Elderly people avoid eating red meat and dried meat product due to its texture and stiffness; they deprive them of rich sources of nutrients. In addition, food-related diseases are exponentially increasing due to using synthetic additives in food products. Therefore, this research aimed to develop semi-dried goat meat jerky considering geriatric preferences by using natural tenderizers and nitrate. Four treatments were formulated negative control (NC [synthetic nitrite without tenderizers]), positive control (PC [Swiss chard without tenderizers]), T1 (Swiss chard with pineapple powder), and T2 (Swiss chard with pineapple and tomato powder). T1 and T2 had higher processing yield, and rehydration capacity compared with NC and PC. The fat content of T1 and T2 was lower than the control groups. Moisture was significantly higher in T1, NC, and T2 than in PC (p < 0.05). T2 showed the lowest water activity (0.87), lowest shear force (4.82 kgf), and lowest total plate count (TPC). The lowest pH and thiobarbituric acid reactive substances (TBARS) were observed in T1 and T2. T1 showed the lowest lightness and the maximum redness (p < 0.05) while PC showed the lowest yellowness. During the storage period, moisture and pH decreased, and TPC and TBARS significantly increased whereas water activity is stable regardless of the treatment. The results of the myofibrillar fragmentation index (MFI) and sodium dodecyl sulfate-polyacrylamide gel revealed that T1 and T2 more effectively converted protein to polypeptides. In addition, tenderizers positively affected thrombogenicity, atherogenicity, and hypocholesterolemic/hypercholesterolemic indices. T2 observed the highest overall sensory acceptance by reducing goaty flavor. Overall, jerky treated with tenderizers is easily chewable and digestible for the elderly due to its tenderness and essential fatty acids that would be senior-friendly food.
The installation of subsurface drainage equipment is required for generalized use of paddy field and to improve soil productivity. The internal drainage of paddy field has improved root condition from the increasing of oxygen supply and removing noxious elements. This experiment was carried out to determine the effects of fertilization and drainage system on soil characteristic, growth and lodging trait of rice in paddy soil. A subsurface drainage system was installed a depth of 0.8m. Three fertilizer treatments were applied : 1) Conventional fertilized plot, 2) Controlled-release fertilized plot, 3) No-fertilized plot. In conventional plot, 110 kg N (as urea 46%), 45 kg P (as fused phosphate 20%) and 57 kg K (as potassium chloride 60%) per hectare fertilizers were applied. Controlled-release fertilizer was applied by 70% of N compared to the conventional plot. During the rice cropping, the water depth decrease was two times higher in subsurface drainage(SD) plot than non-drained(ND) plot. After harvesting of rice, the bulk density of sub-soil(10-20cm depth) was lower in SD plot than ND plot. After the experiment, the surface soil pH was high at SD plot but sub-soil was high at ND plot. Organic matter content was higher in all soil layer for SD plot than fro ND plot. Available $P_2O_5$ was not different between SD and ND plot for surface soil, but was high for SD plot for sub soil. The $NH_4{^+}-N$ content of soil, shoot dry matter, total nitrogen and $K_2O$ of rice plant were greater after panicle formation stage in SD plot. Total nitrogen content, $P_2O_5$ and $K_2O$ of rice root were high in SD plot after heading. Though the gravity center and 3rd internode length were greater, pulling force of rice root was higher in SD plot than ND plot. Rice yield in SD plot were low at conventional and controlled-release fertilized plot because of the greater field lodging, but yield in SD plot was high at no-fertilized plot. This study indicates that the fertilization level should be decrease on subsurface drainage system for rice cropping.
This work was carried to evaluate production efficiency factor, carcass yield and meat quality with weeks of Large-type Korean native ducks. Korean native ducks (n = 90) from National Institute of Animal Science (RDA, Korea) were used in this work. Ninety ducks were divided into 6 groups (15 birds/group) and were fed with meat-type duck diets for 8 wk old. When ducks grew at specific wk (6, 7 and 8 weeks), 2 ducks per group were slaughtered at 6, 7 and 8 wk old. Production efficiency factor, carcass yield, partial meat and meat quality were researched in this work. There was no significant difference on livability with weeks, but body weight at 7 and 8 wk old was higher than that at 6 wk old (P<0.05). Feed conversion ratio at 6, 7 and 8 wk old were 2.25, 2.69 and 3.21, respectively, so there was significant difference with weeks (P<0.05). Production efficiency factor at 6, 7 and 8 wk old were 256.6, 199.8 and 153.0, respectively, so there was significant difference with weeks (P<0.05). Carcass yield at 8 wk old was higher than that at 6 and 7 wk old as 73.5% (P<0.05). Lightness at 6, 7 and 8 wk were 41.8, 39.0 and 38.1, respectively, and that at 6 wk old was the higher than other weeks (P<0.05). There was no significant difference on redness at 6, 7, and 8 wk old (P>0.05) and yellowness at 8 wk old was higher compared to other weeks (P<0.05). Cooking loss was the highest at 6 wk old as 31.6%, but water holding capacity was the highest at 8 wk old (P<0.05). There was no significant difference on shear force among weeks. pH at 6 wk old was the lower than that of other weeks as 5.84. Moisture content significantly decreased with weeks (P<0.05) and fat content at 8 wk was the highest as 1.88% (P<0.05). Protein content significantly increased with weeks until 20.9% at the age of 8 wk (P<0.05). Ash content at 7 and 8 wk old was the higher than that at 6 wk old (P<0.05). There was no significant difference on juiciness, tenderness, and flavor with weeks. Finally, these results may provide that shipping time at 7 wk old preferred to that at 6 and 7 wk old, but further research was needed because of deficiency of data.

The cultivation method of shiitake is divided into two methods: log cultivation and sawdust cultivation. Recently, the importance of sawdust cultivation has been highlighted due to problems such as environmental problems, rising labor costs, and a reduced labor force. Among the 24 Sawdust-cultivated Lentinula edodes cultivars in Korea stored by the National Institute of Forest Science, this study was conducted to select excellent cultivars under the sawdust block cultivation method. After inoculation, the sawdust mediums were cultured for 100 days (60 days in dark and then 40 days in light), and only Sanjo 712ho sprouted the primordia on the 10th day of light culture (total 70 days of cultivation). As a result of cultivation, the average total yield of the 24 cultivars were 1,816 g and Sanjo 712ho was 2,267 g. The fruiting body yield was the highest in Sanjo 713ho with 3,443 g followed by Sanjo 710ho (3,355 g). Sanlim 10ho, Sansanhyang, and Sanjo 716ho showed low production with 174, 238, and 214 g, respectively. As a result of investigating the morphological characteristics of the fruit bodies, the fresh weight of Sansanhyang and Bambithyang was about twice as heavy as the overall average, and Sulbaekhyang was about twice as light. Bambithyang was the largest and longest in diameter and length of the stipe, and the thickness of the stem was the thickest in Sanjo 716ho. As for the hardness of pileus, Bambithyang showed the highest value at 1,276 g/5 mm, and Sanjo 711ho showed the lowest value at 542 g/5 mm. In summary, Bambithyang showed the best fruiting body characteristics and Sanjo 713ho showed the highest yield in the sawdust block cultivation method. This study, the cultivar with shortened cultivation periods and cultivars with excellent morphological characteristics and high yields.
An equation for calculating confining reinforcement amount of RC bridge columns, specified in the current bridge design codes, has been made to provide additional load-carrying strength for concentrically loaded columns. The additional load-carrying strength will be equal to or slightly greater than the resistant strength of a column against axial load, which is lost because the cover concrete spalls off. The equation considers concrete compressive strength, yield strength of transverse reinforcement, and the section area ratio as major variables. Among those variables, the section area ratio between the gross section and the core section, varying by cover thickness, is a variable which considers the strength in the compression-controlled region. Therefore, the cross section ratio does not have a large effect in the aspect of ductile behavior of the tension-controlled region, which is governed by bending moment rather than axial force. However, the equation of the design codes for calculating confining reinforcement amount does not directly consider ductile behavior, which is an important factor for the seismic behavior of bridge columns. Consequently, if the size of section is relatively small or if the section area ratio becomes excessively large due to the cover thickness increased for durability, too large an amount of confining reinforcement will be required possibly deteriorating the constructability and economy. Against this backdrop, in this study, comparison and analysis were performed to understand how the cover thickness influences the equation for calculating the amount of confining reinforcement. An equation for calculating the amount of confining reinforcement was also modified for reasonable seismic design and the safety. In addition, appropriateness of the modified equation was examined based on the results of various test results performed at home and abroad.

A flexible electronic device deformed by external force causes the failure of a semiconductor die. Even without failure, the repeated elastic deformation changes carrier mobility in the channel and increases resistivity in the interconnection, which causes malfunction of the integrated circuits. Therefore it is desirable that a semiconductor die be placed on a neutral line where the mechanical stress is zero. In the present study, we investigated the effects of design factors on the position of neutral line by finite element analysis (FEA), and expected the possible failure behavior in a flexible face-down packaging system assuming flip-chip bonding of a silicon die. The thickness and material of the flexible substrate and the thickness of a silicon die were considered as design factors. The thickness of a flexible substrate was the most important factor for controlling the position of the neutral line. A three-dimensional FEA result showed that the von Mises stress higher than yield stress would be applied to copper bumps between a silicon die and a flexible substrate. Finally, we suggested a designing strategy for reducing the stress of a silicon die and copper bumps of a flexible face-down packaging system.
Consumers have become very conscious about their nutrition and well being due to changes in their socio-economic lifestyle and rapid urbanization. Therefore, development of technology for production of low cost and functional meat products is urgently required. One such approach is innovative restructuring technology in which binding of meat pieces still remains the main challenge and extension of product is generally associated with poor binding and texture. Thus, the present study was envisaged as an attempt to solve this problem by the incorporation of flaxseed flour (FF) as bind enhancing agent. The FF was used at three different levels viz., 0.5%, 1%, and 1.5% to replace lean meat in pre-standardized restructured mutton chops formulation. The products were subjected to analysis for physico-chemical, sensory and textural properties. Cooking yield, moisture percentage and fat percentage increased with increase in the level of incorporation of FF, however, protein percent and pH decreased with increase in the level of incorporation. Shear force value of product incorporated with 1.5% FF was significantly higher (p<0.01) than control and product containing 0.5% FF level. Among the sensory attributes, product with 1% flaxseed flour showed significantly higher values (p<0.05) for general appearance, binding, texture and overall acceptability. Hardness showed significant increasing (p<0.01) values with increasing levels of incorporation of flaxseed flour, however all other parameters of texture profile analysis showed a decreasing trend. On the basis of sensory scores and physico-chemical properties, the optimum incorporation level of FF was adjudged as 1%. Products incorporated with optimum level of flaxseed flour (1%) were also assessed for water activity and microbiological quality during the storage period of 15 days. It was found that the extended restructured product could be safely stored under refrigeration ($4^{\circ}C{\pm}1^{\circ}C$) in low density polyethylene (LDPE) pouches for 15 days without marked deterioration in sensory and microbiological quality. Thus, it was concluded that flaxseed flour can be used as a good bind enhancing agent in extended restructured meat products at an economic cost.
Recently, a high-strength strand of 2400 MPa was developed using domestic technologies. In 2011, KS D 7002 was revised to cover the newly developed high-strength strands to support their practical usage. Presently, however, discussions and evaluations are not sufficient on the mechanical properties of the strands and their performance in structural members. Also, there were no detailed reviews on the need to revise the current design code for practical use of the high-strength strands. In this study, flexural behavior of a member with the high-strength strands was estimated through sectional analysis and a review and comparison of the domestic and foreign design codes were conducted considering the analysis results. Also, the need for the revision of the design code was discussed. Such discussion especially focused on the estimation of the stress in strand, which related with various issues such as determination methods for yield point of strands, time-dependent loss of prestressing force, estimation of stress in strand at member failure, and net strain limit for ductile failure of member. The discussion revealed that some parts in the design code need a revision and the further studies are required.
The aim of this study was to investigate the effect of supplemental recombinant bovine somatotropin (rbST) and cooling with misters and fans on renal function in relation to regulation of body fluids in different stages of lactation in crossbred Holstein cattle. Ten, 87.5% crossbred Holstein cattle were divided into two groups of 5 animals each, housing in a normal shaded barn (NS) and in a shaded barn with a mister-fans cooling system (MF). The experiment in each group was divided into 3 phases, early- (Day 75 postpartum), mid- (Day 135 postpartum), and late stage of lactation (Day 195 postpartum). The pre-treatment study was conducted on the starting day of each stage of lactation and the treatment study was performed after the end of the pre-treatment, during which the animal was injected with 500 mg of rbST (POSILAC) every 14 days for three times. During the study, ambient temperature at the hottest period daily in the MF barn was significantly lower, while relative humidity was higher than that of the NS barn. The temperature humidity index (THI) in both barns ranged from 79-85 throughout the periods of study. Cows in the MF barn showed a lower rectal temperature and respiration rate as compared with cows in the NS barn. The effect of rbST administration increased both rectal temperature and respiration rates of cows housed in either the NS or MF barn. Milk yield significantly increased in cows treated with rbST in all stages of lactation. Increases in mammary blood flow, accompanied by increases of total body water (TBW), extracellular fluid (ECF), blood volume (BV) and plasma volume (PV), were observed in both groups of cows receiving rbST in all stages of lactation. No alterations of renal blood flow and glomerular filtration rate were observed in cows receiving rbST, but decreases in urinary excretion and fractional excretion of sodium, potassium and chloride ions appeared to correlate with reduction in the rate of urine flow and osmolar clearance during rbST administration. These results suggest that the effect of rbST supplementation to cows housed either in NS or MF barns on body fluid volume expansion is attributable to changes in the rate of electrolyte excretion by the kidney. The increased availability of renal tubular reabsorption of sodium, potassium and chloride ions during rbST treatment was a major factor in retaining body water through its colligative properties in exerting formation of an osmotic force mechanism.
This paper presents the results of an analytical study to evaluate the inelastic seismic response characteristics of multistory building structures, the effects of gravity load on the seismic responses and its implications on the earthquake resistant design. Static analyses for incremental lateral force and nonlinear dynamic analyses for earthquake motions were performed to evaluate the seismic response of example multistory building structures. Most of considerations are placed on the distribution of inelastic responses over the height of the structure. When an earthquake occurs, bending moment demand is increased considerably from the top to the bottom of multistory structures, so that differences between bending moment demands and supplies are greater in lower floos of multistory structures. As a result, for building structures designed by the current earthquake resistant design procedure, inelastic deformations for earthquake ground motions do not distribute uniformly over the height of structures and those are induced mainly in bottom floors. In addition, gravity load considerded in design procedure tends to cause much larger damages in lower floors. From the point of view of seismic responses, gravity load affects the initial yield time of griders in earlier stage of strong earthquakes and results in different inelastic responses among the plastic hinges that form in the girders of a same floor. However, gravity load moments at beam ends are gradually reduced and finally fully relaxed after a structure experiences some inelastic excursions as a ground motion is getting stronger. Reduction of gravity load moment results in much increased structural damages in lower floors building structures. The implications of the effects of gravity load for seismic design of multistory building structures are to reduce the contributions of gravity load and to increased those of seismic load in determination of flexual strength for girders and columns.
