  • The present paper was investigated to elucidate the nitrite-scavenging ability of vegetable extracts. Vegetable extracts possessed the scavenging ability of nitrite. By fractionatioh of vegetable extracts,nitrite-scavenging ability of garlic (Allitum sativum for. Pekinense), chinese pepper (Zanthexylum schinifolium), onion (Allium cepa), welsh onion (Allium fistulosum) and ginger (Zingiber officinale) extracts were effective in the water-soluble fraction, but carrot (Daucus carota uar. sativa) in the methanol-soluble fraction. Nitrite-scavenging ability of vegetable extracts was also pH-dependent, highest at pH 1.2 and lowest at pH 6.0. Particularly, nitrite-scavenging abilities of water-soluble fractions obtained from garlic and chinese pepper were similar to that of L-ascorbic acid at pH 1.2. After vegetable extracts were treated with sodium borohydride, nitrite-scavenging ability was remarkably decreased at pH 1.2. It is assumed that reducing powers of vegetable extracts participated in their nitritescavenging abilities.

  • In the present paper, the effect of sodium sulfite treatment on tile inhibition of browning reactions occurring in the storage of dried oyster was tested and the supplementary effect of antioxidantsaddedwasalsomentioned. Dried oysters treated with sodium sulfite solutions as described in the previous paper(Lee and Choi, 1977) were stored in the bottles with silica gel bags at room temperature with or without the application of antioxidants. The ethanol solution of an antioxidant mixture(BHA, BHT, plus, synergists) was sprayed on the surface of cooked oyster before drying. The density of brown pigment was determined spectrophotometrically by measuring the absorbance at 420 and 440 nm of both fractions of pigment extract, namely chloroform-methanol and water soluble fractions, which represent the brown color developed by fat oxidation and Maillard reactions respectively. TBA value was also measured for the oxidative rancidity in oysters during the storage. It appeared from the results that the 0.5 M sodium sulfite-60minute treated samples showed better effect after 150 day storage at room temperature. Controlling tile pH of treating solutions, did not reveal so much different in inhibitory effect in the aspect of color but a more reduction of tyrosine and reducing sugar was resulted with acidic solution than with alkaline solution. The development of brown color in dried oyster seemed to be leaded rather by the oxidative rancidity of lipids than sugar-amino reactions particularly in a long-term storage since the browning of chloroform-methanol fraction progressed more rapidly than of water. soluble fraction. The application of antioxidant, therefore, could largely retard the browning of the product as appeared in the results that sodium sulfite treated oyster with addition of antioxidant kept the best color during the storage.

Portulaca oleracea L. Extract Lowers Postprandial Hyperglycemia by Inhibiting Carbohydrate-digesting Enzymes (쇠비름(Portulaca oleracea L.) 추출물의 탄수화물 소화 효소 저해와 식후 고혈당 완화 효과)

  • Postprandial hyperglycemia plays an important role in the development of Type 2 Diabetes and diabetic complications. Controlling postprandial hyperglycemia is the most important factor for reducing the risks of diabetic complications in Type 2 diabetic patients. This study was designed to determine whether Portulaca oleracea L. extract suppresses the activation of carbohydrate-digesting enzymes, and lowers postprandial hyperglycemia in diabetic mice through streptozotocin. P. oleracea was extracted with either 80% ethanol (PEE) or water (PWE), and the extract solutions were concentrated. The ${\alpha}$-glucosidase and ${\alpha}$-amylase inhibition assays were performed using the chromogenic method. Normal mice and STZ-induced diabetic mice were orally treated with PEE, PWE (300 mg/kg of body weight) or acarbose (100 mg/kg of body weight), with soluble starch (2 g/kg of body weight). The ${\alpha}$-glucosidase and ${\alpha}$-amylase inhibitory effectiveness by PEE were markedly more effective than PWE, and both extracts indicated a higher effectiveness than the acarbose (positive control). The rise in postprandial blood glucose due to starch loading was markedly inhibited in the PEE group when compared to the control group in diabetic and normal mice. Furthermore, the area under the concentration-time curve values were markedly declined by the PEE injection in the diabetic group when compared to that exerted for the control group. These results demonstrate that P. oleracea extracts lower postprandial hyperglycemia by inhibiting carbohydrate-digesting enzymes, and that the ethanol extract is more efficacious than the water extract.

Antioxidative Activity and Nitrite Scavenging Effect of the Composites Containing Medicinal Plant Extracts (한약재 조성물의 항산화 활성 및 아질산염 소거능)

  • The composites(PM-A-PM-I) of 9 groups containing 7 kinds of hot water extracted medicinal plants were produced and evaluated its antioxidative activity. Each medicinal plants used these composites were analyzed in primer research that its anti oxidative activity was high. In the composites of medicinal plant, electron donating ability was higher than 70% in all sample. PM-D, PM-E and PM-F were significantly higher than others. Reducing power have similar tendency to electron donating ability. PM-D was the strongest in hydroxyl radical scavenging activity, followed by PM-E. In linoleic acid system, antioxidative activity of all sample was showed more than 50%, except PM-A. Especially PM-E and PM-F have significantly higher activity. Nitrite scavenging effect was significantly increased by PM-D, PM-E and PM-F added to Inula Japonica Thunberg. In these results, we suggested that high-er antioxidative activity of PM-D, PM-E and PM-F may be responsible for the contents of phenolic compounds present in Inula Japonica Thunberg. And thought to be enhanced by the synergy effect of the water extracted medicinal plants in the composite.

Effect of Perilla Seed paste on the Yulmoo Mul-kimchi during Fermentation (들깨풀 첨가가 열무 물김치의 발효에 미치는 영향)

  • An optional ingredient Perilla Seed paste was adopted to improve the quality of Yulmoo Mul-kimchi during fermentation. The final weight percentage of perilla seed paste in Yulmoo Mul-kimchi was adjusted to 0, 10, 20, 30, and 40% per water respectively. Chemical and sensory characteristics were determined during fermentation at 10$\^{C}$ for 25 days. The effect was varied depending on the amounts of perilla seed paste, but Yulmoo Mul-kimchi fermented with 20% perilla seed paste was most favored for color, smell, sour taste, carbonated taste, texture and overall acceptability in the sensory evaluation. The pH decreased with the increase of total acidity. The total vitamin C content increased initially to the certain level at a certain time of fermentation depending on the level of perilla seed paste, and then decreased later. In case of reducing sugar, the 20% treatment showed the highest content. Turbidity values were generally increased in all samples during fermentation, even though the extents were limited. Total plate count and the number of lactic acid bacteria were gradually increased and then decreased showing the maximum microbial counts during fermentation. The optimum levels of perilla seed paste in Yulmoo Mul-kimchi obtained through experiments were between 20 and 30% of added water content, preferably 20% for color, fermentation-retarding effect, and sensory taste of the product.

Effect of Different Steaming and Drying Temperature Conditions on Physicochemical Characteristics of Pumpkin Powder (증숙 및 건조 조건이 호박 분말의 이화학적 특성에 미치는 영향)

  • This study was conducted to investigate the effect of different steaming and drying temperature conditions on the physicochemical characteristics of pumpkin powder. All the samples were steamed for 30 or 60 s and then were dried using hot air at 40, 50, 60, and $70^{\circ}C$. The moisture content decreased with an increase in the hot-air drying temperature, while the soluble solid content and yield increased. The color values, L, a, and b of the pumpkin powder decreased with increasing hot-air drying temperature. The pumpkin powder, which was steamed for 60 s had the highest water absorption and water solubility indexes. The carotenoid content of pumpkin powder was mostly destroyed with the increase in the steaming and drying temperatures. The total sugar and reducing sugar contents increased with increasing steaming and drying temperatures. Thus, the steaming and dehydration temperature conditions influenced the physicochemical characteristics of the pumpkin powder.

Evaluation of Ammonia Emission from Arable Soil applied Liquid Manure and Compost (가축분 퇴.액비 시용에 따른 암모니아 휘산량 평가)

  • Emission of ammonia to the atmosphere are considered a threat to the environment. The application of livestock manure and compost contributes significantly to the emission of ammonia from agriculture. The reduction in NH3 losses from field-applied manure and compost would be a good strategy to reduce national $NH_3$ emission. In this study, various application techniques of liquid manure and compost were compared to evaluate their potential for reducing $NH_3$ emission. In compost application, the reductions in $NH_3$ emission were 70 and 15% for immediately rotary after application (IRA) and rotary at 3-day after application (RA-3d) in comparison with surface application (SA). Total ammonia emissions for 13 days, expressed as % ammonia-N applied in compost, were 42, 35.7, and 12.7% for SA, RA-3d, and IRA treatments, respectively. Mean reductions in NH3 emission from application of liquid pig manure were 26 and 50% for rotary harrow after surface broadcast application in spring and fall, respectively, in comparison with surface broadcast application. Ammonia emission rate was decreased with increasing water content in soil due to dilution effect, but this reduction only was temporary up to 12 hours after application and cumulative $NH_3$ emission was increased with increasing water content in soil. However, the delay would be beneficial because it allows time for rotary hallow of the applied liquid pig manure. Therefor, ammonia emission can be reduced by immediately incorporation of liquid manure and compost after surface application.

The Applicability of the Acid Mine Drainage Sludge in the Heavy Metal Stabilization in Soils (산성광산배수슬러지의 토양 중금속 안정화 적용 가능성)

  • BACKGROUND: Recent studies using various industrial wastes for heavy metal stabilization in soil were conducted in order to find out new alternative amendments. The acid mine drainage sludge(AMDS) contains lots of metal oxides(hydroxides) that may be useful for heavy metal stabilization not only waste water treatment but also soil remediation. The aim of this study was to investigate the applicability of acid mine drainage sludge for heavy metals stabilization in soils METHODS AND RESULTS: Alkali soil contaminated with heavy metals was collected from the agricultural soils affected by the abandoned mine sites nearby. Three different amounts(1%, 3%, 5%) of AMDS were applied into control soil and contaminated soil. For determining the changes in the extractable heavy metals, $CaCl_2$ and Mehlich-3 were applied as chemical assessments for metal stabilization. For biological assessments, lettuce(Lactuca sativa L.) and chinese cabbage(Brassica rapa var. glabra) were cultivated and accumulation of heavy metals on each plant were determined. It was revealed that AMDS reduced heavy metal mobility and bioavailability in soil, which resulted in the decreases in the accumulation of As, Cd, Cu, Pb, and Zn in each plant. CONCLUSION: Though the high level of heavy metal concentrations in AMDS, any considerable increase in the heavy metal availability was not observed with control and contaminated soil. In conclusion, these results indicated that AMDS could be applied to heavy metal contaminated soil as an alternative amendments for reducing heavy metal mobility and bioavailability.

Geochemical Study on the Groundwater in Goryeong Area (고령지역 지하수에 대한 지화학적 연구)

  • Geochemical characteristics of groundwater in Goryeong area, based on chemical analyses of 34 water samples and mineralogical study of rocks, differ among Nagdong, Hasandong and Jinju formations and Goryeong granite in relation to mineralogical compositions of the rocks. Concentrations of most solutes are higher in groundwater of the sedimentary formations than in that of granite. Ca$\^$2+/ in the sedimentary groundwaters results mainly from reaction of CO$_2$-charged water with calcite and weathered plagioclase. Average groundwater in the Jinju formation is oversaturated with respect to calcite. Major types of groundwaters are hard Ca(HCO$_3$)$_2$ and CaSO$_4$with hardness of 155 mg/1 for Nagdong formation, 150 mg/1 for Hasandong formation and 140 mg/1 for Jinju formation whereas it is soft Ca(HCO$_3$)$_2$with hardness of 90 mg/1 for Goryeong granite. Ca(HCO$_3$)$_2$type resole from dissolution of calcite and plagiodase while CaSO$_4$type results from dissolution of pyrite and partly from domestic pollutants. CaSO$_4$type may indicate that the sedimentary groundwaters are more evolved geochemically than the granitic groundwater, but it is not obvious because the type might be affected by the dissolution of pyrite and domestic pollutions. Prite is expected to occur as a stable sulfide in the gray∼dark gray arkosic sandstones formed under reducing environment.
