Quality characteristics and antioxidant activities of pan-fried Hwajeon added with curcuma as a functional ingredient (강황을 첨가한 팬 프라잉 화전의 품질 특성과 산화방지활성)

  • Curcuma powder, having a significantly higher electron donating ability than glutinous rice flour (p<0.001), was added into hwajeon at 0-5% concentrations. There was no significant difference in the moisture content of hwajeon depending on the curcuma content, which was attributed to a similar water-holding capacity of curcuma powder and glutinous rice flour when subjected to hot water. As the curcuma content increased, the redness of dough and hwajeon increased, and the lightness of hwajeon decreased to a higher degree than that of dough. With the addition of curcuma, hardness of hwajeon increased and its adhesiveness decreased, presumably due to the increased content of amylose relative to amylopectin. Sensory evaluation revealed that the strong flavor of curcuma was a negative determinant of the preference for hwajeon. Nevertheless, total reducing capacity and 2.2'-diphenyl-1-picrylhydrazyl radical scavenging activity increased in proportion to the curcuma content in hwajeon (p<0.001).

  • Movie research in the 1980's structuralism looks tendency to escape director or text research and analyze spectator or inspection action. These post-structuralist divert interest by analytic convention of spectators in analysis by director's intention or text type correctly. There is the age that spectator, inspectional action and inspectional subject weighs more than director, work and text itself. But, inspection of movie can be person's enemy by director's narrative strategy or spectator's analytic quality that depend on a text and spectator and their interaction usually, and only method to acquire universality chooses full analytic discourse to principle. We should be structured by symbol system that the event is consisted of movie language to reappear the event through narrative in movie and this symbol system, director's narrative strategy can cause fixed esthetic distance between spectator. Researches to analyze this distance need to keep universal validity as much as being accepted by effort to gap with director and spectator. Therefore, narrative poetry that I analyze movie narration style by 'narrated' and unit of 'narrating' and study the form and function so-called, is going to follow narratology's access method. The consistent argument of this narrative poetry is that story is consisted of the events and these observe to structured thing by unit that is sequence through arrangement with the other event that adjoin in the event. Also, director need consensus with spectator to reappear connection of this event logically and it is thing which this reappearance form can be done characteristic by narrative strategy in directing. I am going to try narrative structure analysis of movie by narrative that is connected at structure of the event and 'narrating-narrative acts' that is interested in way to reappear this story to spectator hereupon. Of course, at process of research, Roland Barthes and his followers wish to apply 'narrative function' and concept of 'narrative acts' that prefer from time to time.

Preference and Utilization of Instant Foods of University Students Studying Tourism Science (관광학 전공 대학생의 즉석 가공식품 기호도와 이용도)

  • The preference and frequency of use on instant foods were investigated for university students studying tourism science. The most preferred instant food group was noodles, and Tangs, Baps, Gooks, Zooks, one-dishfoods were preferred in order. The most preferred instant food was Cupramyeon. The preference score on instant foods of Tangs, Gooks and One dish foods for male students significantly was higher than that of female students. Also, students majoring non-cooking like instant food more than those majoring culinary science (p<0.05). The highest frequency of use was shown in group of Baps and noodles, followed by one-dish food, Gooks, Tangs, Zooks in order. The largest number of students answered 'TV' and 'curiosity' to the question on the motives of use. The most students Purchased instant foods at 'convenience store' and 'small retail store'.

반응표면분석에 의한 쇠고기 야채 쌀죽의 이화학적 및 관능적 특성 변화

  • 현대 사회는 서구적인 식생활의 변화로 인해 조리가 간편하고 조리 시간이 짧은 즉석식품과 영양 기호식품을 동시에 충족시켜주는 음식에 대한 소비가 늘고 있는 실정이다. 또한 최근 미곡의 공급량에 비해서 소비량이 해마다 감소하여 재고미의 증가를 볼 때, 쌀의 새로운 이용방법 모색이 절실히 요망된다. 따라서 쌀의 소비촉진과 현대사회의 소비형태를 접목시켜서 쇠고기와 야채를 이용한 즉석쌀죽을 개발하고자 하였다. 쇠고기, 야채 및 쌀가루를 이용한 soup mix의 최적 배합비를 설정하기 위하여 제조조건에 따라 다르게 제조한 쇠고기 야채 쌀죽의 이화학적 및 관능적 특성에 미치는 변화를 조사하였다. 이때 야채의 배합비에 따른 이화학적 및 관능적 특성을 모니터링 하고자 반응표면분석법 (response surface methodology, RSM)을 이용하였다. 요인변수(Xn)를 쌀의 양에 대한 버섯의 비율 (X$_1$), 당근의 비율 (X$_2$), 대파의 비율 (X$_3$)로 하여 중심합성계획에 따라 17실험구로 구분하여 조리실험을 실시하였고, 반응변수(Yn)는 soup mix를 이용하여 제조한 쇠고기 야채 쌀죽의 이화학적 특성인 색도의 L*값 (Y$_1$), a*값 (Y$_2$), b*값 (Y$_3$), 점도(Y$_4$), 퍼짐성 (Y$_{5}$), 고형분 함량(Y$_{6}$), PH (Y$_{7}$)으로 하였으며 관능적 특성인 색 (Y$_{8}$), 향 (Y$_{9}$), 점성 (Y$_{10}$), 맛 (Y$_{11}$), 전체적인 기호도 (Y$_{12}$)를 종속변수로 하여 회귀분석에 이용하였다. 회귀분석에 의한 모델식의 예측에는 SAS (statistical analysis system)program을 사용하였으며, 3차원 반응표면 분석법으로 해석하였다. 야채의 배합비에 따라 제조한 쇠고기 야채 쌀죽의 물리적 특성인 색도의 L*, a*, b* 값에 대한 반응표면 회귀식의 $R^2$은 각각 0.6098(p> 0.05), 0.8803 (p <0.05), 0.6781(p> 0.05)로서 b값에 있어서 그 유의성이 5%수준에서 인정되어 b값에 미치는 영향이 크다는 것을 알 수 있었다. L*값은 63-68사이로, a*값은 0.13에서 -0.89사이를 b*값은 2-5값 사이에서 변화하여 제조한 죽의 색이 옅은 황색임을 알 수 있었다. 고형분 함량, 퍼짐성과 pH에 대한 $R^2$은 각각 0.4280, 0.5433과 0.2406임을 볼 때 버섯, 당근, 대파의 비율에 따라 제조한 쇠고기 야채 쌀죽의 고형분 함량, 퍼짐성과 pH는 설정된 범위내에서 그 유의성이 인정되지 않아 큰 영향을 미치지 않음을 알 수 있었다. 관능검사 결과, 색과 향에 대한 반응표면 회귀식의 $R^2$은 각각0.6000과 0.7825이고 P-value는 각각 0.4290과 0.0942로서 5% 수준에서 유의한 상관성이 없음을 확인할 수 있었다. 맛과 점성에 대한 $R^2$은 0.8717과 0.8068이고 P-value는 각각 0.0195 (p <0.05)와 0.0612로서 야채의 배합비에 따라 맛에 있어서 유의확률 5%수준에서 그 유의성이 인정되었으며, 전체적인 기호도에 대한 유의성은 $R^2$이 0.8463이고 P-value는 0.0344 (p <0.05)임을 볼 때, 설정된 범위내에서 야채의 배합비에 따라 제조한 쇠고기 야채 쌀죽의 맛과 기호도에 큰 영향을 미치는 것을 알 수 있었다. 그리고 최대 임계점이 버섯의 첨가량은 0.99%, 당근의 첨가량은 0.97%, 대파의 첨가량은 0.59%에서 최적 반응표면을 나타내었다. 이상의 결과로 볼 때, 야채의 배합비에 따른 맛과 전체적인 기호도에 있어서 그 유의성이 5%수준에서 모두 유의한 상관관계를 보였으며, soup mix 제조시 쌀가루 양에 대한 야채의 최적 배합비는 버섯, 당근, 대파에 있어서 각각 0.99, 0.97과 0.59%임을 알 수 있었다.

Searle's Conception of Social Reality and the Problem of Freestanding Y Terms (설의 사회적 실재와 '비대응 Y항' 문제)

  • The main purpose of this paper is to survey the debates between Searle and Smith over the problem of "freestanding Y terms" in Searle's conception of social reality, and offer a viable solution, drawing on the experientialist conception of symbolic experience. Smith raises the problem of "freestanding Y term" against Searle's formula "X counts as Y in C" that there may be some cases where we cannot identify an X term to which an Y term refers. In case of an abstract concept such as equity, we may not find exactly what it stands for. That is, we cannot identify exactly what(X term) counts as equity. If there is nothing like an X for Y term, we can regard anything as equity, which may disrupt Searle's formula. Understandably, Smith does not say that the problem dismantles Searle's whole conception of social reality. Instead, Smith intends to show that Searle's formula is neither complete nor specific enough. Apparently, Searle admits that there may be freestanding Y terms and tries to articulate it within his formula, which does not seem to work. I suggest that the experientialist account of symbolic experience may serve to dissolve Smith's challenge, without modifying Searle's original formula. According to the experientialist conception of symbolization, we symbolically map some portion of our experience onto a physical object, which serves as a signifier, and we then understand and experience the signifier "in terms of" the mapped portion of experience. Thus, we experience certain buildings and some relevant people, say students, staffs, and professors in terms of "university." The status functions of university have been created by means of symbolic mappings, which change the way we understand and experience the buildings and people. In this picture, there need not be any notions such as "one-to-one correspondence" between X terms and Y terms. In this way, Searle may maintain his original formula, while dissolving, not answering, Smith's challenge. What Searle needs is a more appropriate theory of symbolization, part of which has been articulated by the experientialist account of symbolic experience.

Development of HyGIS-RAS and HMS Model (HyGIS-RAS모형 및 HyGIS-HMS모형의 개발)

  • 최근 수자원 분야에서 GIS의 활용은 유역의 수리, 수문분석을 위한 모형의 입력자료 생성 및 모의 결과를 가시화, 이에 따른 유역관리 시스템의 구축 등 폭넓게 활용되고 있다. 또한 국가지리정보시스템에 조사를 통해서 수치지형도 및 주제도를 구축, 구축된 자료의 표준화를 실시하고 있는 실정이다. 그러나 수자원 분야에서 GIS를 활용하기 위한 기술은 주로 선진국을 중심으로 발전하여 왔기 때문에 우리의 실정에 맞지 않아 활용측면에 있어 신뢰할 만한 결과를 얻지 못하고 있는 실정이다. 따라서 국내 상황을 고려하면서 수자원이라는 전문분야 적용에 적합한 GIS(HyGIS)를 개발하고 여기에 수리, 수문분석모형을 연계하여 국내 실무분야에 적용함에 있어 편의성과 실용성을 구비한 모형개발이 이루어져야 한다. 따라서 본 연구에서는 국내 소프트웨어 GeoMania(HyGIS)에 의한 GIS 정보처리의 자동화를 기반으로 하여 실무에서 활용도가 높은 수문모형인 HEC-HMS 및 HEC-1과 수리모형인 HEC-RAS를 연계 및 통합하기 위해서 HyGIS에서 DLL형태로 제공되도록 하였다. HyGIS에서는 수문학적 DEM 분석 및 공간정보 생성, 선형참조가 가능한 하천 네트워크 생성, 유역 시설물 관리 등의 기능을 제공하며 COM(Component Object Model)을 기반으로 개발된 시스템으로 다른 소스로부터 개발된 컴포넌트를 연계하여 시스템의 기능 확장을 손쉽게 수행할 수 있도록 하였을 뿐만 아니라 공간 DB는 GeoMania의 고유 DB인 GSS를 이용한다. HyGIS-HMS는 HyGIS를 통한 국내 유역의 지리정보를 활용하여 HEC-HMS 뿐만 아니라 HEC-1을 추가하여 사용자의 기호와 편의에 따라 모형을 선택할 수 있도록 하였으며 HEC-1의 결과를 가시화하기 위해서 챠트 기능을 추가하였으며 매개변수를 자동으로 산정할 수 있도록 시스템을 구축하였다. HyGIS-RAS는 국내 하천유역에 대해서 기구축 되어있는 하천관리지리정보시스템(RIMGIS)자료를 직접 활용하도록 구성되어있고 자료를 활용하여 제내지와 제외지를 통합하여 TIN분석을 실시하여 범람 홍수해석에 활용할 수 있도록 하였다. 하천수리해석의 기능을 보강하기 위해 역산조도계수 산정모형, 상류-사류 천이류 구간에 대한 부등류 해석모형, 범람 홍수류에 대한 홍수위 산정모형, 하천수리계산시의 불확실도 해석모형 등의 새로운 기능을 추가하여 제시하였다. 모든 입출력자료는 프로젝트 단위별로 운영되어 data의 관리가 손쉽도록 하였으며 결과를 DB에 저장하여 다른 모형에서도 적용할 수 있도록 하였다. 그리고 HyGIS-HMS 및 HyGIS-RAS 모형에서 강우-유출-하도 수리해석-범람해석 등이 일괄되게 하나의 시스템 내에서 구현될 수 있도록 하였다. 따라서 HyGIS와 통합된 수리, 수문모형은 국내 하천 및 유역에 적합한 시스템으로서 향후 HydroInformatics 구현을 염두에 둔 특화된 국내 수자원 분야 소프트웨어의 개발에 기본 토대를 제공할 것으로 판단된다.

A Preliminary Study of Ecological Aspects of Food on a Kind of Gom-Tang(Beef Soup made with Internal Organs and Bone) Intake (식생태학적(食生態學的) 관점(觀點)에서 본 곰탕류(類) 섭취(攝取)에 관한 예비적연구(豫備的硏究))

  • This study was conducted to investigate the intake of a kind of Gom-Tang (Beef soup made with internal organs and bone), which is the Korean traditional food, and factors affecting the eating behavior of customers. Two hundred male customers of a H Korean Restaurant specialized in Gom-Tang, which is a well-known restaurant in Seoul, were surveyed from June 26 to 29, 1990. The results were shown as follows. (1) ${\ulcorner}$Frequency of intake${\lrcorner}$ and ${\ulcorner}$preference${\lrcorner}$ were very high. Those who took a kind of Gom-Tang ${\ulcorner}$more than once a week${\lrcorner}$ were 66.5% of the subjects. Those who evaluated ${\ulcorner}$good${\lrcorner}$ for the taste and flavor were 86.5% and 59.0% of the subjects, respectively. (2) The reasons why they chose a kind of Gom-Tang from among many Korean traditional foods were ${\ulcorner}$preference${\lrcorner}$ and ${\ulcorner}$phygiological condition${\lrcorner}$ in ${\ulcorner}$high frequency of intake${\lrcorner}$ group. ${\ulcorner}$Phygiological condition${\lrcorner}$ was more critical factor than ${\ulcorner}$preference${\lrcorner}$ in ${\ulcorner}$low frequency of intake${\lrcorner}$ group. (3) The effect of the intake of a kind of Gom-Tang on health was evaluated as ${\ulcorner}$healthy${\lrcorner}$ (80.5%). ${\ulcorner}$No effect${\lrcorner}$ and ${\ulcorner}$harmful${\lrcorner}$ were 30.5% and 6.5%, respectively. (4) ${\ulcorner}$High frequency of intake${\lrcorner}$ group, mainly more than 50 years of age, had a high ${\ulcorner}$preference${\lrcorner}$ and ${\ulcorner}$food knowledge${\lrcorner}$ as well as positive ${\ulcorner}$eating behavior${\lrcorner}$ and ${\ulcorner}$healthy state${\lrcorner}$, ${\ulcorner}$Middle frequency of intake${\lrcorner}$ group, mainly the forties, had a high ${\ulcorner}$preference${\lrcorner}$, but had less positive ${\ulcorner}$eating behavior${\lrcorner}$ than ${\ulcorner}$high frequency of intake${\lrcorner}$ group. ${\ulcorner}$Low frequency of intake${\lrcorner}$ group, mainly the twenties and thirties, had a medial ${\ulcorner}$preference${\lrcorner}$. They took a kind of Gom-Tang for reasons of ${\ulcorner}$on the recommendation of friends${\lrcorner}$ better than ${\ulcorner}$preference${\lrcorner}$. Foregoing results showed that ${\ulcorner}$a kind of Gom-Tang${\lrcorner}$ was a typical food recognized as ${\ulcorner}$healthy${\lrcorner}$ as well as ${\ulcorner}$delicious${\lrcorner}$. This may suggest that ${\ulcorner}$a kind of Gom-Tang${\lrcorner}$ is a candidate for the effective food on nutritional education.

The Characteristics of Mathematical Errors & Discourse in a Supplementary Class for the Migrant Students from North Korea (탈북학생들을 위한 수학 보충학습에서 담론 속에 나타난 오류유형과 담론의 특성)

  • This study was designed to find the characteristics of mathematical errors and discourse in simultaneous equations and inequalities for migrant students from North Korea. 5 sample students participated, who attended in an alternative school for the migrant students from North Korea at the study in Seoul, Korea. A total of 8 lesson units were performed as an extra curriculum activity once a week during the 1st semester, 2011. The results indicated that students showed technical errors, encoding errors, misunderstood symbols, misinterpreted language, and misunderstood Chines characters of Koreans and the discourse levels improved from the zero level to the third level, but the scenes of the third level did not constantly happen. Nevertheless, the components of discourse, explanation & justification, were activated and as a result, evaluation & elaboration increased in ERE pattern on communication.

Settlement and Sliding Possibility of the Foundation of the Waste Landfill Constructed on Natural Marine Clay (자연 해성점토 위에 건설한 폐기물매립장 기호지반의 침하와 활동 가능성)

  • In this paper, the consolidation settlement of the landfill foundation during and after the period of disposal is analyzed using the program CONSOL which can include the influence of waste load and the leachate level into the analysis. the stability analysis of the embankment is also performed under the varied strength of foundation soil which results from the increase of effective stress due to consolidation of the clay under the landfill. The predicted settlement from CONSOL is compared with the field measured settlement. The results show that, when the leachate level increases with the increase of waste height, the increase of the effective stress of foundation clay is negligible and the stability of the slope of the landfill may not be secured as the disposal of the waste proceeds. Several complementary repairworks, e. g. the reduction of current slope of the fill, application of drain methods to stop or reduce !he leachate level are recommended. The predicted settlement consists moderately with the field measured settlement.

  • To analyze a multibody system, this paper proposes an implicit numerical integration method for joint coordinates subsystem synthesis method. To verify the proposed method, a multibody model for an unmanned robot vehicle, which consists of six identical independent suspension systems, is developed. The symbolic method is applied to compute the system Jacobian matrix for the implicit integration method. The proposed method is also verified by performing rough terrain run-over simulation in comparison with the conventional implicit integration method. In addition, to evaluate the efficiency of the proposed method, the CPU time obtained by using this method is compared with that obtained by using the conventional implicit method.
