A survey was carried out to determine the nutritional status of rural elderly. Determination was made on 50 persons, aged 60 years and over, in the rural area of Paltan-myeon, Hwaseong-kun, Kyeonggi province from June 1 to August 20, 1980. Grains provided 82$\sim$85% of total energy input most nutrient intake was from vegetable foods. Daily energy intake was not sufficient as 77.2$\sim$89.8% of RDA. The energy input percentage of carbohydrate: fat: protein was 79 : 10 : 11. showing higher dependance on carbohydrate. The protein intake only met 53.7$\sim$65.3% % of RDA. The contribution of animal proteins to total protein was only 12.2$\sim$12.4%, far below the recommended allowance. Both calcium and iron was insufficiently ingested as 40.6$\sim$55.7% and 72.0$\sim$92.0% of RDA, respectively. The intake of vitamin A and ascorbic acid almost reached RDA whereas the intake of thimin, riboflavin and niacin was not sufficient as 63.0$\sim$97.0%, 51.0$\sim$58.5% and 59.1$\sim$83.9% of RDA, respectively. 32% of the subjects were higher blood pressure than 160/95 mmHg proven to be hypertension. The correlation coefficients between clinical sign score, index of appetite, balance of meal and nutrient intake were significant. (P<0.05)

This study was designed to be link in the chain of the investigation on daily life and consciousness of longevous people in Korea, and to investigated the dietary life and its habit of longevous people in the past. The dietary life ana its habit were surveyed on 379 subjects (male 121, female 258) of the aged who were above 80 years of age, from June to November in 1985. 1. Of the taste on staple food of longevous peoples in the past(between 40 and 60 years), 'meal mixed with barley' had the highest figure of 49.9%, followed by 'boiled rice'(47.0%). But it is showed that male preferred 'meal mixed with barley'(56.2%) to 'boiled rice'(41.3%). whereas female slightly preferred 'boiled rice'(49.6%) to 'meal mixed with barley'(46.9%). 2. Of the experience of the food taste of these aged in the past, 'not salted' and 'light' had the highest figures of all 40.6%. It is showed that longevous peoples preferred 'not salted'(40.6%) and 'light'(40.6%) to 'salty'(24.5%) and 'oily'(9.8% ), respectively. 3. By comparison of the intake state of animal protein(meat and fish) of these aged in the past, 'occasionally' was the highest of 55.4%, and decreased in the order of 'almost daily'(31.9%) and 'scarcely'(12.7%). Therefore, it is believed that 87.5% of longevous peoples has taken animal protein 'occasionally' and 'almost daily'. 4. The intakes of major foods above $4{\sim}6$ times a week of these aged in the past and present showed 50.4% and 67.5% for meat, fish, egg and soybean products, 26.6% and 51.5% for milk and its products, 89.9% and 81.0% for vegetables, 58.9% and 64.0% for oiled food, and 57.0% ana 62.934 for seaweeds, respectively.

The object of this study is to develop the method for differentiating fresh meat from frozen meat by using the measurement of the mitochondrial malate dehydrogenase in the Korean native cattle. The principle of this experiment is based on the fact that the enzyme proteins associated with mitochondrial membrane could be released by freezing. The methods of differentiating fresh meat from thawed, frozen meat were studied by measurements of mitochondrial malate dehydrogenase activity of meat press juice. Fresh and frozen beef were stored at 4, -4, -18 and -77$^{\circ}C$ for 15-day storage period. A meat press machine using air pressure was manufactured especially for these experiments, and sufficient amount of drip (about 0.15 mL/g) from 1.5 g of beef sample was efficiently obtained under a pressure of 8 kg/$cm^{2}$ generated by the meat pressing machine. The mitochondrial malate dehydrogenase activities of frozen meat drip i년ices stored at -18 and -77$^{\circ}C$ were significantly higher than those of fresh and frozen meat samples at -4$^{\circ}C$ (p < 0.05) during 10-min reaction period. However, the enzyme activities of the frozen meat drip juices (-18 and -77$^{\circ}C$) disappeared after 5 minutes of the reaction, which was not observed from the fresh and -4$^{\circ}C$ frozen meats. The enzyme activity maintained until 12 minutes for the fresh and -4$^{\circ}C$ frozen meats. From these results, the mitochondrial malate dehydrogenase could be considered as an indicator to differentiate fresh beef from frozen one.
This experimentation aims to study on the characterics of tree growth by forestry land soil system and the effect of applied fertilizer by kind of tree for obtaining basic data on application of fertilizer to forestry land and to further investigate the restriction factor of tree growth by soil system for promoting more effective application of fertilizer to forestry area. 1. The characteristics of tree growth by soil system showed that tree growth was worst on erosive soil, bad on red or red and yellow soil and generally good on brown soil. 2. With regard to Black Locust, the restriction factor of its growth appeared the content of $P_2O_5$ in the soil and the less the content of $P_2O_5$ is in the soil, the worse its growth was and its growth was bad on clay soil. 3. The growth of pinus seems closely related with the content of $K_2O$ in the soil and the growth of PH was bad on neutral or alkali soil and good on weak-acid soil. Its growth greatly depended upon the content of OM or FN. 4. As Suwon Poplar is a kind of tree requiring for a special soil, its growth required for fertile soil and the content of O. MN $P_2O_5$$K_2O$ was proportional to its growth. 5. The growth of Black Locust, pinus and Suwon Poplar was good on the soil containing much sand but bad on the soil containing much clay.
Press drying was used on italian poplar (Populus euamericana) to find the profitable means of drying. This study was designed to investigate the process of platen drying considering core temperature, drying time, current moisture content, drying rate, shrinkage and recovery, and green volume specific gravity, equilibrium moisture content and dimensional stability of press dried material and air dried material, The drying tests were conducted using 1.5 centimeter thick material at platen temperature of $175^{\circ}C$. The results were summarized as follows. 1. Core temperature was divided into three stages of drying characterized by period initial heating, plateau temperature and rising core temperature. Plateau temperature was 114 to $119^{\circ}C$. 2. The following predicting equations of drying time(y) in different core temperatures were developed for initial thickness($x_1$), initial moisture content ($x_2$) and final moisture content ($x_3$) 3. The predicting equaltion of current moisture content(u) was log u=4.658-0.060t as funtion of drying time(t) and that of drying rate(r) was log r=-2.797-0.049t. Current moisture content and drying rate of air drying were shown in figure 2. 4. The predicting equation of shrinkage in thickness direction(y) was log y=1.933+0.038t as function of drying time(t), and that of expansion in width direction was $y=-0.692+0.043t-0.001t^2$. 5. Thickness shrinkage was increased more than proportional at to pressure increase. Width shrinkage and thickness recovery was greatest at 35psi. 6. Green volume specific gravity of press dried material was 25% greater than that of air dried material. But equilibrium moisture content of press dried material was less 24% than that of air dried material. Antishrinkage efficiency of press dried material were obtained 27.7%.
These studies were carried out to know the measure of damage having an effect on the ornamental trees owing to sulfurous acid gas($So_2$) which injures much forest trees among air pollutions in south area of Korean and to know the difference of smoke resistance on the five representative species among them and therefore to establish the preventive measure of air pollutions in industrial complex of south area of Korea by the ornamental trees. The reaction formula utilized was $Na_2So_2+H_2So_4$$Na_2So_4+H_O+So_4$. The results obtained were as follows. 1) The ornamental trees surveyed in the industrial complexes of Ul-San, Chang-Won and Po-hang belonged to 51 species, 161,699 trees in all. The most five species among 51 sorts of woody plants were Populus tomentiglandulosa, Buxus microphylla, Forsythia korenan, Juniperus chinensis and Pinus densiflora. 2) The relation between the concentration of sulfurous acid gas($So_2$) and the damage rate upon investigation in each species: In case of low concentration the destructive quantities of cells of woody plants, and the more increased the concentrations, the more increased the amount of damage. 3) The difference of smoke resistance among five species showed to be the strongest in Buxus micorphylla, the second rand Pupulus tomentiglandulosa, the third rand Forsythia koreana, the fourth rank Juniperus chinensis and the weakest in Pinus densiflora. 4) The ornamental trees of industrial complex expecially in south area of Korea in future should be planted gradually broad-leaved trees which have strong sprout, smoke resistance and thick leaved rather than comifers. 5) I think that the area of city forest in industrial complex requires about $50m^2$ per head of population and about 100m width of green belt between industrial area and residential district.
A bark comprises about 10 to 20 percents of a typical log by volume, and is generally considered as an unwanted residue rather than a potential1y valuable resourses, As the world has been confronted with decreasing forest resources, natural resources pressure dictate that a bark should be a raw material instead of a waste. The utilization of the largely wasted bark of genus Pinus, Quercus, and Populus grown in Korea can be enhanced by learning their chemical properties. However, the chemical study of tree bark grown in korea have never been undertaken. In the present paper, the studies on the chemical properties of bark comprise carbohydrates, lignin, and extractives, composition of reducing sugars and five essential elements. The results may be summarized as follows: 1. Bark are much richer in quantity of lignin and extractives than the corresponding wood, and are chiefly consisted of lignin, extractives and carbohydrates orderly. It is the same with ash contents. Alcohol-benzene extractives of populus bark are the highest among three genus. 2. Although glucose constitutes the major sugar in both pine and hardwoods bark, in pinus, arabinose and xylose are the next but in hard woods, the next is xylose. 3. Essential elements, Ca and Kjeldahl-N are higher in the bark than in the wood. Ca content is the highest among others, and N,K followed it. Essential elements are higher in Quercus than in Populus and pinus.
The study was conducted to find out the relationship between land cost and financial yield earned by the plantations of Pinus koraiensis, Pinus densiflora and Cryptomeria japonica, and to investigate possible land investment for the given rates of return. The result of the study could be summarized as follows: 1. In the case of Pinus koraiensis plantation on site index 12, the finnancial yield was 6.4 percent when the land cost was 0.5 million Won per hectare, but the yield was reduced to 2.1 percent when the cost was 2.5 million Won. It would be therefore necessary for inducing plantation investment to raise financial yield by control of forest land price. 2. The financial yield on land of zero expectation value, in other words, internal rate of return of land investment was estimated at 10 percent. If the opportunity cost of forest land is higher than this, the economic plantation is not visible even though the land is free. 3. With the expected financial yield of 3 percent, the possible land investment of poor sites was estimated at 1.24, 0.28 and 0.80 million Won per hectare for the plantation of Pinus koraiensis, Pinus densiflora and Cryptomeria japonica, respectively. In any case, however, land cost could not be over 3 million Won per hectare. 4. The rate earned from forest land investment was generally less than 10 percent. Therefore, the annual interest rate in forestry could not be higher than this, and hopeful rate is not exceeding 6 percent.

This study investigated the quality characteristics of kiwi wine during low temperature aging on several alcohol fermentation strains. Alcohol content increased sharply from 2 days of fermentation, and then maintained steadily after 8 days of fermentation. In the alcohol content of kiwi wine on several alcohol fermentation strains such as Sacch. cerevisiae GRJ, Sacch. kluyveri DJ97 and Sacch. cerevisiae Wine 3 showed a high value of more than 13%, 12.7% for Zigosacch. cerevisiae JK99 and 12.3% for Sacch. cerevisiae OMK, respectively. Sugar content decreased steadily during fermentation and then showed approximately $10^{\circ}$Brix on 8 days of fermentation. Total acidity ranged $1.03{\sim}1.04%$ in total samples, increased slowly during fermentation and then maintained steadily during aging. During the fermentation, L value in Hunter's color value continued to increase, a value decreased steadily and b value showed high yellow to approximately 20.0. For aging duration, L and b values decreased while a value increased. Glucose and maltose were detected as free sugars of kiwi wine. In volatile flavor compounds, alcohols were identified differently on alcohol fermentation strains, but the others showed similar tendency. In conclusion, quality characteristics of kiwi wine on several alcohol fermentation strains showed similarly; however, Sacch. cerevisiae Wine 3 was overall the most suitable.
The purposes of this study are to analyze and forecast the domestic demand for papers by regression models with time-series data (1965-81). For the period of 1965-81, the real GNP of Korea grew at annual average increase rate of 8.8 percent. On the other hand, the domestic demand of papers grew at annual average increase rate of 17.9 percent in this period. Especially, the annual average increase rate for board-papers accounted to 25.8 percent. To analyze domestic demand for papers, GNP, per capita GNP, price findex of papers, production activity index of the major papers consuming industries and price index of substitutive goods were selected as independent variables. The expected values of domestic demand for papers were computed by forecasting equations as follows. Per capita GNP elasticity of the domestic demand for papers was the most elastic among independent variables. The price elasticity of domestic demand for papers had negative sign and inelastic. These were not only statistically significant but theoretically compatible. The domestic demand for papers was projected to be 3,152-4,470 thousand mit in 1991, representing at annual increase rate of 5.0-12.4 percent during the period of 1982-91. Domestic demand for papers per capita was projected to be 69.1-98.0 kg in 1991.
