This study was attempted to enhance nutritional value of cooked rice by adding milk in cooking water. Cooked and soaked rice with five different levels of milk in cooking water (0%, A: 30%, B: 50%, C: 70%, D: 100%, E) was tested for rheological parameters, fine structural changes, sensory evaluation. 1. Water absorbance of raw rice in cooking water with varying amountes of milk, was tested at $5^{\circ}C$ and $15^{\circ}C$ for 2 hours. Water absorption ratio was decreased as milk content was increased and soaking temperature was low. Time for maximum water absorption of sample A was 40 min at 1$15^{\circ}C$ but for sample B to D, it was not reached until 120 min. 2. Electronmicroscopic observation revealed that starch granules of rice lost their regular forms by soaking for 90 minutes, but recovered most of initial regularity after 24 hours. Increase in milk content of soaking water decreased marginal sharpness of the starch granule, presumably due to reduced swelling of the granule. 3. Degree of gelatinization of cooked rice was highest in sample A and progressively decreased as milk content was increased. It was, however, increased in all samples when the cooking water to rice ratio was raised from 160% to 180%. During 4 hour storage, rates of retrogradation were not different between A and B samples, but those of C, D and E were about 2.5 times higher than A and B under the optimal condition of 170% cooking water to rice ratio. This was in the order reverse to hardness order of AC>A, D>E at cooking water to rice ratios of 160% and 170%, above which A sample surpassed the rest of samples. 4. Sensory evaluation conducted by fifteen university students as panelists showed that there were more significant differences among five samples in flavour, texture than appearance and a notable preference for b and C over A, D and E.

This study was conducted to examine the feasibility of using Fe-activated wood-derived biochar as a conductive filler for manufacturing cement-based strain sensor. To evaluate the compressive and electrical properties of cement composite with 3% Fe-activated biochar, three cubic specimens of size 50 x 50 x 50mm3 and three prismatic cement-based sensors of size 40 x 40 x 80mm3 were prepared respectively. The four-probe method of electrical resistance measurement was used for cement-based sensors. For cement-based sensors with FE-activated biochar, the conductive performance such as electrical resistance and impedance under different water content and repeated compression was investigated. Results showed that the fractional changes in the DC electrical resistivity of cement-based sensors increase with increasing time and the maximum fractional changes in the resistivity decrease with increasing the moisture contents during 900s. At moisture content of 7.5% range, the conductive performance of cement composite including 3% Fe-activated biochar as a conductive filler showed the most stable, while the strain detection ability tended to decrease somewhat as the repeated compressive stress increased between repeated compressive strain and fractional change in resistivity (FCR).
Purpose - The Millennial Generation, which grew in the wake of the spread of the Internet and rapid changes in the media environment, is rapidly moving from the traditional broadcasting environment to the Internet-broadcasting environment in terms of content acceptance. With the emergence of UGC (User-generated content), the change in the status of single-person content creators enables the growth of multi-channel networks (MCN), a new content-distribution platform and an agency concept for single creators. Youtube-based MCN produces multiple single star producers and casts and provides its own video series through Youtube. It is also emerging as a major M&A target for global media providers in terms of providing content to a wide range of consumers with the same interests and consumption characteristics. In addition, for the Millennials generation, which are part of their lives, MCN is becoming the most suitable media for TGIF (Twitter, Google, i-phone, Facebook). Accordingly, this study defines newly emerging MCNs and analyzes the factors for accepting MCN-produced content based on the push-pull-mooring (PPM) model. Research design, data, and methodology - An empirical analysis is performed through a questionnaire survey. For this purpose, 204 people who have experience of watching MCN were studied. Collected data is processed through analysis of a structural equation model using R to test the hypothesis. Results - For the MCN service to become an alternative to existing media, it is necessary to continuously promote cultural diversity and diversity of attempts that conventional media cannot provide. It is the attractiveness of the alternative that has the greatest influence on the intention to switch to a MCN service. When we look at MCN content so far, certain patterns such as game progress, introduction, food, and chat rooms have already appeared. We need to overcome this and develop a completely new conceptual content that we have never seen before. This requires a more generous viewer perception of the topics covered. For diversity, linguistic and verbal violence should be tolerant in common sense to provide a foundation for securing cultural diversity. Conclusions - In this study, we tried to develop a comprehensive approach to the substitution effect of MCN. In terms of academic achievement, the PPM model is used to enhance the utilization of media and broadcasting. Practical implications are to provide an analytical framework for verifying alternative or complementary effects when viewers switch to MCN.
Purpose: Grain quality is a general concept that covers many characteristics, ranging from physical to biochemical and physiochemical properties. Rice aging during storage is currently a challenge in the rice industry, and is a complicated process involving changes in all of the above properties. Spectroscopic techniques can be used to obtain information on the quality of rice samples in a non-destructive manner. Methods: The objective of this review was to highlight the factors that contribute to rice quality and aging, and to describe various spectroscopic modalities, particularly vibrational and hyperspectral imaging, for the assessment of rice quality. Results: Starch and protein are the main components of the rice endosperm, and are therefore key factors contributing to eating and cooking quality. While the overall starch, protein, and lipid content in the rice grain remains essentially unchanged during storage, structural changes do occur. These changes affect pasting and gel properties, and ultimately the flavor of cooked rice. In addition, grain quality is significantly affected by growing and environmental conditions, such as water availability, temperature, fertilizer application, and salinity stress. These properties can be evaluated using spectroscopic techniques, and rice samples can be discriminated by using multivariate statistical analysis methods. Conclusion: Hyperspectral imaging and vibrational spectroscopy techniques have good potential for determining rice quality properties in a non-invasive manner, i.e., not requiring the introduction of instruments into the rice grain.
The effects of irradiation on meat constituents including water, proteins, and lipids are multifaceted. Irradiation leads to the decomposition of water molecules, resulting in the formation of free radicals that can have both positive and negative effects on meat quality and storage. Although irradiation reduces the number of microorganisms and extends the shelf life of meat by damaging microbial DNA and cell membranes, it can also accelerate the oxidation of lipids and proteins, particularly sulfur-containing amino acids and unsaturated fatty acids. With regard to proteins, irradiation affects both myofibrillar and sarcoplasmic proteins. Myofibrillar proteins, such as actin and myosin, can undergo depolymerization and fragmentation, thereby altering protein solubility and structure. Sarcoplasmic proteins, including myoglobin, undergo structural changes that can alter meat color. Collagen, which is crucial for meat toughness, can undergo an increase in solubility owing to irradiation-induced degradation. The lipid content and composition are also influenced by irradiation, with unsaturated fatty acids being particularly vulnerable to oxidation. This process can lead to changes in the lipid quality and the production of off-odors. However, the effects of irradiation on lipid oxidation may vary depending on factors such as irradiation dose and packaging method. In summary, while irradiation can have beneficial effects, such as microbial reduction and shelf-life extension, it can also lead to changes in meat properties that need to be carefully managed to maintain quality and consumer acceptability.
The experimental FT-IR spectra and DTA curves of the $PbO-Bi_2O_3-B_2O_3-SiO_2$ glasses have been investigated. The composition ratio dependence of glass transition temperature showed that the structure of this glass system changes at 60 mol% $Bi_2O_3$. We have observed that the FT-IR spectra of the investigated samples with high bismuth content are dominated by bands associated to the structural units of the heaviest cation, $Bi^{3+}$ and the boron atoms in the treated samples are three and four coordinated even for very high $Bi_2O_3$ content. The low intensity of these non-bridging oxygen bands, for high PbO content glasses, can be attributed to the strong network-forming roles of PbO. The glasses absorption bands exhibited a greater change in intensities on crystallization.
Alendronate sodium (ALS) is a nitrogen-containing bisphosphonate used for the treatment of different bone disorders. However, its adverse effect on oral soft tissue has been detected. Rutin (RUT) is natural flavonoid with antioxidant and anti-inflammatory properties. This work aimed to investigate the possible effect of ALS on the tongue of adult male albino rats and to evaluate the possible protective role of RUT. Forty adult male albino rats were equally divided into four groups: group I (control), group II (RUT): Received RUT 50 mg/kg, group III (ALS): Received ALS 1 mg/kg, group IV (ALS+RUT):(ALS+RUT): Received ALS and RUT with the same doses as pervious groups. The drugs were given once daily for 5 weeks. Tongue specimens were taken and processed for light and scanning electron microscopic inspection. ALS treated group revealed structural changes in the tongue in the form of decrease in the height of the filiform papillae with blunt ends, marked atrophy in some papillae with areas of focal loss, loss of some epithelial cells, pyknotic nuclei and cytoplasmic vacuoles in some epithelial cells. The lamina propria showed inflammatory cellular infiltration with congested blood vessels. Statistically, there were highly significant decrease in the number of proliferating cell nuclear antigen immunopositive cells, area percentage of Bcl-2 immunoexpression and highly significant increase in the collagen content compared to control group. Administration of RUT with ALS minimizes these changes. RUT protected the rat tongue against the histological and immunohistochemical changes induced by ALS through its antioxidant and anti-inflammatory properties.

Service life evaluation for RC Structures exposed to chloride attack is very important, however the previous two methods(deterministic and probabilistic method) show a big difference. The paper presents a service life simulation using deterministic and probabilistic method with time-dependent diffusion coefficient. Three different cases are considered for diffusion coefficient, concrete cover depth, and surface chloride content respectively, and then the PDF(probability of durability failure) and the related service life are obtained. Through adopting time-dependent diffusion, the discrepancy between the two methods can be reduced, which yields reasonable service life. When diffusion coefficient increases from $2.5{\times}10^{-12}m^2/sec$ to $7.5{\times}10^{-12}m^2/sec$, the service life decreases to 25.5~35.6% level, and cover depth does from 75 mm to 125 mm, it increases to 267~311% level as well. In the case of surface chloride content from $5.0kg/m^3$ to $15.0kg/m^3$, it changes to 40.9~54.5%. The effect of cover depth is higher than the others by 8~10 times and also implies it is a key parameter to service life extension.
The main goal of this study was to investigate biomodification mechanism of lignin by white rot fungus, Abortiporus biennis, and to depolymerize ethanol organosolv lignin for industrial application. In nitrogen-limited culture, A. biennis polymerized mainly lignin showing a rapid increase of molecular weight and structural changes depending on incubation days. At the initial incubation days, cleavage of ether bonds increased phenolic OH content, while the results were contrary in of the later part of the culture. Based on these results, ascorbic acid as a reducing agent was used to induce depolymerization of lignin during cultivation with white rot fungus. As a result, the degree of increase of average molecular weight of lignin was significantly declined when compared with those of the ascorbic acid free-experiment, although the molecular weight of fungus treated sample slightly increased than that of control. Furthermore, lignin derived oligomers in culture medium were depolymerized with the addition of ascorbic acid, showing that the average molecular weight was 381 Da, and phenolic OH content was 38.63%. These depolymerized lignin oligomers were considered to be applicable for industrial utilization of lignin. In conclusion, A. biennis led to the polymerization of lignin during biomodification period. The addition of ascorbic acid had a positive effect on the depolymerization and increase of phenolic OH content of lignin oligomers in medium.
In this study, 844 Hanwoo proven bulls in South Korea (called KPN) were classified into 8 groups based on their birth year. Microsatellite (MS) marker information for paternity identification of each individual is provided at the homepage of the National Agricultural Cooperation Federation, Korea (NACF) and is mainly for the analysis of genetic diversity and structural changes. The polymorphism analysis of KPN whole groups revealed the average number of alleles in each marker (number of alleles), the expected heterozygosity ($H_{ex}$), the observed heterozygosity ($H_{ob}$), the polymorphism information content (PIC) and the $F_{is}$ mean as 10.54, 0.764, 0.773, 0.727 and -0.014, respectively. For group D, with the birth year 2004-2005, the $H_{ex}$ and $H_{ob}$ were 0.777 and 0.792 respectively and the PIC was 0.740. The $H_{ex}$ of group C and D, with birth years 2003-2004 and 2007-2008, respectively, were greater than $H_{ob}$. In all the other groups, $H_{ob}$ was greater than $H_{ex}$. Genetic composition and structure were analyzed using STRUCTURE software. According to the analyzed results, the generation of Hanwoo groups showed changes in specific genetic components according to the flow. It was confirmed that the continuous improvement in the Hanwoo affects the genetic structure of the proven bulls group. The results of this study are expected to be used for enhancing the efficiency of Hanwoo improvement project.
