Analysis of Facial Coloration in Accordance with the Type of Personal Color System of Female University Students (여대생의 퍼스널 컬러 시스템 유형에 따른 얼굴색 분석)

  • This study performed a simultaneous sensory evaluation and color measurement, targeting 136 female university students who live in the Dae-Jeon region. the study measured participants'facial coloration under the condition of available light between 11 AM and 3 PM from Spring (May) to Autumn (October) in 2009. For statistical analysis, descriptive statistics, a member variate analysis, and discriminant analysis were executed using SPSS version 18.0 of the statistics program. The results of this study are as follows. First, as a result of the sensory evaluation, the blue undertone well matched to face type was dominantly distributed among the female university student participants. Second, the forehead showed a type of yellowish coloration and was relatively dark to cheeks. However the cheek displayed a reddish coloration and was relatively bright compared to the forehead from an evaluation of a cheek and forehead color measurement. Third, due to the investigation the of facial coloration variable, a yellowish and reddish chromaticity on the cheek were evident as a variable of facial coloration, which has an influence on the classification of the types of facial color. As a result of the induced discriminant through these two color variables, the yellowish chromaticity appeared as a color variable to have a greater influence than the reddish chromaticity on the cheek.

The Study of Chicken Consomme on Quality Characteristics by Boiling Time (가열시간에 따른 Chicken Consomme의 품질특성에 관한 연구)

  • It was investigated to study the sensory and physicochemical properties of chicken consomme made with different boiling time(1, 2, 3, and 4 hr). The sensory properties were evaluated with respect to both the acceptability (color, smell, mouthfeel, taste, overall acceptability) and intensity characteristics (color, smell, clarify, taste). From the results, the 3hr treatment was most favored for smell, mouthfeel, taste and overall acceptability, from the sensory evaluation tests. According to a quantitative descriptive analysis of the sensory evaluation for the treatments, the color and smell showed higher scores by increasing the boiling time. Whereas, in clarify and taste, the 3hr treatment showed the highest values. As for the physicochemical characteristics, the pH was increased with increasing boiling time. The reducing sugars, turbidity and viscosity increased with increasing boiling time. The colorimetric lightness values L decreased, and redness a, yellowness b and color difference values ΔE increased with increasing boiling time. There were 18 free amino acids indentified ; the glutamic acid, alanine, arginine and lysine were high in the free amino acid of the chicken consomme made with different boiling times. There were 3 free sugar indentified, glucose, fructose and sucrose. The free amino acid and free sugars contents increased with increasing boiling time. There were changes in the mineral contents of the chicken consomme made with different boiling time ; with high K, Na, P, Mg, Ca and Fe contents. The mineral contents increased with increasing boiling time. Especially, the 3hr treatments was more highly increased than rest of the treatments in all characteristics. The results showed the chicken consomme made by boiling far 3hr was the most preferably in the sensory and physicochemical quality.

Relationship between Smartphone Addiction and Sensory Processing Ability of Preschool Children (학령전기 아동의 스마트폰 중독과 감각처리능력과의 관계)

  • Objective : The purpose of this study was to compare sensory processing ability by smartphone addiction levels in preschool children, and to investigate the correlation between smartphone addiction level and sensory processing ability within smartphone addiction group. Method : The subjects of this study were 324 persons, with 124 persons in the addiction group and 200 in the normal user group. Measurements in this study were a questionnaire about general characteristics of subject, smartphone addiction scale, and short sensory profile. Methods for the data analysis included descriptive statistics, independent t-test, Pearson correlation analysis of SPSS 22.0. Results : There was a significant difference in the total Short Sensory Profile (SSP) score and in all sub-domains between the addiction and normal use groups (p<0.05). In the smartphone addiction group, there was a negative correlation between the SSP total score (r=-.278), auditory filtering (r=-.293), visual/auditory sensitivity (r=-.393) and smartphone addiction level. Conclusion : This study confirmed that there was a difference in smartphone addiction and sensory processing ability between the preschool children addiction and normal use groups. It has been proven that there is an interrelationship between sensory processing ability and smartphone addiction in the addiction group. It is significant in that it provides basic data to prevent smartphone addiction.

Physicochemical and Sensory Properties of Freshly Squeezed Orange Juice Using Domestic and Imported Oranges (국내산과 수입산 오렌지로 착즙한 신선한 주스의 이화학적 관능적 특성)

  • Freshly squeezed juices were prepared using the domestic Chunggyun, Hanrabong, and imported oranges and physicochemical and sensory characteristics of the juices were investigated. The Chunggyun had significantly the lowest pH value of 3.35, and imported and Hanrabong showed the pH values of 3.82 and 3.93, respectively(p<0.05). The refractive index of Hanrabong showed significantly the highest values of $14.7^{\circ}Bx$ (p<0.05), and the samples of imported and Chunggyun did not show significant differences with indices of 12.5 and 12.2, respectively. The quantitative descriptive analysis(QDA) showed imported sample had significantly the highest values of sweet and sour aroma with values of 11.57 and 11.08, respectively. However, Hanrabong showed significantly the highest value of sweet flavor with value of 12.31. Consumer acceptance test represented the Chunggyun was the most accepted one but did not show any great differences in overall, appearances, and flavor among the samples.

Effect of Microbial Fermentation on the Sensory Attributes, Gingerol Content and Volatile Components of Ginger

  • This study was conducted to examine the sensory attributes, gingerol content and volatile components of ginger paste resulting from microbial fermentation. In the ginger samples, a total of eighteen attributes were determined to characterize the sensory attributes from descriptive analysis. These eighteen attributes consisted of the following: one appearance, eight odor/aroma, eight taste, and one aftertaste attribute. The ginger fermented using Lactobacillus plantarum produced a ginger aroma and putrid taste, whereas the sample fermented with Lactobacillus brevis showed a decreased ginger aroma and taste, and generated a lemon flavor. A total gingerol content of fresh and fermented ginger was 100.19 mg% and 89.55 mg%, respectively. Sixty-one volatile components in the fresh and fermented ginger were identified, and constituted eight kinds of monoterpenes, twenty-one kinds of sesquiterpenes, eight kinds of oxygenated monoterpenes and nine kinds of oxygenated sesquiterpenes. The most abundant volatile component identified in the fresh ginger was $\alpha$-gingerberine (26.52%), whereas fermented ginger was increased in its alcohol components.

Effects of cooking conditions on the physicochemical and sensory characteristics of dry- and wet-aged beef

  • Objective: This study aimed to elucidate the effects of cooking conditions on the physicochemical and sensory characteristics of dry- and wet-aged beef strip loins. Methods: Dry- and wet-aged beef aged for 28 days were cooked using different cooking methods (grilling or oven roasting)×cooking temperatures (150℃ or 230℃), and their pH, 2-thiobarbituric acid reactive substances (TBARS), volatile compounds, and color were measured. Results: Cooking conditions did not affect pH; however, grilling resulted in lower TBARS but higher cooking doneness at the dry-aged beef surface compared to oven roasting (p<0.05). In descriptive sensory analysis, the roasted flavor of dry-aged beef was significantly stronger when grill-cooked compared to oven roasting. Dry-aged beef grill-cooked at 150℃ presented a higher intensity of cheesy flavor, and that grilled at 230℃ showed a greater intensity of roasted flavor compared to wet-aged beef at the same condition, respectively. Conclusion: Grilling may be effective for enhancing the unique flavor in dry-aged beef.

Effect of Added Water Temperature on Baking Characteristics of Gluten-Free Rice Bread (Gluten-Free 쌀빵의 제빵 특성에 대한 첨가 수분 온도 영향)

  • Baking characteristics of gluten-free rice bread were investigated, when 20, 30, 40, 50 and $60^{\circ}C$ water was added during mixing. The temperature of the dough before fermentation was affected by the temperature of the water and the mixing time. When $60^{\circ}C$ water was added, the specific gravity of the dough was the highest before fermentation (p<0.01). The specific gravity of the dough after fermentation was 32~39% of the specific gravity of the dough before fermentation. When $50^{\circ}C$ water was added, the volume and the specific volume of rice bread were higher than those in addition of water at other temperatures (p<0.001). In case of adding water of $50^{\circ}C$, the shape of the rice bread showed the largest volume, high appearance and a round shape. After storage for 2 and 24 hours, the addition of water of $50^{\circ}C$ resulted in the lowest hardness and chewiness values of rice bread. The sensory descriptive analysis revealed that when $50^{\circ}C$ water was added, the air cell size, springiness and hardness values of gluten-free rice bread were lower than those in addition of water at other temperatures. There was a difference in the appearance and texture of gluten-free rice bread, when 20, 30, 40, 50 and $60^{\circ}C$ water was added during mixing.

The Quality Characteristics of Teriyaki Sauce according to the Boiling Time (가열시간에 따른 데리야끼 소스의 품질 특성)

  • This study was carried out to investigate the mechanical and sensory properties of Teriyaki sauce made with different boiling time(6, 8, 10 and 12 hrs). The results were as follows. As for the mechanical characteristics, moisture contents, L-value, a-value, salinity and pH decreased with increasing boiling time. On the other way, viscosity, b-value and sugar contents of Teriyaki sauce increased with increasing boiling time. From results of quantitative descriptive analysis, offensive flavor was significantly different when examining Teriyaki sauce alone, but there was no difference when the sauce was accompanied with food. The 8 hr-boiling sauce was favored most in chicken with Teriyaki sauce, and 10hr-boiling sauce was favored most in eel.

Research Trends in the Journal of Korean Academy of Sensory Integration from 2013 to 2022 (대한감각통합치료학회지의 연구동향: 2013~2022년)

  • Objective : This study aimed to analyze papers published in the Journal of Korean Academy of Sensory Integration over the past 10 years. Methods : This study analyzed 130 papers published in the Journal of Korean Academy of Sensory Integration from June 2013 to December 2022. The data analysis was performed by dividing the papers based on the researchers' region and affiliation, research type(s), level of evidence, participants, and field of research. Results : The researchers were mostly from the Gyeongsang-do region and universities. With regard to the type of research, descriptive research was the most common. Most studies were categorized as research level IV studies. Moreover, the number of level IV studies steadily increased on a year-by-year basis. Regarding the study participants, the studies most commonly concerned the diagnosis of attention deficit hyperactivity disorder. In terms of the field of study, the application of individual sensory integration therapy was most common, while the application of modified applications such as Ayres Sensory Integration® and remote sensory integration therapy programs was also noted. Conclusion : This study examined the recent research trends in the Journal of Korean Academy of Sensory Integration by analyzing the research type(s), level of evidence, participants, and field of research. The present results will help readers understand the research trends in the field of sensory integration therapy and pediatric intervention, and they will also contribute to the amount of evidence available.

Analysis of the quality characteristics of Korean distilled soju (국내 시판 증류 소주의 품질 특성 분석)

  • The purpose of this study was to compare the differences of seven distilled soju samples that were presented at the main stage of the 2015 Korean Liquor Contest. The characteristics of the awarded products and other products were compared. The general components of prize-winning soju showed that the total acidity (0.22%) and alcohol content (38.44%) were higher than other soju (0.10, 22.81%), and that these properties influenced various sensory properties. For the sensory characteristics and consumer preference factors, the descriptive analysis and consumer preference testing were conducted. The descriptive analysis revealed that the (aftertaste) bitterness, corn-silk odor, sake odor/flavor, and overall taste intensity were strongly expressed in the prize-winning distilled soju. For the preference analysis, various preferences, such as "flowery odor/flavor" and "rich odor/flavor" appear to have influenced the positive preferences and "too strong an odor/flavor", "aftertaste bitterness", and "sharp tasting" were found to have a negative effect on preference.
