Effect of Frying Methods under Reduced Pressures on the Quality of French Fries (감압 튀김 방법이 감자튀김의 품질에 미치는 영향)

  • This study investigated the quality changes of French fries when cooked under a lower pressure than the ambient atmosphere. This was derived from the concept of boiling point depression of water under reduced pressure. The pressure during the frying process was controlled at measures of 760 mmHg, 560 mmHg, 360 mmHg, or 160 mmHg. The frying apparatus was manufactured to cook foods up to $200^{\circ}C$ and to have a valve to control the pressure. French fries were cooked at $180^{\circ}C$ for 4 minutes. After each pressure level was achieved, the French fries were dipped into a frying oil bath and cooked for 4 minutes. The quality changes, including moisture content, starch gelatinization, textural and sensory properties of the French fries were measured. The moisture contents were decreased at all 4 pressure levels after frying. Starch gelatinization was not significantly different among the samples. The hardness of French fries cooked at 160 mmHg was the best. In addition, the sensory properties including brown color, taste, and crispiness of French fries cooked at 160 mmHg was the best. The overall preference was higher when the frying pressure was lower.

Acute Toxicity of Kami-Okchun-San in ICR-Mice (가미옥천산의 ICR 마우스 경구 투여에 의한 급성 독성시험 연구)

  • Kami-Okchun-San(OCS) is known as an effective herbal medicine on Type 2 diabetes. We peformed to investigate acute toxicity of OCS on ICR mice. ICR mice in acute toxicity experiment were administered orally with dosages of 3,200mg/kg (low dosage group), 4,000mg/kg (middle dosage group), 5,000mg/kg (high dosage group) per single time, respectively. Body weights, clinical signs, motalities and histopathological finding were observed daily for 14 days according to the Regulation of Korean Food and Drug Administration(1999. 12. 22). Single oral administration of OCS with different dosages, no animals died of the test drug. Autopsy of animal revealed no abnormal gross findings. Therefore, LD50 value of OCS for ICR mice was more than 5,000mg/kg on oral route. Normally increasing changes were observed in body weight, drinking water and food intake in every dosage group. Hematological parameters were also observed normally in all animals. No histopathological lesions were observed in both control and treated animals. Above data suggest that no toxic dose level of OCS in ICR mice is considered to be more than 5,000mg/kg. Therefore, it was concluded that OCS have no effect on acute toxicity and side effect in ICR mice.

Hepatoprotective effects of the aqueous extract from Taraxacum officinale (Dandelion) against Thioacetamide-induced hepatotoxicity in rats (Thioacetamide로 유발된 간 손상에 대한 Taraxacum officinale (Dandelion) 추출물의 효과)

  • The genus Taraxacum, known by the common name Dandelion, is a medicinal herb in the family Asteraceae. It has been traditionally used as a folk medicine for the treatment or prevention of various diseases due to its anti-inflammatory and anti-oxidative properties. In this study, we attempted to evaluate protective effects of Dandelion related with anti-oxidative activity to Thioacetamide (TAA)-induced liver damage. 36 rats were randomly assigned to six experimental groups : Control, Dandelion water extract (DWE), TAA, TAA&DWE 300, TAA&DWE 600, TAA&DWE 1,200 groups. Rats in DWE and TAA&DWE groups were pretreated with DWE (300, 600 or 1,200 mg/kg BW) by gavage for 7 days. All rats were treated intraperitoneally with TAA (200 mg/kg BW) or normal saline at 12 hours after last oral administration and sacrificed at 12 hours after last treatment. Levels of WBC and Neutrophil count were significantly decresed in TAA&DWE 1,200 group compared with that in TAA group (P<0.05). In TAA&DWE 600 and TAA&DWE 1,200 groups, serum AST, ALT, GGT levels were lower than TAA group (P<0.05). The serum TG level was significantly elevated in TAA&DWE groups compared with those in TAA group. Liver tissues from TAA group showed extensive histopathological changes, characterized by moderate or severe hepatocytes degeneration, inflammatory cell infiltration, and congestion. In the TAA&DWE group, The severity of histopathological lesions were decreased compared to those in the TAA group. The MDA concentration was significantly decreased and GSH content was significantly increased in the TAA&DWE 1,200 group compared to those in the TAA group. GR, CAT and GST activities in the TAA&DWE 1,200 group were significantly increased compared to those in the TAA group.

  • This experiment was conducted to verify the responses of major crop species to saline stress.To determine the saline tolerance of crop species, sevral crop species were cultivated under sand-culture system using Hoagland's nutrient solution whit 200mM NaCl. The crop species showing saline tolerance were cotton(Gossypium indicum), maize(Zea mays), barely(Hordeum vulgare), and wheat(Triticum aestivum) but perilla (Perilla frutescens) and leguminous crops, mung bean(Phaseolus radiatus), azuki bean(Phaseolus angularis) and soy bean(Glycin max) showed very por tolerance. One the typical symptom was the darkening of leaf color due to increase of chlorophyll concentration.Among of the plant families, Fabaceae was the most susceptible but crop species belonging to Poaceae were more proper for cultivating on reclaimed tidal land in the course of desalinazation. It was suggrsted that the crop species belonging to Fabaceae, a sensitive family to soil salinity, must be cultivated when the soil salinity decreased below 10ds/m. To know the critical salinity level for crop growth,salinity of saline soil collected from reclaimed tidal land was adjusted from 10.0ds/m tp41.7ds/m with tap water. It was suggested that the ECs of the soil in which the plant height of each crop spicies was reduced to 50% of control plant were 22.6 and 21.7 ds/m in rice, barley, corn, mung bean, and soy bean,respectively.

  • The purpose of the present study is to find the light intensity which induces maximum gathering rate and to observe the variation of the gathering rate both in' daytime and at night by using two species of commercial fishes: rock bream, Oplegnathus fasciatus(Temminet et Schlegel) and glass-puffer,\ulcorner Fugu.niphobles (Jordan \ulcorneret. Snyder). An experimental tank($360L{\times}50W{\times}55H cm$) was set up in a dark room. An illumination system was attached to one end of the tank to control horizontal light intensity. Six artificial light sources were prepared by combination of two light bulbs (5W, 150W) and seven filters. During the. experiment water depth was maintained 50 em level in the tank. The tank was marked into six longitudinal sections each, being 60 cm long to observe the distribution of fish. The fish were acclimatized in dark condition for 40 minutes prior to the main experiment. Upon turning on the light, the number of fish in each section was counted40 times every 30 seconds, and the gathering rates were obtain from th~ average number of. fish' in each section. The light intensity inducing maximum gathering rate is as follows: rock bream: 162.0 lux (104,3--238, 1 lux) (day), 162.0 lux (104.3--238.1 lux) (night). grass puffer: 16.6 lux (10.6--24.5 lux) (day), 1. 9 lux (1. 2-2. 9 lUX) (night). Trend .of the gathering rate in illumination time revealed different results in two fish species. Gathering rate of rock bream showed the increasing trend fluctuately with the lapse of ' illumination time. However, that of grass puffer showed the increasing trend gradually at the early period of the illumination time and the uniform trend at the latter period with little distictive fluctuation.

Effects of Salt, Glucono-${\delta}$-Lactone and High Pressure Treatment on Physico-Chemical Properties of Restructured Pork (소금과 Glucono-${\delta}$-Lactone의 첨가 및 초고압 처리가 재구성 돈육의 이화학적 특성에 미치는 효과)

  • This study investigated the effect of salt and glucono-${\delta}$-lactone (GdL) on the cold-set binding of restructured pork washed and pressurized at 200 MPa. Binding strength, PH, water holding capacity (WHC) and color were determined. NaCl improved pH, WHC and binding strength. GdL also increased binding strength while decreased WHC and pH significantly (p<0.05). However, low GdL level combined with NaCl showed high pH and WHC, compared to control. In color, NaCl decreased $L^*$-value with increasing $a^*$-value significantly (p<0.05). In contrast to NaCl, GdL increased $L^*$-value and decreased $a^*$-value. GdL tended to decrease $b^*$-value and significant differences were found when GdL was added above 1%. Pearson's correlation coefficients presented that NaCl had a significant effect on binding strength (0.6632) and lightness (-0.7330) while GdL had a significant correlation with all parameters barring binding strength. The results indicated that under washing and pressure treatments, GdL had a potential effect on cold-set binding with reducing NaCl concentration, especially when low GdL concentration combined with NaCl was added.

Probabilistic Three-Dimensional Slope Stability Analysis on Logarithmic Spiral Failure (대수누선파양에 대한 확률론적 3차원 사면안정해석)

  • This paper presents the probabilistic model to evaluate the three-dimensional stability of layered deposits and c-0 soil slopes. Rotational slides are assumed with a cylindroid control part terminated with plane ends. And the potential failure surfaces in this study are assumed with the logarithmic spiral curve refracted at boundary of layers. This model takes into consideration the spatial variabilities of soil properties and the uncertainties stemming from insufficient number of samples and the discrepancies between laboratory measured and in -situ values of shear strength parameters. From the probabilistic approxi mate method (FOSM and SOSM method), the mean and variance of safety factor are calculated, respectively. And the programs based on above models is developed and a case study is analysed in detail to study the sensitivity of results to variations in different parameters by using the programs developed in this study. On the basis of thin study the following conclusions could be stated : (1) The sensitivity analysis shown that the probability of failure is more sensitive to the uncertainty of the angle of internal friction than that of the cohesion, (2) The total 3-D proability of failure and the critical width of failure are significantly affected by total width of slope. It is found that the total 3-D probability of failure and the critical width of failure increase with increasing the slope width when seismic forces do not exist and the total 3-D probability of failure increases with increasing the slope width and the critical width of failure decreases when seismic intensity is relatively large, (3) A decrease in the safety factor (due to effect such as a rise in the mean ground water level, lower shear strength parameters, lower values for the correction factors, etc.) would result in reduction in the critical width of failure.

Repeated-dose oral toxicity study of crude antifungal compounds produced by Lactobacillus plantarum AF1 in rats (Lactobacillus plantarum AF1이 생성한 조항진균 물질의 흰쥐에 대한 반복투여독성)

  • This study was performed to investigate the four-week repeated-dose toxicity of the crude antifungal compounds produced by Lactobacillus plantarum AF1 (Lb. plantarum AF1), a lactic acid bacterium isolated from kimchi, in male and female rats. Sprague-Dawley male and female rats were divided into four groups, with 10 animals in each group. The test article was administered once daily by gavage to rats at dosage levels of 0, 500, 1,000, and 2,000 mg/kg/day for four weeks. There were no test-article-related deaths or abnormal clinical signs in both the male and female rats during the observation period. Furthermore, no differences in the body weight changes, food intake and water consumption levels of the control and treatment groups were found. The hematological parameters, serum biochemical analysis results, histopathological examination results and all other findings also showed no significant or dose-dependent changes. There were also no changes in the organ weights upon the administration of the crude antifungal compounds produced by Lb. plantarum AF1. These results suggest that the oral administration of the crude antifungal compounds produced by Lb. plantarum AF1 had no adverse effects up to a dosage level of 2,000 mg/kg in both male and female rats.

Development of ArcGIS-based Model to Estimate Monthly Potential Soil Loss (월단위 토양유실가능성 추정을 위한 ArcGIS 기반의 모형 개발)

  • Soil erosion has been issued in many countries since it causes negative impacts on ecosystem at the receiving water bodies. Therefore best management practices to resolve the problem in a watershed have been developed and implemented. As a prior process, there is a need to define soil erosion level and to identify the area of concern regarding soil erosion so that the practices are effective as they are designed. Universal Soil Loss Equation (USLE) were developed to estimate potential soil erosion and many Geographic Information System (GIS) models employ USLE to estimate soil erosion. Sediment Assessment Tool for Effective Erosion Control (SATEEC) is one of the models, the model provided several opportunities to consider various watershed peculiarities such as breaking of slope length, monthly variation of rainfall, crop growth at agricultural fields, etc. SATEEC is useful to estimate soil erosion, however the model can be implemented with ArcView software that is no longer used or hard to use currently. Therefore SATEEC based on ArcView was rebuild for the ArcGIS software with all modules provided at the previous version. The rebuilt SATEEC, ArcSATEEC, was programmed in ArcPy and works as ArcGIS Toolset and allows considering monthly variations of rainfall and crop growth at any watershed in South-Korea. ArcSATEEC was applied in Daecheong-dam watershed in this study, monthly soil erosion was estimated with monthly rainfall and crop growth variation. Annual soil erosion was computed by summing monthly soil erosion and was compared to the conventional approach to estimate annual soil erosion. The annual soil erosion estimated by the conventional approach and by summing monthly approach did not display much differences, however, ArcSATEEC was capable to provide monthly variation of soil erosion.

Formation of Provitamin-$B_5$ Liquid Crystal with Hydrogenated Lecithin and Its Effectiveness of Moisturizing Activity (HL에 의한 프로비타민-$B_5$ 액정의 형성과 보습효과)

  • Provitamin $B_5$ liquid crystal ($PVB_5$-LC) was the new emulsion system to enhance moisturizing activity on the skin. In this study, it should be mentioned that PVB5-LC could be prepared with the main compound of hydrogenated lecithin (HL) in oil-in water (O/W) emulsion. The key ingredient of humectants was contained 2% of provitamin $B_5$ ($PVB_5$) into the $PVB_5$-LC. The best suitable compositions of $PVB_5$-LC were made from 4.0 wt% of HL, 4.0 wt% of cetostearyl alcohol (CSA) as emulsifier and gelling agent, 3.0 wt% of 1,3-butylene glycol (1,3-BG) and 2.0 wt% of glycerin as moisturizers, 3.0 wt% of cyclomethicone (CMC), 3.0 wt% of isononanoate (ININ), 3.0 wt% of capric/caprylic triglyceride (CCTG), 3.0 wt% of macadamia nut oil (MNO) as emollients. As the analytical result of $PVB_5$-LC, it could know that the distribution range of particle size was 0.14 to 12.37 m level (mean size 3.24 m). It was certified the multi lamellar phase around the droplet of liquid crystal when observed the droplet particles through a polarization microscope. And it clinically was tested the effectiveness of moisturizing activity (in-vivo) compared with control sample (O/W emulsion). The effectiveness of moisturizing activity of $PVB_5$-LC with Skincon-200EX after 6 hours went up 49.0% (p<0.05, n=20) whereas the effectiveness of moisturizing activity of generally O/W emulsion cream was 25.7% (p<005, n=20). Also, in case of Comeometer CM-825, the moisturizing activity of $PVB_5$-LC after 6 hours rose 36.6% (p<0.05, n=20) whereas the effectiveness of moisturizing activity of generally O/W emulsion cream was 10.8%. Therefore, it was known that the effectiveness moisturizing activity of $PVB_5$-LC with HL was remarkably superior compared with O/W emulsion cream.
