중.고등학교 급식 운영특성에 따른 종합적 품질경영(TQM)에 근거한 HACCP 시스템 활동 및 위생관리 수행수준 분석 -서울, 경기, 인천, 강원, 충청지역 중.고등학교를 중심으로- (Analysis of TQM-based HACCP System and Safety Management Performance in Middle and High School Foodservice Operations - Seoul, Gyeonggi, Incheon, Kangwon and Chungcheong Areas in Korea -)

  • The following study was taken in the Seoul, Gyeonggi, Incheon, Kangwon, and Chungcheong areas to analyze the performance levels of safety management by characteristics of school foodservice. The following results were obtained from a survey conducted on 2,271 middle and high school dietitians in 808 schools. Out of the 808 schools surveyed, 513 schools (63.5%) were self-operated and 295 schools (36.5%) were managed by a contract. Regarding the performance level of the hygiene duties, contract-managed schools were rated as 4.02 points while self-operated schools were rated relatively higher (4.16 points). The self-operated schools had an average score of 3.60 points for the TQM-based HACCP system, and the areas that scored lower than the average were strategies, human resources, data and analysis. The average score of the contract-managed schools was 3.42 points, and such areas as leadership, human resources, data and analysis, and customer satisfactory level scored below the average. For the analysis of CCP performance level, the contract-managed schools scored 4.28 points while self-operated schools scored 4.34 points. Overall, the hygiene duties, CCP performance level, and TQM-based HACCP system performance of the contracted schools were lower than those of the self-operated schools. Therefore, it is advised that the contract-managed schools consider new measures to strengthen their performance level for improved safety of school foodservice.

외식 프랜차이즈 가맹본부 개점 전 지원서비스가 가맹점 관계품질과 경영성과에 미치는 영향 (The Effect of Franchisor's Pre-open Support Services on Franchisee's Relationship Quality and Performance in Foodservice Franchise System)

  • 본 연구는 국내 외식프랜차이즈 시스템에서 가맹점에 대한 가맹본부의 관계품질에 영향을 미치는 변수를 개점 전 지원서비스가 가맹점의 관계품질(신뢰, 만족, 몰입)과 경영성과 등에 미치는 포괄적인 모형을 개발한 것이다. 제안된 모형을 검증하기 위하여 서울 및 경기지역 외식 프랜차이즈 가맹점을 운영하고 있는 경영자 500명을 대상으로 설문 조사를 실시하였으며, SPSS 및 AMOS 통계 프로그램을 통해 실증 분석하였다. 분석결과는 첫째, 개점 전 지원서비스 요인인 정보교환 및 법적 지원, 시장조사 및 시장선정 지원, 점포 인테리어 및 설비 지원, 교육/훈련 및 전문가파견 지원 그리고 판매 및 홍보 지원 모든 항목이 신뢰에 긍정적 영향을 미치는 것으로 나타났으며 둘째, 관계품질요인들은 신뢰가 만족과 몰입에 긍정적인 영향을 미치며, 만족은 몰입에 긍정적인 영향을 미치는 것으로 나타났다. 셋째, 신뢰와 만족 그리고 몰입은 재무적 성과와 비재무적 성과에 긍정적인 영향을 미치는 것으로 나타났으며, 본 연구의 분석결과와 시사점 그리고 연구의 한계점과 향후 연구방향이 제시하였다.

청소년수련시설 급식소의 운영실태 및 이용자의 급식만족도 (Foodservice Operational System and Satisfaction of Customers with Foodservice at Youth Facilities)

  • 본 연구에서는 2013년 7월 9일부터 7월 31일까지 우편 또는 전자우편, 방문을 통해 55개소의 청소년수련원에 종사하는 원장(소장), 운영담당자, 청소년지도사, 조리사 및 영양사 중 한 명을 대상(명)으로 급식운영실태 조사를 실시하였으며 학교 수련교육을 목적으로 입소하여 3끼 이상 급식을 이용한 중 고등학생 249명을 대상으로 2013년 7월 12일부터 7월 23일까지 청소년수련시설을 직접 방문하여 급식만족도 조사를 실시하였다. 청소년수련시설의 급식운영현황을 조사하고 급식에 대한 학생들의 의견 및 만족도를 파악하여 향후 청소년수련시설 급식의 질 향상과 바람직하고 안정적인 급식운영에 필요한 기초 자료를 제공하고자 하였다. 청소년수련시설의 운영현황에 대한 결과는 41.8%의 수련시설이 10년 이상 운영되었고 45.5%의 시설이 평균 100~200명의 학생을 대상으로 급식을 제공하였다. 급식판매비용은 평균 4,450원으로 나타났고 식재료의 비용은 평균 2,083원으로 조사되어 판매비용의 약 46.8%를 차지하는 것으로 조사되었다. 식품위생법의 보존식 관리규정을 지키지 않고 보존식을 관리하는 시설이 21.8%로 나타났고, 12.7%의 시설 이 영양사를 고용하지 않았다. 급식소의 위생관련 기기 및 설비보유 현황에서 27.3%의 시설만이 다기능 오븐을 보유하고 있는 것으로 조사되었다. 급식 이용 학생을 대상으로 한 결과에 따르면 식재료별 조리법 중 쌀밥(34.1%), 육류는 찜(29.3%), 가금류는 튀김(25.3%), 어패류는 튀김(41.0%), 난류는 부침(36.9%), 서류는 튀김(31.3%), 채소류는 샐러드 (32.1%), 김치류는 배추김치(46.6%), 면류는 양식(38.6%), 후식류는 아이스크림(27.7%)을 가장 선호하는 것으로 나타났다. 잔반의 원인에 대해서는 '음식이 맛이 없어서'가 38.7%로 가장 높게 조사되었다. 청소년수련시설 급식에 대한 전반적인 만족도 조사 결과 전체 평균 3.45점으로 보통 수준으로 만족하고 있는 것으로 나타났다. 위생, 음식 및 메뉴, 서비스 및 시설요인의 속성에서 중요도에 비해 수행도가 낮게 평가되었으며 '식당위생', '음식 맛', '다양한 후식의 제공', '식사공간온도'가 전반적 급식만족도에 유의적인 영향을 끼치는 것으로 조사되었다. 청소년수련시설을 이용하는 학생들에게 음식의 맛이 만족도를 결정하고 잔반의 양을 낮추기 위해 중요한 요인으로 응답되었으므로 고객의 선호를 고려한 새로운 조리법을 개발하고 메뉴를 구성하는 것이 필요하다. 또한 학교급식과 같이 청소년수련시설 급식에 적합한 급식 매뉴얼 수립하고 이를 뒷받침할 수 있는 규정을 확립하여 학생들의 급식에 대한 만족도를 높이고 안전한 급식환경을 조성해야 한다.

ATP Bioluminescence와 간이미생물배지를 이용한 고등학교 급식시설의 위생상태 조사연구 (Evauation of Hygienic Status of High School Foodservice using ATP Bioluminescence Assay & Microorganism Test Strips)

  • An investigation was conducted to evaluate the hygienic status of 33 high school foodservice systems in Yongin city by using hygiene management guide checklist, ATP bioluminescence assay and microbe inspection petrifilm (APC, coliform group, Staphylococcus aureus) of food utensils during use. The 22 hygiene management guide checklist items about facilities, personal hygiene, food control, distribution, washing and disinfection had good grade but there were some inadequate behaviors on observation. The inspection results showed their sanitary condition met the level B of the recommendation of Korea method, it means sanitary management system get settled but more practical CCP system was needed. ATP bioluminescence assay was conducted on surface of food facilities, ATP ranged 425~2,552 RLU on gloves, 541~70,251 RLU on apron, 1,596~88,490 RLU on working desk, 1,177~263,813 RLU on sterilizer grip, 715~32,814 RLU on sterilizer shelf, 114~619,725 RLU on refrigerator grip, 677~319,007 RLU on refrigerator shelf, 71~196,725 RLU on freezer grip, 1,535~233,375 RLU on freezer shelf. APC ranged $66.7{\pm}29.0CFU$ on freezer grip, $102.1{\pm}35.9CFU$ on refrigerator grip, $45.4{\pm}28.2CFU$ on heating cabinet grip, $58.8{\pm}40.4CFU$ on sterilizer grip, the number of coliform group ranged $5.6{\pm}4.9CFU$ on freezer grip, $9.1{\pm}8.7CFU$ on refrigerator grip, $1.2{\pm}1.1CFU$ on heating cabinet grip, $4.5{\pm}4.4CFU$ on sterilizer grip. S. aureus ranged $8.0{\pm}5.6CFU$ on freezer grip, $12.2{\pm}9.6CFU$ on refrigerator grip, $2.1{\pm}1.6CFU$ on heating cabinet grip, $11.6{\pm}6.4CFU$ on sterilizer grip.

경기도 소재 특수학교에 근무하는 영양사.영양교사의 직무만족도와 급식운영 현황 (Study on Job Satisfaction and Foodservice Management of Dieticians and Nutrition Teachers in Special Schools for the Disabled: Focused on Gyeonggi Area)

  • This study examined students' menu preferences as well as the job satisfaction and specific considerations concerning foodservice operation of dieticians and nutrition teachers at special schools for the disabled. Semi-structured interview questionnaires were sent to all of the 21 special schools with direct school food service in Gyeonggi-do, and 16 dieticians and nutrition teachers agreed to participate in this study. Among the various menu groups, the subjects perceived the meat group as the most preferred and the vegetable group the least preferred. They were generally satisfactory with their job and duty, and had a strong sense of belonging to the school. However, most of them answered that they needed more time for nutritional education and counseling. While most had pride and pleasure in their job, they expressed a desire to change the system to better fit with their roles as professional nutritionists. The content analysis revealed that the subjects mainly focused on safety issues in planning the food menu and were thus limited in selecting menu items. They also felt difficulty in menu planning due to various tastes and preferences, since special schools tend to consist of a wider grade range. However, most subjects reported little trouble in food distribution and food leftovers owing to practical support from teachers and parents. The necessity for education concerning table manners and obesity prevention was generally a shared opinion, and education programs for parents were also perceived as necessary to better understand the special considerations for developing proper eating habits in their child. The study findings provide useful basic data to improve the foodservice system at special schools.

병원입원 환자의 잔식량 조사 사례연구 (A Case Study on the Analysis of Patients′ Plate Waste Results)

  • Food waste is an inverse measure of consumer acceptability of the food as served and hence a potential determinant of food qualify. The plate waste of patients was examined by a visual method at one hospital. Patients were asked to record after each item on their menu the amount consumed in quantitative terms: None, 1/4, l/2, 3/4, all. The survey showed that 65% of all patients surveyed left some of their food during hospitalization. Mean wastes for soups and meat side dishes were found to be larger than those for cooked meals and vegatable side dishes. At the same time, a questionnaire survey was used to determine the view of patients of key aspects of the hospital foodservice system. The majority of patients surveyed left their cooked meal because of low appetite, whereas patients indicated that Food is not tasty was the primary reason for leaving soups and other side dishes.'Satisfaction' scores were significantly correlated with the patients' age and appetite at the time.

외식 종사자의 멘토링 역할이 감정표현 및 자아존중감에 미치는 연구 (A Study on the Effect of Foodservice Employees' Mentoring on Expressing Emotions and Self-Esteem)

  • 외식기업 종사자를 대상으로 멘토링 역할이 감정표현 및 자아존중감에 미치는 영향 관계을 알아보기 위하여 설문지를 이용하여 조사하였다. 수집한 통계처리 및 분석방법은 SPSS 18.0와 AMOS을 이용하여 빈도분석, 탐색적, 확인적 요인분석, 상관관계분석, 구조방정식 모형을 실시한 결과 첫째, 멘토와 멘티 간의 공감대와 협조관계가 형성되어 개인적인 조언, 상담, 지원 등 심리적인 스트레스의 해소 방안으로 멘토링 역할이 조직의 목표에 중요한 것으로 나타났다. 둘째, 멘토링 역할은 조직성과 및 팀웍을 형성하는데 심리적 영향력이 멘토의 역할에 따라 조직적응 능력에 긍정적인 것으로 나타났다. 셋째, 팀내에서 조직의 갈등은 구성원의 의사소통이나 상호작용 속에서 감정표현은 자아존중감에 영향이 있는 것으로 나타났다. 외식 업무 특성상 인적자원 의존도가 높은 산업으로서 조직에서 발생할 수 있는 심리적인 스트레스로 인한 직원들 간의 갈등 관계를 해소할 수 있는 멘토와 멘티 간의 긴밀한 공감대와 협조 관계가 형성되어 조직의 목표를 달성하고 높은 수준의 서비스를 제공할 수 있는 것을 알 수 있다.

패밀리 레스토랑의 아웃소싱 도입 현황과 만족도 분석 (The Introduction and Satisfaction in Outsourcing for Family Restaurants)

  • There have not been the best method for improving the management system of an enterprise. Its management system must be changed according to new environment. Therefore, the food service industry had to accept outsourcing strategies to reduce cost and construct the core-capability of enterprise. In this respect, we studied the introduction and the satisfaction in outsourcing strategies for family restaurants, including a post of enterprise, decision on the supply-enterprises, contract preparation, cost of outsourcing, recontract items and outsourcing result estimation. The results of this study were as follows; First, 90.5% of managers for 7 family restaurants felt that outsourcing is needed. Second, the post of the outsourcing for 7 family restaurants was from 1 to 8; supply for raw food material, cleaning and equipment repair. The introduction of outsourcing for 7 family restaurants started in 1995 and it had constantly made progress up to 2003. Thirdly, the advantages of the outsourcing for 7 family restaurants were increase of benefit, improvement of controllable-power for family restaurants and improvement of employees' satisfaction. Fourthly, 42.9% of managers were satisfied and 4.8% of them were not satisfied. 36 to 40 year old vice-managers were very satisfied with the result of the outsourcing. Fifth, 90.5% of family restaurant managers found the outsourcing to be needed and especially managers in their late thirties realized the outsourcing.

품질기능전개(Quality Function Deployment) 기법을 활용한 만두전문점의 유무형 외식 상품 기획 (Planning of Tangible and Intangible Foodservice Product Using Systematic Quality Function Deployment (QFD) Technique of the Dumpling Restaurant)

  • This study has utilized the Quality Function Deployment (QFD) technique in order to plan the tangible (menu) and intangible (service) product of dumpling restaurant. The engineering characteristics of tangible products were classified into product planning, purchase management, production management, and information management based on the production system of foodservice. The engineering characteristics of intangible products were also classified into physical evidence, human interaction, and pre-communication based on the service operation and delivery system. As a result of analyzing the QFD, it was found that the customer hope the hygiene factor and response factor to be improved. It is analyzed that product planning, information management, and production management should be improved first in terms of engineering characteristics considering consumer needs. In the future, by utilizing the systematic product development process that the requirements of tangible and intangible product consumers are converted to the engineering characteristics, the development of competitive product within the market will be possible, and furthermore it is expected to be useful for reducing the unnecessary time and design costs due to failure of product development.

노인의료 복지시설 영양사의 업무활동 및 요구도 분석 (Analysis of the Job Activities and Demand of Dietitian in the Elderly Health-care Facilities)

  • This study was objectively performed to identify dietitians' job in the elderly health-care facilities, to assess facilities and dietitian's demographic characteristics, and to determine performance and importance of dietitian's job including the demand of therapeutic diet development. Survey was conducted by mail and samples were the dietitians working in 376 facilities which capacity is over 50 members from nationwide 583 the elderly health-care facilities. Returned questionnaire was 102 and used for statistic analysis. The distributions of the elderly health-care facilities showed 39 the elderly nursing facilities(38.2%), 32 skilled nursing facilities (32.4%), 13 geriatrics hospital facilities(12.7%) and 9 the elderly cost nursing facilities(8.8%). 60.0 percent of the samples showed its menu price as 1,000 to 1,500 won. A cycle-menu program was in-use at the 79.0% facilities, but only 7.1% facilities have been introduced a selected menu system. 92.9% facilities employed only one dietitian. In the demographic characteristics of dietitian only 14.7% dietitian had a clinical dietitian license and 51.5% of respondents answered at least 1 to 3 months internship program is needed. Job activities of the dietitian in the elderly health-care foodservice were identified as 45 activities with 9 dimensions. Job performance score evaluated dietitian oneself was 4.71 of 7 points. The average importance score that the dietitian evaluated their own job was 5.66 points of 7. The job activities shown higher importance but lower performance were therapeutic diet development for in-patients, menu development suitable for taste of the elderly, and leadership. Job performance score by characteristics of dietitian and their elderly health-care facilities was significantly associated with experience of dietitian in elderly health-care (F=4.480, p<0.05), education of dietitian(F=2.659, p<0.01), number of dietitian(F=2.245, p<0.05), and number of employee in foodservice(F=2.607, p<0.05). Most common diseases of the aged was proved as hypertension(81.7%), diabetes mellitus(71.4%), and dementia(65.0%). The therapeutic diets frequently provided were diabetes mellitus diet, dysphagia diet, low sodium diet, high fiber diet, and high protein diet, in order. For those reasons, dietitian in the elderly health care emphasized that the information about therapeutic diet development such as diabetes mellitus diet, dysphagia diet, low sodium diet and hypertension diet must be continuously developed and provided. The result from this study can be applicable to enlarge and enrich job activities of dietitian in elderly health-care foodservice.
