면직물의 두즙처리 및 머서화처리가 밤외피염액의 염색성에 미치는 영향 (The Effects of Soybean pre-treatment & Mercerization of Cotton on the Dyeability of Chestnut Shell Dyebath)

  • To increase dyeability of cotton fabric to the chestnut shell dyeing, we had several dyeing experiments with the experimental fabrics which was pre-treated by soybean, NaOH, KOH. Three kinds of experimental cotton fabrics were used and chestnut shell dyebath was made for the experiment. Munsell's color HV/C and color differences ΔE of dyeing fabrics were compared between pre-treatment and none pre-treatment dyeing fabrics. The main results were as follows ; Color differences of dyeing fabrics pre-treated with soybean, NaOH, KOH were higher than those of none pre-treated dyeing fabrics. In case of pre-treatment with soybean, the concentration of the soybean bath affected the color differences but not affected in case of pre-treatment with NaOH & KOH. Munsell's color of pre-treatment fabrics with soybean, NaOH, KOH were same with the none pre-treatment fabrics. Colorfastness of the pre-treated fabrics were same degree, but only in case of soybean pre-treated fabrics were low in fastness of washing(change) & perspiration(acidic change).

  • 본 시험은 1980년도에 전남대학교 시험포장에서 수행된 것으로서, Metribuzin의 처리시기에 따른 품종반응차이를 알기 위하여 광교외의 5대두품종과 Pre-sowing 외에 4처리 시기를 공시하여 작물의 초기생육반응을 조사하여 다음의 결과를 얻었다. 1. 공시품종내에서는 약제에 대한 저항성 차이가 뚜렷하지 않았다. 2. 품종차이보다는 약제처리시기에 따른 반응차이가 헌저하였으며, 대부분 대두품종의 저항성 크기는 E. Post-emg.< L.Post-emg $\ll$re-sowing=Control의 순으로 컸다. 3. Metribuzin의 약해 Symptom은 주당엽수 < 초장 $\ll$주당분지수의 순으로 뚜렷한 감소를 보이는 특징이었다. 4. 우리나라 대두품종에 대한 Metribuzin의 사용은 Pre-sowing이나 Pre-emg.가 추천되며, 특히 Pre-sowing에 대한 토양혼화법 연구와 단제보다는 혼용처리의 이점을 찾을 필요가 있다.

Enhancing Yield and Nutritive Value of Forage for Livestock Feeding Through Corn Soybean Intercropping Strategy with Several Pre-sowing Soybean Seed Coatings

  • In attempt to avoid crop damage through wild bird's picking, this study was designed with aim to evaluate several pre-sowing soybean seed coatings for optimum yield in corn-soybean mixed forage. It was investigated under four cropping treatments, viz. 1) corn sole, 2) corn mixed with soybean without any coating, 3) corn with iron coated soybean and 4) corn with thiram coated soybean. Each treatment had three replicates and corn sole was control treatment. Pioneer (P1184) and crossbred ($PI483463{\times}Hutcheson$) seeds were used for corn and soybean, respectively. The trial was conducted under randomized block design from $5^{th}$ June to $23^{rd}$ September, 2015. Data were an alyzed through ANOVA technique using SAS9.1.3 software. Results depicted that survivability of soybean against wild birds damage was found better (p<0.05) in thiram coating which was higher than iron coating and control treatment but later on thiram coating had adverse effects on subsequent growth of soybean plants. Corn stalk height was decreased (p<0.05) in thiram coating, whereas corn ear height was reduced in iron coating treatment. Iron coating enhanced (p<0.05) height of soybean plant (p<0.05) better than that of thiram coating. Soybean seed coatings didn't influence dry matter yield and nutritive value in terms of total digestible nutrients yield in corn soybean mixed forage. Conclusively, although presowing thiram coating enhanced survivability of soybean plants against wild bird damage but had adverse effects on its subsequent growth. However, soybean seed coatings didn't influence yield and nutritive value of corn soybean intercropping forage.

감수성 콩에서 Acetylaslicylic Acid의 콩씨스트 선충 증식의 억제 효과 (Effect of Acetylsalicylic Acid on the Reproduction of Soybean Cyst Nematode in Susceptible Soybean)

  • Reproduction of the soybean cyst nematode (SCN), Heterodera glycines Ichinohe on the susceptible soybean cultivar, Lee 74, was significantly reduced by pre-, post- and simultaneous treatments of acetylsalicylic acid (ASA, aspirin). The control efficiencies were 60%, 64% and 87% for pre-, post- and simultaneous treatments, respectively. ASA had no significant effect on the survival of 2nd stage juveniles and their penetration into the soybean root tissues, but significantly inhibited the early stage nematode growth in the roots. Syncytia were formed 2∼3 days after inoculation in the susceptible soybean without ASA treatment, characterized by dense cytoplasm and increased cellular organelles such as mitochondria and endoplasmic reticulum. The nematode stylet was penetrated into the syncytial cell, and feeding tube was formed at the nematode stylet was penetrated into the syncytial cell, and feeding tube was formed at the nematode stylet entry. However, in the ASA treatments, syncytium was not formed or degenerated, depending on the root tissues. In the pre-treatments of ASA, nematode stylets did not penetrate into cells, showing callose-like cell wall thickening formed at the nematode probing sites, or retracted from the infected cells. The stylet penetration sites of syncytial cells appeared to be sealed off with fibrillar materials. With post-treatment of ASA, syncytia formed by the nematode were degenerated, characterized by degradation of syncytial cytoplasm.

Effects of Soybean Sauce and Pre-rigor Muscle on Physicochemical Properties of Frozen Hanwoo Patties

  • In this study, we evaluated the physicochemical and sensorial properties of frozen Hanwoo beef patties prepared from prerigor and post-rigor muscle with soybean sauce or sodium chloride. The pH of the soybean sauce treatments was lower than the sodium chloride treatments (p<0.05); however, the Hanwoo patty prepared from pre-rigor muscle with soybean sauce had a lower cooking loss and smaller diameter than the Hanwoo patty prepared under the same conditions from post-rigor muscle (p<0.05). The addition of the soybean sauce inhibited lipid oxidation due to the antioxidative materials in soybean sauce such as melanoidin. The hardness of patties prepared from pre-rigor treatment was lower relative to those prepared from post-rigor muscle (p<0.05); however, there was no significant difference between springiness, cohesiveness, and chewiness (p>0.05). In the sensory evaluation, patties prepared from pre-rigor muscle with soybean sauce had a significantly high score in all traits (p<0.05); thus, pre-rigor muscle with soybean had the highest overall acceptability. Furthermore, the addition of soybean sauce to pre-rigor muscle produced similar effects as those observed for the addition of sodium chloride in regards to psychochemical properties. Moreover, meat products produced from pre-rigor muscle will have better antioxidative and sensorial properties.

견직물의 소목염색에서 단백질 전처리 효과 (The Effects of the Pre-treatments with Proteins on Dyeing of Silk Fabric with Caesalpinia sappan)

  • This study investigated the effects of the working mechanisms of proteins, mordants, and dyes, as well as the mordanting order, on dye uptake by silk fabric pre-treated with proteins and dyed with freeze-dried sappan wood water extract. Soybean protein and sodium caseinate were used as the proteins. 1. When Al mordants were not used, the dyeability of the fabrics increased upon protein pre-treatment as compared to the case without treatment. 2. Dyeing with protein pre-treatment, followed by mordanting, led to the highest dye uptake, and the optimal protein concentration was 5%. 3. The K/S values slightly decreased with an increase in the dyeing temperature, and the fabric turned dark red in color when dyeing was carried out at increasing temperature. Fabrics showed the highest dye uptake at $40^{\circ}C$. 4. Regarding the effect of time, the K/S values of the fabrics with and without protein treatment showed almost no increase after the initial dyeing time of 10min; further, there was hardly any difference in the cases with and without protein pre-treatment. 5. In case of protein pre-treatment fabrics, the washing fastness was level 2. The dry cleaning fastness showed very excellent result with level 4-5. The rubbing fastness was better in dry rubbing than in wet rubbing of the fabrics. For the light fastness, all dyed fabrics showed low fastness.

냉동 콩나물 비빔밥 제조를 위한 전처리 공정 최적화 (Processing optimization of soybean sprouts pre-treatment for manufacturing frozen Kongnamul-Bibimbap product)

  • 본 연구는 냉동 콩나물비빔밥 제품의 공정 최적화를 위해 수행되었고, 각 공정에서 공정변수에 따른 콩나물의 전단력, 배축직경, 중량감소 등과 같은 물리적 특성의 변화를 살펴보았다. 또한 각 공정마다 유효한 공정변수들을 조합하여 최종 냉동 후 조리에 의한 콩나물의 물리적 특성에 미치는 영향을 살펴보았다. 콩나물 데치기 공정에서, 처리시간의 감소와 당수 사용은 배축직경 수축과 중량감소를 줄이는 효과가 있었다. 조미 배합에서는 설탕의 사용이 소금과 설탕 혼합 사용보다 배축직경이 크고 중량감소가 적게 나타났다. 하지만 이와 같은 단위공정 단일변수적용에 의해서는 콩나물비빔밥 냉동 후 조리한 콩나물에서 배축직경 감소와 중량감소 완화의 유의적 효과는 관찰되지 않았다. 대조구 공정은 열수 데치기, 염과 설탕의 혼합 조미, 취반미 비빔형태로 진행되었고, 공정변수 조합은 당수 데치기, 설탕 조미, 취반미 비빔 또는 토핑형태로 진행되었다. 조합 공정은 대조구 공정 보다 냉동 후 조리콩나물의 유의적으로 높은 전단력과 배축직경, 낮은 중량감소를 유도하였다(p<0.05). 결론적으로, 각 공정에서 유의적 효과를 도출한 공정변수의 조합은 콩나물 비빔밥 냉동 후 조리 시 콩나물 물리적 특성을 개선시킬 수 있을 것으로 사료되었다.

마이크로파 추출법을 이용한 방사선 조사 대두의 Hydrocarbons 분석 전처리조건 최적화 (Optimization of Pre-Treatment Conditions for Hydrocarbons Detection from Irradiated Soybean Using Microwave-Assiated Extraction)

  • 지질 함량이 많은 식품에 방사선 조사여부 판별방법으로 적용가능한 hydrocarbons법의 전처리 추출공정을 개선하고자, 추출시간을 효율화 하고 추출용매의 사용을 줄일 수 있는 마이크로웨이브 추출법을 적용하였다. 국제 교역량이 가장 높은 농산물중 대두를 대상으로 방사선 조사(4 kGy)를 하여 hydrocarbons 분석에 대한 전처리 조건을 최적화하고자 하였다. 예측된 대두의 최적 추출범위는 extraction time 1.3-3.2분, microwave power 61-133 W로 나타났고, 예측된 범위에서 임의점을 설정하여 회귀식에 대입하여 최적값을 예측하였을 때 값은 microwave power와 extraction time이 각각 97 W과 2.2 분으로 확인되었다. 방사선조사 허가식품에 대해서 검지법의 분석결과의 정확성과 더불어 신속성이 요구되는 상황에서 hydrocarbons검지법 적용이 가능한 대두를 대상으로 MAE (micarowave-assisted extraction) 추출법을 적용한다면, 식품공전상의 현행 추출전처리(12-24시간)에 따른 분석시간을 줄이고 추출공정 개선이 가능할 것으로 본다.

콩의 볶음 조건에 따른 청육장의 이화학적 특성 연구 (Physico-chemical Properties of Chungyuk-jang on Different Roasting Conditions)

  • Chungyuk-jang is one of korean traditional soy food made by boiling with meat, seafood and soybean which is fermented after roasting. To investigate the difference in the physicochemical characteristics of the Chungyuk-jang fermented with roasted soybean in different conditions, Chungyuk-jang was made from soybean roasted on the three condition, 140℃ for 21 min (CY140), 180℃ 9.5 min (CY180), 220℃ 6 min (CY220) which was decided by pre-test and compared to one made without roasting (CY0). The moisture of Chungyuk-jang was 79.98~81.87% and pH was 6.15~6.25. The lightness and yellowness of CY0 was higher than Chungyuk-jang made of roasted bean whereas redness and brown pigment was the highest on CY220. The contents of free sugar of CY140 was the highest among the treatment. The contents of amino-N of Chungyuk-jang (CY140, CY190, CY220) was higher significantly than CY0. The contents of total free amino acid and glutamic acid was highest on fermented soybean roasted for 140℃, 21 min (CY140) and followed by fermented soybean roasted on 180℃ 9.5 min (CY180), 220℃ 6 min (CY220) and CY0 (without roasting).

대두부산물의 지방세포분화 유도유전자의 발현저해 및 전지방세포 분화 억제 효과 (Suppressive Effects of By-Product Extracts from Soybean on Adipocyte Differentiation and Expression of Obesity-Related Genes in 3T3-L1 Adipocytes)

  • 대두는 여러 종류의 파이토케미컬을 함유하고 있으며 이에 의한 항산화, 항염증, 항비만 효능 등이 있음이 잘 알려져 있다. 대두 부산물 성분의 비만억제효능을 확인하기 위하여 Oil-Red O 염색법과 정량 PCR을 통하여 지방세포분화억제 및 지방생성억제 효능을 분석하였다. 분화유도물질인 isobutylmethylanthine (IBMX), dexamathasone 및 insulin 처리에 따른 지방세포 분화유도와 함께 대두부산물-침지수, 순물, 두유-의 처리는 세포손상 없이 지방세포분화 연관 유전자-PPAR${\gamma}$, Fabp4, Scd1, adipsin, apolipoprotein (APOE), adiponectin (ADIPOQ)-의 발현을 감소시키는 효능을 보였다. 또한 대두에서 잘 알려진 isoflavone -daidzein과 genistein- 분석을 통하여 대두 부산물에 포함된 두 종류의 isoflavone의 함량을 확인하였다. 결과적으로 대두부산물에는 지방세포분화유도 유전자의 발현억제를 통한 전지방세포의 분화 및 지방세포의 지방생성을 억제하고 있음을 확인하였다. 따라서 두부생산 시 발생하는 대두부산물은 지방세포분화 억제 효능을 바탕으로 이를 이용하는 건강기능 식품제조에 활용될 수 있을 것으로 판단된다.
