Analysis of Perception and Satisfaction of Vinegar-Based Sauce: Focus on IPA Skills (식초기반 소스에 대한 인식 및 만족도 분석: IPA기법을 중심으로)

  • The purpose of this study was to provide basic data for development of vinegar-based sauce and menu for foodservice institution and restaurant. To accomplish this, importance-performance analysis (IPA) was adopted as the major research method by analyzing the overall perception and characteristics of purchasing of vinegar-based sauce. A significant difference was detected in all items except package design for importance and satisfaction (p<0.01). Highest importance and satisfaction were determined for taste and convenience, respectively. Price and additive belonged to quadrant 2, where level of importance is low but satisfaction is high. Preference and satisfaction showed significant differences in all items (p<0.05). Meat and seafood belonged to quadrant 2 where level of importance is low but satisfaction is high. Developing a variety of vinegar-based sauces that meet consumers' well-being needs is needed.

  • This study attempts to deal with the form of new storytelling by contemplating the study on food-related storytelling which has been studied in earnest since 2008 and analyzing the story. In case of the study on storytelling so far, the studies on the emphasis of necessity of discovering materials and the suggest of the way of development of the menu and tourism commercialization through the story and the attitudes of customers by storytelling have been conducted. Also, this study is explained by being divided into version 1.0, 2.0, 3.0 depending on the composition of the story, and attempts to suggest new version 4.0 strategy of food storytelling which we should aim for in the future as well. This will provide the new paradigm of the field of food storytelling.

  • Recently, the scientific study from traditional oriental medicine is being progressed. Moreover, through both oriental medicine and medicine are cooperated with medical examination and treatment, the study in cooperation of merits from oriental medicine as well as from medicine is progressed. In this paper, we will develop automatic needle shot using fuzzy rules and USN techniques, which a user can choose meridian pathways from the menu items built in the cellular phone, so it can perceive patient's body conditions and launch an aneurysm electric pressure of a cycle.

  • Since a 'Well-being' theme had become an issue in 90's, everyone now care about their health more than ever. Besides, IT has been developed so tremendously that we have various ways to collect up-to-dated information through the internet. There are so many web sites that contain information about health and diet. However, the menus of these web sites are not simplified and the content is too large, so the information we see in those web sites may not be accurate. Also, some information is out-of-dated. In this paper, we propose a web site called 'Calory&Diet' that provides customized information on diet. The characteristics of the web site are as following: First, the menu is so simple that users can easily find information they want. Second, it only provides necessary customized information. Lastly, it uses an open application that helps users always get the latest information without DB updates. With its user friendly menu and feedback information, the proposed web site can be a good advisor for people who want to be healthy. 100 offers the user survey results than existing systems, simple system to 2%, 3% from a custom-related topics, the latest related topics were 3% higher on 5 point scale.

A Study on the Well-being Related Awareness and Dietary Life Pattern in Urban Housewives (도시 주부들의 웰빙에 대한 인식과 식생활유형에 대한 연구)

  • To investigate the importance and practice of well-being related dietary life pattern such as purchasing food materials, food habits and eating out, a survey was conducted by questionnaire and 5-point Likert score in Seoul and Gyeonggi-Do, September, 2004 and April, 2005. The responses of 732 housewives who were over 40 years were analyzed by SPSS package program. The results were as follows. Most of them were 40-49 years(74.4%), graduated highschool (66.6%) and their family type was nuclear family type(81.4%). Almost half of them had full-time job (37.1%) and part time job (15.4%). The average importance score of 'food habits', 'purchasing food materials' and 'eating out' were $4.15{\pm}0.91,\;4.06{\pm}0.96\;and\;3.25{\pm}1.01$ respectively. But the average practice score of 'food habits' was greater($3.58{\pm}1.06$) than 'purchasing food materials ($3.19{\pm}1.19$)' and 'eating out($2.54{\pm}1.05$)'. Among 5 types of 'food habits', the type of 'cut down on eating fast food' had the greatest score of importances ($4.31{\pm}0.97$) but the difference between importance and practice was greatest(0.94). Also 'consume home-made food rather than processed or ready to food' showed great scores in importance ($4.28{\pm}0.87$) and practice($3.87{\pm}1.04$). 'Consume fruits and vegetables rather than meats' and 'avoid heavy use of oils' had the importance score of $4.04{\sim}4.19$. But the practice score of 'avoid heavy use of oils' was the lowest($3.39{\pm}0.97$). Among four types of purchasing of food materials, 'purchase domestic agricultural food' was greatest($4.37{\pm}0.78$) and 'don't purchase genetically modified food' 'purchase organic food' and 'purchase whole grain products' were also great ($3.92{\sim}3.99$). But the practice score of 'purchase organic/low chemical foods($2.77{\pm}0.98$)' and 'don't purchase genetically modified food($2.99{\pm}1.41$)' were lowest. 'Go to well being restaurant' in three types of 'eating out' showed greatest in importance($3.35{\pm}0.96$) but the practice score($2.47{\pm}0.10$) was lower than the importance score. Also 'choose menu with comparing calories' had the lower score in practice($2.45{\pm}1.06$) rather than importance score($3.22{\pm}1.03$). In regarding to 'food habits', the importance score were significantly affected by type of food expense (p<0.05) and health status (p<0.05). The importance score of 'purchase food materials' were significantly affected by the type of food expense (p<0.001), type of residence(p<0.05), and self assessment of weight(p<0.05). Monthly income, especially more 400 million won, was the commonly significant effector in practice score of 'purchase food materials' and 'eating out'.

Physiological and Sensory Characteristics of Brown Stock Depending on Salt Content (소금 첨가량에 따른 갈색 육수의 이화학적 및 관능적 특성)

  • This study applied high-pressure extraction cooking, which has been proven superior in processibility and stock extraction, for the preparation of stock, which is widely used as a basic material of dishes, and examined the physicochemical and sensory properties of the extracted stock by adding salt. We observed changes in the chromaticity of brown stock according to salt content, and pH decreased with increased the salt content, suggesting that stock was acidified. Regarding the mineral content, Na was the highest, followed by K and P. Regarding total free amino acid content, the content of essential amino acids, enhancing free amino acids, and other amino acids also showed the highest level in S2, which contented 0.3% salt. In the sensory test, saltiness grew stronger with an increase in salt content, and overall palatability was highest in S2. Regarding ranking, preference was highest for S2. Utilize to data that study finding of above is actual in development for mass production of brown stock product licensed cooks' traditional mesh dipper technology quality that make mass production direction that change and normalizes product that can keep excellent taste and improve conservative property develop. Culture formation and our country foodservice industry development that reduce damage of informed people ashes through development of brown stock product that is changed in large quantity, and improve quality of food more positively contributing to reappear diversification of menu, systematization and taste of specialty store as well as can contribute in rationalization of informed people ashes purchase, personnel expense (labor power) curtailment, waste decrease etc. but is developed still more being utilized.

Identifying the Quality Attributes Affecting Customer Satisfaction of School Foodservice by City and Province: Students, Parents, and Faculty (대상에 따른 시도별 학교급식 만족도에 영향을 미치는 급식 품질 속성의 규명)

  • This study had the following four objectives: a) to measure the quality attributes of school foodservice based on responses of students, parents, and faculty members, b) to compare the quality attributes by city and province, c) to analyze the overall satisfaction of the respondents, and d) to identify the effects of the quality attributes on overall satisfaction by city and province. Questionnaires were distributed to 5,560 students, 1,920 parents, and 1,920 faculty members, and were collected using on/off-line mail (collection rate: 100%). The data were analyzed using SPSS for descriptive analysis, one-way ANOVA, and multiple linear regression analysis. From the quality attributes analysis, 'providing information on foodservice' was perceived as being performed well by the students (78.8), parents (76.0), and faculty (87.7). However, 'pleasant foodservice environment' was given low scores by the students (62.4), and 'entertains suggestions offered to foodservice' was perceived as low by 66.1% of the parents and 74.9% of the faculty. Upon comparing the quality attributes by city and province, the majority of scores by students and parents in Busan were significantly higher than those of students and parents in others geographical areas. The overall satisfaction levels (scores) were as follows: 66.4 for students, 70.0 for parents and, 76.8 for faculty. Finally, in the regression results, which showed the effects of the quality attributes on overall satisfaction by city and province, improvements of 'food taste', 'kindness offered by employees', and 'menu variety' would increase satisfaction in most cities and provinces. However, other identified attributes were significantly different among the 16 cities and provinces that were examined. Therefore, these regions will need to make different efforts to improve customer satisfaction for school foodservice.

A Study on the Function and Design Factors of Mobile Phones for Children (어린이용 휴대폰 기능 및 설계 요소에 관한 연구)

  • These days mobile phone which were used mainly by grown-up persons are now widely used among children as well due to new social demands. Despite this trend, existing mobile phones are still being designed and produced according to the taste of people in their 20s and 30s, even the elderly, not satisfying physical, emotional and cognitive characteristics raised by children. This study aimed to extract the design factors of mobile phones for children by reflecting functional factors requested by children and parents in QFD's customer demands. First, functional and design factors requested in mobile phones for children were extracted from existing products and documentary records and some functional factors were selected through a process of integration and omission. The survey research was conducted on children and parents, based on the selected functional factors. Based on the survey research, functional factors were analyzed using AHP, and key functional factors considered by children and parents in mobile phones for children were investigated. Finally, in order to reflect the results in QFD, the correlation between functional factors and design factors was constructed as HOQ through experts' evaluation. The results showed that both children and parents recognized the basic functions such as telephoning, text messaging and phone directory as high priority functional factors, even though the relative importance was different between children and parents. Therefore, it is likely to satisfy the desires of both children and parents by designing mobile phones for children in consideration of design factors such as menu depth, button independence and button arrangement. It is expected that this study will promote experiments on design factors and propose basic data for and guidelines to mobile phone design for children.

A Study on Dining-Out Behaviors of Community for Marketing Strategy of Local Foodservice Industry (주민의 외식행동에 따른 지역 외식산업의 마케팅 전략)

  • The purpose of this study was to propose the marketing strategy for the local foodservice industry which can lead to successful business in keen competitive foodservice industry by adapting community residents' dining-out behaviors. A total of 350 adults (291 collected, 102 men and 188 women) was surveyed with a questionnaire about the frequency of dining-out, company when out to eat, proper price for one meal, reasons why one chooses a specific restaurant, and general information. Data was analyzed by SPSS/win 7.5. Over the 1/3 of residents (36.3%) ate out 1-2 times a week and slightly over the 1/4 of residents (26.4%) did so 1-2 times a month. Usually men did more dining out than women. Teachers/ professors' (52.6%) dined out 1-2 times a week. Respondents with 1-2 million won of monthly income (46.4%) ate out 1-2 times a week. Almost 3/4 of respondents chose Korean restaurant. The main factors affected selecting the specific restaurant were 'cleanliness of food and atmosphere of restaurant', and 'reasonable price'. More than 1/3 of respondents (38.9%) answered 5,000-8,000 won was reasonable price for eating-out. Respondents in 20's dined out with friends (70.4%) and friends (43.0%) chose the specific restaurant; on the other hand, the other age groups usually dined out accompanied by family (60.7 - 73.7%) and respected spouse or children's opinion when selecting a restaurant. Thus, the menu must be reevaluated from the customers' view point and nutritional status for the well-being of community residents.

A Study on Elementary School Dietitian's Status and Recognition of Nutrition Education in Incheon (인천지역 초등학교 영양사의 영양교육 실태 및 인식에 관한 연구)

  • The purpose of this study was to investigate the elementary school dietitian's status and recognition of nutrition education (NE) in Incheon. A cross-sectional study was carried out using a self-administered questionnaire and subjects were 100 elementary school dietitians. The results are as follows. As for training in NE, $61.2\%$ of the dietitians attended training in NE. After training in NE, $86.5\%$ of the dietitians who attended training in NE were more concerned about NE. Also $59.5\%$ of the dietitians gave students NE and most of them did as a weekly printout 2-4 times per month. There was a significant difference in experience of NE for teachers between subgroups by experience of training in NE; while $48.1\%$ of the dietitians with training in NE gave teachers NE, $20.0\%$ of the dietitians without training in NE gave teachers NE. The main reason for not giving NE was too much work load and low concern of school administration. Also $96.4\%$ of the dietitians answered that NE is necessary in elementary school and the main reason for being necessary was correction of unbalanced diet and good table manner, As for proper time to start NE for children, $51.8\%$ of dietitians answered 'kindergarten' and $45.8\%$ of them answered 'lower grade of elementary school'. As for effective type for NE, $59.5\%$ of the dietitians answered 'NE as a part of other subject' and $23.8\%$ of them answered 'NE as a separate subject'. Also $79.5\%$ of the dietitians answered 'teacher' as the suitable person for NE. Most of the dietitians recognized menu formation as the ideal major work load and office work as the most time-consuming work load. As to job satisfaction, most of them were dissatisfied with office work and NE. Therefore, it is nationally supported for elementary school students' health and well-being that school dietitians as NE specialists give NE with minimizing their office work and developing a standardized NE program.
