  • We isolated cellulose-producing bacteria from persimmon vinegar(Korea traditional fermentation food). Some of these strains were selected for cellulose production in agitation culture. On the other hand, it was also found that strains suitable for static culture production were not necessarily suitable for agitation culture. Therefore we estimated the cellulose production of these isolates in static culture. To determine nutritional requirement for the production of bacterial cellulose, several nutrients as carbon source, nitrogen and mineral salt were tested.

Effect of Fungal Treated Wheat Straw on the Diet of Lactating Cows

  • This study was conducted to investigate the effects of diets that contained different levels of fungal treated wheat straw on the intake, digestibility and performance of lactating cows. Eight primiparous Holstein cows, in late lactation ranging from $170{\pm}10$ days in milk and yielding $14.3{\pm}1.3$ kg/d of fat corrected milk (FCM) were allocated into four diets with 0, 10, 20 and 30% fungal (Pleurotus ostreatus coded P-41) treated wheat straw in a $4{\times}4$ Latin Square experiment. The daily intake of DM, OM, DOM, CP and TDN were not affected by substitution of alfalfa hay with fungal treated wheat straw. Inclusion of the treated straw at different levels in the diet did not affect the digestibility of nutrients, except for the ADF that was significantly (p<0.05) reduced in the diet contained 30% treated straw. The types of the diet did not significantly affect daily milk and FCM production. The milk composition including fat, protein, lactose, solid non-fat (SNF) and total solid (TS) were not statistically (p>0.05) different among the diets. All cows gained weight, but the inclusion of treated straw to the diet significantly (p<0.05) increased the body weight gain and the highest amount was obtained in the diet containing 20% treated. Inclusion of fungal treated wheat straw up to 30% of the diet of lactating cows supplemented with a protein source such as cottonseed meal had not affected the nutrients intake and lactation performance.

Soy Oligosaccharides and Soluble Non-starch Polysaccharides: A Review of Digestion, Nutritive and Anti-nutritive Effects in Pigs and Poultry

  • Soybean contains a high concentration of carbohydrates that consist mainly of non-starch polysaccharides (NSP) and oligosaccharides. The NSP can be divided into insoluble NSP (mainly cellulose) and soluble NSP (composed mainly of pectic polymers, which are partially soluble in water). Monogastric animals do not have the enzymes to hydrolyze these carbohydrates, and thus their digestion occurs by means of bacterial fermentation. The fermentation of soybean carbohydrates produces short chain fatty acids that can be used as an energy source by animals. The utilization efficiency of the carbohydrates is related to the chemical structure, the level of inclusion in the diet, species and age of the animal. In poultry, soluble NSP can increase digesta viscosity, reduce the digestibility of nutrients and depress growth performance. In growing pigs, these effects, in particular the effect on gut viscosity, are often not so obvious. However, in weaning piglets, it is reported that soy oligosaccharides and soluble NSP can cause detrimental effects on intestinal health. In monogastrics, consideration must be given to the anti-nutritive effect of the NSP on nutrient digestion and absorption on one hand, as well as the potential benefits or detriments of intestinal fermentation products to the host. This mirrors the needs for i) increasing efficiency of utilization of fibrous materials in monogastrics, and ii) the maintenance and improvement of animal health in antibiotic-free production systems, on the other hand. For example, ethanol/water extraction removes the low molecular weight carbohydrate fractions, such as the oligosaccharides and part of the soluble pectins, leaving behind the insoluble fraction of the NSP, which is devoid of anti-nutritive activities. The resultant product is a high quality soy protein concentrate. This paper presents the composition and chemical structures of carbohydrates present in soybeans and discusses their nutritive and anti-nutritive effects on digestion and absorption of nutrients in pigs and poultry.

Effect of Levels of Supplementation of Concentrate Containing High Levels of Cassava Chip on Rumen Ecology, Microbial N Supply and Digestibility of Nutrients in Beef Cattle

  • The object of this study was to determine the influence of supplementation of concentrate containing high levels of cassava chip on rumen ecology, microbial protein and digestibility of nutrients. Four, rumen fistulated crossbred beef steers with initial body weight of 400${\pm}$10 kg were randomly assigned according to a 4${\times}$4 Latin square design. The dietary treatments were concentrate cassava chip based offering at 0, 1, 2 and 3% BW with urea-treated rice straw fed ad libitum. It was found that ruminal pH was significantly decreased with increase of concentrate. Volatile fatty acids (VFA) concentration in the rumen was significantly different among treatments. In addition, a molar proportion of propionate was higher in supplemented groups at 2 and 3% BW (p<0.05), leading to significantly decreased acetate:propionate ratio. Furthermore, microbial N supply was significantly improved and was highest at 2% BW supplementation. The efficiency of rumen microbial-N synthesis based on organic matter (OM) truly digested in the rumen was highest in level of concentrate supplementation at 2% BW (80% of cassava chip in diets). Moreover, bacterial populations such as amylolytic bacteria was linearly increased, while cellulolytic bacteria was linearly decreased (p<0.01) when cattle received concentrate supplementation in all levels. The total protozoal counts were significantly increased, while fungal zoospores were dramatically decreased in cattle receiving increased levels of concentrate. In conclusion, cassava chip can be use as energy source at 80% in concentrate and supplementation of concentrate at 2% BW with urea-treated rice straw as roughage could improve rumen fermentation efficiency in beef cattle.

Production of Mn-Dependent Peroxidase from Bjerkandera fumosa and Its Enzyme Characterization

  • Manganese dependent peroxidase (MnP) is the most ubiquitous enzyme produced by white-rot fungi, MnP is known to be involved in lignin degradation, biobleaching and oxidation of hazardous organopollutants. Bjerkandera fumosa is a nitrogen-unregulated white-rot fungus, which produces high amounts of MnP in the excess of N-nutrients due to increased biomass yield. The objective of this study was to optimize the MnP production in N-sufficient cultures by varying different physiological factors such as Mn concentration, culture pH, and incubation temperature. The growth of fungus was optimal in pH 4.5 at $30^{\circ}C$, $N_2$-unregulated white-rot fungus produces high amounts of MnP in the excess N-nutrients. The fungus produced the highest level of MnP (up to $1000U/{\ell}$) with $0.25g/{\ell}$ asparagine and $1g/{\ell}$ $NH_4Cl$ as N source at 1.5 mM $MnCl_2$ concentration, pH value of 4.5 at $30^{\circ}C$. Purification of MnP revealed the existence of two isoforms: MnPl and MnP2. The molecular masses of the purified MnPl and MnP2 were in the same range of 42~45 kDa. These isoforms of B. fumosa strictly require Mn to oxidize phenolic substrates. Concerned to kinetic constants of B. fumosa MnPs, B. fumosa has similar Km value and Vmax compared to the other white-rot fungi.

Changes in Nutrients Uptake and Dry Matter Yield of Orchardgrass ( Dactylis glomerata L. ) and Alfalfa ( medicago sativa L. ) by Gypsum Application. (석고시용이 Orchargrass ( Dactylis glomerata L. ) 와 Alfalfa ( Medicago sativa L. )의 양분흡수 및 목초수량에 미치는 영향)

  • Changes in dry matter yield, crude components, nutrients uptake($P_2O_5$, $K_2O$, CaO, MgO) and sulphur containing amino acid(cysteine, methionine) of orchardgrass(Dacty1is glomerata. L) and alfalfa(A4edicago sativa. L) by gypsum application(as sulphur source, 0, 2. 5, 10, 20kg SIlOa) were investigated to understand the effect of sulphur on herbage production in pasture, which was established in 1987 as means of hand broadcasting. The effect of gypsum on dry matter yield at different cutting times during growing seasons has not been found both in orchardgrass and in alfalfa, but in respect to annual total dry matter yield there were increment in herbage yield (P<0.05) of alfalfa at 5, 10, 20kg SIlOa in 1989 and the amounts of sulphur taken up in herbage slightly increased according to the rates of gypsum application. Maximum apparent recovery of sulphur was 7.55% at 2kg SIlOa in orchardgrass and was 17.8% at 5kg S/lOa in alfalfa. There were no any great differences in the content of crude components of both species and this trend was similar with the mineral contents of orchardgrass. But in alfalfa, the amounts of $K_2O$, CaO, and $P_2O_5$ taken up were increased by gypsum application and the increment in the amounts of minerals taken up in herbage at 20kg SIlOa were 14.9 of $K_2O$, 9.1 of CaO, and 2.5kgIlOa of $P_2O_5$ as compared to those of at untreated plot. Cysteine and methionine were not influenced by gypsum applicaton not only in orchardgrass but also cysteine in alfalfa, however, the content of methionine in alfalfa was slightly increased at 2, 5, lOkg SIlOa and at 20kg SIlOa was reverse.

The Role of Milk Product in Nutritional Intake and Chronic Disease Reduction (영양 섭취와 만성질환 예방을 위한 우유의 역할)

  • The milk product is one of the major foods which provide calcium for nutritional requirement. In addition to calcium, it supplies diverse nutrients including protein, potassium, vitamin A, vitamin $B_1$, and vitamin $B_2$. Adequate calcium intake throughout lifetime ensures optimum bone density and prevents osteoporosis in old age by reducing loss of bone mineral during growth and aging. The nutritional deficiency of calcium intake and spreading of osteoporosis in Korean population accentuated necessity of adequate calcium intake through milk consumption. Obstruction of milk consumption due to lactose intolerance should be overcome by educational programs for adequate milk consumption and low-lactose milk product developments. Consumption of milk products was reported to prevent high blood pressure in clinical studies and epidemiological investigations. As the feeding of milk increased, the body weight and fat of animal decreased in animal studies. The epidemiological investigations revealed that there was a negative correlation between the amount of milk consumption and the body fat. When calcium was provided as dietary supplement in the clinical trials, the body weight and body fat of subjects decreased. When calcium was particularly supplied as a part of milk, the body weight reduction rate was augmented. Calcium, vitamin D, and conjugated linoleic acid have been reported to exert a role in reducing cancer. The paramount importance of milk in nutrition as a source of calcium and other invaluable nutrients emphasizes consistent supply of milk products to adults as well as adolescents by dairy industry.

A Survey on Dietary Behaviors and Liquid Consumptions of University Students in Kongju of Chungnam Province in Korea (충남 공주지역 대학생의 식사행동 및 액체섭취실태 조사)

  • University students tend to have various dietary problems including undesirable dietary behaviors, inadequate intakes of nutrients and biased habits of liquid consumption. This study was conducted to find dietary behaviors (n = 357) by questionnaire survey and to examine dietary nutrient intakes (n = 60) and liquid consumption (n = 853) by food record method for 3-days among university students attended in K University of Chungnam province in Korea. Most subjects lived in the dormitory or self-boarding house, and they skipped breakfast most frequently and took breakfast most irregularly among three meals. Dietary mean intakes of energy, Ca, vitamin B2 and folate were lower than the KDRI (37-85%), and those of males were poorer than those of females. Ratios of energy intake among three meals and snacks were not distributed evenly, so the mean energy intake from snacks was higher and that from breakfast was lower than the ideal ratio, respectively. Daily mean consumption of liquid was 1,526.4 mL/d for males and 1,151.5 mL/d for females, and these intakes were more than the KDRI (1,300 mL/d for males and 1,100 mL/d for females). However, their sources of liquid consumption were not desirable because alcohol, soda, juice of fruit or vegetable and beverage mixed with fruit juice and/or vegetable juice were major sources of liquid as well as drinking water. These findings show that university students have poor dietary behaviors including frequent skipping of breakfast, irregularity of meals, inadequate intakes of nutrients and undesirable pattersirablliquid consumption including high portion of alcohol and soda as alliquid source, and these trends were stronger for males than for females. Therefore, we should endeavor to correct their meal problems id ated to dietary behaviors, nutrient intakes and liquid consumptions through nutrition education.

Effects of Pelleted Sugarcane Tops on Voluntary Feed Intake, Digestibility and Rumen Fermentation in Beef Cattle

  • Four male crossbred beef steers about 2 years old were used in a 4$\{times}$4 Latin square design to investigate the effect of pelleted sugarcane tops on voluntary feed intake, rumen fermentation and digestibility of nutrients. Experimental treatments were; Control (dried-chopped sugarcane tops (DCST)); PS1 (Pelleted sugarcane tops at 1 cm of diameter); PS2 (Pelleted sugarcane tops at 2 cm of diameter) and PS3 (Pelleted sugarcane tops at 3 cm of diameter). Roughage intake and total dry matter intake were 1.59, 1.62, 1.61, 1.63% BW and 2.09, 2.12, 2.11 and 2.13% BW in control, PS1, PS2 and PS3 treatments, respectively (p<0.05). Digestibility of DM, OM and CP were similar in control and PS3 treatment but there was significant difference (p<0.05) between control and PS1, PS2 treatments. Digestibility of neutral detergent fiber (NDF) and acid detergent fiber (ADF) were 52.89, 50.01, 50.05 and 50.56% and 41.91, 39.96, 39.91 and 39.69% in control, PS1, PS2 and PS3, respectively (p<0.05). Total volatile fatty acids concentrations in rumen contents was 67.68, 65.93, 66.15 and 66.67 mM in control, PS1, PS2 and PS3, respectively (p<0.05). Even though, concentrations of acetate and butyrate (%) were significant different (p<0.05) but concentration of propionate (%) was not affected by treatments (p>0.05). Rumen pH, ammonia nitrogen and plasma urea nitrogen were significantly different (p<0.05) among treatments. From this experiment, it was found that dried-chopped sugarcane tops increased digestibility of nutrients whereas pelleted sugarcane tops increased feed intake in beef cattle. However, pelleted sugarcane tops at 3 cm of diameter did similar result in digestibility and rumen parameters with DCST. Therefore, it could be concluded that pelleting sugarcane top is an alternative way to improve the quality of sugarcane tops for use as ruminant roughage source.

A Study on Nutrition Composition Labeling and Nutrition Claim Practices for the Processed Foods (시판 가공식품의 영양성분 및 영양강조 표시 실태에 대한 연구)

  • The purpose of this study was to investigate the status of current nutrition labeling on the packaging of the processed foods that provide consumers with a reliable and consistent source of information, which has been considered as a useful aid for food selection and a potent educational tool for nutrition in daily life. The 2,160 processed foods purchased at the supermarket on September, 2002, were divided by food category issued from the 2002 food codes and assessed in the terms of the nutrition composition labeling and nutrition claims. Nutrition composition labeling was found on 356 of the 2160 processed foods items. Milk and dairy products had 49.7% of nutrition composition labeling, which was the largest number among the food category. Tables were most frequently used as the type of nutrition composition labeling (79.8%). Nutrition composition including many different ways of expression, such as a table of nutrition composition, indication of nutrition composition, analysis table of nutrition composition and comparative table of nutrition composition, made frequent use of nutrition composition labeling titles (78.7%). The various unit of measures were use in the nutrition labeling of the processed foods, per l00g or 100$m\ell$ was the highest (44.6%) under the currently practiced nutrition labeling. The correct labeling standard with nutrient content and % RDA except energy, was used on 47.8% of labels, and those with only liability indication nutrient and liability indication nutrients plus discretion indication nutrients were 25.3 and 22.5% respectively. The processed foods with nutrition claims were 8.0% (172 items). Nutrition claims were divided in two ways: nutrient content claims and nutrient comparative claims. The most frequently used claims were contained in the former (44.4%) and more or plus in the latter case (16.3%). Ca was the most popular item as a nutrition claim nutrient (50.6%).
