한식 메뉴 명명 기준에 대한 내용분석 (The Content Analysis of the Korean Food Menu Naming Standard)

  • This research analyzed the naming standard of Korea menu names divided into two groups, main dish and side dish. The research was conducted by contents analysis of selected literature articles and multiple-response cross tabulation analysis. The result demonstrated that the naming standard of Korea food consisted of the main ingredient name - sub ingredient name - main condiment name and main recipe. On the other hand, the menu name that is in native language or has a historical origin is exempt from this classification. Therefore, this study proposes a new standard, 'Hansik Menu Naming', to assist the food service industry and correct the names of unknown foreign dishes.

중.고등학교 급식의 대표메뉴 선정 및 표준조리법 개발 (Selection of Representative Menu and Development of Standard Recipes in Middle & High School Meals)

  • This study was conducted to illustrate standard menu items available in the school foodservice industry, and to establish higher nutritional standards in this industry. We reviewed menu items from 125 middle and high schools from the Seoul area for three months. These menus were then classified into 12 representative menu items, as follows: beef seeweed soup, egg soup, sliced rice rod soup, spaghetti, sauted squid with hot sauce, fish cutlet, simmered pork-egg in soy sauce, sweet and sour meat, sauted pork, acorn starch jelly salad, cucumber salad. And standard recipes of these 12 representative menu items were established, based on a survey from 150 dietitians who completed a questionnaire of 97 questions. According to the survey results, 89% of the dietitians answered positively('yes') about the necessity of establishing standard recipes for the school foodservice industry. 69% of the dietitians were educated standard recipes for the school foodservice, 91% will use standard recipes for the school foodservice Moreover, we discovered there was a consensus on what type of menu items should be included on the menus; demographic factors only affected a small range of recommended items. In order to confirm real application of resulted standard recipe, it is required to conduct quantity food production at real foodservice and study on more suitable standard recipe.

위탁급식 전문업체의 ERP 시스템에서 표준메뉴 정보품질이 사용자 만족도 및 업무성과에 미치는 영향 (Effect of Information Quality of Standard Menu on User's Satisfaction and Performance in ERP System of Contract Foodservice Management Company)

  • The purposes of this study were 1) to analyze the effect of the information quality of standard menu system of ERP on the user’s satisfaction 2) to analyze the effect of the information quality of standard menu system of ERP on the user’s performance. The questionnaires were distributed to 260 end users(dietitians, foodservice management managers) in charge of managing the institutional foodservice such as the office(government agencies, factories), schools(universities, middle and high school) and hospitals which were managed by contract foodservice management company “C” in Seoul and Kyunggi. The surveys were performed from July 26 to July 30, 2004. Two hundred and fifty questionnaires were responded(response rate : 96.2%). The statistical analysis was conducted by using SPSS Win(11.5). And the descriptive analysis, factor analysis, reliability test, pearson correlation and simple regression analysis were performed. The results showed that the information quality of standard menu system of ERP have a significant positive effect on the user’s satisfaction(p<0.001) and user’s performance(p<0.001). When constructing standard menu system on ERP in the contract foodservice management company, the information quality of standard menu system of ERP should be guaranteed in order to satisfy the end-user and to improve the user’s performance.

호텔 이용 고객의 Italian Food에 대한 메뉴선택 속성에 관한 연구 - 서울 시내 특 1급 호텔 Italian Restaurant을 대상으로 - (A Study on the Menu-Selection Behavior in Hotel Italian Restaurant)

  • As the life style of modern people is gradually being more scientific, up-to-date and specialized, food habit and food culture are a measure of cultural level of a country. Studies on consumer behavioral model show that food habit is closely related to consumer preference, changing life pattern and increasing family income. The purpose of this study was, accordingly, to define the impact of menu characteristics on customer menu selection. For that purpose, some attempts were made: First, discuss the theories on Italian food and customer purchasing behavior as a standard of analysis. Second, find out if there are any differences in customer menu-selection factors in hotel Italian restaurant. Third, make an empirical analysis of menu-selection factors in hotel Italian restaurant to suggest in which direction it should move forward. Fourth, analyze the relationship of demographic characteristics to menu-selection factors.

  • The purpose of this study was to develop a software system for computerized menu planning program by food exchange group. In this research, Powerbuilder 5.0 was used. This study provides food service manegers with more effective manegement system and scientific menu. Software programs developed in this study were summerized as follows : 1) Programs for outputing standard amounts of the exchange food groups fir calories. 2) Programs for inputing the cooking type code, the food code and the food amount of the menu. 3) Programs for outputing distribution of the exchange food groups of the computerized menu. 4) Programs f0r calculating the price of each food and menu. 5) Programs for calculating the nutrient contents of each food and menu. 6) Programs for calculating fatty acids of dietary intake. 7) Programs for calculating PUFA : MUFA : SEA ratio and ω/sub 6/ : ω/sub 3/ ratio and evaluating the status of dietary intake. 8) Programs for inputing the purchasing amount of food. 9) Programs for outputing the menu table. 10) Programs for inputing and modifing the cooking types in the cooking types file. 11) Programs for inputing and modifing the prices in the food prices Ue.(Korean J Nutrition 31(7) 1192-1205, 1998) a 본 연구에서는 식품교환군을 이용하여, 정상인 피급식자는 물론, 환자나 운동선수들을 대상으로 하여 , 개인식단은 물론 단체급식 식단도 작성할 수 있는 컴퓨터 프로그램을 개발하였다. 이 프로그램은 식단 작성표 프로그램. 식품의 일반성분과 지방산 함량 분석 프로그램, 기타 영양 평가 프로그램 음식목록표 및 음식 조리법 작성 프로그램, 식품가격표 작성 프로그램 및 식단표와 1끼 영양분석표의 출력 프로그램 등의 System으로 되어있다. 그리고 작성한 3끼의 식단을 지정해 주면, 1일의 영양분석도 평가해 주는 1일 영양분석 평가 프로그램도 연결되어 있다. 이 프로그램은 사용자가 직접 식품의 가격 및 모든 data를 검색, 수정, 삭제하거나 추가로 입력할 수 있다. 또 영양과 예산에 맞는 정확한 식단을 작성할 수 있으며 , 기타 영양 평가 검색도 할 수 있다.

성남시 독거 노인의 맞춤형 영양 처방 음식 제공 프로그램 효과 연구 (The Effects of Nutrition Evaluation Related to Suitable Food Supply Program for Elders Living Alone in Sung Nam City)

  • The nutritional status and chronic disease occurrence of the elderly living in local areas is affected by certain factors, including low energy intakes, low food diversity, poor nutritional quality and living alone. Moreover, elderly people who live alone may have low incomes and be socially isolated. Thus, we have provided them adjustable and balanced menus using standard recipes. In this study, we investigated aspects of nutritional status and living conditions in the elderly status, in relation to food, activities of daily living(ADL), nutrition risk index, average intake of calories and nutrients, the mini dietary assessment index score, depression score, menu satisfaction, menu demand, satisfaction with menu offerings. The result indicated significant nutritional improvements by providing menus to the elders and suggest that by providing adjustable and balanced menus using standard recipes, the nutritional status of isolated elders can be changed and improved.

권장식사패턴의 수정안 고안 및 적용 - 중학교 2학년 남녀 학생의 식단계획 작성 및 평가 - (Revision and Application of the Target Pattern in Food Guidance System - Administered to 2nd grade middle school students -)

  • Objectives: The objective of this study was to revise the target pattern in food guidance system for adolescents' balanced menu planning. Methods: The food groups in the target pattern were divided into detailed food items, and intake number were assigned to each food items based on the revised standard food composition table. The validity of revised target pattern was examined. Menu planning according to the revised target pattern was made available to 305 male and female middle school students and the nutritional assessment of the menu plan were carried out using SPSS WIN 12.0. Results: The energy contents, energy contribution ratios of carbohydrate, fat, and protein, and 4 minerals' and 6 vitamins' contents of the revised target pattern were adequate. The average energy contents of the menu planned according to revised target pattern were 400~500 kcal higher than that of the revised target pattern when the revised standard food composition was applied. The energy contribution ratios of fat were 28.9%, close to maximum of acceptable macronutrient distribution range (AMDR) (30%), and that of carbohydrate were 54.5%, lower than minimum of AMDR (55%). The nutrient adequacy ratios (NARs) of calcium and vitamin C were less than 1.0. According to index of nutritional quality (INQ) of food items, kimchi, milk dairy products, and soybean curd were energy efficient source for calcium, kimchi, fruit, vegetable and seaweed were energy efficient source for vitamin C, with INQ of food items were higher or close to 2.0. Kimchi was the best energy efficient source of calcium and vitamin C. Conclusions: Revised target pattern based on the adolescent's foods intake was not good enough for balanced menu planning by adolescents, because what they ate and what they wanted to eat were very much different. Detailed guidance for food selection is necessary in each food items.

  • A lot of design guidelines have been proposed for menu-drive interfaces, but they are applicable only to the menus on ordinary CRT displays. Many hardware products, however, cannot employ large displays because of the cost and space limitations. Instead, a single-line display menu (SDM) is widely used, and the designers need useful guidelines applicable to the SDM. A focus is often placed upon the optimal menu structure, but only the standard menu structures, such as $64^{\1}, 8^{\2}, 4^{\3}, and 2^{\6}$, are tested for optimality. In many cases, however, ill defined or asymmetric structures are suggested as design alternatives. To determine the optimal menu structure, user performance should be obtained in terms of quantitative measures for each of the optional structures considered. Hence, a model is needed to provide a predicted value of user performance for a given menu structure. Although severaal models have been proposed for ordinary menus, none is available for the SDM yet. A performance model was developed in this study using the neural network approach. A The model developed in this study is capable of providing quantiative measures of human performance for any menu structures without conducting additional experiments, which will save much time and reduce the design cost.
