandarins showed that their, sample size was positively correlated with their peel width and toughness. Moreover, the soluble solid of sample was positively correlated with its color intensity, sweet and fresh orange flavor. However, soluble solid content of the samples was negatively coreelated with their bitter flavor, tastelessness, and off flavor. In the principal component analysis of the sensory attributes data, PC1 represented the soluble solid, gross intensity, orange color, sour and sweet odor, unique mandarin flavor (sweet and, fresh orange), etc., and PC2 (26.77%) the size, pH, sample acidity, and peel texture.

Combination Effect of ʟ-Arginine and ʟ-Aspartic acid on Saltiness Enhancement of NaCl Solution (ʟ-아르기닌과 ʟ-아스파라긴산 혼합이 NaCl 짠맛 향상에 미치는 영향)

  • In order to investigate the combination effect of $\small{L}$-arginine and $\small{L}$-aspartic acid on salt enhancement, the saltiness and bitterness of various mixtures of $\small{L}$-arginine and $\small{L}$-aspartic acid were evaluated using the electronic tongue and sensory tests. Increasing the molar ration of $\small{L}$-arginine against $\small{L}$-aspartic acid enhanced the salty taste of NaCl, whereas increasing the molar ration of $\small{L}$-aspartic acid against $\small{L}$-arginine significantly suppressed the bitter taste of $\small{L}$-arginine. Therefore, combination of $\small{L}$-arginine and $\small{L}$-aspartic acid can be utilized as a saltiness enhancer and its suitable combination ratio was showed as $\small{L}$-arginine : $\small{L}$-aspartic acid = 1.00:0.98-1.00 on basis of molar concentration.

Effect of Extracts for Herbal Medicines on the Inhibition of Whole Blood Aggregation (한약재 추출물에 대한 전혈응집억제 효능 검색)

  • For a correlation to study the five tastes and efficacies in oriental medicine concepts, we used herbal medicines with bitter taste character in traditionally effective and experimental methods. In this study, we tested the in vitro effect of 20 typical kinds of herbal medicines with bitter taste on platelet aggregation induced by collagen in human whole blood using the impedance method of aggregometry. Among them, 3 kinds of hot water extracts and 2 kinds of 70% ethanol extracts showed the significant inhibiting effect on whole blood aggregation $(^{***}p<0.001)$. In particular, Coptidis Rhizoma (Coptis chinensis) extracts were selected as the most effective candidate with a strong grade of bitter taste through the sensory test of trained panels. The results from this experiment provide pharmacological evidence for the traditional use of bitter tasting herbs with traditional medicine theory, suggesting that strong bitter taste herbs could be help problems of blood circulation more than mild bitter tasting herbs.

Effect of water hardness on coffee composition and coffee preference by university students (물의 경도가 커피의 조성과 일반 대학생들의 커피 선호도에 미치는 영향)

  • Water is a major ingredient and comprises over 98% content of coffee. In this study, coffees prepared with distilled water (L) and waters with medium (M) and high hardness (H) were investigated for organic acid, caffeine, and eugenol contents and analyzed by sensory evaluation. Organic acid content was the highest in H-coffee. The contents of chlorogenic acid and caffeine, the characteristic bitter taste molecules, were the highest in L-coffee. The level of eugenol, one of the representative aroma components, was the lowest in M-coffee but similar between L- and H-coffees. The sensory evaluation test, conducted on a university student group comprising 56 female and 47 male participants, showed that L-coffee was the most preferred (42% or higher), but there was no significant difference in bitterness, acidity, body, and balance. Results suggest that the preference index of coffee taste among university students may be different from that of coffee experts who prefer coffee extracted with water of certain hardness.

Sensory Characteristics of Low Sodium Kakdugi (저염 깍뚜기의 관능적 특성)

  • This study was conducted to determine the relative saltiness of $MgCl_2,\;K_{2}SO_4$ and KCl and evaluate the sensory characteristics of solutions and Kakdugi (Korean seasoned pickles of cubed radish roots) prepared with reduced amount of sodium chloride by replacement with varying levels of KCI. The relative saltiness of $MgCl_2$ and $K_{2}SO_4$, were $0.11{\sim}0.12(0.115)$ and $0.08{\sim}0.09(0.085)$ respectively, at the reference level of 0.5% NaCl. The relative saltiness of KCI varied from 0.52 to 0.76 as the reference level increased from 0.5 to 2.0% NaCl. The result of sensory evaluation on the mixed solutions of NaCl and KCI indicated that bitterness, metallic flavor and astringency increased with the increased levels of KCI. The addition of KCI slightly increased the firmness of kakdugi but there was no significant difference in firmness by the amount of substitution. Bitterness and off-flavor was enhanced with the increased levels of replacement especially when the level was higher than 50%. Saltiness, sourness and overall desirability decreased as the extent of the replacement increased. There were no significant difference in pH, acidity and firmness measured with Universal Testing Machine. The result of this study indicate that the replacement of NaCl with KCI at not more than 50% does not affect greatly the characteristics of kakdugi.

Studies on the Changes of Taste Compounds during Soy Paste Fermentation (III) (된장 숙성 중 정미 성분의 변화에 관한 연구(III))

  • For the purpose of supplying the information to improve the acceptability of soy paste as the condi-ment, the changes of peptide were determined. The results were as follows; Average peptide length were decreased. It was 102 at 0 day, 15 at 10 day and 4.1 at 180 day. Peptide fraction were the same as in 60 day and 180 day. Low molecular weight peptide were not changed greatly during fermention. Peptide identified in 180 day fermentation were Ala-Ser, Gly-Glu, Glu-Ser, Asp-Glu, Asp- Tyr, Asp-Ala-Ser, Ala-Ser-Glu, Glu-Ser-Ala, and Ala-Lys-Met. In the characteristics of bitter peptide in 180 day fermentation, soy paste itself didn't show bitter taste', solvent extration fraction I'showed bitter taste. After gel chromatography, fraction I, fraction II and fraction III were obtained and fraction II were bitter peptide of low molecular weight. After gel chromatography', solvent extration fraction 2'(water extration) were divided into fraction IV, V, VI,VII and VIII. Fraction IV, V and VI showed bitter taste. Amino acids composition of the fractions showing bitter taste were like that; fr. 1: Glu- (Asp, Pro, Val, lie or Leu)-Met fr. II Pro-(Glu, Val, Phe)-lle or Leu fr. IV: Glu-(Asp, Ala, Tyr, Leu of lie)-Phe fr. V: Ala-(Met, Glu, Pro)-lle or Leu fr. VI: Asp-(Phe, Ser, fly)-Val.

Characterization and optimization for beverage manufacture using Korean red ginseng extract (기호성 개선 인삼농축액 제조를 위한 추출 조건 설정)

  • This study was designed to develop a manufacturing process for ginseng concentrate with reduced unpleasant aroma and bitter taste. Two types of ginseng, white and red, were extracted under six different conditions (the 1st to the 6th step) of temperature ($65{\sim}95^{\circ}C$) and ethanol concentration (0~70%). Six extracts of each ginseng were evaluated by a sensory test, and assayed for crude saponin, ginsenosides, and acidic polysaccharides. The content of crude saponin in the extracts decreased with extraction time. There was no significant difference in the crude saponin content between white and red ginseng extracts. The yield of red ginseng extract was higher (45%) than that of white ginseng. No significant difference was observed in the acidic polysaccharide content between red and white ginseng extracts. $Rg_3$, a specific ginsenoside in red ginseng, was detected in the 1st to 6th extracts of red ginseng. Bitterness, astringency, and sourness of ginseng extracts decreased as the extraction steps proceeded. The composite of the 1st, 2nd, and 6th step extracts decreased bitterness and astringency, and the highest overall acceptance. Compared with commercial beverages, the composition of the three extracts is the desirable method to decrease the bitter and astringent tastes, and the overall unpleasant flavor of ginseng.
