Identifying Differentiating Attributes of Local Coffee Shops in Daegu (대구 커피전문점의 시장 경쟁력 요인 도출 - 지역 자생 커피프랜차이즈 성공 요인을 중심으로 -)

  • Domestic coffee franchise market in South Korea has been rapidly growing along with developing the global coffee franchises as well as entering domestic franchise companies into the beverage market. Competitions in the markets are getting more accelerated and local franchises and owner-operated coffee shops are losing their market shares gradually as a result. Local franchises and owner-operated coffee shops in Daegu, however, are notable in that they are maintaining the competitiveness in the markets. This is a unique phenomenon, which deserves to be analyzed to identify the successful attributes as a case study. Important Performance Analysis (IPA) method has been employed for analyzing and its gap(i.e., difference between importance and performance) analysis shows that the price and quantity of coffee are the most important differentiating attributes of local and owner-operated coffee franchises in Daegu.

  • As the cconvenience economy of food culture becomes more widespread and the consumption trends for easy and convenient meals grew, every food company is making their various efforts to provide better service. Along with this change, various methods have been allowed for quick and easy ordering. Especially, the introduction of kiosk systems with various merits such as reduction of queues for cashes, saving labor costs, and smoothness of business processes have been actively growing recently. If kiosk system provides not only order but also systematic contents and interface design considering differentiated identity from other companies, brand image enhancement and customer service strategy would be available as well. A kiosk GUI design for effective interactions that provides more usability and satisfaction to users by analyzing the structure and contents of kiosks in fast food stores and GUI designs and investigating usage patterns and design preferences of kiosks through user surveys.

  • 귀농귀촌 문화가 유행하고 농업의 미래 가치에 대한 인식이 변화되면서 농산업으로의 새로운 진출을 계획하는 인구가 늘고 있다. 우리의 농업은 자급자족경제로부터 상업경제로 발전되어 왔고, 글로벌 시장 개방 및 생산 기술의 지속적 발전으로 공급이 수요를 초과하며 가격이 점점하락하는 추세를 보이고 있다. 농업 현장의 여러 어려움에도 불구하고 농산업의 긍정적인 여건들도 형성되고 있다. 올바른 먹거리를 추구하는 식품 소비패턴의 변화, 환 생태 치유 자연에 대한 소비자의 관심고조, 스마트 팜과 같은 생산환경의 자동화, 지역 자원을 근거한 공동경영체 운영 등과 같은 현상이 두드러지게 나타나고 있다. 이러한 시점에 농산업분야에 새로이 진출하고자 하는 개인 또는 소규모 사업주체들은 자신의 사업에 대한 정체성을 이해하고, 효율적인 사업운영을 위한 차별화 전략을 확보할 필요가 있다. 본 연구는 개별 또는 소규모 조직의 농업인과 예비농업인들이 자신의 사업에 대한 정체성을 이해하고, 사업운영을 위한 전략 선택을 돕는 비즈니스모델 템플릿 개발을 목표로 하였다. 이를 위해 농업 전문가, 창업 전문가, 비즈니스모델 전문가 풀을 구성하여 농산업 특성을 이해하고 최근 농업 농촌에서 이슈가 되고 있는 농업비즈니스 트랜드를 분석하였다. 근거 자료 및 전문가 토론을 통해 농산업 비즈니스를 '시장가치 추구형', '사회적가치 추구형', '연대하는 시장가치 추구형', '연대하는 사회적가치 추구형'의 4가지 유형으로 구분하고, 각 유형별 사례기업을 조사하여 비즈니스모델을 분석하였다. 비즈니스모델은 비즈니스모델 젠 캔버스를 이용하여 표현하였다. 비즈니스모델 젠은 비즈니스 유형에 따라 일반 창업형, 협동조합형, 임팩트비즈니스형 등 차별화된 캔버스 모델을 제공하고 있으며, 고객중심의 비즈니스 관점을 보다 세밀히 제공하는 툴이다. 본 연구에서는 비즈니스모델 젠을 통해 4가지 유형의 농산업 비즈니스 모델을 분석하였다. 본 연구의 결과는 농산업에 진출하는 사업주체의 사업진행 방향 및 전략선택을 위한 교육 컨설팅 현장에서 널리 이용될 수 있을 것으로 판단된다.

Role Clarity and Organizational Commitment in Food Manufacturing and Distribution Firms: The Mediating Role of Creativity (식품 제조 및 유통 기업의 역할명확성이 조직몰입에 미치는 영향: 창의성의 매개효과)

  • Purpose - Although ensuring that all the organizational members know their roles exactly is an important part of managerial work, few studies address the role clarity in food manufacturing and distribution firms. Role clarity refers to the extent to which individuals clearly understand the tasks, duties, responsibilities, and expectations of their work roles (Hinkin & Schriesheim, 2008). The purpose of this study is to examine the effect of the role clarity on organizational commitment and the mediating role of creativity in the role clarity-organizational commitment relationship. Research design, data, and methodology - Data were collected from 297 employees in food manufacturing and distribution firms of Korea by self-evaluations questionnaires. The unit of the analysis for testing is an individual. We proposed four hypotheses: (1) is about the relationship between role clarity and organizational commitment, (2) is about the relationship between role clarity and creativity, (3) is about the relationship between creativity and organizational commitment, and (4) is about the mediating role of creativity. We conducted the hierarchical regression analysis for testing the main and mediating effects. Results - The results of the study indicated that the role clarity was positively associated with organizational commitment and creativity. Results also indicated that the creativity was positively associated with organizational commitment. Especially, the impact of the role clarity on organizational commitment was mediated by creativity. Conclusions - An important contribution of this study is extending prior theory on the relationship between role clarity and organizational commitment by shedding new light on assumptions regarding the mediating effect of creativity. The results demonstrate that the role clarity has an indirect effect as well as a direct effects on organizational commitment. Our research suggests important implications for organizations that pursue to stimulate their employees' creativity, emphasizing the importance of the role clarity. This study has several potential limitations. Maybe the most serious limitation is its cross-sectional study design. Another limitation is the use of employees' self-reports to measure the variables. In the future, researchers should employ a longitudinal study design and use diverse sources of data.

The Antioxidation Effect of Salsola komarovii Extract and Its Influence on Cell Bio activity (수송나물(Salsola komarovii)의 항산화, 항염 및 미백 활성)

  • S. komarovii is halophyte that grows in soil or waters of high salinity, such as in saline semi-deserts, sloughs and seashores. Traditionally, S. komarovii has been used for food and medicinal purposes in Korea. S. komarovii was extracted in 70% ethanol to measure anti-oxidative activity using DPPH and ABTS assay. The IC50 values of the S. komarovii extract against DPPH radicals and ABTS radicals were 186.10 mg/mL and 121.89 mg/mL. In addition, total polyphenol and reducing power were measured. The S. komarovii extract exhibited superior polyphenolic (22.5%) and antioxidant (28.4%) contents. Regarding cell bioactivity, MTT assay was conducted to reveal cytotoxicity of S. komarovii extract and showed the non-cytotoxicity of S. komarovii extract. Anti-inflammatory and skin whitening effects were measured at 100 ㎍/mL. Therefore, this study suggests that the S. komarovii extract can be used as a functional cosmetic product material.

Milk Production of Dairy Cattle from Organic Farming in Germany and Development Trends in Korea (독일의 유기축산에 의한 젖소사육 현황과 무리나라의 발전 방향)

  • In view of increasing environmental pollution, the organic farming in animal production is becoming increasingly urgent. The problems of veterinary medicine have not diminished through the most dangerous epidemic diseases. Organic farming attempts to function in harmony with the environment. The first criterion of the organic farm is that the animal must be self-sustaining. Their food must be produced to a large extent on the farm. The position of ruminants in biological systems is determined by the fact that this group of farm animals is provided with a digestive system which optimizes the utilization of the products of gut microfloral fermentation. The cattle do not require large amounts of concentrate feeling nor gross ugly farm building for intensive rearing. The economic profitability of a cow depends. on the first instance, on the level of milk production and the number of lactations. The length of life is an important factor since the tilde to maturing is relatively high in a cow. The result is that dairy cows in organic farming have greater length of live, and produce more milk in their life time than the shorter lived high input cow. This paper. therefore, discussed the problems of modern cattle farming and development trends of organic farming in Germany and Korea.

희귀 의약품의 현재 상황과 발전 방향

  • 우리나라의 경우 희귀질환은 국내 유병인구가 2만명 이하로 드물게 나타나는 질환으로 적절한치료 방법과 대체의약품이 개발되지 않은 병을 말한다. 희귀의약품은 대상 환자 수가 적어 연구개발이 어렵고 시장에서 수익성을 기대하기 어려워 제약기업이 쉽게 개발할 동기를 갖기 어렵기 때문에 선진국에서는 희귀의약품의 개발을 촉진하기 위한 제도를 운영하고 있다. 국내에서도 희귀질환자들에게 치료기회를 확대 제공하기 위한 일환으로, 1999년 정부의 적극적인 지원하에 한국희귀의약품센터가 설립되었다. 한국희귀의약품센터는 적용대상이 드물고 대체의약품이 없어 긴급한 도입이 요구되는 의약품 및 희귀질환자 치료용 약품의 구입공급과 제반 정보의 수집 및 제공을 함으로써 국민의 건강증진에 기여하고 있다. 한국희귀의약품센터의 주요 역할은 희귀의약품 및 희귀질환에 대한 최신정보를 수집 분류 데이터베이스화하여 이를 희귀의약품의 수요자 및 공급자 등 필요로 하는 자에게 제공하고 있으며, 특히 적용 대상이 드물고 대체의약품이 없어 긴급하게 도입할 필요가 있는 의약품 및 희귀질환자 치료용 의약품에 대하여 자가 치료용 의약품의 수입추천 안내 및 수입대행, 희귀의약품의 지정추천업무 등을 수행하고 있다. 희귀의약품 지정에 관한 규정은 1998년 4월 16일에 식품의약품 안전처에서 고시하였으며 2013년 2월에 식약처에서 고시 제 2013-8호로 개정하였다. 개정 이유는 지속적인 투자, 연구 개발이 필요한 희귀의 약품의 개발을 활성화하고 지정 한도액을 상향하는 등 희귀의약품 지정제도 개선하고자 하는 것이다. 이번 개정의 주요 내용은 개발 초기부터 '개발단계 희귀의약품' 지정하고 지정 갱신을 위해 별도 생산(수입)실적 보고를 폐지하며, 위탁제조판매업자의 희귀의약품 지정 신청을 가능하게 하고, 유병인구 500명 이하인 경우 지정한도 금액 상향 등이다. 이번 개정을 통해 희귀의약품에 대한 연구 개발이 더욱 확대 될 것으로 기대하며, 앞으로도 희귀질환 환자들에게 원활하게 희귀의약품이 공급되도록 지원 정책이 추진되어야 할 것이다.

  • This study is an empirical research to find out the effect on the management performance of hidden champions of food manufacturing companies when using blue ocean strategy for new product development. In order to achieve the purpose of this study, we conducted a questionnaire survey on hidden champions in the domestic food manufacturing industry and proceeded empirical analysis. When small and medium-sized enterprises in food manufacturing industries develop a new product, searching for non-customer, rebuilding the market boundary, and linking the external networks have a significant impact on their management performance. However, the fair procedure did not have a significant effect on the management performance. In terms of relative influence, rebuilding the market boundary was most affecting, followed by searching for non-customer and linking the external networks. On the other hand, this study implicated the management performance of hidden champions of food manufacturing industries when new products is developed by using the blue ocean strategy. Obtained results are as follows. If small and medium-sized enterprises of food manufacturing industries develop new products, it will be able to improve the management performance by utilizing strategies such as searching for non-customer, rebuilding the market boundary, and linking the external networks. In particular, the rebuilding the market boundary among the blue ocean strategies has a relatively high impact on management performance.

Analysis of Physicochemical Properties of Nurungji Added with Various Materials (다양한 소재가 첨가된 누룽지의 이화학 특성 분석)

  • Increasing the rice consumption, seven kinds of Nurungji which served as a home meal replacer and snack were developed with some functional materials were added, and their physiochemical characteristics were analyzed. The water binding capacity was the highest in Nurungji with black sesame seed (264.13%), and the hardness was the lowest as 0.36 N in Nurungji with Tenebrio molitor. The reducing sugar content was the highest in Nurungji with sweet pumpkin (1.47%) when being soaked in water for 30 minutes. As a result of measuring 2,2-diphenyl-1-picryl-hydrazyl free radical scavenging activity of the tested Nurungji preparations, Nurungji with sweet pumpkin and beet showed the high scavenging activity against free radicals. As a result of sensory evaluation, overall acceptability was the highest in Nurungji with black sesame seeds (4.3). Physicochemical characterization and sensory evaluation of Nurongji added with various materials confirmed that they could be applied to various food products.
