채엽시기 및 제조법에 따른 한국산 녹차의 펙틴, 카테친, 카페인 함량 변이 (Variation of Pectin, Catechins and Caffein Contents in Korean Green Tea (Camellia sinensis L.) by Harvesting Time and Processing Recipe)

  • 국산녹차에 있어서 보건적 효능과 관련된 특수성분의 유엽시기 및 제다법에 따른 변화를 조사한 결과는 다음과 같다. 수용성 펙틴은 후기유엽기에 점차적으로 증가를 보였으며 평균함량은 봉산리 녹차가 2.05% 부춘리 녹차가 1.84%이었다. 생엽에 대한 제다엽의 변화는 증다법 22.8%, 부초법 17.9% 증가하였다. 총엽록소는 후기유엽기로 갈수록 증가하여 1번 유엽기에서 5번 유엽기까지 봉산리는 233mg%에서 334mg%로, 부춘리는 198mg%에서 4번유엽기 까지 331mg%로 증가하였으나 5번 유엽기에 다소 감소를 보였다. 평균함량은 봉산리 평균 293mg%, 부춘리 평균 275mg%이었으며, 엽록소 a : 엽록소 b는 봉산리 평균 70.0:30.0, 부춘리 평균 67.3:32.7이었고 제다법에 따라 엽록소 a와 엽록소 b의 감소 정도에 차이가 있었다. 총 아미노산 함량은 봉산리 2,156mg%, 부춘리 평균 1,723mg%로 갈수록 큰 폭으로 감소를 보였다. 카페인은 후기유엽기에서 다소 적은 함량을 보였으나 부춘리는 3번 유엽기에 2.86%까지 증가를 보이다 감소하였다. 평균 카페인함량은 봉산리가 2.033%, 부춘리가 2.620%이었다. 카테친류는 후기유엽기로 갈수록 증가를 보였으나 봉산리의 경우 4번 유엽기 이후 급격히 감소하였다. 평균 카테친함량은 봉산리가 11.52%, 부춘리가 14.05%이었으며 유리형의 카테친은 봉산리 평균 35.59%, 부춘리 평균 42.73%, easter형 카테친은 봉산리 평균 58.09%, 부춘리 평균 44.47%이었다. 카테친류 및 카페인의 식용시 용출량은 침출온도가 $65^{\circ}C$에서 85$^{\circ}C$로 높을수록, 침출시간이 3분에서 9분으로 길수록 증가하였으며, 85$^{\circ}C$, 9분 침출시 카테친류는 89.3%, 카페인은 97.3%가 용출되었다.

부재료의 첨가에 따른 절임배추의 숙성 중 Chlorophyll 및 그 유도체의 함량변화 (Changes in the Conrent of Chlorophylls and Their Derivatives in Brined Korean Cabbages Added with Ingredients during Sorage)

  • 각종 부재료를 각각으로 첨가한 절임배추를 제조하여 5$^{\circ}C$와 15$^{\circ}C$에서 13일간 저 장하면서 pH, 산도 및 아스코르브산의 함량변화를 측정하고 chlorophyll분해 및 그 유도체 의 생성과의 증가는 온도가 높을수록 뚜렷하여 온도와의 관련성이 높은 것으로 나타났고, 첨가한 부재료의 영향을 보면 마늘, 고춧가루 및 젓갈은 pH의 저하나 산도의 증가를 촉진 하였고, 파와 생강은 큰 영향없이 나타났다. 5$^{\circ}C$ 및 15$^{\circ}C$의 발효기간 중 아스코로브산의 잔 존량은 대체적으로 갓을 첨가한 절임배추가 가장 낮게 나타났다. Chlorophyll의 분해는 발효 기간 중 대체로 아스코르브산의 함량이 높았던 갓을 첨가한 절임배추에서 낮은 경향을 보였 으나 발효기간중 아스코르브산의 잔종량이 전반적으로 높았던 마늘을 첨가한 절임배추에서 chlorophyll의 분해가 심하였고, pheophytin과 pheophorbide 생성량이 크게 증가하는 것으로 나타났는데 이는 산도의 증가와 pH의 감소가 가장 크게 나타난 것과 일치되었다. 따라서 발효중의 chlorophyll의 분해는 아스코르브산 함량변화와도 연관이 있을뿐만 아니라역시 산 의 생성에 의한 pH의 감소와 관련성이 있었다.

해양수색 위성자료의 검.보정 (Calibration and Validation of Ocean Color Satellite Imagery)

  • Variations in phytoplankton concentrations result from changes of the ocean color caused by phytoplankton pigments. Thus, ocean spectral reflectance for low chlorophyll waters are blue and high chlorophyll waters tend to have green reflectance. In the Korea region, clear waters and the open sea in the Kuroshio regions of the East China Sea have low chlorophyll. As one moves even closer In the northwestern part of the East China Sea, the situation becomes much more optically complicated, with contributions not only from higher concentration of phytoplankton, but also from sediments and dissolved materials from terrestrial and sea bottom sources. The color often approaches yellow-brown in the turbidity waters (Case Ⅱ waters). To verify satellite ocean color retrievals, or to develop new algorithms for complex case Ⅱ regions requires ship-based studies. In this study, we compared the chlorophyll retrievals from NASA's SeaWiFS sensor with chlorophyll values determined with standard fluorometric methods during two cruises on Korean NFRDI ships. For the SeaWiFS data, we used the standard NASA SeaWiFS algorithm to estimate the chlorophyll_a distribution around the Korean waters using Orbview/ SeaWiFS satellite data acquired by our HPRT station at NFRDl. We studied In find out the relationship between the measured chlorophyll_a from the ship and the estimated chlorophyll_a from the SeaWiFs satellite data around the northern part of the East China Sea, in February, and May, 2000. The relationship between the measured chlorophyll_a and the SeaWiFS chlorophyll_a shows following the equations (1) In the northern part of the East China Sea. Chlorophyll_a =0.121Ln(X) + 0.504, R²= 0.73 (1) We also determined total suspended sediment mass (55) and compared it with SeaWiFS spectral band ratio. A suspended solid algorithm was composed of in-.situ data and the ratio (L/sub WN/(490 ㎚)L/sub WN/(555 ㎚) of the SeaWiFS wavelength bands. The relationship between the measured suspended solid and the SeaWiFS band ratio shows following the equation (2) in the northern part of the East China Sea. SS = -0.703 Ln(X) + 2.237, R²= 0.62 (2) In the near future, NFRDI will develop algorithms for quantifying the ocean color properties around the Korean waters, with the data from regular ocean observations using its own research vessels and from three satellites, KOMPSAT/OSMl, Terra/MODIS and Orbview/SeaWiFS.

진양호와 합천호의 식물플랑크톤상에 관한 연구 (A Study on Phytoplankton Flora in Chinyang Lake and Hapchun Lake)

  • Phytoplankton flora of Chinyang Lake and Hapchun Lake were studied. A total of 161 species(Chinyang Lake, 135 species; Hapchun Lake, 80 species) were identified. The major species of two lakes were Melosira granulate var. angustissima and M. italica. As the bloom causing species, Microcystis aeruginosa, Ceratium hirundinella, and Peridinium sp. were identified. The chlorophyll a concentration of Chinyang Lake was higher than Hapchun Lake.

광조사에 의한 콩나물의 질적변화 (Studies On The Quality Of Soybean Sprouts Grown Under Light)

  • This study was carried out to evaluate the quality of soybean sprouts grown under three different sources of light. The soybean was germinated under light through blue (251 ux), red (751 ux) and white (50 to 200 lux) polyethylene films at 25$^{\circ}C$ for 10hr./day. Vitamin C, chlorophyll, cellulose and total protein contents were determined and texture was evaluated by tasting soybean sprouts soup. protein pattern in the soybean sprouts were investigated using polyacrylamide gel electrophoresis. Vitamin C, chlorophyll and cellulose contents were increased by white light intensity. The texture of the sprouts grown under white light (50 lux, 100 lux) was better than darkness, but fought under 200 lux. Vitamin C contents of soybean sprouts grown under various sources of light (in order of light : blue > white > red) were higher than theses of ones grown in the darkness. Biosynthesis of chlorophyll was not correlated to Vitamin C content. Total protein contents of cotyledon was not changed significantly under light irradiation. But the soybean sprouts grown under different quality of light, hypocotyl was higher than those grown darkness. (37% and 20% higher for blue light and white light) Densitometric tracing of disc polyacrylamide gel electrophoretic patterns showed that protein of hypocotyl under white light had more high molecular weight protein.

담배의 엽 발달 및 노화과정 중 이화학성 변화 (Changes of Physico-chemical Properties during the Leaf Development and Senescence of Tobacco Plant)

  • This experiment was conducted to obtain the basic information on the morphological and physiological changes in tobacco leaf during the growth period by measuring the changes of chlorophyll, sugar, lipid and mineral contents in tobacco plant. Leaf length and width have been fully developed at 25 days after leaf emergence. Dry weight was rapidly increased between 10 and 15 days after leaf emergence and reached the highest at 30 days. Crude lipid content, palmitic acid, and the major saturated fatty acid were increased with progressing senescence, while unsaturated fatty acid including linolenic acid was decreased as the senescence was advanced. The total nitrogen content showed the highest value at IS days after leaf emergence. On the other hand, the total sugar content showed the highest value at 45 days after leaf emergence and glucose, fructose and sucrose were decreased with leaf development and increased at the end of senescence. The content of chlorophyll showed the highest value at 15 days after leaf emergence and began to decrease at 30 days after leaf emergence. The contents of p, Cu, Zn, and Fe in tobacco leaves were decreased by the end of senescence after leaf emergence but those of Ca, Mg, and Mn in leaves were increased. Prediction of Chlorophyll-a Changes due to Weir Constructions in the Nakdong River Using EFDC-WASP Modelling

  • To evaluate the effect of the 4 major rivers restoration project in the Nakdong River to water quality of the river, the Environmental Fluid Dynamics Code (EFDC) and Water Quality Analysis Simulation Program (WASP), are applied in series. Results showed overall decrease in biochemical oxygen demand ($BOD_5$) concentrations and increase in chlorophyll-a concentrations, while total nitrogen and total phosphorous concentrations did not show significant changes, relatively. Decrease in $BOD_5$ concentrations seems to be influenced by an increased hydraulic residence time, which may allow more time for the degradation of organic material. Changes in Chlorophyll-a (Chl-a) concentration, due to the project were more significant for the upper stream areas that show relatively low Chl-a concentration ranges (less than 20 g/L). After the introduction of the Geumho River in the middle part of the Nakdong River, rapid growth of phytoplankton was observed. However, in this middle part of the Nakdong River, the ratio of Chl-a concentration change are less significant, compared to the upper stream areas, due to the project. In the lower stream area, Chl-a concentration decreased after the project. This seems to be resulted from the decreased light availability, due to increased depth, while the nutrient concentrations have been high enough to support phytoplankton growth.

갓김치 숙성 중의 무기질, 색소, 조직, 관능 및 미생물군의 변화 (Changes in Mineral, Pigment, Texture, Sensory Score and Microflora during Fermentation of Gat(Leaf Mustard)-Kimchi)

  • In order to obtain basic data for the development of Gat-Kimchi, a salted and fermented lear mustard, changes in mineral, pigment, texture, sensory score and microflora during fermentation at 5$\pm$2$^{\circ}C$ were investigated. Changes in mineral, including iron, calcium and potassium were obviously shown and their contents were markedly decreased after 14 days of fermentation. Contents of total chlorophyll and carotenoid were slowly decreased after 6 and 10 days of fermentation, respectively and ratios of chlorophyll a/b were not changed and similar to those of other cruciferous vegetable Kimchi during fermentation. Shear force of Gat-Kimchi in rheometer during fermentation was increased. The sourness and hardness(p<0.05) of Gat-Kimchi after 24 days of fermentation were significant different in sensory evaluation with no significant difference in off-flavor, color and hotness. Compared with other Kimchi, taste of Gat-Kimchi was desirably kept for 54 days of fermentation. Total viable count and lactic acid bcateria(Genus Lactobacillus) observed to be Increased in the range of 18 to 24 days and yeasts to be gradually increased during overall period of fermentation.

NaCl 농도가 이탈리안 라이그래스의 발아와 유묘생장에 미치는 영향 (Effect of NaCI Concentration on Germination and Seedling Growth of Italian Ryegrass(Lolium multiflorum L.))

  • 이탈리안 라이그라스의 염해반응에 대한 기초 자료를 얻고자 NaCl의 8개 농도에서 14개 품종(2배체:7 4배체:7)의 발아율과 유묘건물중, 엽록소 및 유리 proline함량을 조사하였다. 1. 발아율은 NaCl 300mM 이상에서 크게 감소하였으며 대조구에 대한 50%의 발아감소 NaCl농도는 344mM이었다. 2배체품종은 4배체품종보다 감소 정도가 컸으며 NaCl의 농도가 높을수록 발아율에 대한 품종들의 차이가 크게 나타났다. 2. 지상부 건물중은 NaCl 166mM에서 대조구에 대한 50%의 감소율을 보여 발아기보다 유묘기에 NaCl에 대한 영향이 더욱 컸는데, 품종들의 발아율과 지상부 건물중과는 상관관계가 없었다. 3. 지하부 건물중은 NaCl농도가 높아질수록 감소 정도가 커서 NaCl 148mM에서 50%의 감소가 나타났으며, 품종들의 지상부 건물중과 지하부 건물중은 유의적인 상관관계가 있었다. 4. 지상부 건물중과 지하부 건물중은 NaCl의 각 농도에서 2배체가 4배체보다 높았다. 5. Total 엽록소 함량은 NaCl농도가 높아질수록 증가하였는다 엽록소 a가 엽록소 b보다 함량이 더욱 증가하였으며, 엽록소 a는 4배체가 2배체보다 높았으나 엽록소 b는 2배체가 4배체보다 높았다. 품종들의 엽록소 a함량과 지상부 건물중과는 NaCl 150mM 이상에서 높은 상관관계가 인정되었다. 6. 유리 proline함량은 NaCl처리에 의하여 현저히 축적되었는데 2배체와 4배체 사이에는 별다른 차이가 없었으며, 품종들의 지상부 건물중과도 상관관계가 없었다.

Seasonal variation of Attached Diatoms community in the Hantan River

  • This study was investigated to the seasonal variation of attached diatoms communities in the Hantan River in November 2001, February, Ma and August 2002. It was identified the total 107 taxa which were composed of 95 species, 11 varieties and 1 unidentified speCies. The standing crops ranged 298,5004,776,000cells${\cdot}cm^{-2}.$and showed marked irregularly seasonal variations. It was higher value at the lower station than the upper station in fall. But it was similar values from the upper to the lower station by the effect of typhoon in summer. Chlorophyll concentrations ranged $13.4~304.2{\mu}m{\cdot}cm^{-2}.$ Standing crops and chlorophyll showed similar trends during investigation. Low diversity index values probably indicated the effects of envi~onmental stresses(water temperature, flow and current velocity) other than organic pollution. An assessment of organic pollution using epilithic diatoms(DAlpo) was $\alpha$-oligosaprobic states at the upper and mid stations, and was $\alpha$-mesosaprobic states at the lower stations.
