Purple sweet potato pigment extract was concentrated using both membrane separation method and vacuum concentration method. The pigment extract (anthocyanin content 1.6 g/L) was concentrated $({\times}25)$ after 5 hr of continuous operation of a nanofiltration to get anthocyanin content of 10.6 g/L. Total solid content also increased continuously while the flux decreased continuously during the concentration process. Degradation index (DI) changes of concentrated pigment solution were insignificant during the whole concentration process which is indicating that the nanofiltration method does not affect color degradation of anthocyanin pigment. For the comparison test, the same pigment extract was concentrated using a rotary vacuum evaporator at temperatures of 40 and $60^{\circ}C$. At both temperatures, pigment content increased in a similar manner during concentration $({\times}5)$. However, DI value at $60^{\circ}C$ increased while that at $40^{\circ}C$ did not change appreciably. Total color difference value changed only slightly by nanofiltration and $40^{\circ}C$ while changed significantly by $60^{\circ}C$. These indicate that a membrane filtration method is more effective in concentrating purple sweet potato pigment extract than a vacuum concentration method by high temperature.

Viscous fermented red ginseng extracts were dried and coated using a fluidized bed coater to increase convenience and consumer acceptance. The methods for making spherical granules of fermented red ginseng extracts with increasing convenience were established by using indigestible dextrin. Spherical granules of fermented red ginseng extracts with increasing convenience were made by mixing indigestible dextrin at 40% (40% IDD), 50% (50% IDD), and 60% (60% IDD) versus the soluble solid content of fermented red ginseng extracts. Spherical granules of fermented red ginseng extracts showed less angle of repose than powder of fermented red ginseng extracts. This means that spherical granules of fermented red ginseng extracts had good fluency with increased convenience. The more indigestible dextrin showed higher yields. Although 50% IDD showed less yield than 60% IDD, 50% IDD was the best mixing ratio for making spherical granules of fermented red ginseng extracts, as fermented red ginseng extracts is known as a healthy food. The optimized operation conditions of the fluidized bed coater for making 50% IDD were feeding rate 0.54 mL/min, atomization air pressure 2.15 bar, and product temperature $83.03^{\circ}C$.
This study was conducted to investigate the effect of Makgeolli (MG) and Makgeolli GiGemi (MGG) on blood flow, serum lipid improvement in vivo, and inhibition of angiotensin converting enzyme (ACE) in vitro. The activities of serum AST and ALT were increased by ovariectomy. Serum AST levels were decreased to $77.71{\pm}13.97$ and $74.57{\pm}14.90\;unit/ml$ in the OVX-MG50 and OVX-MGG50 groups compared to the OVX-control group ($91.14{\pm}12.02\;unit/ml$). Serum ALT levels were decreased to $34.00{\pm}8.41$ and $30.43{\pm}3.60\;unit/ml$ in OVX-MG50 and OVX-MGG50 groups compared to the OVX-control group ($37.14{\pm}5.40\;unit/ml$). Serum total cholesterol and triglyceride contents decreased in the sham group compared with OVX-control group by ovariectomy. Six weeks feeding of MG and MGG resulted in a decrease to $116.14{\pm}36.02$ and $109.14{\pm}11.55\;mg/dl$ compared to the OVX-control group ($120.43{\pm}8.36\;mg/dl$) in serum total cholesterol, and triglyceride levels were decreased to $52.43{\pm}12.41$ and $47.29{\pm}12.08\;mg/dl$ in the OVX-MG50 and OVX-MGG50 groups compared to the OVX-control group ($58.57{\pm}5.47\;mg/dl$). The level of HDL-cholesterol in the OVX-control group was significantly reduced to $51.29{\pm}20.49\;mg/dl$ compared to the sham group ($72.29{\pm}10.29\;mg/dl$), but it was increased to $70.71{\pm}19.53$ and $62.00{\pm}20.20\;mg/dl$ with MG and MGG supplementation. Furthermore, the effect of the MG group was higher than the MGG group. Microscopic observation showed that whole blood passed smoothly through the micro channels in the MG and MGG supplemented groups. The platelet aggregation ability of the groups treated with MG and MGG was less than that of the OVX-control group. In vitro assay, the angiotensin converting enzyme (ACE) activity was significantly inhibited by MG and MGG (82.6% and 68.9% inhibition at 0.4 g/ml). These results suggest that the beneficial effects of MG and MGG may be used to improve on the lipid metabolic syndrome of menopausal women. In addition, MG and MGG might improve blood homeostasis mediated activities via antiplatelets and MG and MGG may be used as antihypertensive functional foods and nutraceuticals.

This study investigated the physicochemical properties (pH, Brix), total phenol content, antioxidant activities (DPPH radical scavenging activity and oxygen radical absorbance capacity (ORAC)), and nitrite scavenging activity of beverage concentrates and purees. All concentrates and purees were produced from natural materials and have been used as the main ingredients in health-related beverages. Our results show that the pH values and Brix of all concentrates and purees ranged from 2.81 to 5.12 and 1.70 to 70.30 Brix, respectively. The highest total phenol content (182.71 mg GAE/mL), DPPH radical scavenging activity (69.88%) and nitrite scavenging activity (28.19%) were obtained from acai berry puree. The concentrate from wild blueberry had the highest ORAC value ($27,514{\mu}M$ TE/mL). Among the correlation coefficient data, the total phenol content exhibited a high correlation coefficient (r=0.9099) and DPPH radical scavenging activity. These results suggest that concentrates and purees from natural materials contribute to antioxidant activities in healthy beverages.
The garlic juices were extracted and concentrated by heating at $90^{\circ}C$, by using a rotary vacuum evaporator at $45^{\circ}C$, or by freezing at $-50^{\circ}C$ until the volume was reduced to 70% of the original volume. The concentrated juices were kept at $4^{\circ}C\;or\;25^{\circ}C$ for 60 days and the changes of bacteria and color were monitored every 10 days. Flavors of the raw garlic juices, concentrated garlic juices, and garlic powder by hot-air drying were analyzed monthly using GC and GC/MS. The CFUs/mL of mesophilic and psychrotrophic bacteria in the garlic juice concentrated at $90^{\circ}C$ were lower about 1 to 2 log cycles than those of other concentrated juices. Hunter L, a, and b values in the raw garlic raw juice and the juice concentrated at $-50^{\circ}C$ significantly increased at the beginning of storage, in particular, when they were stored at $25^{\circ}C$. The garlic juice concentrated at $45^{\circ}C$ showed relatively low L value but the juice concentrated at $90^{\circ}C$ showed high a value. The main peaks in chromatograms of volatile components identified by GC/MS were 3,3'-thiobis-1-propene, di-2-propenyl disulfide, 3-(methylthio)-1-propene in the raw garlic juice and the concentrated juices, and the juices concentrated at $45^{\circ}C\;or\;-50^{\circ}C$ showed relatively high preservation of garlic flavor.

This study is about the secondary concentration technology using electrodialysis process for minimum discharge and maximize recovery ratio from seawater desalination by reverse osmosis process. The experimental method adopted the constant voltage driving method and, concentrated/desalination volume capacity ratio changes, voltage changes and electrolyte types. Multi-ion membrane is used, aiming to derive conditions to minimize the TDS concentration of desalination water, to minimize the volumes of secnodary concentraion water and minimizing the power efficiency. The results of this study are as follows. The optimal ratio of concentraion/desalination volume is 1:5, the final TDS concentration of desalinated water is 5.32g/l, the final secnodary concentrated water salinity is 17.07% and electric energy demands of desalinated water is $16.74kWh/m^3$.
천마식품가공시 기초자료로 활용될 수 있는 천마 추출농축액의 리올로지 특성을 조사하였다. 천마의 열수 및 50% 에탄올 추출물운 각각 5, 10, 15, 및 20 Brix와 10, 20, 30, 40 및 50 Brix로 농축하여 제조하였다. 열수 및 50% 에탄올 농축액의 정상유동특성과 동적점탄성을 조사하였다. Power law model로 구한 n에 의하면 모든 열수 농축액들은 전형적인 의가소성$(n=0.484{\sim}0.802)$유체의 흐름특성을 보였고, 50% 에탄올 농축액들은 뉴튼유체$(n=0.875{\sim}1.078)$에 가까운 흐름특성을 나타내었다. 열수 및 50% 에탄올 농축액의 ${\eta}_{app}$는 온도가 증가함에 따라 감소하는 경향을 나타내었다. Herschel-Bulkley model에 의한 열수 및 50% 에탄올 농축액의 C는 각각 $0.030{\sim}1.255$ Pa와 $0.007{\sim}0.065$ Pa이었다. ${\eta}_{app}$에 대한 온도 및 농도의 영향은 arrhenius식으로 해석하였다. 열수 및 50% 에탄올 농축액의 $E_a$는 농도가 증가함에 따라 각각 $3.340{\sim}4.620{\times}10^3\;J/mol{\cdot}kg$과 $1.6289{\sim}18.6699{\times}10^3\;J/mol{\cdot}kg$의 범위로 나타났다. 진동수(angular frequency, ${\omega}$)가 증가할수록 저장탄성률(storage modulus, G#)과 손실탄성률(loss modulus, G@)은 일반적으로 증가하는 경향을 나타냈다. 50% 에탄올 농축액의 경우 모든 진동수에서 G#이 G@보다 높게 나타나 전형적인 저분자용액의 흐름특성을 보였다. 그러나 열수농축액의 경우 G@이 G#보다 높았고 0.5 rad/sec에서 교차점을 형성하였으며 전형적인 고분자 용액의 흐름특성을 나타내었다.
