Transfer Rate of Cross Contamination of Listeria monocytogenes between Pork Meat and Workers' Hands during Pork Meat Processing (포장돈육 가공공정 중 돈육과 작업자 손과의 Listeria monocytogenes의 교차오염 전이율)

  • This study was performed to determine the transfer rates of each foodborne pathogen from pork meat packaging during the processing. We analyzed the transfer rate of Listeria monocytogenes from contaminated pork meat to worker's hands (wearing polyethylene gloves, PEG; cotton gloves, CG; and bare hands), cutting boards and knives, and vice versa. Transfer rate of CG 100.00% was higher than that of bare hands 2.513% and PEG 1.511%. In particular, when wearing Co, the transfer rate from the CG to bare hands with CG was 0.08%. Also, the range of transfer rates from contaminated pork meat to cutting board and knife was 0.352-3.791%. In contrast, transfer rates from the workers' hands (with PEG/CG and bare hands) to cutting board, knife, and pork meat ranged from 0.001 to 0.141%. There was a lower transfer rate from workers' hands than from pork meat. These findings indicate that use of PEG could effectively reduce or prevent the cross-contamination compared to CG and provide important information concerning the consecutive transfer of L. monocytogenes during food processing.

  • This study describes cross-contamination events that occur in animal food processing. We analyzed the number of Salmonella spp. contamination transferred from pork meat to workers' hands (wearing polyethylene gloves; PG, cotton gloves; CG, and bare hands), cutting boards and knives, and vice versa. Transfer rate of CG 38.80% was higher than that of PG 3.11% and bare hands 1.35%. In particular, when wearing CG, the transfer rate from the CG to bare hands with CG was 0.07%. Also, the range of transfer rates from the contaminated pork meat to cutting board and knife was 0.20-1.99%. In contrast, the transfer rates from the worker's hands (with PG/CG and bare hands) to cutting board, knife, and pork meat ranged from 0.0015-0.21%. There was a lower transfer rate from workers' hands than from pork meat. These findings indicate that the use of PG compared with CG could effectively reduce or prevent the cross-contamination and provide important information concerning the consecutive transfer of Salmonella spp. during food processing.

Sanitary Conditions for Cold and Frozen Food Storage Warehouses in Korea (국내 식품 냉장.냉동 창고 위생관리 수준 분석)

  • We surveyed the sanitary conditions for 17 cold and frozen food storage warehouses in Korea, using the following 5 inspections items: "putting into warehouse (A)", "prevention of cross-contamination (B)", "storage management (C)", "temperature control (D)", and "management of records and documents (E)", We included 20 detailed items. The results of distribution for frequency by five major inspection items showed that "(E)" was the highest, the next "(D)", "(C)"; and "(B)" was the lowest. In the correlation of inspection scores between total scores, "(B)" and "(C)" were highly related to the total score, therefore, the higher score of "(B)" or "(C)", the higher for the total score. In details of inspection items, "the management of cross-contamination upon taking product out of the warehouse" had the lowest score with a mean, of $2.67{\pm}1.80$, and also ranked as first of the 20 items.

  • This study is undertaken to evaluate the characteristics of cross contamination around exterior air-vents. A CFD analysis has been performed to calculate the cross contamination index for five exterior air-vents sizes according to the outdoor air velocity and separation distance of it. From the result of the numerical method, As the outdoor air velocity is increased, the cross contamination index is increased. on the contrary, as the separation distance of exterior air-vents is increased, the cross contamination index is decreased, additionally the cross contamination is affected by the aspect ratio of the size of exterior Air-vents.

  • Relationship between the daily mortality and total suspended particulate(TSP) for the period of 1996-1997 was examined in Seoul, Korea. Generalized additive model was adapted for the analysis to allow the seasonality and long-term time effect in the air pollution and the nonlinear relationships with weather variables such as air temperature and relative humidity. An increase of 100 Ji9/m') TSP corresponds to 0.8-5.2 percent increase of the daily mortality Unidirectional (prospective and retrospective) case-crossover design results in large bias of the estimates. Bidirectional method gives relatively unbiased estimates but the standard errors are larger Case-crossover design should be used with caution in the situation where the data have seasonal trends like air pollution study.

대구시 주거지역의 오존농도 평가

  • 본 연구에서는 2001년부터 2005년까지의 최근 5년간의 대구시 보건환경연구원의 대기질 자동측정망 자료와 대구기상대의 기상자료를 이용하여 통계적 방법을 이용하여 대구시 주거지역의 오존농도를 평가하였다. 분석기간은 2001년부터 2005년까지 고농도 오존일이 가장 많이 발생한 5, 6월을 대상으로 하여, 오존농도와 대기오염물질 및 기상요소와의 상관관계분석과 교차상관관계 분석을 실시하였다. 대구지역의 오존농도는 측정지점별로 약간의 차이는 있지만, 기온 및 일사량이 증가하는 하절기에 증가하고, 동절기에 감소하는 전형적인 패턴을 보여주었다. 분석기간 중 오존최고농도는 상관관계분석 결과 고농도 오존에 영향을 주는 인자로 대기오염물질로는 $NO_2$, NO 그리고 기상요소로는 온도, 상대습도, 일사량으로 나타났다. 교차상관관계분석 결과 NO2, NO, 온도와 상대습도는 0시간 차이에서 가장 높은 상관계수를 나타내었으며, 일사량의 경우 오존농도가 최고치를 나타낼 때보다 -2시간 차이에서 가장 높은 상관계수를 나타내었다.

  • We performed the numerical study on the characteristics of the 3-D airflow and dynamic cross contamination in the photolithography process cleanroom. The nonunifurmity, the deflection angle and the global cross contamination were used for analyzing the characteristics and performances of cleanroom. From the numerical results, we knew that the airflow characteristics of the cleanrooms are largely affected by the porosity of panel and the adjustment of dampers and the global cross contamination varies with the location of source and the passage of time through the concentration ratio.
