This study was directed to define the taste compounds of crucian carp, Carassius caressius, free amino acids, nucleotides and their related compounds, organic bases, sugars, organic acids and minerals in the extracts of crucian carp were analyzed, and then followed by sensory evaluation of synthetic extracts prepared from 44 pure chemicals on the basis of the analytical data. Taste panel assessments of synthetic extracts prepared with each extractive component omitted were carried out by a triangle difference test, and changes in taste profile were assessed. In free amino acid composition, histidine was dominant occupying $46\%$ of the total free amino acids. The other abundant free amino acids were glycine, lysine, alanine and taurine. As for the nucleotides, IMP was dominant showing about $80\%$ of the total of nucleotides. The most abundant organic base was total creatinine. The content of betaine was poor and TMAO were trace in content. The main organic acids were succinic, propionic, butyric and valeric acid. Small amount of glucose, fructose and inositol were detected and ribose and arabinose were trace in content $K^+,\;Na^+,\;PO_4^{3-}\;and\;Cl^-$ were found to be the major ions and small amount of $Ca^{++}\;and\;Mg^{2+}$ were deleted. Judging from the results of omission test, the major components which contribute to produce the taste were serine, glutamic acid, lysine, arginine, tyrosine, phenylalanine, IMP, $Na^+,\;K^+\;and\;PO_4^{3-}$.
Following the previous study on the nutritional quantity of Al, Fe, and their interrelationships with other trace metals, this study was conducted to determine the effect of supplementation of Cu and Mn to fish meal-diets on the growth of Japanese eel. The feeding experiment to determine Cu requirement was conducted using white fish meal-diets supplemented with 0, 5, 10, or 20 $\mu$g/g cupric sulfate, and that to determine Mn requirement was conducted by suppling the diet with 0, 10, 20, or 40 $\mu$g/g manganese sulfate. The results revealed that the fish on diet annexed with 5 $\mu$g/g of Cu were observed to have the best growth among these groups. In case of Mn, 20 $\mu$g/g of supplementary level promoted growth rate and 40 $\mu$g/g of diet resulted in the highest feed efficiency. On the other hand, the highest level of Cu (20 $\mu$g/g), and Mn (40 $\mu$g/g) supplementary diets did not expressed adverse effect on growth. These results indicated that the suitable Cu and Mn supplementary concentrations are 20 $\mu$g/g and 30 $\mu$g/g of formulated the white fish meal-diet respectively. The white fish meal had 1.6 $\mu$g/g of Cu and 6.1 $\mu$g/g of Mn.

Human hair is an excretory system for trace metals and thus metal content in human hair can reflect the body status. The investigation of trace elements in human hair has been correlated with the diagnosis of various diseases as well as the monitoring of deficiency statues in nutrition. Many chronic diseases may be related to mineral status, some may be related to toxic mineral. Hair samples were collected from 120 inhabitants of the city of Seoul, Korea. In this study the concentrations of 10 elements (Hg, Pb, Cd, Al, As, U, Bi, Sb, Ba, Be) in hair were determined by inductively coupled plasma mass spectroscopy (ICP-MS). The conclusions showed that people in Seoul, Korea were affected by some kinds of toxic minerals. The Hg concentrations of male are higher than those of female and reference range. The mean concentration of Sb was higher in the female than male and reference range. In age distribution, the mean concentration of Hg was in 40's are higher than 20's and 30's and reference range. The concentrations of Al were the highest in the 20's. After analyzing, we concluded that a compounded treatment should be conducted, which considers the variety of factors related to detoxification.

Objective: The present work was undertaken to evaluate the effects of storage time, choline chloride, and high concentrations of Cu and Zn on the kinetic behavior of vitamin degradation during storage in two vitamin premixes and four vitamin-trace mineral (VTM) premixes. Methods: Two vitamin premixes (with or without 160,000 mg/kg of choline) were stored at 25℃ and 60% humidity. Besides, four VTM premixes were used to evaluate the effects of choline (0 vs 40,000 mg/kg) and trace minerals (low CuSO4+ZnO vs high CuSO4+ZnO) on vitamin stability in VTM premixes stored in room, and the VTM premixes were stored in room temperature at 22℃. Subsamples from each vitamin and VTM premix were collected at 0, 1, 2, 3, 6, and 12 months. The retention of vitamin A (VA), vitamin D3 (VD3), vitamin E (VE), vitamin K3 (VK3), vitamin B1 (VB1), vitamin B2 (VB2), vitamin B3 (VB3), vitamin B5 (VB5), and vitamin B6 (VB6) in vitamin premixes and VTM premixes during storage was determined. The stability of vitamins in vitamin premixes and VTM premixes was determined and reported as the residual vitamin activity (% of initial) at each sampling point. Results: The effect of choline on VK3 retention was significant in vitamin premixes (p<0.05). The negative effect of storage time was significant for the retentions of VD3, VK3, VB1, VB2, VB5, and VB6 in vitamin premix (p<0.05). For VTM premixes, negative effect of storage time was significant (p<0.05) for the losses of vitamin in VTM premixes. Choline and high concentrations of Cu and Zn significantly increased VA, VK3, VB1, and VB2 loss during storage (p<0.05). The supplementation of high concentrations of Cu and Zn significantly decreased the concentrations of VD3 and VB6 (p<0.05) in VTM premixes at extended storage time. Conclusion: The maximum vitamin stability was detected in vitamin and VTM premixes containing no choline or excess Cu and Zn. The results indicated that extended storage time increased degradation of vitamin in vitamin or VTM premixes. These results may provide useful information for vitamin and VTM premixes to improve the knowledge of vitamin in terms of its stability.
To infer the provenance of raw iron materials utilized in iron production at the archaeological sites in Gyeongsang province, petrographic and geochemical analyses were conducted for smelting samples and major iron ores sourced from ore deposits. The smelting samples excavated from various iron archaeological sites were classified into different types according to their refining processes, such as iron bloom, iron bloom slag, pig iron, pig iron slag, forging iron flake, smithery iron, iron flake, and arrowhead. These samples exhibited discernable differences in their mineralogical components and texture. The enrichments of major elements such as aluminum and calcium in silicate minerals of the residual slags and the high contents of trace elements such as nickel and copper in some iron-making relics reflect the characteristics of raw iron ores, and thus can be regarded as potential indicators for inferring the provenance of source materials. In particular, the compositional ranges of Pb-Sr isotope ratios for the iron smelting samples were classified into three categories: 1) those exhibiting similar ratios to those of the raw iron ores, 2) those enriched in strontium isotope ratio, and 3) those enriched in both lead and strontium isotope ratios. The observed distinct Pb-Sr isotope characteristics in the iron smelting samples suggest the potential contribution of specific additives being introduced during the high-temperature refining process. These results provide a new perspective on the interpretation of the provenance study of the iron archaeological samples in Gyeongsang province, particularly in terms of the potential contribution of additives on the refining process.
The soil samples were collected from the paddy field near the mine tailing dumps in the abandoned Duckum mine in Korea. In the laboratory, the soil solution was extracted from the soil using centrifuge, and analysed for the chemical composition. Physical and chemical soil properties were also analysed. Kaolinite is the main clay minerals in the paddy soil and the CEC value is therefore relatively low. Nearly all soil samples show enrichment in their trace elemental concentrations(Cd, Cu, Pb and Zn) compared with natural background level. Some soil samples exceed the soil remediation intervention values for Cd, Pb and Zn and target value for Cu, when compared with Dutch standard, whereas As, Ni and Cr are in normal range. Lead concentrations in some samples near the mine tailing dumps also exceed the standard for remediation act for agricultural area set by Korean soil conservation law. The trace elemental concentrations are higher in the paddy soil nearer the mine tailing dumps and lower for the samples from distance. Similar trend with distance is found for the soil solution chemistry but the decrease with distance from the mine tailing dumps are sharper than the changes in soil chemistry. Cadmium, Cu and Pb concentrations in the soil solution are very low, ranging from a tenth and hundredths to a maximum of several mg/l, whereas their concentrations in soils are highly enriched for natural background. Most of the trace elements are thought to be either removed by reduced iron sulphides or iron oxides, depending on the redox changes. Geochemical equilibrium modelling indicate the presence of solubility controlling solid phases for Cd and Pb, whereas Zn and Cu might have been controlled by adsorption/desorption processes. Although pollutants migration through solution phase are thought to be limited by adsorption onto various Fe, Mn solid phases, the pollutants exist as easily releasable fractions such as exchangeable site. In this case, the paddy soil would act as pollutant pool, which will supply to plants in situ. whenever the geochemical conditions favour.
Six mature purebred Angus cows ($3.5{\pm}1.5$ years of age, $631.36{\pm}8.63kg$), three pregnant ($250{\pm}7$ days pregnant) and three non-pregnant and eight mature Suffolk ewes ($5{\pm}1.2$ years of age, $68.18{\pm}2.3kg$) four pregnant $115{\pm}5$ days pregnant) and four nonpregnant were utilized in a five-day metabolic trial to determine the effects of gestational status (pregnant vs. non-pregnant) on apparent absorption and retention of copper (Cu) and zinc (Zn). Animals were selected based on body weight, age, and gestational status, and randomly assigned to metabolic crates for total fecal and urine collection. Animals were allowed to acclimate to their new environment for seven days. Pregnant and non-pregnant cows and ewes were then paired (within a species) by body weight and pair-fed throughout the 5 day collection period. Copper and Zn intakes were similar for pregnant and non-pregnant animals within a species. Apparent absorption of Cu (p<0.06) and Zn (p<0.04) were higher in pregnant cows relative to non-pregnant cows. Pregnant cows also had a higher apparent retention of Cu (p<0.05) and Zn (p<0.06) relative to non-pregnant cows. Pregnant ewes had a higher (p<0.01) apparent absorption and retention of Zn compared to non-pregnant ewes. However, apparent absorption and retention of Cu were similar for pregnant and non-pregnant ewes. These data indicate that certain physiological and/or metabolic parameters are altered in pregnant cows and ewes consuming an alfalfa-based diet that enhance the apparent absorption and retention of certain trace minerals.

The rapid development of science and technology has brought about a quantitative expansion and a decrease of practical life span of information. Food science, a kind of life science and practical science, can not be an exception. Analysis of food components is the fundamental basis of the Food Science. So I would like this to be of some help to the following researches through the quantitative and qualitative analysis of the contents of the food analysis research papers in food science related Korean journals. Five hundred seventy four research papers published from 1984 to 1993 in the three journals, that is, Korean Journal of Food Science & Technology. The Korean Journal of Nutrition, The Korean Journal of Home Economics, which is three major journals read by people in Home Economics area are analyzed in this study. The method applied in this study is content analysis. Followings are the results of the content analysis : 1) When categorize the material foods into food groups, cereal group is analyzed most often(15.8%), followed by fish and shellfish group(12.4%), oil and fat group(11.8%). The least often analyzed food group is egg group. Among the food soybean is most often analyzed(6.0%), followed by polished rice(3.7%), glutinous rice(2.2%), cabbage(2.1%) and human milk(1.8%). 2) About the analyzed food components, the general components such as moisture, crude protein, crude fat, carbohydrate and ash has been analyzed very often but the trace nutrients such as vitamins and minerals has scarcely been analyzed. 3) The method used in the food components analysis is usually AOAC(Association of Official Analytical Chemist, USA). HPLC was applied to the analysis of many food components like amino acids, fatty acids, vitamin A, thiamin, riboflavin, niacin, vitamin C and vitamin E.
Previous studies have shown that plant-based vegetarian diets, which typically contain a variety of antioxidants and dietary fiber, help reduce the risk of heart disease, diabetes, obesity, and cancer. However, some studies have reported that vegetarian diets can lead to deficiencies in protein and trace minerals compared to non-vegetarian diets. This study was conducted to compare anthropometric measurements, blood parameters, dietary intake, and hair mineral status in long-term vegetarians (MV; moderate vegan, LV; lacto-ovo vegetarian) and non-vegetarians (NV). Thirty MV (12 males, 18 females; mean age, $50.58{\pm}5.05$ years), 15 LV (11 males, four females; mean age, $49.45{\pm}4.97$ years), and 30 NV (15 males, 15 females; mean age, $48.90{\pm}3.62$ years) participated. No significant differences were observed for age, height, weight, or body mass index, but body fat was significant lower in MV and LV males than that in NV males. White blood cell counts of MV, LV, and NV male subjects were significantly different. Dietary intake data showed that plant protein and plant iron intake were significantly higher in MV and LV than those in NV. Animal protein, animal fat, and animal iron intake were significantly higher in NV than those in MV and LV. A hair mineral analysis showed that calcium and iron were higher in the hair of MV and LV than those in NV. Zinc concentration in hair was not significantly different among the groups. The results suggest that vegetarian diets are adequate to sustain mineral status to at least the same degree as that of non-vegetarian diets.
