Storage Stability of Fresh Jujube Fruits (Zizyphus Jujuba MILLER) (생대추(Zizyphus Jujuba MILLER) 저장성 연구)

  • In order to study storage stability of fresh jujube fruits (Zizyphus jujuba Miller) controlled atmosphere storage, polyethylene film packaging and non-packaging were compared. Jujube fruits were stored on the following gas compositions: 1.5% carbon dioxide and 5, 8, 10, 12% oxygen at $7^{\circ}C$, respectively. And 0.05 mm PE packaging and non-packaging were stored at $1^{\circ}C,\;4^{\circ}C\;and\;7^{\circ}C$. Safe storage period of Bokjo jujube fruits was four weeks when stored in CA condition of $O_2\;10%\;and\;CO_2\;1.5%$ in terms of their overall quality. The rate of weight loss was not much changed either by storage method of CA or by PE film packaging. In surface color the a value of jujube fruits increased but L and b values decreased during the storage period. Hardness showed the trend of increase in all the treatment for 2 weeks of storage while in CA it decreased more than the others after 4 weeks of storage. Soluble solids and titratable acidity were changed slightly. Vitamin C contents were gradually decreased in all treatments, but non-packed jujubes at $1^{\circ}C$ were slightly increased.

Application of Color Index for Red Grapes (CIRG) for Assessment of Grape Quality (포도의 품질 평가를 위한 CIRG 값의 적용)

  • Hunter value ($L^*$, $a^*$, $b^*$) is a rapid and convenience method for compare with different skin color, but not suitable to compare quality with various grape cultivars. Color Index for Red Grapes (CIRG) is one of a simply convert method for grape skin color as numeric data, and many previously result showed that high correlation between CIRG index and various quality factors of grape. In this experiment, we measured CIRG index, total soluble solids (TSS), titratable acidity (TA), and total anthocyanin content on the grapes (Campbell Early, Heukbosuk, Kyoho) from the varaison to harvest. As a result, CIRG index and anthocyanin contents have an exponential correlation; r-square is each 0.8595 in the 'Campbell Early' and 0.8500 in 'Heukbosuk'. And TSS and CIRG index have a positive r-square, at the Campbell Early is 0.7758 and Heukbosuk is 0.7253. Also TA and CIRG index have a positive r-square, at the Campbell Early is 0.7279 and Heukbosuk is 0.6630. These results were shown that CIRG index is a reliable indicator for a none-destructive evaluation of the grape quality.

Effects of Calcium Concentrations of Coating Bag on Pericarp Structure and Berry Cracking in 'Kyoho' Grape (Vitis sp.) (괘대봉지의 칼슘 코팅농도가 '거봉'포도의 과피구조와 열과에 미치는 영향)

  • The effects of calcium concentrations of coating bag treatment to reduce berry cracking were investigated through the changes of pericarp structure and berry cracking rate in 'Kyoho' grape. The soluble solids and anthocyanin contents in harvested grapes were highest at $18.1^{\circ}Brix$ and $2.56{\mu}g{\cdot}cm^{-2}$ in non bagging group compared with those of calcium coating bag treatments. The firmness of pericarp was lowest in non bagging group ($1.18kg{\cdot}5mm^{-1}{\O}$) compared with bagging treatments (1.23, 1.24, 1.27, $1.35kg{\cdot}5mm^{-1}{\O}$) which increased effectively in proportion to calcium concentration. As a result of histological observation of the fruit skin, the bagging with higher calcium concentration developed thicker epidermal and sub-epidermal layer of cell wall than that of non bagging. Moreover, the strengthened berry skin of calcium treatments effectively decreased berry cracking rate under critical turgor pressure. However, the 9% calcium coating bag treatment which was the most effective for cracking reduction seriously decreased marketability of harvested grape with white color staining on berry skin caused by eluted calcium from the coated paper bag. Based on our results, we recommend that 6% calcium coating bag be available for berry cracking reduction and higher quality production.

Effect of Composted Animal Manure Application on Growth and Yield of Tomatoes and Changes of Soil Nutrients (발효퇴비 시용이 토마토의 생육 , 수량 및 토양중 양분변화에 미치는 영향)

  • This study was focused on finding out the potential problems associated with organic farming system. The effect of composted animal manures subsequent inoculation of microbes on growth and yield of tomatoes (Lycopersicon esculentum Mill. 'Minicarol') were examined to develop a proper organic farming practice. Plant heights were greater in composted manure treatment than in conventional practice, whereas widths of leaves were higher in conventional field. Chlorophyll contents between various amount of composted manure application were gradually decreased and showed no significant differences after 45 days of planting. The yield in the treatment applied 12 ton of composted animal manure per 10a as pre-planting fertilizer and following microbial inoculation were only 50-60% compared to that of conventional farming. However, yield increased up to 80% when additional composts were applied to the treatment received 6 ton of composted animal manure per 10a in the middle of cultivation. Microbial inoculation followed by composted manure application induced rapid decrease of nitrogen content in soil. However, the density of microorganisms was significantly increased. Tomatoes produced through organic farming were clear in color, Further, soluble solid and acid content were increased. The highest level of acid and solids were observed in the treatment applied 12 ton of digested swine manure per 10a. Although nitrogen content including ammonium and nitrate rapidly increased after application of composts, these were significantly reduced approximately 4-5 weeks after planting. The level of phosphorus, potassium, magnesium and calcium showed gradual decrease compared to nitrogen.

Effects of Foliar Spray of Calcium Hydroxide on Shoot Growth and Fruit Quality in 'Daewol' Peach (Prunus persica Batsch) (수산화칼슘 엽면살포가 '대월' 복숭아의 신초 생육 및 과실 품질에 미치는 영향)

  • The effects of foliar spray of calcium hydroxide ($Ca(OH)_2$) during fruit growth period was investigated by changes of the shoot growth and fruit quality in 'Daewol' peach (Prunus persica). Since foliar spray of $Ca(OH)_2$ 1, 2, 5, and 10 $g{\cdot}L^{-1}$ at 7 day-intervals after fruit thinning, shoot growth was remarkably decreased compared with control group. An average SPAD value of fifth leaf from proximal part of the shoot was higher as 42.1 specific color difference sensor value (SCDSV) of $Ca(OH)_2$ foliar spraying treatments than 40.9 SCDSV of control group. Photosynthesis rates were also significantly increased by treating $Ca(OH)_2$ of higher concentration. Among fruit characteristics affecting quality, fruit weight was increased depending on concentration of $Ca(OH)_2$ treatment. The soluble solids content was lowest in control group (8.78 $^{\circ}Brix$) compare with higher concentrations of $Ca(OH)_2$ foliar spraying treatment in each 9.17, 9.22, 9.71, 10.58 $^{\circ}Brix$. The acidity and anthocyanin contents were no significant differences among treatment, but firmness of pericarp and flesh of fruits was significantly increased by $Ca(OH)_2$ foliar spray treatment. As a results of morphological observation of leaf, thickness of palisade parenchyma was thinner in control group (63.5 ${\mu}m$) than those of each 86.5, 87.5, 93.6, 107.4 ${\mu}m$ in $Ca(OH)_2$ foliar spraying treatment. Higher $Ca(OH)_2$ foliar spray also increased the thickness of cell wall of epidermis and hypodermis in 'Daewol' fruit.

  • The main objective of this study was to characterize physico-chemical properties, sensory property and oxidative stability of safflower seed obtained by various roasting temperature and time. The contents of water soluble solids decreased in the higher roasting temperature and time. Sensory evaluation of safflower seed roasted in various conditions showed significant differences in taste, color, flavor and palatability. The safflower seed roasted at $190^{\circ}C$ for 20min had the best palatability. At the change of Hunter's values, L values were decreased, and a, b and ${\Delta}E$ values were increased in the higher roasting temperature and time. The content of free sugars such as sucrose and raffinose were reduced significantly in higher roasting time of $190^{\circ}C$ and $210^{\circ}C$. During the storage period after roasting treatment, peroxide values (POV) were highly increased after eight months at the all treatment except for $150^{\circ}C$. Therefore, it is inadequate over eight months after roasting treatment.

  • This study was conducted to investigate the effect of various polyethylene (PE) film packaging on the quality of strawberry during storage at low temperature. Gas composition in film was changed rapidly at early stage of storage and then kept at the level of 5~10% $CO_2$and 1~3% $O_2$. Weight loss and decay rate were low at 0.08mm PE film packed strawberries. Titratable acidity, pH and soluble solids were changed slightly during storage but its large difference according to film thickness was not observed. Decrease of flesh firm-ness and a value was restrained by PE film packaging. Free sugar of strawberry was composed of glucose and fructose in similar content and it was decreased a little during storage but the difference according to film thickness was not observed. The organic acids in strawberry were citric acid, malic acid, succinic acid, ascorbir acid, oxalic acid, tartaric acid and pyruvic acid and the major organic acid was citric acid. The contents of citric acid, malic acid, succinir acid and ascorbic acid were decreased and oxalic acid and tartaric arid were not changed during storage but pyruvic acid was increased in early stage and then decreased. These changes of organic acid were slight in packaged with 0.08mm PE film strawberry.

Changes of Components in the Rice-porridge Fermented by Nuruk (누룩에 의한 쌀죽발효액 중의 성분변화)

  • Shindari, a traditional low alcoholic drink in Cheju island, was prepared with nuruk and the rice porridge. The rice porridge was fermented with 10% nuruk at a temperature of $25^{\circ}C,\;35^{\circ}C,\;45^{\circ}C$ for 24 hours. In all temperature, total acidity and oBrix were increased gradually and pH were decreased gradually and viscosity were considerably decreased after 2 hours and then slightly decreased. Alcohol contents were also increased during fermentation and especially at $45^{\circ}C$. The organic acids were mainly found phytic acid and succinic acid. The fermented liquids rice porridge contained maltose and glucose as free sugar, amount of them increased during fermentation. Lactic acid bacteria cell count increased at higher tem perature of fermentation and reached to $10^{7}\;cfu/ml\;at\;35^{\circ}C$ for 10hr. In conclusion, the optimal fermentation conditions Shindari preparation were at $35^{\circ}C$, 24hrs. pH, titratable acidity, viscosity and soluble solids in the optimal fermentation condition were 4.2, 0.18%, 190cp, $12.2^{\circ}Brix$, respectively.

  • This experiment was carried out to investigate the growth and yield responses of hydroponically grown tomato as affected by the different substrates using perlite and mixtures with perlite. Substrates used in this experiment were perlite (fine and coarse granule), peatmoss, rice hull and carbonized rice hull. The results obtained were as follows ; The best results in terms of total fruit yield and average fruit weight obtained in the single treatment of perlite, followed by perlite mixture with rice hull and carbonized rice hull. Leaf area was also higher in the plots of perlite mixture and optimum mixing ratio of perlite, peatmoss and carbonized rice hull was determined as 5:3:2 by volume. The more the rice hull was added to the mixed substrates, the less in fruit production was observed. However, adding perlite to other substrates brought higher fruit yield. Single treatment of rice hull showed the lowest fruit yield but enhanced in soluble solids contents over 6.0 $^{\circ}$Brix at each cluster.

Nutritional Components Content of Oriental Melon Fruits Cultivated under Different Greenhouse Covering Films (시설하우스 외피복재 종류에 따른 참외과실의 성분 함량)

  • This study was conducted to investigate the effect of functional cover film on oriental melon fruit quality under unheated plastic greenhouse cultivation in cold period. The 6 kind of films having different characteristics were covered at plastic greenhouses and oriental melon seedlings were cultivated at 2 regions of Seongju, respectively. The air-temperatures in plastic greenhouses of J-1 and J-2, having high infrared absorption rate, were about $2{\sim}5^{\circ}C$ higher than K-3. The contents of ${\beta}-carotene$ and sugar of fruit showed significant difference between functional and normal films. The sucrose, determining a sweetness during maturation, and soluble solids content of fruits cultivated in J-1, J-2, J-3, and K-1 were higher than those of K-2 and K-3. Ascorbic acid of fruits was highest in K-2 having low light transmission rate and thermo-keeping capacity. There was no significant difference in mineral content among all of cover films. These results indicated that the use of functional greenhouse covering films could improve fruit quality such as ${\beta}-carotene$ and sugar content of oriental melon.
